Pancakes with kefir, recipe

It is convenient to knead the dough in a deep and wide bowl. Find a suitable bowl or saucepan and break the eggs into it. If these are small eggs, then we will need two pieces. If the egg is large, then one is enough. If there are few eggs in the dough, then kefir-based pancakes will be difficult to remove from the frying pan. Two eggs should usually be enough.

  1. Beat the eggs with a whisk or long-toothed fork until smooth. Like scrambled eggs.
  2. Pour salt and sugar into the eggs. Stir until the sugar dissolves.
  3. Add two tablespoons of vegetable oil. A couple more strokes of the whisk.
  4. Pour kefir into the dough. Mix until a nice homogeneous mass is obtained.
  5. Slowly adding flour into the dough. The most delicious pancakes made with kefir are made from dough that is similar in thickness to sour cream.
  6. Then add baking powder or half a teaspoon of baking soda.
  7. When we see what a homogeneous mass is, it’s time to bake the pancakes.

How to bake pancakes with kefir

Kefir pancakes can be baked in any oil. Some people like to fry pancakes in lard, some in margarine, and others like to bake them in butter. The most economical and convenient option is still vegetable oil. It must be heated well in a frying pan before pouring the dough. It is very convenient to distribute vegetable oil with half a small potato placed on a fork. Then the pancakes made with kefir do not burn and turn out golden brown and tasty.

Step one. Pour a small amount of vegetable oil into a well-heated frying pan. Using a potato slice on a fork, distribute evenly over the bottom and sides of the pan.

Step two. Using a kitchen soup ladle, or just a large spoon, pour our first pancake into the pan. To avoid getting a lump, as in the popular saying, the amount of dough should be such that the kefir-based pancakes are evenly distributed over the bottom of the frying pan. To do this, we tilt the pan at an angle in the direction in which we want to distribute the dough. Distribute the dough from the middle to the edges. How much dough to take for one pancake will be clear from the third masterpiece, which turned out not at all lumpy. It is not difficult.

Step three. As soon as the kefir pancakes begin to brown on the edges, they should be turned over and fried on the other side.

Place the pancakes on a flat plate, one on top of the other. They bake quite quickly and with a small amount of vegetable oil.

Tip: You can melt a little butter and brush the pancakes with it as soon as they come out of the pan. Then kefir pancakes will retain their unsurpassed taste and aroma even the next day.

Pancakes on kefir with boiling water

It may seem that the recipe is complicated and it will take more than one attempt to finally cook the first pancake. Don't worry under any circumstances. Here you will find detailed cooking instructions that will definitely leave you with no questions. Follow the steps and everything will work out!

Recipe

To make pancakes, you first need to gather the necessary ingredients. In this recipe they will be as follows:

  • kefir - 1 glass;
  • boiling water - 1 glass;
  • wheat flour - 1.5 cups;
  • chicken eggs - 2;
  • sugar - 3 teaspoons;
  • salt and soda - a quarter of a teaspoon;
  • oil (sunflower) - 2-3 tbsp. spoons.

We figured out the components of the recipe. Now let's move on to cooking:

  1. Pass the flour through a fine sieve and add baking soda. Stir.
  2. Take a deep enough cup and break the eggs into it, then add salt and sugar. Using a fork, mix thoroughly. If you have a blender or whisk, great, use them.
  3. Add kefir to the bowl with eggs. Important! Do not pour kefir right away. Do this slowly, in small streams. Also, kefir should be warm.
  4. Slowly, in small parts, add flour to the same bowl. When you have poured everything out, use a blender or whisk to gently mix. If you use a blender, do not set it to high speed. The flour will fly all over the kitchen.
  5. Add boiling water. Don't pour it right away; Empty the entire mug in small streams.
  6. Pour in sunflower oil and stir again.
  7. Put the frying pan on to heat up. When it is ready for baking, add a small piece of butter (you can also add a little vegetable oil).
  8. Using a ladle, pour the dough so that it fills the entire area of the pan. Hold the pan by the handle and spread the dough around the pan in a circular motion.
  9. The side of the pancake will be ready when it has some color on it. You need to turn the pancake over to the other side when the top is somewhere between liquid and raw.
  10. Take a spatula and carefully lift the bottom of the pancake, and then quickly flip it over.

All! Do this with the entire dough.

Advice. You can tell when the pan is ready for pancakes by placing your palm on the pan. There should be 1-2 centimeters between your palm and the pan. Do you feel like your hand is burning a little? So you can add dough.

Thin kefir pancakes with holes

“This recipe will be a little more complicated than the previous one,” this would be true if not for step-by-step cooking instructions. Thanks to her, everything will work out, maybe even with your eyes closed. Gather the ingredients and strictly follow the plan, and you are guaranteed delicious kefir pancakes with tea.

Recipe

For thin kefir pancakes with holes, you will need the following products:

  • 1% kefir - 450 ml;
  • flour (wheat) - 150 grams;
  • chicken eggs - 2 pcs;
  • sugar - 1.5-2 tbsp. spoons (here focus on your taste preferences);
  • soda - 1 teaspoon (not with a small spoon);
  • sunflower oil - 4 tbsp. l;
  • acetic acid (lemon juice will also work) - 1 tbsp. l.

Let's start cooking:

  1. Break eggs into a bowl and add salt and sugar. Mix (fork, whisk, blender - it doesn't matter).
  2. Add warm kefir and stir.
  3. Sift the flour and pour small spoons into a common bowl with kefir and eggs.
  4. Pour in vegetable oil. Stir vigorously for 30 seconds, combining the ingredients until smooth and free of oil streaks.
  5. Soda. Here you need to do everything quickly. Scoop it into a spoon, pour it into kefir and immediately stir quickly. Stir long enough for the baking soda to dissolve well into the ingredients. Otherwise, the pancakes will have an unpleasant aftertaste.
  6. You will notice the reaction of soda to kefir, or rather the acid that is in it. The dough will become covered with air bubbles and become fluffy. It is because of this dough consistency that thin pancakes with holes are obtained. Before you start baking, let the dough sit. Approximately 10-15 minutes.
  7. Place the frying pan on the fire. But not to the minimum, but a little more than average. Wait a little while it warms up. You can check the temperature of the frying pan like this: bring your palm to the frying pan so that the distance between your hand and the frying pan is approximately 1-2 centimeters. If you feel the heat, then you can already cook.
  8. Place the dough in a ladle (the ladle should be half full), lift the pan and pour the dough into the upper part of it. Move the pan in a circular motion to spread the oil over its entire surface. Reduce heat to medium. You need to hold one side of the pancake until its edges are browned and stick to the sides of the pan.
  9. Then turn the pancake over to the other side using a spatula.

To heat it up, you can use the microwave. Set the power to minimum. Or on the stove. Pour it into some container and put it on the lowest heat. Stir constantly to prevent the kefir from curdling.

Recipe

Let's decide on the ingredients:

  • kefir - 500 ml;
  • flour (wheat) - 1 cup;
  • chicken eggs - 3 pcs;
  • sugar - half a glass;
  • sunflower oil - 3-4 tablespoons;
  • soda - 1 teaspoon;
  • salt - as you like.

Step-by-step preparation:

  1. Pour half of the kefir container into a deep cup and add soda. Mix well and let it brew. 10-15 minutes.
  2. Pour in the sugar and break 2 eggs into the same bowl. Add oil and whisk everything thoroughly using a whisk.

  8. Repeat this with the entire batch and enjoy your creation!

Required ingredients:

  • sour kefir – 0.5 liters
  • water – 1 glass
  • flour – 2 cups

Thin, soft, porous pancakes without the slightest taste of kefir acid. Delicious: with honey, jam or stuffed with curd mass.

Ingredients:

  • Kefira 3,2 % - 0,6 l
  • Flour - 300 G
  • Water - 300 ml
  • Eggs - 3
  • Sahara - 3 tbsp
  • Salts - 1/3 tsp
  • Soda - 1 tsp no slide
  • Vegetable oil - 3 tbsp
  • For filling
  • Cottage cheese from 9 before 12 % fat content - 400 G
  • Cream 20 % - 100 ml
  • Powdered sugar - 2 tbsp
  • Raisins, prunes

Preparation:

  • Beat eggs with sugar and salt, add kefir, flour, mix well. Boil water, add soda and immediately pour into the dough in a thin stream, stirring vigorously with a spoon. In the frying pan in which the pancakes will be baked, heat the vegetable oil and pour it into the dough.
  • Bake in the same way as pancakes with milk. The dough seems dense, but it spreads very plastically in a thin layer in the pan. Turn over when the surface of the pancake becomes porous and matte.
  • This quantity of products makes a lot of pancakes (it all depends, of course, on the diameter of the frying pan, for me 18 cm).
  • For the filling, you can take ready-made curd mass. I like to do it myself. Mash the cottage cheese with a fork, pour in the cream in parts and mix well each time. The mass is soft and homogeneous.
  • Add powdered sugar. Sugar is not advisable, it does not dissolve well, and then the mass may “float”. At the end, add steamed raisins and diced prunes. Wrap the filling in the pancakes.
  • Some pancakes can be left without filling. They are very tasty to eat with honey, jam or sour cream.

Do you love pancakes as much as I love them? Try this recipe for tender and thin pancakes! And they will always be on your table, I promise!

Ingredients (4 servings):

  • Kefir 3,2 % - 400 ml
  • Eggs - 2
  • Flour - 250 G
  • Vegetable oil - 2 tablespoons
  • Sugar - 3 tablespoons
  • Salt - a pinch
  • Soda - 0,5 teaspoon
  • Hot water - 200 ml

Preparation - 45 minutes:

  • Beat eggs with sugar and salt. Important: for the sugar to dissolve well, the eggs must be at room temperature.
  • Add kefir and sifted flour to the resulting mixture. Mix well.
  • Dilute baking soda in hot water and pour into the dough in a thin stream, stirring thoroughly. If you pour out the water right away, part of the dough will curl, this should not happen, so take your time. Add vegetable oil and mix again
  • You need to let the dough sit for a few minutes. 5-7 so that the kefir extinguishes the soda. Just don't put it in the refrigerator. After this time, you can fry the pancakes. I managed 13-15 pancakes, the quantity depends on the diameter of your frying pan.
  • Bon appetit, eat for health with your whole family! Kids just love these pancakes :)

These are perfect for breakfast, as they cook quickly and go well with any toppings or fillings😋😊

Ingredients:

  • Kefir - 1 cup
  • Boiling water - 1 cup
  • Eggs - 2
  • Flour (I used rice flour) - 1 cup
  • Sweetener
  • Salt - a pinch
  • Soda - oh. 5 member
  • Vegetable oil - 1 stl

Preparation:

  • 👉Pre-heat the water to boiling temperature, add soda to kefir, mix and leave aside.
  • 👉Beat eggs, add sweetener and salt. Next, add kefir and soda and mix well. 👉Then pour boiling water in a thin stream and stir well so that lumps do not form. 👉Add vegetable oil to the dough and let it stand 〰️ 10 minutes.
  • 👉 Fry pancakes in a well-heated frying pan. Bon appetit 💛
  • ☝️Before any kefir pancake dough, it is better to take it out of the refrigerator in advance, let it warm up. By the way, soda helps it not to curdle in a hot frying pan, so don’t neglect it. In extreme cases, you can replace it with baking powder☝️

What can you make from kefir that has lingered in the refrigerator? Of course

Ingredients:

  • Kefir - 200 ml
  • Water - 100 gr
  • Sugar - 3 tbsp
  • Egg - 1 PC
  • Soda - 1/2 tsp
  • Vegetable oil - 20 ml
  • Flour - 200 gr

Preparation:

  • Mix kefir with water, add sugar. Mix with a whisk.
  • Add the egg. Beat with a whisk.
  • Add butter, soda and sifted flour. Mix with a whisk. The dough should be stiff.
  • Next, while stirring constantly, pour in boiling water. Approximately 150 ml.
  • If you like thinner pancakes, you can increase the amount of boiling water.
  • Bake in a pre-heated frying pan.

Hope

Ingredients:

  • Flour - 700-800 G
  • Kefir - 1 liter
  • Sugar - 3 tablespoons
  • Vegetable oil - 100 G
  • Eggs - 3 pieces
  • Soda - 3/4 teaspoon
  • Salt - to taste

Preparation:

  • Pour kefir into a deep container, beat in eggs, add sugar, butter and salt.
  • Extinguish the soda thoroughly 9 % vinegar (or other acid, such as citric acid). To do this, dilute the soda with water and add vinegar in small portions, and dump the foam formed as a result of the reaction into the dough. And so on until the soda completely decomposes, since even a small amount of it, once in the dough, will give it an unpleasant taste.
  • Mix all the ingredients thoroughly again and add flour, continuously stirring the dough. Its consistency should correspond to thick sour cream.
  • Bake pancakes in a well-heated frying pan (better for pancakes, but you can use a regular one). Before the first pancake, grease the pan with a small amount of oil. All subsequent ones should be baked in a “dry” frying pan. The oil contained in the dough is enough so that the pancakes do not stick to the pan, but easily come away from it.
  • Pancakes need to be baked on both sides over low heat for 1 minutes (each side).
  • BON APPETIT!

Daria Bezmenova

Ingredients:

  • Kefir - 900 G ( 4 glasses)
  • Flour - 500 G ( 4 glasses)
  • Egg with - 4 PC
  • Water (boiling water) - 400 G ( 2 glasses)
  • Soda - 9 G ( 1 tsp)
  • Sugar - 50 G ( 2 tbsp)
  • Salt - 4 G ( 0.5 tsp)
  • Vegetable oil - 40 G ( 3 tbsp)

Preparation:

  • Beat the eggs with a whisk with salt and sugar until smooth.
  • Add kefir and mix.
  • Add half the flour, mix thoroughly.
  • Add a glass of boiling water, thus brewing the flour, stir again.
  • Sprinkle in the other half of the flour.
  • Pour baking soda into a glass, pour in the remaining boiling water, stir and pour into the dough. Mix everything thoroughly, the dough will be smooth, without lumps.
  • Add vegetable oil, let the dough stand 15 minutes and bake in a hot pan. At first glance, it may seem that the dough is thick, but in the end it turns out to be thin pancakes.
  • An important nuance, these pancakes have a peculiarity: if you start turning them over ahead of time, they begin to tear. Turn them over only when the surface of the pancake dough is matte, with holes, without traces of batter, but of course the pancake should not burn.
  • Bon appetit!

I’ve already published the recipe for the pancakes themselves, and I’ll publish it again. But with such a filling it’s simply delicious 😋

Ingredients:

  • Kefir - 400 ml
  • Cool boiling water - 250 ml
  • Eggs - 2
  • Flour ( 2 glasses per 200 ml) - 240 G
  • Salts - 1/2 h spoons
  • Sahara - 1 h spoon
  • Soda - 1/2 h spoons
  • Unscented sunflower oil - 2 tablespoons
  • Chicken fillet - 350 G
  • Champignons - 300 G
  • Onion - 1
  • Salt and ground black pepper - to taste
  • Vegetable oil for frying
  • Butter - 50 G
  • Sunflower oil - 2-3 tablespoons

Preparation:

  • For the filling, peel and chop the onion and champignons, fry them in vegetable oil, add salt at the end of frying. Boil the chicken fillet in salted water, if desired, add onions, carrots, and seasonings to the water. I added Mixed Vegetable Seasoning. Remove the finished chicken fillet from the broth to cool slightly, then pass it and the mushrooms and onions through a meat grinder. Add a little broth in which the fillet was cooked to make the filling more juicy. Mix.
  • For pancakes, mix eggs with salt, sugar and kefir, stir. Gradually add the sifted flour, while continuing to stir, pour in a thin stream of boiling water. Add soda and sunflower oil and mix again. Bake pancakes on both sides. If the frying pan is a good non-stick one, then you don’t need to grease it; if it’s a regular one, then grease it with oil before starting, then you don’t need to grease it.
  • Place about one and a half tablespoons of filling on each pancake and wrap it in an envelope. Pour a little vegetable oil into a frying pan, lay out the filled pancakes, put pieces of butter on top and fry a little under the lid over medium heat on both sides.
  • Bon appetit!

Pancakes with kefir are an original Russian traditional food - tasty and filling. Not a single holiday is complete without them. This dish is perfect as a snack, and a variety of fillings will make them even tastier and more nutritious.

Currently, there are a huge number of pancake recipes. This article will present the most interesting and tasty ones with a detailed description of preparation.

Component:

  • Millet flour – 1 tbsp.
  • Kefir – 500 ml.
  • Eggs – 2.
  • Sugar, salt.
  • Soda - a pinch.
  • Vegetable oil – 3 tbsp.

Preparation:

The first step in preparing any flour product is, of course, beating eggs with the addition of sugar and salt. It is more convenient to beat with a mixer or blender. If you don’t have either, then a regular whisk or fork will do. Beating with a mixer gives the dough a special fluffiness and copes well with lumps.

The second step will be mixing soda and kefir to obtain a reaction. This will give the pancakes delicacy and fluffiness. Next, pour kefir and soda into the egg mixture and mix.

The next cooking step is adding flour. This needs to be done in portions. This method will help create a minimum number of lumps.

Pour vegetable oil into the resulting dough to prevent burning and sticking.

Bake in a well-heated frying pan. Pour a small amount of dough and spread it in a small layer over the surface.

Then carefully flip over with a spatula and cook the other side. You should take a frying pan that has a non-stick coating. The pancakes will not stick to it, and it will be convenient to turn them over.

Almost the most difficult recipe to prepare. The peculiarity of this recipe is to be able to turn it over without tearing it. The right prescription will help prevent breakouts.

Ingredients:

  • Wheat flour – 1 tbsp.
  • Kefir (fat content 1%) – 250ml.
  • Boiling water – 1 tbsp.
  • Eggs – 2
  • Sugar – 3 tbsp.
  • Salt – a pinch.
  • Soda - a pinch.
  • Vegetable oil – 3 tbsp.

Preparation:

Beat the eggs with a mixer with a pinch of salt and 3 tablespoons of sugar to obtain a fluffy mass.

Add kefir to the resulting mixture. It is very important to take exactly 1% kefir, because... it's less greasy. Mix.

It’s time to add the main ingredient, which makes the pancakes thin with holes - boiling water. It is important to add boiling water correctly. If you pour it in immediately, the dough will curl disproportionately. Therefore, you need to pour in a thin stream, stirring constantly. The dough should foam.

At the next stage comes the turn of flour. You can add everything at once, because... Flour dissolves in hot water without forming lumps.

Pour in baking soda and sunflower oil. The less soda you put in, the smaller the holes will be.

The dough should end up being very liquid. Heat a frying pan and grease the surface with a couple of drops of oil. The dough should be taken no more than 2/3 of a regular ladle. Fry for 2 minutes each side.

Products:

  • Flour – 400g.
  • Eggs – 4
  • Kefir – 250 ml.
  • Boiling water – 200 ml.
  • Sugar – 70g.

Add kefir to the resulting liquid and mix.

The next step is to introduce bulk ingredients: flour, salt and sugar. Mix thoroughly until all lumps are completely dissolved.

Bake in a preheated frying pan on all sides. If you are worried about the question of whether boiling water will cause eggs to curdle, then I can safely assure you that this will not happen. Pour in boiling water very slowly, then the eggs will not have time to curl.

What you will need:

  • Millet flour. – 300g.
  • Kefir – 250 ml.
  • Water – 250 ml.
  • Eggs – 2
  • Salt – 1/3 tsp.
  • Sugar – 3 tbsp.
  • Vegetable oil – 1 tbsp.
  • Vinegar – 1 tsp.
  • Drain oil – 50 g.

Let's start cooking and frying pancakes with kefir:

First, add sugar and salt to the broken eggs, mix thoroughly with a mixer or blender.

We also introduce kefir and heated water there. We achieve a homogeneous state of the liquid.

Add flour in small portions, stirring occasionally so that no lumps remain. Pour in vegetable oil.

The last step of preparation is to extinguish the soda with vinegar. Mix everything thoroughly again.

Place the oiled frying pan on the fire. Fry the pancakes until golden brown on both sides.

It is most convenient to remove and turn over with a spatula. Remove the pancake to a plate and place a piece of butter on top. You need to do this every time.

The pancakes turn out fluffy and tasty, an excellent dish for the bright holiday of Maslenitsa.

Pancakes with kefir and milk - recipe No. 1 for Maslenitsa

Made with kefir, and even with milk - this is an excellent combination and an ideal recipe. The pancakes are thin and textured. Ideal for wrapping and serving with sour cream or jam.

You will need:

  • Psh flour – 1 tbsp.
  • Kefir – 250ml.
  • Milk – 250ml.
  • Eggs – 2
  • Salt - a pinch
  • Sugar – 3 tbsp.
  • Vegetable oil – 2 tbsp.
  • Soda - a pinch.

Cooking method:

Beat the eggs into the cooking bowl and add salt and sugar.

Pour milk and mix until smooth. Vanillin will add a special aroma.

It is advisable to sift the flour. Pour the flour into the resulting liquid and quench the soda with vinegar.

The dough will be thick, don't worry. Dilute the thick dough with the required amount of kefir. This process is necessary to prevent the formation of lumps.

At the last stage, pour in vegetable oil.

Heat the frying pan and pour the dough in small portions. Fry until golden brown on both sides. Using the correct amount of batter will help you avoid thick pancakes.

You can serve with sour cream, condensed milk or jam.

Component:

  • Psh flour – 2 tbsp.
  • Kefir – 500 ml.
  • Eggs – 4
  • Sugar – 3 tbsp.
  • Salt - a pinch.
  • Soda - half a tsp.
  • Boiling water – 200 ml.
  • Vegetable oil – 3 tbsp.

Recipe:

Mix the following ingredients: eggs with sugar and salt until smooth. There is no need to beat, just mix well.

Let's start kneading the dough. Divide the flour with kefir into approximately 3-4 parts and knead the dough in three batches. With this technology, the dough is obtained without lumps. This process enriches it with oxygen and gives it a special taste.

It's time for boiling water. It must be mixed with soda and introduced slowly, in a stream, into our dough.

Pour in vegetable oil. Once again, thoroughly knead everything and set to rest for about 30 minutes.

The pan heats up until the oil shoots. To enhance the taste, our grandmothers greased the pan with lard, and the pancakes acquired a special taste.

Openwork and lace pancakes with kefir - just for Maslenitsa

Component:

Psh flour – 150g.

  • Kefir 1% – 500ml.
  • Eggs – 2
  • Sugar – 2.5 tbsp.
  • Salt - a pinch
  • Soda – 1 tsp.
  • Vinegar – 2 tbsp.

Preparation:

Before starting cooking, kefir needs to be heated to better dissolve the flour. The main thing is not to overdo it, otherwise the kefir will curdle.

Add salt and sugar to warm kefir, stir well until the granules are completely dissolved.

Beat the eggs with a whisk and pour into warm kefir.

Be sure to sift the flour and add it into the liquid in parts, while observing the consistency.

If it seems to you that the dough is thick, do not rush to dilute it with liquid. After adding soda slaked with vinegar, the dough will become airy, fluffy and more liquid.

Pour in vegetable oil and mix well. Let it rest for about 15 minutes.

Fry on both sides in a well-heated frying pan. The dough in the frying pan is covered with bubbles, which, when bursting, form holes of different sizes, which gives the appearance of a lace pattern.

In a traditional recipe, you need to maintain the proportion: for 1 tbsp. flour you need to take 2 tbsp. kefir

Be sure to sift the flour. This process saturates the flour particles with oxygen. This makes the dough lighter.

The proportion also exists when mixing eggs and flour: for 1 tbsp. There should be 1 egg of flour. If you want filled pancakes, you should add more eggs, because... This will give density to the dough, and the pancakes will not tear when twisted.

Under no circumstances should you dump all the ingredients into one bowl at once. This will lead to the formation of a large number of lumps. It is necessary to mix the bulk and separately liquid components separately.

Adding sugar to pancakes will add a special taste, even if you are planning a meat filling.

For spring rolls, just fry them on one side. When wrapping, the unfried side should be on top. Then fry wrapped.

Adding boiling water to the dough will give it delicacy and holes.

Wipe the pan before frying a new pancake. This will remove residue from the past and lubricate the pan, which will improve the release of the pan.

To determine the degree of roasting, just look at its edge. If it has acquired a golden hue, then the pancake is ready.

The most important rule is that the pan must be well heated. Otherwise it will stick to the pan.

To prevent the pancakes from cooling down, you can cover them with a clean towel; this will allow them to remain hot until the start of the meal.

Place on a plate of suitable diameter. If you have pancakes with butter, then it can flow past the plate.

There are many ways to serve pancakes: they can be folded into triangles, halves or rolled into a tube.
