Hello girls and boys!

Olga Vilchevskaya is in touch with you and today I have a serious conversation with you.

Compromise for a donut

Our whole life consists of compromises... Family, friends, work... So many people, so many opinions. You constantly have to balance between your desires and the desires of others. Well, how else? No way. It’s good when people not only hear their partner, but listen to him. This is probably the main rule of compromise. Do you think I got carried away somewhere? After all, we are on a culinary site, and here I am giving out a philosophy of life. Do not worry! I'm here. This was a short introduction.

Today we will talk about culinary compromise.

Do you like donuts? Real ones, made from yeast dough, melting in your mouth, with delicious glaze? And a glass of coffee to add to this bliss... I love them so much that some time ago I was obsessed with the idea of opening a donut shop. Why didn’t you open it, you ask? My youngest son made small adjustments to my plans; he decided to be born. So everything is ahead, children grow up quickly. Just imagine... An early gloomy morning (or not gloomy, it doesn’t matter), you go to work (your favorite or unloved one, it doesn’t matter either)... And then the intoxicating smell of coffee and a freshly baked donut bursts into your nostrils... Your mood improves instantly. After all, America knows a lot about such matters. After all, it's been there a long time ago donut cult .

However, there is one big “BUT”. Real donuts contain yeast, they are deep-fried, they take a long time, they are unhealthy and yes, yes... They are very harmful, especially for children. And this is where he is needed, the father-compromise... We want to please the children and their friends, right? After all, kids just love these holey treats! You can twist it on your finger to see if it falls off or not. You can lick the chocolate and then eat the donut itself. Or you can take your time, slowly remove the sprinkles and eat them like tiny candies. I saw all this more than once, watching my youngest son and his friends. And what are we doing for this? We bake pseudo donuts, pseudo-donuts, cupcake donuts in the oven.

You can breathe a sigh of relief, there is no hint of fat here. What is it, you ask? Here's what. The dough preparation time is very short, products – it couldn’t be more accessible, you don’t even need to get a mixer, we can do it with a whisk. Low-fat, airy, beautiful, with different coatings, with nuts and chocolate sprinkles, lemon, orange, vanilla, chocolate... There are thousands of options, but today we will talk about vanilla donuts.

First of all, you need to get a donut mold. Spend some money, the smile of your children will be your reward. I have these forms:

Now the recipe

Prepare:

For the test:

  • 220 grams flour
  • 150 grams of sugar
  • 2 teaspoons baking powder
  • vanilla sugar - 1 sachet or vanilla extract - 1 tsp.
  • a pinch of salt
  • 170 ml kefir (high fat content preferably)
  • 2 eggs
  • 3 tablespoons melted butter

For the glaze:

white or dark chocolate

Let's get started:

It's time for glazing

Melt the chocolate... and let your imagination run wild. You can dip it in chocolate, or you can pour the chocolate into a small bag and cut off a corner and apply patterns on the donuts. And we don’t skimp on the sprinkles. My result.

I would like to draw your attention a little to the sprinkles. Adults most often do not like the crunch of sprinkles on their teeth. Of course, there’s no way to do this without sprinkles. Yes, it’s beautiful, fun, cool, but only for children! For parents, the crunch is not very good. I offer an option for replacement or combination: coconut flakes, almond petals, nuts, marshmallows, grated chocolate.

But that's all for today. Our conversation about compromise has come to an end. As always, I will await your responses with great impatience and desire. Best regards, Olga.

PS1: The topic of pseudo-donuts has just begun. To be continued…

PS2: But we will still make real donuts!

Olga Vilchevskaya

Sweet donuts are a dessert familiar to many from childhood. They are sprinkled with powdered sugar, fruit fillings are added inside and a topping is used when serving. Children especially like them, rosy on the outside and tender on the inside. In addition, these crumpets are a great option for breakfast.

Secrets of airy dough for donuts

In order for the dough to be tender and airy, you need to use some secrets of its preparation:

  1. It is better to use warm water and milk for the dough; room temperature is the best option;
  2. The contents of the chicken egg are added separately. In this case, the yolk is ground with sugar, and the white is whipped into a fluffy foam;
  3. If you use carbonated mineral water instead of water, the dessert will turn out porous and fluffy;
  4. The dough will become more airy if you sift the flour and replace the baking powder with soda slaked with lemon juice.

With just four simple rules, you can make soft, melt-in-your-mouth donuts.

Classic recipe

The classic recipe for donuts without yeast is easy to prepare, requires a minimum of ingredients and effort on the part of the housewife.

Donut Glaze Recipes

Glaze makes donuts more beautiful, appetizing and tasty. It is used to cover ready-made, cooled donuts. There are several options for its preparation.

  • a bar of chocolate (preferably dark);
  • crushed hazelnuts or peanuts.
  1. Divide the chocolate into cubes and melt in a water bath;
  2. Brush the hot chocolate mixture over the donuts; the layer of glaze should not be very thin. The optimal thickness is 2-3 mm;

  4. If desired, you can use white chocolate, then the icing will have a pleasant milky color. And use almonds as nuts. These two components complement each other perfectly.

Strawberry

This glaze looks very impressive on the holiday table. To prepare it you need:

  • two glasses of water;
  • a glass of sugar;
  • three tablespoons of strawberry puree;
  • colored sprinkles.
  1. First you need to prepare the caramel mixture. To do this, dissolve sugar and berry puree in water;

  3. Hot glaze is spread over the donut and decorated with sprinkles.

Protein-coconut

The delicate coconut flavor combined with the protein glaze will make the finished donuts even more tender. To make this glaze yourself, you need the following ingredients:

  • two egg whites;
  • sugar – 200 grams.
  1. Beat the whites, sugar and vanillin into a thick, dense foam;
  2. The beating process is best done in a water bath. To do this, place the container with the egg mixture on a pan of boiling water. This method will make the glaze safe for consumption;
  3. Brush the donuts with glaze and sprinkle with coconut.

Useful tips for making donuts will be useful for both beginners and experienced housewives. Their use will not only save time on cooking, but will also improve the taste of the dessert:

  1. A pinch of lemon zest, added during cooking, will add a special delicate aroma and taste to the finished donuts;

  3. In order to remove excess oil from donuts, you will need a regular paper napkin. While the buns are still hot, they need to be placed on it. The napkin will absorb excess fat, and the dessert will become less caloric;
  4. The optimal amount of oil when frying buns is 4 cm. The task of preparing donuts can be simplified by a deep fryer or a special attachment for a frying pan.

Preparing this dessert is easy and interesting. Thanks to a variety of fillings, toppings and glazes, donuts without yeast can be prepared in a new way every time, inventing new tastes and combinations.

The donuts are dusted with powder - a reminder from childhood, when you could buy them on every corner. Nowadays, such a delicacy is rarely found on sale; these days, donuts are considered an American symbol.

No one knows exactly how this dish originated, but there are many stories and legends. It all started when an unknown person dropped a piece of dough into boiling oil and that’s how it appeared "butter pie".

But the most famous legend about the origin of the hole in the dough is when the captain of the Danish merchant ship H. Gregory steered the ship. A terrible storm began. In order to overcome the waves, he needed both hands, and then he put the bun he was eating on the handle near the steering wheel. But, most likely, the hole in the dough was due to the fact that it is fried faster and better this way.

Donuts are considered a traditional breakfast dish in America and are almost equal in importance to turkey.

This sweetness can become a favorite or even a traditional delicacy in your family.

Warm from deep frying, donuts with a caramel crispy crust and a tender middle, covered with a sweet glossy glaze or simply dusted with powdered sugar, with or without filling - these are donuts in all their diversity. This sweet pastry has been loved by many since childhood; it is not difficult to prepare and is quick enough, so by choosing your favorite donut recipe at home, you can prepare a delicious surprise for breakfast for your favorite sweet tooth.

Not even all experienced housewives know that there are several methods of heat treatment of dough when baking donuts that are loved by many, so you should dwell a little on each of the possible options.

In a frying pan

Close relatives of this pastry - baursaks - were previously prepared in this way, but not in a frying pan, but in a cauldron with boiling fat. And now most housewives prefer to bake donuts in a frying pan. To do this, they will need a frying pan with a thick bottom and high sides, and fat for frying.

As a deep-fryer for donuts, you can use odorless vegetable oil, high-quality ghee, lard or goose fat. In the last two options, 20-30 ml of vodka should be added to the deep-frying so that the baked goods do not absorb the animal smell.

The thick bottom of the pan will ensure that the oil heats evenly and the dough bakes. There should be enough fat for frying in the container so that the finished product is completely covered with a golden crust on all sides. Usually it is enough to pour a 1-1.5 cm layer.

In a slow cooker

Uniform heating of oil can be ensured not only by a cast-iron frying pan inherited from your grandmother, but also by a modern kitchen assistant - a multicooker. Thus, this gadget becomes suitable for baking donuts.

Oil is poured into a multi-pan, following the same rules as when frying in a frying pan. The option that is suitable for this baking is “Roasting”. It is important to ensure that the oil has time to warm up sufficiently before adding the first portion.

In the oven

Although their oven donuts are not so high in calories, most housewives prefer the first two baking methods, not knowing that these delicious rings can be prepared in the oven. To do this, the formed products are sent to bake at 180-200 degrees. Baking does not take long, 7-10 minutes, so as not to dry out the donuts.

For an authentic look, hot donuts are dipped in melted butter and rolled in powdered sugar. You can make donuts from any dough in the oven, but the tastiest are those made with yeast.

Kefir recipe

Since the dough for kefir donuts is prepared very quickly, it is quite possible to enjoy the first portion of hot airy rings in powdered sugar within 15-20 minutes.

Products that will be needed:

  • 250 ml kefir of any fat content;
  • 1 selected chicken egg;
  • 100 g granulated sugar (or to taste);
  • 5 g soda;
  • 3 g salt;
  • 45 ml non-fragrance oil;
  • 400-450 g premium flour.

Steps for frying donuts:

  1. The combination of the dough components occurs in three stages and at each stage the mixture must be thoroughly mixed. First, put salt and sugar in a deep bowl (or pan), beat in an egg and pour in kefir.
  2. When the mass becomes homogeneous, it’s the turn of soda and vegetable oil. At the end the flour is sent. After kneading it, you will get a smooth, soft bun that sticks to your hands.
  3. Divide the dough into parts, roll out a flat cake from each one to one centimeter thick. Cut out rings of donut blanks. This can be done either with special cuttings or with improvised tools, for example, a glass or glass of a suitable size.
  4. Pour oil into a frying pan with a thick bottom until the level is approximately 1 cm and put on fire. When the oil is hot enough, fry the donuts on both sides. Serve sprinkled with powdered sugar.

With condensed milk

Delicious fluffy donuts are prepared from a minimum of ingredients using condensed milk, using:

  • 400 g condensed milk;
  • 4 chicken eggs;
  • 5 g soda;
  • 400 g flour.

Cooking method:

  1. Mix eggs with condensed milk, sift flour with soda. Then combine the dry and liquid ingredients. You should get a viscous mass, like thick sour cream.
  2. Using two teaspoons dipped in vegetable oil, scoop out the dough as for dumplings and place it in boiling vegetable oil. After frying, sprinkle the finished donuts on top with powdered sugar.

Curd donuts

For donuts made with cottage cheese dough you need to prepare:

  • 250 g cottage cheese;
  • 3 tablespoons eggs;
  • 100 g granulated sugar;
  • 250 g premium flour;
  • 4 g salt;
  • 5 g soda.

Progress:

  1. Grind the cottage cheese through a sieve and mix with the remaining ingredients until smooth.
  2. Dust your hands with flour and form the resulting dough into balls. Their diameter should be equal to a walnut.
  3. Fry the curd donut balls in boiling vegetable oil. Decorate the baked goods with powdered sugar made from a mixture of vanilla and regular sugar.

Chocolate treat

Chocolate lovers will really like donuts according to the following recipe:

  • 300 ml natural yogurt without fillers;
  • 60 g butter;
  • 2 eggs and 1 yolk;
  • 180 g granulated sugar;
  • 50 g cocoa powder;
  • 4 g cinnamon;
  • 7 g baking powder;
  • 3 g salt;
  • 560 g wheat flour.

Sequencing:

  1. Mix all dry ingredients, except sugar, in a separate bowl. Beat the eggs and yolk into a fluffy mass along with sugar. Pour yogurt and melted butter alternately into the resulting eggnog.
  2. Next add the dry ingredient mixture. Wrap the well-kneaded dough in film and place in the refrigerator for one to two hours.
  3. Cut small pieces from the chilled dough. Roll each one to one centimeter thick and cut out donut rings. Fry them in hot vegetable oil on both sides.
  4. Place the finished products on parchment or paper towel, and after 1-2 minutes they can be dipped in a glaze of powdered sugar and water (milk or lemon juice) in a ratio of 8:1.

American style

Donuts can have different shapes (ball or flat cake), but American donuts are always made with a hole in the middle. The famous hole was cut out in 1847 with a pepper lid by sailor Hanson Gregory so that the dough would be well baked in the center.

  • 60 g sugar;
  • 5 g salt;

  • 10 g vanilla sugar;
  • 500 g flour.

  2. After this, knead the mass, pour melted butter into it, add vanilla sugar and the remaining flour. Mix well and let it double again.
  3. Form donuts from the ripened dough by cutting into circles 1-1.5 cm thick with a hole in the center. Let sit for 15-20 minutes in a warm place. And then everything is as usual - frying in vegetable oil.

Yeast donuts

No matter how many different dough recipes there are for donuts (with condensed milk, cottage cheese, kefir, etc.), baking with yeast will remain the most popular and favorite.

For which you will need:

  • 500 ml milk;
  • 100 ml of drinking water;

  • 2 eggs;
  • 5 g salt;

  2. After activating the yeast, add all the other ingredients to the dough and knead a soft dough, which is left to ripen in a warm place for 1-2 hours.
  3. Form circles 1 cm thick from the risen dough, cover them with a cotton towel and leave to proof for 40 minutes.
  4. Then fry the donuts in browned vegetable oil. Ready-made donuts can be filled with condensed milk, thick jam or cream using a pastry syringe.

The easiest and fastest recipe

Even when guests are on the doorstep and there is not a lot in the refrigerator, in this case you can prepare delicious donuts very quickly.

Donut filling and glaze options

Although this pastry is good in itself, additional decoration makes it not only more beautiful, but also tastier, and many times more attractive in the eyes of those with a sweet tooth.

The easiest way to serve is to sprinkle the still hot products with powdered sugar. Why are they hot? This way the powder will melt a little and will stick better. To add flavor, you can mix the powder with vanilla or cinnamon, whichever you like best.

Donuts in the form of round balls or fluffy circles can be filled with various fillings, turning them into Berliners (filled donuts). As a filling, you can use ready-made products: chocolate-nut butter, boiled or regular condensed milk, all kinds of jams or marmalade. Or you can prepare the filling yourself using your favorite recipe for custard, lemon curd, cottage cheese or other cream.

Fill the finished products using a pastry syringe, or by making an incision on the side and filling the hole with the filling with a spoon.

Donut glaze is perhaps the most popular decoration that transforms baked goods into a truly festive treat. There are two popular ways to prepare it.

In the first case, powdered sugar is simply mixed with liquid. This can be regular drinking water, lemon milk or other juice. So, using beetroot or cherry juice you can prepare a beautiful pink glaze. To obtain a shiny and glossy finish, coat the donuts while hot.

For the second method, chocolate is used. It needs to be melted and diluted to the desired consistency with cream, milk or sour cream. Depending on what kind of chocolate is included in the glaze (black, milk or white), you can get a coating of different colors.

Glazed donuts can be additionally decorated with colorful sprinkles, sesame seeds or coconut flakes.

Donuts are baked goods that need to be eaten fresh, as over time they lose their taste. Store them for no more than a few days.
