What you will need

Fresh forest mushrooms: chanterelles, boletus, boletus, honey mushrooms, porcini or a mixture, 150 g

Risotto rice, e.g. arborio, 100–150 g

Onions, 1 pc.

Garlic, 1 clove

Dry white wine (optional), 50 ml

Butter, 2 tbsp.

Vegetable oil, 1 tbsp.

What to do

Cut the mushrooms into medium or large pieces. Leave the smallest ones whole - for beauty.

Heat a frying pan with vegetable oil and fry the mushrooms, covered, until tender: this will take 10–15 minutes. Add salt during the process.

Once the liquid from the mushrooms has evaporated, add the butter and let the mushrooms brown. Turn off the stove and leave the mushrooms on it so that they do not cool too much.

Finely chop the onion, crush the garlic, fry the onion and garlic in a mixture of vegetable and butter over medium heat until transparent, add salt and pepper. Stir constantly.

Pour the rice into the onions and cook for 2-3 minutes. Continue stirring.

Pour in the wine, turn up the heat, and while stirring, let the alcohol evaporate: this will take 2-3 minutes.

Reduce heat to low, add a ladleful of hot broth, cook, stirring, until liquid is absorbed into rice.

Add broth one ladle at a time. 5 minutes before readiness, add mushrooms and remaining broth.

Sprinkle with grated cheese.

What you will need

Eggplant, 2 pcs.

Minced meat (any), 150 g

Cut the eggplants into halves, remove the pulp to make boats, add salt and leave for 30 minutes: during this time the bitter juice will come out.

Cut the eggplant pulp into pieces and cover with cold water for 30 minutes.

Finely chop onions, peppers, garlic, tomatoes and herbs.

Grate the cheese on a coarse grater.

Fry onion and garlic in heated vegetable oil, add minced meat and fry for 5-7 minutes.

Heat a frying pan and fry the onion and garlic in vegetable oil, then add the minced meat, stir and fry for another 5-7 minutes until the minced meat becomes crumbly.

Add the eggplant pulp squeezed out of the water and fry for another 5 minutes.

Time for tomatoes and peppers - add them, as well as salt and spices to taste. Fry the filling for another 7-10 minutes, then remove from the stove to cool.

Rinse the boats of salt water and fill them with filling.

Sprinkle the boats with cheese and place on a baking sheet in an oven preheated to 180 degrees. Bake for about 30 minutes. You can check the readiness of the dish with a fork - it should easily pierce the eggplant.

Sprinkle the finished boats with herbs.

What you will need

Arugula, 75 g

Mozzarella, 75 g

Red fish: chum salmon, pink salmon, salmon or salmon are suitable. Fish needs to be raw or cold or hot smoked, 125 g

Pine nuts, 30 g

What you will need

Lean pork pulp, 400 g

Corn or potato starch, 150 g

Carrot, 1 pc.

Tomato paste, 1 tbsp.

Vinegar essence, 1 tsp.

Sugar, 4 tbsp.

Vegetable oil for frying, 400 ml

Salt to taste

What to do

Clean the pork from fat and films and cut into thin long slices no more than 1 cm thick. Place in a bowl.

Pour almost all the starch into the meat and add 100–150 ml of cold water in a thin stream. You should get a sticky liquid. Stir and reserve.

Cut the carrots into thin strips along their entire length.

Pour vegetable oil into a deep frying pan so that it covers the bottom by 4-5 cm and heat until light smoke appears.

Stir the meat again and fry in several batches - the pieces should lie in one layer and not touch each other. Each batch is fried for about five minutes, after which it is placed on a dish with a slotted spoon.

To thicken the sauce, dissolve 2 teaspoons of starch in 3-4 teaspoons of cold water.

Place tomato paste, sugar, salt in a cold frying pan and cook, stirring, over high heat. Add 100 ml of water during the process.

When the sauce begins to boil, carefully add the vinegar essence. Let the sauce simmer for 2 minutes, stirring vigorously, and add starch diluted in water to thicken. Don't forget to stir this liquid first.

Add 2 tablespoons of vegetable oil to the sauce. If you have sesame oil, add ½ teaspoon of it for a special flavor. Mix everything thoroughly.

Cooking time: 30 minutes

Yellow bell pepper, 1 pc.

Green beans, 100 g

Zucchini, 100 g

You can take any vegetables from the list or add something else, such as mini corn, fresh green peas, eggplant, Brussels sprouts, cauliflower or bok choy, celery, spinach, asparagus and even pumpkin. To begin, peel and wash all the vegetables, dry them and cut into long strips. Separate the broccoli into florets, cutting the largest ones into pieces.

Mix soy sauce, sugar in a cup, squeeze out the garlic, if you like it spicy, also throw in chili pepper, raw grated ginger or its dry version. Add starch and mix well.

Heat the vegetable oil well in a wok or large deep frying pan.

Throw in the onion first - it should become transparent when frying.

Then add peppers, carrots and green beans. Stir the vegetables constantly. Do not reduce the temperature, the fire must remain strong.

Add the zucchini and broccoli, and at the very end, the canned corn. Don't forget to stir vigorously. The degree of roasting is to taste. Don't cook for too long: the vegetables should crunch slightly; in an ideal stir-fry, only the onion is soft.

Finally, pour the sauce over the mixture, mix everything thoroughly and fry for a couple more minutes.
