You can make muffins with any filling that your imagination suggests. Although many people prefer the usual cupcakes, muffins are interesting precisely because of the variety of additional ingredients that are added to the dough during cooking. It is highly controversial that muffin batter can and should even be mixed so quickly that lumps of flour remain when baked. As if this is precisely their peculiarity. A well-kneaded dough will make the finished muffins much tastier. And the difference will be more likely in the more modest content of the baked goods than in the muffins.

Mix dry and liquid ingredients in separate containers

Pour the liquid part into the dry part and mix until smooth.

Pour the liquid part into the dry part.

Stir until smooth

How to bake muffins

The dough can be immediately poured into molds. I use silicone molds, you can use paper baking molds or those you have in the house. Unlike other types of dough, there is no need to leave the dough to “ripen”. Pour 1 full tablespoon of dough into the molds. Add the filling. I took frozen blackcurrants and cherries.

Pour 1 full tablespoon into the molds and add the filling.

Top with another 1 full tablespoon of dough. Do not fill the molds to the brim as the dough will rise well. With this in mind, we leave room in the molds for this.

Top with 1 more tablespoon of dough, but not all the way to the edges.

Kefir cupcake It always turns out magnificent if you follow one important rule. If the dough uses fermented milk, in this case kefir, then you need baking soda, not baking powder. This rule is the key to lush baked goods with kefir.

Another advantage of this recipe is the absence of fat in the recipe, that is, it cake recipe without butter. In everyday life, we already consume more fat than necessary, so sometimes it is worth using baked goods without butter and margarine. Moreover, the absence of butter in the recipe does not affect the taste of the baked goods.

And one more advantage is this. I love the combination of sour and sweet in baking; in this case, lingonberries add sourness. Although it is quite possible to replace them with other berries, there are many recipes for baking with berries on the “I Love to Cook” website; at the end of the article I will show the best of them.

I baked the kefir cake with lingonberries in the oven, not in the slow cooker. Therefore, I’ll clarify that if you want to bake this kefir cake in a multicooker, then select the “Baking” mode, and the baking time should be 50-60 minutes, regardless of the model of the multicooker and its power.

What you will need for kefir cake:

1 faceted glass of sugar

1 teaspoon/l baking soda

1 faceted glass of kefir

2 faceted cups flour

200 g lingonberries (you can use frozen ones)

How to bake a kefir cake in the oven

First you need to knead the cake dough from all these ingredients.

You can start by beating eggs with sugar. Why combine sugar and chicken eggs. And then beat them with a mixer. You can simply until smooth, but grains of sugar may remain.

In a separate container in which all the ingredients will be combined, combine kefir with soda. Stir immediately to dissolve the soda.

And pour the beaten egg-sugar mixture into the kefir. Connect these masses with each other.

All that remains is to pour in the flour and then mix it into the cake batter.

If the lingonberries are frozen, then they need to be slightly defrosted in the microwave. There is no need to put lingonberries in the dough so that they do not color the dough.

Place some of the lingonberries into a greased silicone mold.

Pour some of the batter over the berries.

Then add lingonberries again and pour in the dough again.

More berries, more dough and add lingonberries on top.

Place our silicone mold with a cake in a preheated oven on the middle level. At the same time, set the time to 35-40 minutes. And the temperature should be 180 degrees.

After cooking, remove the silicone mold from the oven and remove the cake.

Can be decorated powdered sugar, but you can do without it. In any case, the cupcake is already delicious and beautiful.
