Old mill barley drink. Barley coffee: benefits and harm. Beneficial properties of barley coffee

barley drink brewed in a plunger

roasted and unroasted barley

The well-known detective Hercule Poirot is famous for his gray cells, which helped him brilliantly solve the most complicated crimes. Poirot treated his gray cells very carefully, constantly encouraging them with a nutritious decoction, which he drank with his usual accuracy strictly at certain hours. What kind of miracle drink is this?

This barley decoction is a very tasty and healthy drink. It is generally accepted that barley serves as a coffee substitute, but in fact It has nothing in common with coffee - neither in its properties nor in taste does barley infusion resemble coffee at all. Previously, coffee was expensive and was simply mixed with ground barley. In addition to saving, this also brought benefits, because... firstly, the coffee was not so strong, and the person received less caffeine, and secondly, barley added its beneficial properties to the drink.

ground roasted barley

This is how ground roasted barley turns out

Of course, we don’t know exactly how barley broth was prepared for the famous Belgian detective, but we ourselves love this drink very much and prepare it all the time. First, dry the barley grains and fry them in a dry frying pan until they turn brownish - the grains swell and partially burst, cracking slightly. To avoid burning, you need to stir them constantly. We grind the roasted beans in a coffee grinder and brew them in a plunger, but you can, of course, just pour boiling water over them and cook for a few minutes. We drink barley with sugar or honey, sometimes with lemon - amazingly delicious!

A decoction of barley malt– sprouted, dried and ground barley grains. We think that Poirot drank malt broth. It is very nutritious and is used as a blood purifier for various metabolic disorders manifested in skin rashes. As a nutritional supplement, barley is very useful for young children, because... has anti-inflammatory, emollient and enveloping effects. That’s why barley porridges – pearl barley and barley – are so useful.

Recipes from the Encyclopedia of Medicinal Plants:

1. 20 g of grains per 1 glass of cold water, leave for 5 hours, boil for 10 minutes.

2. 2 tbsp. malt flour per 1 liter of boiling water - leave for 4 hours. Drink half a glass 4 times a day, adding sugar or honey to taste.

    Thanks a lot! I'll try it soon.
    It’s not for nothing that coffee is so popular (why, I really don’t know?) - we haven’t drunk it for a long time, now we sometimes brew it, and sometimes we get tired of just tea and herbs. Now let’s try barley, even if it doesn’t taste like coffee, for some reason I have the feeling that it will be very tasty. And useful. Because coffee is of course a big issue.
    Is a plunger the same as a Turk for coffee, or something else? :-)

    A plunger is a glass made of heat-resistant glass in a cup holder with a piston that allows water to pass through and does not allow solid particles (grass, grains..) to pass through. A very convenient thing for brewing. This piston contributes to greater extraction of various substances, coffee and barley drink turn out as if they were brewed in a Turk :) We really like it, it is sometimes used for tea, but we prefer infundirka for tea, because... The tea cannot be over-steeped, otherwise you can remove the infusion from the teapot and that’s it. And you can drain the tea from the plunger :)

    Wow, I didn’t even know about such a thing, but where are these sold?.. In ordinary dishware, or somewhere in special stores?..

    We tried to germinate barley and rye, the description here is about malt:

    We haven’t tried brewing it yet, we’ll try it one of these days, then I’ll write about it later. :-)

    Today we drank a drink made from malt - sprouted grain, roasted in the oven until brown, ground, brewed - very tasty, aromatic, just as we wanted.

    And we tried just grain, dry, roasted and brewed - I didn’t like it at all, there’s no such taste, so I won’t even do that anymore, I don’t really want to drink.

    But with malt according to the first option - it’s just great!! I will do it all the time now.

    I’m reading a book alone, and yesterday I accidentally came across this phrase:

    “I gave him a recipe for a barley drink for insomnia.
    - What if it doesn’t help?
    “It will definitely help,” I smiled.”

    Exactly, it’s true - we now drink every day, we noticed that everyone began to sleep better and much more soundly.
    So, whoever suffers from insomnia, drink barley drink, it will definitely help! :-)))

    What’s good is that you can give it to children too.

    We tried just roasting barley, without soaking and sprouting, for a drink, the drink also turned out, but it was quite different from the one with sprouting. It turns out much tastier with barley malt, but roasted barley is just not the same. So for a tasty drink, you need to make malt!

    As a child, my mother cooked porridge for us, which we called chocolate :) From fried oatmeal: she fried the oatmeal in a dry frying pan, then added milk, and everything else :) Mom herself had already forgotten the exact recipe, but I’m describing it from memory, because . I always watched the preparation of my favorite porridge :) And a drink made from roasted dry barley is very reminiscent of it in taste :) I want to try roasting and brewing ground barley. And malt was generally considered a delicacy no worse than candy :) So it’s just two different tastes :) You need to fry carefully and stir all the time, without stopping, because if it burns a little somewhere, it will be immediately noticeable and the taste will spoil :)

    I fried it in the oven, it fried very well, evenly, I didn’t have to stir it, so I did without a frying pan. And yes, the taste is different, I liked the malt one more, especially since it’s so easy to turn barley into a malt delicacy - it would be a sin not to use it. :-)))

Natural black coffee is not for everyone. People suffering from heart disease or high blood pressure cannot drink it; it is harmful to patients with peptic ulcers and gastritis. But what to do if you are a desperate coffee lover, and your health does not allow you to enjoy your favorite drink? In such cases, its substitutes, such as barley coffee, come to the rescue. Of course, it will not be able to give you the same pleasure as a natural drink, but it will bring significant benefits to the body.

The benefits of barley analogue

Barley-based coffee can easily be considered a healthy food product. It contains no caffeine at all, it tastes good and is absolutely safe for the heart and other organs. True, it tastes and aroma very vaguely resembles real black coffee.

The basis of this coffee is barley grains, known for their many beneficial properties. They help with diseases of the kidneys and gastrointestinal tract, eliminate inflammation of the mammary glands, and stabilize the functioning of the nervous system. Barley owes its healing qualities to its rich chemical composition. Grains include:

  • proteins;
  • carbohydrates;
  • fiber (in huge quantities);
  • vitamins A, B, E, D;
  • the most useful micro and macroelements: phosphorus, potassium, calcium, iodine, magnesium.

Barley coffee has the following medicinal functions:

  • normalizes the activity of the nervous system;
  • eliminates malfunctions in the cardiovascular system;
  • has a beneficial effect on the gastrointestinal tract, normalizing the functions of the digestive system;
  • helps in healing the kidneys, spleen, liver;
  • improves blood circulation;
  • has a diuretic effect;
  • eliminates hormonal imbalances in the body.

Attention! Barley coffee can be easily included in your daily diet. The drink is not addictive, has only a positive effect on the body and, thanks to its tonic effect, effectively removes extra pounds.

Harm and contraindications

There are no contraindications or harmful consequences from drinking barley drink. You can drink it daily, but in moderation - no more than 2-3 cups per day.

How to make a drink at home

In many stores you can purchase ready-made preparations for such coffee - roasted and ground barley grains. It is enough to brew them in a Turk, as is the case with natural coffee.

You can also make a healthy barley drink yourself from scratch. To do this, buy large grains of barley, sort them, wash and dry them. Then place them in a kitchen frying pan and fry thoroughly, stirring occasionally. Finished grains should not be overcooked or burnt, otherwise the drink will turn out tasteless.

Grind the raw materials in a coffee grinder and brew like traditional coffee. For one serving of drink, take 2-3 teaspoons of grains and 200-300 ml of water. After filling the raw material with boiling water, boil it over low heat for 10-15 minutes, remove and leave to infuse.

Advice. To improve the taste of the drink and give it richness, add a little chicory to it.

A drink made from barley grains cannot replace coffee and you should not turn your choice to it only when looking for a replacement for coffee. With the advent of all kinds of coffee, cereal drinks faded into the background and were undeservedly forgotten. After all, due to its benefits, “coffee made from barley” was once recommended for medical and baby nutrition.

Healthy barley drink

Today, various types of such drinks are often found; of course, many of us purchase them either out of curiosity or trying to reduce consumption. But, if you simply surrender to the pleasure of the unique taste of a barley drink, the benefits of which lie in the absence of caffeine, and in vitamins, and in the content of microelements, then your diet of hot drinks will become, by no means, richer.

Pleasant and beneficial qualities include the ability of this drink to influence the functioning of the gastrointestinal tract and maintain the balance of hormones. Barley coffee drink, when consumed regularly, can provide water-salt balance and have a positive effect on the functioning of the nervous system. Since coffee is contraindicated for many people for various reasons, cereal “coffee” becomes a good alternative.

The barley grains from which drinks are made contain components that allow them to be used in the treatment of a number of diseases. And derivative products from this grain have the same beneficial properties. Barley, in addition to proteins and carbohydrates, contains a lot of fiber. It contains potassium, phosphorus, iodine, calcium and a number of vitamins: A, E, D and B. Barley drinks are approved for consumption by expectant mothers and children.

Barley coffee drink

They can be produced with the addition of chicory, a certain amount of blueberry extracts, and other additives that enrich the drinks with new tastes and properties. To get only the good from life, even in such drinks you should know when to stop and always read the ingredients, because you better know your individual intolerance. Any abuse, even in such a simple product as barley drink, is harmful. Today you can buy drinks from roasted and ground beans, which are brewed like coffee beans, or instant drinks - which are diluted with hot water and, if desired, cream or milk is added.

We want to tell you about undeservedly forgotten, but tasty and healthy drinks made from barley. We hope that after reading the information we have presented, you will agree that barley drinks should take pride of place in the menu of every person trying to take care of their health.

Like any product, drinks made from this cereal also have some contraindications. There are very few of them, but it still doesn’t hurt to know about them.

Long-term oblivion does not mean that the product is bad

For a long period, there was an opinion that of all agricultural cereal crops, barley is the least useful and valuable from the point of view of microbiological analysis. At one time it was even believed that pearl barley, which is made from barley, was an empty and useless product. What can we say about barley drink? The benefits and harms of this product were not even discussed. Most likely, this is due to the fact that its cost is relatively low and in times of famine it was barley that became a common guest on the tables of low-income people. He helped the poor both during the war and during the years of crop failure.

Barley is completely unpretentious in cultivation and grows almost throughout Russia. And what is always at hand, as is known, is usually perceived without much reverence. In addition, the direct dependence of the diet on material well-being is too obvious, and pearl barley is a traditional food during hard times. But everything flows and everything changes.

In recent years, interest in barley as a “healthy food” food has increased significantly. This trend cannot but rejoice. It affected not only barley, but also other gifts of the earth, in particular, quinoa and amaranth, which returned to our tables under exotic, overseas names - quinoa and amaranth. But they are not at all a curiosity for the Russian taste. By the way, both plants are considered weeds, and gardeners fight them mercilessly.

Barley drinks have returned to our diet no longer as cheap substitutes for tea and not as decoctions of medicinal plants to treat or restore the body weakened by disease, but as complete components of a healthy menu for all family members.

Beneficial features

Barley drinks have unique beneficial properties. They help improve the functioning of the gastrointestinal tract, cleansing the digestive system of waste and toxins. Barley helps eliminate cholesterol and prevents the formation of kidney and gallstones. It is hypoallergenic, so it can be added to the list of dishes for people prone to somatic reactions to various types of foods.

If you include any of the barley drinks in your daily diet, then be sure that in old age you will not begin to develop senile dementia. The fact is that one of the unique properties of barley is its high content of silicic acid, which destroys aluminum oxide, and aluminum alloys are actively used in the production of food dishes and cutlery. During contact with them, a chemical reaction occurs, as a result of which aluminum in an easily digestible form enters our body and settles in the cells. The consequence of the accumulation of harmful metals is Alzheimer's disease.

Contraindications

Barley drinks have virtually no contraindications. Two restrictions apply only to the following cases:

Barley coffee

Coffee made from barley is called a surrogate for real coffee. However, the so-called “Barley” coffee drink only tastes like coffee. Unlike the real thing, it does not excite the nervous system and is suitable not only for a morning meal, but also for drinking throughout the day. Barley drink, the benefits of which are undeniable, is allowed even for small children.

You can buy ground barley coffee at the store, but it’s easy to make your own. Unpeeled barley grains should be fried in a dry frying pan until light brown and ground in a coffee grinder. Ground beans are brewed in a coffee grinder at the rate of one spoon per cup of boiling water. The result is a brown, bitter drink, slightly reminiscent of coffee. It is customary to drink it with sugar and milk or cream.

Drinks “Barley Ear” and “Golden Ear”

These two barley drinks are analogues of ground coffee. They are sold in regular supermarkets in the grocery section.

“Ear of Barley” contains roasted ground barley grains and chicory root. The brewing method is indicated on the packaging. As a rule, one tablespoon of powder is required for one large mug. Barley coffee is brewed in the same way as regular coffee, in a Turk or coffee maker.

“Golden Ear” is a mixture of barley and rye grains. It is prepared in the same way as “Ear of Barley” or regular coffee.

It’s probably time to stop treating “Barley” and “Golden Ear” as cheap analogues of Brazilian coffee. The “Ear of Barley” drink resembles traditional coffee only in its brewing method and color. Its properties and taste are in no way similar to coffee, and its health benefits are significantly superior to the latter. Negative side effects can only be associated with the quality of barley raw materials and the additives that will be included in the drink.

Malt drink

Barley malt drink is a real storehouse of vitamins and beneficial microelements. For this, the grains need to be germinated within one to two days. As soon as the white sprouts hatch, the grains should be washed and dried. Grind the dry grains and pour boiling water over them. Leave in a warm place for 30-40 minutes. For two or three tablespoons of ground barley, one and a half to two glasses of boiling water is enough.

Can be prepared for future use and used as needed. They are stored both whole and ground.

Kissel

Barley jelly is made both from purified grains, that is, from pearl barley, and from unthreshed ones. The proportions look quite arbitrary: at least 50 g of barley is required for one liter of water. If you like thick jelly, add more.

Barley is filled with water and placed on fire. After boiling, cook for another 20 minutes. Then it infuses and cools. Only the drink made from unrefined barley is filtered.

Barley jelly is a traditional dish for Russia. Previously, it was boiled thick and eaten with butter, seasoned with a pinch of salt. Sweet jelly with honey or berries was prepared for children.

Barley jelly is by no means a primitive dish with a couple of options. You could write a whole book about the methods of making jelly from barley, because this drink can be brewed from fresh unthreshed grains, from dry peeled grains, and from sprouted grains. It is made in different thicknesses, eaten sweet and salty, diluted with butter, meat and vegetable broth.

Barley jelly has a fairly neutral taste, so it can be combined with a wide variety of foods.

On its basis, formulas are prepared for feeding infants if the mother has little milk of her own.

Mugitya, damaicha and porichha

Mugitya, damaicha and porichha are three names for the same barley drink, very popular in Japan, China and Korea. It is similar to the Russian one, which is sold in our stores under the name “Summer”.

This is barley coffee made from whole, unthreshed, roasted and ground beans without any additives in the form of milk powder, sugar or preservatives. It is brewed like regular coffee, but it is customary to drink it cold, putting a slice of lemon and ice in a cup. This drink is also produced in the form of an instant concentrated powder.
