Don’t rush to shrug your shoulders in disappointment - like, there’s nothing special here. Everything about this recipe is special! Starting from the selection of tubers, the search for the best seasonings and the process itself - stringing potatoes on a skewer mixed with delicious pieces of lard and meat.

Why with meat? After all, it says “potato kebab”! And that’s all, because the meat in this dish acts as an auxiliary ingredient: it saturates the tubers with fat, making them especially satisfying and appetizing. And how much fun crackling lovers get! Crispy, with the aroma of Caucasian spices - what a snack on a summer evening. Therefore, potato shish kebab with Adyghe salt and bacon is my favorite dish!

To prepare “potato shish kebab” you will need:

  • Potatoes (I recommend only medium-sized tubers) – 20 pcs.

I was cooking for a large crowd of guests, so I charged twice as much. We ate everything!

  • Fatty pork – about 500-700g.

Depends on your preferences. After all, you will place a piece of meat between the tubers.

  • Adyghe or Abkhaz salt - about 70g.
  • Onions (for marinating fatty pork).

If you don’t have such seasoning, you can do the following:

Crush the garlic, mix with salt, add suneli hops and a little ground (preferably red) pepper and parsley powder.

Skewers, good mood and a bottle of chacha. Ladies can be offered not “fire water”, but red wine or homemade Sangria.

This is how we cook potato shish kebab!

Marinate fatty pork with onions. Moreover, squeeze the onion so that there is more juice. No acid like wine vinegar is needed. Don’t forget that the leading role is played by Her Majesty – the potato!

Wash the tubers well. If necessary, use a brush. Baked peel with spices is delicious!

Make cuts on each potato: long longitudinal ones (look as in the photo).

Rub the tubers well with salt and seasonings. Don't be afraid to oversalt. The potatoes will take “for themselves” as much as they need.

As soon as the barbecue has “ripened”, start stringing the delicious food onto skewers.

There should be a piece of meat “hidden” between the potatoes (as in the photo).

The degree of readiness is easy to determine. The original potato kebab should be soft, with a baked brown crust.

Note. On the 2 outer skewers the potatoes are already ready, and on the middle skewers they are half-raw. This is roughly how potato shish kebab is prepared

Ingredients:

  • potatoes (new) – 24 pcs.;
  • onions – 2 heads;
  • olive oil – 3 tbsp;
  • rosemary (needles) – 1 tbsp. l.;
  • crushed black pepper – 1/2 tsp;
  • salt - to taste.

You will also need:

  • wooden sticks – 8 pcs.
  • sheet of parchment (according to the size of the baking sheet) – 1 pc.

Cooking method

1. Before starting cooking, soak the wooden sticks in cold water.

2. Wash the potatoes thoroughly with a vegetable brush. Place the tubers in a saucepan, cover with cold water and put on fire. When the water boils, add salt and cook until tender. Since the potatoes are young, their cooking time will be from 10 to 15 minutes.

3. While the potatoes are cooking, peel and wash the onions.

Cool the finished potatoes slightly and cut each tuber into 2 halves.

Cut the onion in half, and then each half into 4 parts. Do the same with the second onion.

4. Preheat the oven to 190°C.

Alternately thread potato halves and onion pieces onto skewers.

5. In a bowl, combine olive oil, rosemary, salt and pepper.

6. Place the kebabs on a baking sheet lined with parchment.

7. Using a pastry brush, brush the kebabs with the oil and seasoning mixture.

8. Place the pan in the oven and cook for 15 minutes. Do not forget to turn the kebabs from time to time so that they acquire a golden color on all sides.

When wondering what side dish to prepare for barbecue, do not forget that barbecue is already a very satisfying dish in itself and it is very difficult to combine anything else with it. But every time, when eating kebab, you feel the presence of a lack of side dish, that after all, something is missing...

I don’t know where else they prepare something similar, but in one kebab shop, at the request of regular customers, they serve an unusually tasty potato side dish with the kebab.

Potato side dish for barbecue

At first glance, it looks like an ordinary puree, nothing supernatural, but it is precisely under this simplicity that the zest is hidden. This is just a find and I have never tried anything more suitable for a side dish of barbecue. Potatoes boiled in salted water, then threaded onto skewers and cooked over an open fire, and finally mashed with sunflower oil - it's just perfection, amazingly tasty and the best thing you can serve with a shish kebab.
    We will need:
  • Potato
  • Salad oil
  • Salt to taste
First of all, boil the peeled potatoes in salted water until tender. Let it cool, thread it onto skewers according to their capacity and cook on the grill like a regular shish kebab, preferably over low heat. The potatoes should be smoked slowly over low heat and absorb the heat from the wood.

Turning over as you go, as soon as the potatoes are crusty and lightly browned, remove from the heat, peel off the burnt parts from the potatoes and place in a deep bowl for further processing.

Add salt to taste and gradually add butter, beat by hand until smooth. Transfer the finished puree into a serving cup, add a considerable amount of ketchup and serve.


When consumed, mix with ketchup.

Grilled tomatoes for barbecue

This tomato side dish is perfect for barbecue and any meat dishes in general. The main thing in this side dish is to choose ripe red tomatoes; greenhouse tomatoes will not work.


Place small tomatoes on skewers and cook over low heat. In order for the tomatoes to bake evenly on all sides, you need to cook them slowly and turn them often, and the burnt skin will not be difficult to separate.

When consuming, place the top of the head up, separate the skin, put salt and ground black pepper on the top of the head and mix with the pulp by piercing with a fork.

Tomatoes baked over a fire and seasoned in this way can be served as a side dish not only for barbecue, but also for other dishes. And also, in this version, it will be an excellent appetizer for a “stormy” feast.

× 3 eggplants;
× 3 zucchini;
× 6 mushrooms;
× 2 sweet peppers;
× 3 tbsp. olive oil;
× 3 tbsp lemon juice;
× basil (several sprigs);
× 2 cloves of garlic;
× salt and pepper to taste.

You can grill any vegetables

Recipe for preparing a vegetable side dish for shish kebab:

1. Cut the eggplants into slices, add salt and leave for 15 minutes in cold water, then rinse and dry. This is necessary in order to get rid of the excess bitterness of this vegetable. Also cut the zucchini, mushrooms and peppers into slices.

2. For the marinade, mix olive oil, lemon juice, basil and chopped garlic.

3. Pour marinade over mushrooms and vegetables. Leave for one hour so that they marinate well.

3. Grill vegetables and mushrooms for 2 minutes on each side. You can also simply thread them onto skewers. When serving, sprinkle with herbs. You can serve ketchup or chutney sauce separately.

Side dish recipe for shish kebab – mushrooms with cheese

Ingredients:
× 12 large mushrooms;
× 60 g hard cheese;
× 50 g butter;
× green onions;
× 3 cloves of garlic;
× thyme to taste;
× salt and pepper to taste.

If you wish, you don’t have to add cheese, the mushrooms will be savored as is.

Recipe for preparing a mushroom side dish for shish kebab:

1. Clean the mushrooms and cut out the stems. Grate the cheese. Grind the oil with chopped garlic.

3. Brush mushroom caps with garlic oil and grill (or skewers) for 2 minutes on each side. Sprinkle the onion-thyme-cheese mixture over the fried mushrooms and cook for another 3 minutes until the cheese begins to melt. Serve hot.

Side dish recipe for barbecue – potatoes with tomatoes

Ingredients:
× 8 potatoes;
× 2 tomatoes;
× 300 ml cream or 300 g sour cream;
× 130 g hard cheese;
× 50 g butter;
× parsley and green onions;
× salt and pepper to taste.

You can fry any other favorite vegetables along with potatoes.

Recipe for making a side dish of potatoes for barbecue:

1. Cut the potatoes into slices. If the potatoes are small, you can bake them whole. Salt and pepper the potatoes, add herbs and cream, butter and mix well.

2. Wrap each potato in foil and grill for 20-30 minutes. After this, unfold the foil and add chopped tomatoes and cheese to the potatoes and bake for another 10 minutes. You can add bacon here if you wish. When serving, sprinkle with herbs.

Recipe for a side dish for onion and tomato shish kebab

Ingredients:
× 5 tbsp. l. orange juice;
× 1 red onion;
× 4 large tomatoes;
× 3 tbsp. l. olive oil;
× basil, spices, seasonings and salt to taste.

You can also make a warm salad with grilled vegetables.

Recipe for a side dish for onion and tomato shish kebab:

1. Cut a red onion into rings, place it in a bowl with orange juice, add salt and other seasonings. Leave for 10 minutes.

2. Add basil and olive oil and mix well. Chop the tomatoes and mix too.

3. Wrap portions in foil and grill for 10-15 minutes.
