To prepare chopped chicken cutlets with cheese we will need

  • Chicken fillet - 600−700 g (meat from 2 chicken breasts)
  • Cheese - 150 g
  • Onion - 1 head
  • Garlic - 1 clove
  • Kefir - ½ cup (can be replaced with sour cream or cream)
  • Starch - 2 tbsp. spoons
  • Fresh herbs - 1 small bunch
  • Salt, pepper, spices
  • Vegetable oil for frying

How to cook chopped chicken cutlets with cheese

  1. First, let's prepare chopped minced meat - that's what it can be called. It is prepared not in a meat grinder, but by hand. Cut the chicken fillet into thin strips lengthwise and then crosswise into cubes. The pieces should be small, no more than 1x1 cm. If you have a food processor that allows you to get pieces of this size, but not minced meat, use it.
  2. Now chop the cheese into exactly the same pieces as the chicken. Let's add it to our minced meat.
  3. The onion must be finely chopped. Garlic is exactly the same. The greens that you like, for example, I use parsley and dill 50/50, finely chop and add to the resulting mass.
  4. Let's add salt and pepper. The main thing is not to get carried away with salt, since cheese can sometimes be salty and will add extra salt to the cutlets. Mix everything carefully, add kefir, starch and try to achieve a uniform consistency. Starch will serve as a connecting link.
  5. Now you need to heat the oil in a frying pan. Next, carefully form the cutlets. You can place the cutlets like pancakes straight from a spoon, or you can stick them with your hands and place them, for example, on a wide cutting board. You will get 12-15 chicken cutlets.
  6. Fry the cutlets for 3-5 minutes on each side. In principle, they fry quite quickly, but to ensure that they are fried from the inside, do not make them too large. Almost like pancakes.
  7. When all the cutlets are fried, you can put them on a baking sheet or glass dish and put them in the oven, heated to 180 degrees for 10 minutes, so that they are certainly fried inside.
  8. Well, now our chopped cutlets with cheese are definitely ready. We decorate with greens and invite everyone to the table!

The benefits of chicken cutlets with kefir

  • Vitamin A responsible for normal development, reproductive function, skin and eye health, and maintaining immunity.
  • Vitamin E has antioxidant properties, is necessary for the functioning of the gonads and heart muscle, and is a universal stabilizer of cell membranes. With vitamin E deficiency, hemolysis of erythrocytes and neurological disorders are observed.
  • Vitamin PP participates in redox reactions of energy metabolism. Insufficient vitamin intake is accompanied by disruption of the normal condition of the skin, gastrointestinal tract and nervous system.
  • Potassium is the main intracellular ion that takes part in the regulation of water, acid and electrolyte balance, participates in the processes of conducting nerve impulses and regulating pressure.
  • Magnesium participates in energy metabolism, synthesis of proteins, nucleic acids, has a stabilizing effect on membranes, and is necessary to maintain homeostasis of calcium, potassium and sodium. A lack of magnesium leads to hypomagnesemia, an increased risk of developing hypertension and heart disease.
  • Phosphorus takes part in many physiological processes, including energy metabolism, regulates acid-base balance, is part of phospholipids, nucleotides and nucleic acids, and is necessary for the mineralization of bones and teeth. Deficiency leads to anorexia, anemia, and rickets.
  • Chlorine necessary for the formation and secretion of hydrochloric acid in the body.
  • Cobalt is part of vitamin B12. Activates enzymes of fatty acid metabolism and folic acid metabolism.
  • Copper is part of enzymes that have redox activity and are involved in iron metabolism, stimulates the absorption of proteins and carbohydrates. Participates in the processes of providing oxygen to the tissues of the human body. Deficiency is manifested by disturbances in the formation of the cardiovascular system and skeleton, and the development of connective tissue dysplasia.
  • Molybdenum is a cofactor for many enzymes that ensure the metabolism of sulfur-containing amino acids, purines and pyrimidines.
  • Chromium participates in the regulation of blood glucose levels, enhancing the effect of insulin. Deficiency leads to decreased glucose tolerance.
  • Zinc is part of more than 300 enzymes, participates in the processes of synthesis and breakdown of carbohydrates, proteins, fats, nucleic acids and in the regulation of the expression of a number of genes. Insufficient consumption leads to anemia, secondary immunodeficiency, liver cirrhosis, sexual dysfunction, and the presence of fetal malformations. Research in recent years has revealed the ability of high doses of zinc to disrupt the absorption of copper and thereby contribute to the development of anemia.
