Recipe adapted from a book by Peter Reinhardt, one of my “favorite bakers.”

The recipe is so successful and the buns are so delicious that now I always make a double batch of dough. Since they “evaporate” faster than the moment of saturation with them comes :-) Along with - these are my favorite buns, even for breakfast.

From time to time, my husband and I like to treat ourselves to quality fast food. But it’s difficult to do it better than at home. very easy to prepare, just like burgers in general.

When preparing hamburgers at home, you can create any flavor combinations, play with fillings and their quantities. The main thing is measure!

Instead of sesame seeds, you can sprinkle the buns with poppy seeds, or skip it altogether.

As for burgers, my favorite is beef burgers, with mayonnaise mixed with balsamic vinegar, cheese and salad. And you??

12 buns

  • 315 grams flour
  • 2 tsp dry yeast
  • 300 ml milk, room temperature

Main dough:

  • 230 grams flour
  • 1 1/2 tsp. salt
  • 3 tbsp. Sahara
  • 1 yolk
  • 60 ml warm melted butter

Besides:

  • 2 tbsp. sesame seeds
  • 1 egg
  • 2 tbsp. milk

1) Prepare the dough: mix milk, yeast and flour in a large bowl. Mix well, cover the bowl with a slightly damp kitchen towel and leave for 1 hour at room temperature.

2) After the specified time has passed, prepare the main dough.

Add flour, salt, sugar to the dough. Lightly beat the yolk with melted butter and add to the dough.

Knead the dough thoroughly, 8-10 minutes by hand or 3-4 minutes, at medium speed with a planetary mixer. The dough should be soft and elastic.

3) Cover the dough with a slightly damp kitchen towel and leave for 1.5 -2 hours. The dough should double in volume.

4) Divide the dough into 12 parts, cover with a slightly damp towel and leave for another 20 minutes.

5) After the specified time has elapsed, form buns from each piece of dough, as if wrapping the edges inward, under the bun.


This way you will get neat balls.

6) Place the buns on a baking sheet lined with parchment or a silicone baking mat. Lightly press the loaves to give them a more flattened appearance.

Cover with a slightly damp towel and leave for 1 hour 30 minutes, at room temperature, in a draft-free place.

7) 1 hour before baking, preheat the oven to 200°C. It is important that it warms up thoroughly before you insert the baking tray with buns.

8) Before baking the buns, beat the egg with milk and use a pastry brush to brush the surface of the buns, immediately sprinkling the tops with sesame seeds.

Everyone has long loved the popular hamburgers, the recipe for which came to us from America. The essential components of this nutritious dish are a variety of sauces, seasonings, a meat or chicken cutlet and, of course, round sesame hamburger buns. Of course, now they can be found on sale in almost every bread department, but it is much more pleasant to prepare the base of the burger with your own hands. You can do this using the recipe below.

Ingredients:

  • milk - 2/3 cup;
  • sugar - 3 tbsp. spoons;
  • salt - 1 teaspoon;
  • dry yeast - 1 tbsp. spoon;
  • warm water (boiled) - 1.5 cups;
  • butter - 3 tbsp. spoons;
  • flour - about 6 cups;
  • vegetable oil - 1 teaspoon;
  • sesame - 2-3 tbsp. spoons.

How to make hamburger buns

  1. First of all, pour the yeast into a bowl with warm water.
  2. Next, bring half a glass of milk to a boil and pour it into a deep bowl. Add salt and sugar there. Add butter to the milk mixture and stir.
  3. When the butter has dissolved, pour the yeast solution into the bowl. Check the temperature of the butter-milk mixture first: to dissolve the yeast, the liquid must be warm, but not hot!
  4. We begin to gradually add flour, kneading the dough. When it becomes difficult to stir the already thickened dough with a spoon, transfer it to the table, continuing to knead and add flour. Do not rush to add the entire portion of flour at once: you may need more or less.
  5. When the dough becomes elastic enough and stops sticking to your hands, grease it with vegetable oil, cover with a towel and put it in a warm place for one hour.

    How to Bake Hamburger Buns

  6. From the dough that has risen and increased in size, we form even balls. You should get approximately 18-20 pieces. Place the dough on a large baking sheet sprinkled with flour or greased with butter. We leave free space between future buns, as the products will increase significantly in size. Cover the workpiece with a napkin and leave it warm for another hour.
  7. Next, coat the dough balls with the remaining milk and sprinkle each bun with sesame seeds. Place the baking sheet in an oven preheated to 200 degrees.
  8. On average, buns are baked for 15-20 minutes. When the products become golden brown, remove the baking sheet from the oven. Let our baked goods cool slightly, after which you can form the hamburgers.

1. Crumble the yeast, add 1 tbsp. sugar, 3 tbsp. flour, add 250 ml of warm water and stir well. Leave to rise in a warm place for 30 minutes.

2. Add turmeric to the suitable dough for a pleasant yellow color of the buns, 1 egg at room temperature (it is better to take it out of the refrigerator in advance), 1 tsp. spoon of salt, 2 tbsp. sugar, 40 grams of soft butter. Mix all ingredients. Gradually sift the flour.


3. Knead the dough, it should be very soft and not stick to your hands. Under no circumstances add too much flour, otherwise you may clog it and it will be dense and hard.


4. Cover the dough with film or a towel and let it rise and increase at least 1.5-2 times in volume.


5. Grease the working surface with vegetable oil, transfer the dough, knead it a little, divide it into 8 parts. This amount of dough makes 8 buns weighing 118 grams each. From each part you need to form a bun, turning the edges inward, forming a smooth top of the bun (watch the video).


6. Place the buns on a baking sheet lined with parchment and leave to proof again for 30-40 minutes. I usually put it in the oven, preheated to 50 degrees, and then turned off.


7. Brush the buns with 1 yolk and 1 tbsp. milk. Sprinkle sesame seeds on top.


8. Bake for 20-25 minutes at 160-180 degrees. Sprinkle the finished hot buns with water and cover with a towel until cool. If you have some buns left over and they won’t be scattered in an instant, store them in a plastic bag so that they remain soft longer.

How to make a hamburger bun?

  • water – 380 ml;
  • sugar, butter - 75 g each;
  • milk – 100 ml;

  1. Dissolve yeast in warm water.

Black burgers appeared not very long ago and immediately attracted the attention of fast food lovers. Of course, no one had seen anything like this before. Everyone is wondering what this culinary miracle is made from. But in fact, everything is simple - a black hamburger bun at home can be prepared with the addition of activated carbon.

  • flour – 250 g;
  • yeast – 1 teaspoon;
  • water – 125 ml;

Ingredients:

  • flour – 350 g;
  • baking powder – 20 g;
  • yogurt – 300 ml;
  • sugar – 20 g;
  • salt – 15 g;
  • oil – 20 ml.

Preparation

  1. Flour is mixed with baking powder, sugar and salt.
  2. Yogurt is mixed with butter, the dry mixture is added and the dough is kneaded.
  3. Divide it into 10 parts and place it on a baking sheet.
  4. Bake burger buns without yeast at 220 degrees for 20 minutes.

Whole wheat hamburger buns


It has long been famous for its beneficial properties. It is preferred by those who are on a diet and watching their weight. Buns for delicious hamburgers, the recipe of which contains whole grain flour, is an excellent solution for a complete and very healthy breakfast.

Ingredients:

  • wheat flour – 200 g;
  • whole grain flour – 150 g;
  • warm water – 250 ml;
  • fresh yeast – 20 g;
  • oil – 20 ml;
  • salt – 1 teaspoon;
  • milk – 30 ml;
  • sesame.

Preparation

  1. Yeast is diluted in warm water and left for 15 minutes.
  2. Add the remaining ingredients, knead the dough and leave to rise for an hour and a half.
  3. Then whole grain hamburger buns are formed, placed on a baking sheet and left for 40 minutes, brushed with milk, sprinkled with sesame seeds and baked at 200 degrees until golden brown.

Brioche bun for burgers

Rye hamburger bun


Hamburger buns can be made not only from wheat flour, but also from rye flour. Better yet, use a mixture of the two types. They come out not only fluffy and tasty, but also healthy, thanks to the bran content. If desired, they can be topped with sesame seeds mixed with cumin or other seeds.

Ingredients:

  • rye and wheat flour - 3 cups each;
  • dry yeast – 10 g;
  • rye and wheat bran - 1 tbsp. spoon;
  • butter – 50 g;
  • salt – 20 g;
  • sugar – 70 g;
  • sesame.

Preparation

  1. Pour 500 ml of hot water into the container, add sugar, butter and stir.
  2. Add wheat flour, salt, yeast, bran and mix.
  3. Add rye flour, knead and leave to rise.
  4. Divide the dough into 16 parts, form balls, place them on a baking sheet.
  5. After half an hour, brush with water, crush with sesame seeds and place the hamburger buns in the oven.
  6. Bake at 180 degrees for 25 minutes.

Hamburger buns - recipe in a bread machine


Making hamburger buns in a bread maker is easy. There is no need to knead anything by hand. You just need to place all the products in the device container and install the appropriate program. When the dough is ready for further work, the device will notify you with a signal. After this, you can already form the blanks.

After all, it is not at all necessary to buy these tasty and satisfying sandwiches at fast food establishments - they can easily be prepared at home from simple and affordable ingredients.

Hamburger buns according to this recipe are not only very tasty and aromatic, but also beautiful - you can hardly distinguish them from store-bought ones. A delicate, evenly porous, fine-mesh crumb is hidden under a thin, soft crust covered with sesame seeds. The hamburger bun recipe includes the following ingredients: all-purpose wheat flour, water, instant yeast, granulated sugar, salt, milk powder, white sesame seeds and butter. Instead of instant yeast, you can use dry (same amount) or fresh/pressed (exactly 3 times more) yeast. In this case, they will need to be first diluted in water, and only then added to the flour.


So, first of all, let's make a dough. You may be asking what dough is and what it is needed for. I won’t write long and hard about the fact that this is a semi-finished product that is used for baking bread and other bakery products and increases the plasticity of the dough. In other words, this mixture of flour, water and yeast helps to achieve a more tender and porous crumb, as well as a richer taste and aroma of the finished baked goods. We will make a thick dough, for which we sift 75 grams of premium wheat flour into a bowl and add a pinch of quick-acting yeast.


Mix everything thoroughly and pour in 50 milliliters of water. The water should not be warm, but preferably a little cool so that the dough does not ferment very quickly.


Mix everything by hand until the flour is completely moistened and there are no dry lumps left. There is no need to stir for a long time, just until it is relatively homogeneous. You should get a slightly sticky and fairly dense dough that comes together well into a ball. Cover the bowl with cling film or cover with a lid and leave for 12-16 hours at 18-20 degrees for fermentation. It's best to steam the dough in the evening so you can bake homemade hamburger buns in the morning. Depending on the room temperature, fermentation time may vary.


A sign that the dough has fermented will be its appearance. First of all, the initially rather thick dough will noticeably thin out, greatly increase in volume, it will be riddled with bubbles and begin to settle.




Now in another bowl suitable for kneading dough, combine 220 grams of sifted premium wheat flour, 1 gram (one-third of a level teaspoon) of quick-acting yeast, 11 grams of milk powder, 6 grams of salt and 12 grams of sugar. It is clear that you will need a kitchen scale, but you can’t do without it.


Mix everything so that the dry ingredients for the dough are evenly distributed throughout the mixture. Then we pour in the dough, which we have already mixed with water.


Now you can stir the dough with a fork or spoon so that the flour absorbs the liquid. Of course, you can immediately knead the dough with your hands if it is more convenient for you. And if you want, you can use a food processor (hook attachment) or a bread maker. When the flour absorbs water, begin to add soft butter into the dough.


You need to knead the dough for buns long enough and intensively - about 10 minutes exactly. It turns out unusually soft, delicate, completely homogeneous and smooth. Round it into a bun and leave it in a bowl, covered with cling film or covered with a lid, for 45-60 minutes in a warm place for fermentation. You can put the bowl in the microwave with a glass of boiling water, then you don’t need to cover the dough - it won’t dry out. Or place the dish with the dough in the oven with the light on, but cover the dough so that it does not dry out and become crusty.



To do this, sprinkle the table with a little wheat flour (the amount is not indicated in the ingredients) and divide the dough into 6 equal-sized pieces. I weighed the dough on a scale, it turned out to be 6 pieces of 88 grams. Why is it so important that the buns are the same size? First of all, they will need the same amount of time for both proofing and baking. Well, the aesthetic side is also important - ready-made homemade hamburger buns will be just right.


Forming such buns is very simple and straightforward. Sprinkle a piece of dough with a little wheat flour so that it does not stick to your hands. Then, using the palm of your hand, beat the dough into a flat cake several times to remove excess air - there is no need for large pores in finished buns.




Turn the ball of dough over, seam side down, and round the future buns. It’s quite difficult for me to show the process without a video, but I’ll try to describe it. We squeeze our working palm, spreading our fingers, as if holding a large orange. Cover the workpiece with your palm in this position and begin to rotate the dough ball counterclockwise. Everything happens easily and effortlessly, while we kind of bend the dough inward a little with 4 fingers, but without pressing.


In this way we roll out all 6 buns. They turn out so neat and smooth.
