First step:

Step 1: prepare the potatoes.

Using a vegetable peeler, peel the skins from the potatoes and then rinse thoroughly under running warm water. Next, place the tubers on a cutting board and chop into pieces.

Place the chopped ingredients into a medium saucepan and fill completely with regular cold tap water. Place the container on medium heat and cover with a lid. This procedure must be done so that the liquid boils faster. Immediately after this, lightly turn on the burner, add a couple of pinches of salt, mix everything thoroughly and boil the potatoes until tender. On average it takes me 30–40 minutes.

After the allotted time has passed, turn off the burner, use oven mitts to take the pan and carefully drain all the liquid, holding the lid ajar. Now, using a potato masher, mash the potatoes until pureed. We leave the container aside for a while so that the component can become warm, but in the meantime, prepare other products.

Step 2: prepare the pork.


We thoroughly wash the pork under running warm water and place it on a cutting board. Using a knife, we clean the meat from veins, films and, if necessary, excess fat. Now cut the component into small pieces and move it to a clean plate.

Using a meat grinder, grind the pork directly over a medium bowl and set aside for now. Attention: To ensure that the casserole turns out with a beautiful, uniform filling, I recommend passing the meat through a device with a fine grid at least twice.

Step 3: prepare the champignons.


Wash the champignons thoroughly under running warm water and place on a cutting board. If necessary, use a knife to clean them from coarsened and damaged areas on the caps and legs, and then chop them into small pieces. Transfer the chopped mushrooms to a free plate.

Step 4: prepare the onions.


Using a knife, peel the onions and rinse well under running water. Place the component on a cutting board and finely chop into cubes. Then pour the chopped onion into a clean plate and begin preparing the filling.

Step 5: prepare the filling.


Place a piece of butter in a frying pan and place over medium heat. When the contents of the container are completely melted, add chopped onions and champignons. Stirring from time to time with a wooden spatula, fry the ingredients until a soft golden color appears. Immediately after this, add the minced pork to the pan, as well as salt and freshly ground black pepper to taste. Having mixed everything again with available equipment, we continue to prepare the filling until the excess moisture is gone and the ground meat begins to turn golden. Finally, turn off the burner and set the pan aside. Let its contents cool slightly.

Step 6: prepare potato casserole with meat and mushrooms.


When the mashed potatoes become warm, add sour cream to it and also break the eggs. Using a tablespoon, mix everything thoroughly until smooth and then transfer the entire mass to a large bowl.
Using a mixer, beat the puree at medium speed until it has a fluffy and tender consistency.

Now, using a pastry brush, grease the bottom and walls of a deep baking dish with a small amount of vegetable oil. Lay out the first layer 2/3 of the total mass puree so that you get bumpers on all sides. Place the filling on top and level it with a tablespoon. At the end, we cover the fried mushrooms with minced meat with the remaining puree, level it using available equipment, and so that the casserole is well browned, we also grease it with sour cream.

Turn on the oven and preheat it to temperature 180 degrees. Immediately after this, place the container on the middle level and bake the dish for 45–50 minutes. After everything, turn off the oven, and use oven mitts to remove the pan and set it aside. Let the casserole become warm.
