  1. Rinse the chicken breasts, cover with cold water and cook. As soon as it boils, skim off the foam and reduce the heat to medium. After foam stops forming on the surface, you can add salt, bay leaves or other spices. Cook the breasts until tender, then remove from the broth and cool.

    The remaining broth should not be discarded; it can be frozen and later used to prepare a couple of servings of noodle soup, risotto, stew or other dishes.
