  • 1 glass of milk

  • 2 teaspoons baking powder
  • 2 eggs
  • 1.5 - 2 cups flour

My glasses are 250 grams. I use glasses and spoons rather than weights in this recipe.

The ingredients are very simple, despite their quantity. Pancake dough is easy to prepare. For the dough you will need kefir, I took regular kefir 2.5% fat. We buy milk at the market, I use village milk.

We also need cocoa, salt, sugar, boiling water, flour and baking powder. To prepare the dough we need a bowl.

First we need to brew cocoa. To do this, pour cocoa and sugar into a bowl, add three tablespoons of vegetable oil and pour boiling water over everything. I stir with a whisk. Next, I add milk to the cocoa bowl. I boiled the milk in advance. My milk is cold. Thus the mass became cold.

I combine flour with baking powder. You will need two teaspoons of baking powder, without a slide. I took 1.5 cups of flour (250 gram glasses), but as it turned out this was not enough, so I added another half a cup of flour, in total, I got 2 cups of flour.

You look at the consistency of your dough, add 1.5 flour and try. If you feel like there is not enough flour, then add more flour. Sift the flour through a sieve before adding to the dough.

I mix the flour with a whisk. There may be lumps in the dough, it's not a problem. Let the dough sit for another 15-20 minutes, then stir it again with a whisk, all the lumps will disperse.

This is my dough. It must stand at room temperature for 20 minutes to 30.

If you think that there is not enough cocoa, or you are a big fan of dark chocolate, then you can add more cocoa. But for my taste, two spoons is enough, especially if the cocoa is of good quality.

The dough turns out homogeneous, with air bubbles. I liked the dough, it’s easy and quick to prepare. Leave the dough for half an hour to allow any lumps to disperse.

After half an hour, I mix the dough again and start baking pancakes. For the first pancake, I grease the pan with vegetable oil, then there is no need to do this, the pancakes come off the pan well. The main thing is to use a non-stick frying pan.

I have a small frying pan; I use half a ladle of dough for each pancake. The pancakes all come out in holes.

Fry pancakes on both sides. Pancakes fry very quickly, especially if the pan is very hot. But make sure they don't burn. Fry for a minute on each side. Turn over with a spatula.

Each pancake can be greased with butter, so they will be softer and their taste will be creamy. Pancakes also don’t stick together if you grease them with butter. But I didn’t do this; the chocolate pancakes didn’t stick together.

  1. Mix kefir, soda, sugar, salt and eggs with a whisk. Gradually add flour and cocoa. The dough is thick, like pancakes.
  2. Boil the milk. Constantly stirring the dough, pour in the boiled milk.
  3. Our dough has become more liquid, a little thicker in consistency than regular pancake dough with milk. Add vegetable oil.
  4. That's it, the preparation of future pancakes is ready. The dough should stand for 30 minutes.
  5. Bake in a frying pan, well heated and greased with vegetable oil. Before baking a new pancake, go over the pan with a silicone brush dipped in vegetable oil.

Ingredients: 2 eggs, 2 teaspoons dry yeast, 600 g flour, 200 ml milk, 20 g cocoa, 80 ml vegetable oil, 25 g sugar, 50 ml yogurt, 3 g salt.

For filling: 350 ml cream 30% fat, 50 g powdered sugar, 100 g grated dark chocolate, 50 g ground hazelnuts.

To prepare the filling, whip the cream, add powdered sugar, grated chocolate and ground hazelnuts, mix thoroughly.

When the dough has risen, add the egg yolks, ground with salt and sugar, softened butter, mix everything thoroughly.

Separately, beat the egg whites and cream, combine them and carefully fold them into the dough. Let the dough rise again.

Bake pancakes in a hot frying pan greased with vegetable oil.

Finely chop the walnuts and mix with liquid honey.

Step 2. Bake pancakes. Do this as usual. You can use a special pancake maker with a non-stick coating. If it is not there, bake in any frying pan. Bake pancakes on both sides. Pour the batter into the pan in a not very thick layer, because the thinner the pancakes, the tastier they are. When baking, add oil only for the first pancake; the rest will not stick - the dough already contains oil. The pancakes are ready.

Step 3. Collect dessert. Place some cherries on the first pancake and sprinkle them with sugar. Place the second pancake on top. Melt the chocolate mixed with cream in a water bath. Pour chocolate and cream onto the second pancake. Assemble the pancakes into a triangle. Serve the pancakes hot with cherry topping and a scoop of ice cream. This is where the name of this dessert is justified - ice and fire.

In anticipation of Maslenitsa, I always can’t resist and start baking pancakes a week earlier. Some pancakes immediately ask to be repeated, since I bake them in small batches. On the one hand, it’s good when there are a lot of pancakes and you can safely eat them and not be afraid that someone won’t get enough, but on the other hand, baking the same ones all the time is boring!
