I am sure that each of us has at least a dozen recipes, inherited, one might say, by inheritance from mothers and grandmothers. Many, for sure, even have notebooks with the most successful recipes that have been proven on more than one generation. I have such a little thing, and I often use the recipes from this notebook. And the other day, once again looking through page after page, I came across one absolutely wonderful recipe for an unforgettably tasty and easy-to-prepare sweet - chocolate cookie sausage. This is a rather old recipe, without condensed milk. At the heart of: cookies, cocoa, milk, sugar, butter and nuts. It was according to him that we always prepared a dessert chocolate sausage in childhood, and I remember this taste: very chocolate and not at all sugary, moderately sweet, pleasant, creamy, but not greasy. If you have not tried such a chocolate sausage yet, or if you also want to repeat a forgotten delicacy, a step-by-step recipe with a photo will come in handy!

Ingredients:

  • sugar cookies - 400-450 g,
  • milk (2.5%) - 5 tbsp. l.,
  • sugar - 200 g,
  • cocoa powder - 4 tbsp. l. with a slide
  • butter - 180 g,
  • nuts (I have walnuts) - 100 g,
  • powdered sugar.

How to make chocolate chip cookies

First, I suggest preparing the nuts. In such a sausage, you can take any nuts, but tastier and more harmonious, as for me, it turns out with walnuts. We check the nuts for the presence of remnants of the shell and partitions, remove all unnecessary and send the nuts to a dry frying pan. You can warm them up whole, as is, or pre-grind, and then warm them up. I crush the nuts with a wooden masher right in the pan. Grind finely or coarsely - at your discretion.


After that, we heat the chopped nuts until a light, rare crackle and a bright nutty aroma appear - this is, on average, 5-10 minutes. Stir occasionally during the process so that they do not burn.


During this time, you can crush the cookies into crumbs. If you like to have more large fragments in the sausage on the cut, you can break some of the cookies into large pieces. Of the modern devices for crushing cookies, a blender is ideal. And in the old fashioned way - with the help of the same crush. I liked the second option better. So that the cookie crumbs do not scatter all over the kitchen, we put the cookies in a bag, let out the air, tie and knead the cookies. Simple, fast and convenient.


Mix the nut crumbs with crushed biscuits.


Now let's prepare the chocolate-milk mixture. Mix cocoa powder with sugar. In order to achieve the uniformity of the chocolate mass as quickly as possible, it is better to sift the cocoa.


Add milk to dry mixture and mix well. The mass is quite thick.


Add butter chopped into cubes to it and send the container to the stove, turning on its medium heat.


We heat the mass, stirring constantly, until the sugar is completely dissolved. The mixture should not boil. The result should be a homogeneous chocolate mass, without grains of sugar or cocoa.


Divide the cookie-nut crumb into two parts: leave about 2/3 in a common container (we will knead the chocolate mass in it - the basis of the sausage), pour 1/3 and put it aside for the time being. Then pour the entire chocolate mixture into a common container.


We knead the mass until smooth, then in parts we introduce the remaining cookie-nut crumbs until the mass becomes thick, viscous and quite plastic. The mixture should not spread or, on the contrary, be too thick and dry. In the first case, the finished sausage will not keep its shape well, in the second case it will crumble when molded and crumble when cut. You can focus on large parts - they should not fall out of the chocolate mixture. Another option for checking the consistency is that you can easily mold something from the mass, a ball, for example.


Now the sausage can be formed. We cover the working surface with cling film folded in 2-3 layers, or with foil / parchment. We spread a part of the chocolate mass on it, giving it the shape of a rectangular bar (this is easier than trying to immediately form a perfectly even sausage). Now this bar is not very even and neat, but then we can easily fix it.


We wrap our bar in a film and tightly twist the film around the edges, like a candy wrapper, thereby forcing the chocolate mass to become denser. Now you can roll up the sausage, giving it a more accurate rounded shape. From the indicated amount of ingredients, I got 3 small pot-bellied sausages.


We hide the formed chocolate sausages in the freezer for about 1 hour, after which you can take them out and take them out of the film. It is better to store the dessert in the “package” in the freezer, cut into slices - on the top shelf of the refrigerator.

Cut the sausage into slices and serve! The slices are perfectly even, the sausage does not crumble and is very easy to cut. Yummy!

Then put a pack of butter in a small saucepan-ladle and add milk to it.
We heat the milk with butter until the latter dissolves. Let's not boil.

Chop the remaining nuts with a knife, but not very finely.

We combine cookies and nuts with a scrolled mixture.

Mix evenly with two spoons.

Now let's prepare the chocolate sauce. To do this, in a small saucepan, mix cocoa powder, sugar and vanilla sugar. If there is no vanilla sugar on hand, it is quite possible to do without it.

Add milk, mix until smooth and put on a very small fire. Heat, stirring, for 7-10 minutes, no more, not allowing to boil. During this time, the sugar has time to almost completely dissolve and will not be felt in the finished chocolate sausage.

Take the saucepan off the fire. Let the sauce cool down a bit, literally 5-7 minutes, and lower the butter cut into pieces into it.

Stir with a spoon until the butter is completely dispersed and the chocolate sauce becomes completely homogeneous.

Pour warm sauce into cookies.

Carefully, without haste, mix. If it is difficult to stir with a spoon, you can do it just with your hand.

Depending on the type of cookie, and also on the type of butter, the mixture for chocolate sausage sometimes turns out to be rather dry, which makes it difficult to mold a dense sausage that does not crumble later. For this unpleasant case, there is one little secret - you need to add a small beaten egg to the finished mixture, or at least half of it. The mixture becomes noticeably more plastic, and the sausage is molded without difficulty. But this time the egg was not needed.

So, the finished mixture is divided in half. We put one half in a regular plastic bag, I have it 25 cm wide, and form a dense chocolate sausage.

We do the same with the second half. We got two such cute chocolate sausages, about 22 cm long and about 5 cm in diameter:

I do not advise wrapping the mass in foil, because it tightly sticks to chilled chocolate sausages.

We clean for 4-5 hours in the refrigerator, and preferably at night. If it’s completely unbearable, you can put it in the freezer for an hour, no more, and then try it with tea. Store the sausage simply in the refrigerator, it is not necessary to put it in the freezer.

And one more piece of advice. It is better to cut chocolate sausage with a wide, so-called chef's knife. The slices are even and do not crumble.
