Zucchini is one of my favorite vegetables. You can prepare many healthy and tasty dishes from it. Therefore, as soon as the first young, tender-skinned zucchini appear on the markets, they immediately take up residence in my home kitchen. Make zucchini pancakes with me with a crispy crust and tender center - it's simple, tasty and healthy!

Ingredients:

  • zucchini 1 kg
  • onion 2 pcs
  • eggs 4 pcs
  • flour 2 cups (cup volume 200 ml)
  • ground black pepper
  • dry seasoning
  • vegetable oil for frying

If desired, you can add grated cheese and raw carrots, grated on a fine grater, to the pancakes.

For this dish you can use both zucchini and zucchini, which, in principle, are the same thing. These vegetables differ only in color. It is better to take zucchini that is very young, with tender skin, then you won’t need to peel it.

Wash the zucchini, cut off the thick stem and spout. If the zucchini is overgrown, then they need to be peeled and the seeds cut out. Clean and wash onion.

For the pancakes, grate the zucchini and onion. I use a Berner grater. With its help, zucchini easily turns into thin strips and therefore does not release juice so quickly, and therefore you will need less flour.

You can use a regular coarse grater, but then salt the grated mass, let it sit for a while and squeeze out the resulting juice with your hand.

Place the grated zucchini and onion in a bowl, add eggs, salt, pepper and dry seasoning - this could be Provençal herbs or, for example, suneli hops. I added sweet paprika flakes.

Stir the contents of the bowl. It is convenient to do this by hand. The zucchini should be completely covered with eggs.

Add flour and mix. Now it is better to mix with a spoon or spatula.

This is the kind of zucchini dough for pancakes you should get.

Spoon the dough into a frying pan with hot vegetable oil.

Fry the pancakes on both sides until golden brown.
