Recipe for royal cheesecake with cottage cheese

In order for our royal cheesecake to turn out fluffy and melting in your mouth, we will need:

  • 5 fresh chicken eggs, medium in size
  • 500 g of crumbly high-fat cottage cheese (the fattier the cottage cheese, the juicier the dessert)
  • 200 g butter
  • 1 cup of sugar
  • 2 cups of flour
  • 1 teaspoon baking powder
  • Additives to taste: vanilla, raisins, dried apricots or nuts.

How to cook royal cheesecake

The royal cheesecake loves gentle hands.

You know, there are some dishes that men do best: meat, for example, or salads. Probably because it is not difficult for strong male hands to cut the necessary ingredients correctly and evenly. The taste of the future dish really depends greatly on this.

But gentle, soft and kind women’s hands are great at making dough, and it’s important to knead it by hand. It’s just that the dough is originally ours, women’s.
Let's get back to the recipe.

Right now, turn on the oven and adjust the temperature to 180 degrees.

The process of preparing royal cheesecake is described step by step and consists of three parts.

Filling and its secret ingredient

Place the cottage cheese in a large cup and knead it thoroughly with your hands. Then break all the eggs into the cottage cheese and add soda and half the sugar.

Beat the mixture well with a mixer, and then add whatever you like: a pinch of vanilla sugar or cinnamon, pieces of dried fruit or chopped nuts. This time I finely chopped the dried apricots:

and mixed it into the curd-egg mixture

But the secret ingredient is not the additives, but the mood in which you are now preparing the pie. Kindness, love and cordiality - these are the feelings your royal cheesecake should absorb, although this is not visible in the photo.

Unusual dough

What many people love to make this dessert for is the dough. More precisely, for his absence.

In a separate bowl, grate the butter on a coarse grater.

If it is very soft, you don't have to rub it. Add the remaining sugar and all the flour. Now we immerse our hands in this mixture and begin to vigorously rub it between our palms.

The crumb should be fine and soft so that it is pleasant to plunge your hands into it. Ready?

Forming the cake

Grease the mold for our cheesecake with oil (I previously covered the mold with baking paper) and carefully pour half of the crumbs into it.

Note: - an interesting version of royal cheesecake (the recipe can be found at the link).

Having leveled the layer with a spatula, pour the filling with cottage cheese onto it.

We fill all this splendor with the remaining crumbs, run a spatula over the surface again to make it beautiful, and send the pie to the oven.

The royal cheesecake is baked in the oven for about 45-50 minutes. Do you feel the aroma? You can check the readiness of the dessert the old-fashioned way: by poking a toothpick into the middle.

Entertaining variations

Sometimes the same recipe is used to prepare royal cheesecake with apples. To do this, place a thinly sliced apple on top of the curd filling and sprinkle it with a mixture of cinnamon and sugar. Then they also cover everything with the remaining crumbs and bake.

Another interesting option: chocolate royal cheesecake

An excellent recipe for children who don’t like cottage cheese, but love chocolate muffins. The recipe is the same, but add three to four tablespoons of cocoa to the crumbs. Then the dessert turns out very beautiful in cut.

In real life, the royal cheesecake looks even better than in the photo, and try it yourself how it tastes. Using this recipe, even a housewife who is not experienced in cooking can prepare a pie. Believe me, this dish will become your specialty, and every guest will definitely want to find out your recipe for a wonderful dessert.

  • 3\4-1 tbsp. sugar or powder;

Preparation progress:

Step 1. Grate the butter, set aside a small piece for greasing.

Step 2. Sift the flour into it, add 2 tablespoons of sugar, soda and citric acid. Now you need to quickly grind the mixture. The dough looks like crumbs (example on photo).

Step 3. Place the dough in the refrigerator so that the butter does not melt while the filling is being prepared.

Step 9 Remove, let cool and serve.

How to cook royal cheesecake in a slow cooker?

For those who prefer to use modern household appliances, we have adapted the classic recipe. The products used are the same as in the previous case, so we will not repeat them. You can prepare the dough step by step, as indicated in the basic recipe.

To bake a pie, you need to grease the bowl with oil, lay out the dessert in layers and set the “Baking” mode. In most multicooker models, dessert will be ready in an hour and a half. After the signal, you should not switch to the “Warming” program; on the contrary, you need to remove the bowl and let the treat cool at room temperature. After this, you need to decorate the cheesecake, cut it and serve it.

Tip #1. To make the pie bake better, you can make several layers of dough and cottage cheese. To do this, the crumbs and curd mass need to be laid out in thin layers, often alternating.

Tip #2. Baked goods can be easily removed by cutting two wide, long strips of baking paper and placing them crosswise on the bottom of the multicooker. They need to be covered with a regular round sheet on top. The ends should be long and extend beyond the edges of the baked goods. When the cake has cooled, you can simply pull the paper and the cake will easily come off.

Tip #1. The amount of semolina and eggs needs to be adjusted independently; the cereal gives tenderness, and the eggs give density. In addition, the volume of ingredients depends on the quality of the cottage cheese. A fatty homemade product with moderate moisture content is ideal. If the cottage cheese is dry, you can increase the number of eggs and even add a little cream.

Step-by-step cooking instructions:

1. Take a bowl, break the eggs into it for the dough, add sugar, salt and sour cream. All products must not be cold.

6. At this time, it is better to preheat the oven to 200°C.

7. Line a dry pan with parchment or grease it and pour the chocolate dough into it.

8. Transfer the curd mass to the central part so that it does not come into contact with the sides. Place in the oven.

9. Depending on the density and fat content of the cottage cheese, the cheesecake is baked from 50 minutes to an hour and a half. The finished dough is slightly springy, and the curd mass has a non-liquid texture.

10. It is better to let the delicacy cool in the mold so that it does not settle, then take it out and serve.

11. You can simply and beautifully decorate the pie using powdered sugar, chocolate and seasonal berries.

Tip #2. To surprise your loved ones with an unusual pie, you can alternate curd and chocolate layers, so you get a pastry that looks like a zebra.

Royal cheesecake with cottage cheese. History of cheesecake

The name of the dish comes from the unusual word “vatra”, the meaning of which is deciphered as fire or hearth. Experts believe that this is explained by the baking of the first cheesecakes invented over an open fire.

There is an assumption that the shape of the bun resembled a hearth to ancient people. Cheesecakes first appeared in Ukraine, and then began to spread in Russia and other countries. The filling of this pastry can be anything, but according to the classic recipe it is sweet cottage cheese. Cheesecakes with jam and boiled condensed milk are also known. Residents of Siberia, for example, bake them with mashed potatoes and call them shangami.

All of the listed dishes are combined according to the principle of the same shape - a round flatbread with a special recess for the filling in the middle.
