How to grind strawberries with sugar for storage on the refrigerator shelf

Any strawberry is suitable for harvesting, even slightly crushed and overripe. if the strawberries are dirty, then wash them in running water and dry them on cloth napkins; if the berries are clean, then you don’t even need to wash them.

  • Remove the stems from the strawberries. Weigh the berries on a kitchen scale. Place the strawberries in a deep bowl or blender.
  • Measure out exactly twice as much granulated sugar as the strawberries weigh. Use the finest sugar.
  • Crush the berries with a mashed potato masher or puree them with a blender.
  • Pour half the sugar into the strawberry puree and stir until dissolved. Add the other half of the sugar and stir a second time.
  • Place the strawberries in a cool place, such as the refrigerator, and let them brew for 2-3 hours. During this time, stir the mixture several times - the sugar should turn into syrup.
  • Fry the jars washed with soda in a hot oven and cool them. Pour boiling water over the lids and cool too.
  • Place the strawberries, pureed with sugar, into jars and cover them first with parchment paper and then with lids.
  • Store jars only on the refrigerator shelf. If you put them in the pantry, the strawberries will ferment in a few days.

The product can be stored on the refrigerator shelf for no more than 2-3 months. Longer storage will lead to loss of taste of sweet strawberry puree.

How to grind strawberries with sugar for storage in the freezer

For the preparation, instead of jars, you will need rectangular food containers with lids. They fit compactly into the freezer and are approved for use at sub-zero temperatures.

  • Prepare strawberries in the same way as in the previous recipe.
  • Puree the berries with a blender or crush them with a stainless steel masher.
  • Weigh the berry puree and mix with the same amount of sugar. Since the product will be stored frozen, it requires less sugar.
  • Transfer the sweet puree into clean containers and cover them with lids.
  • Place the containers in the freezer.

Frozen strawberries ground with sugar can be stored for up to 12 months. After defrosting, strawberries should be eaten within 1-2 days. Longer storage will lead to severe darkening of the berry puree.

  • Place the berries in one or two layers in containers.
  • Pour the whole berries over the strawberries, ground with sugar.
  • Close the containers with lids and transfer them to the freezer. Turn on the “Quick Freeze” mode.

Strawberries mashed with sugar: recipes

How are we used to processing berries to preserve them for the winter? Of course, making strawberry jam or swirling compote. Tasty? Naturally! Healthy? Partly... The fact is that during the heat treatment all vitamins are destroyed, what remains in the dessert? Boiled pulp and sweet syrup. Meanwhile, there are many recipes that retain all the benefits, almost like “from the bush,” if you prepare the jam “raw.”

What are the health benefits of strawberries?

  • Sahara;
  • pectin;
  • phytoncides;
  • vitamin C;
  • carotene;
  • manganese, potassium and chromium salts;
  • acids: folic, malic, salicylic, citric, quinic.

The berries have a moderate antiseptic effect and can be used as a diaphoretic and mild laxative. But, of course, the most valuable thing about strawberries is their taste. In my opinion, it is simply worthy of avoiding thermal effects and maintaining its benefits unchanged. Therefore, strawberries pureed with sugar without cooking are an ideal option for preparing the product.

But such recipes have a significant drawback: they can be stored for no more than a few months in the refrigerator, but this issue can be resolved if, for example, we freeze the strawberries or simply increase the amount of sugar.

Culinary tips for preparing berries, sugar proportions

The ideal strawberries for mashing come from your own garden plot, but you can also prepare strawberries bought from the market for future use. When buying berries from private sellers, you should be careful: strawberry berries, especially very ripe ones, cannot lie picked for a long time - they crumple and give out juice. In the heat, the juice ferments quickly. Therefore, it is better to ask that the berries be poured into your container, and at the same time check how fresh they are.

Before preparing live jam, we sort all the strawberries from debris, tear off the “tails”, select spoiled berries - they are of no use.

Then the berries should be washed. It is convenient to do this by pouring small portions of it into a colander under a slight pressure of water. When the water has drained, dry the strawberries on a linen napkin, laying them out in one layer.

And now to the main question concerning the second ingredient of our unboiled jam - sugar.

How much sugar is put per 1 kg. strawberries, depends on your taste preferences, conditions for subsequent storage of the workpiece. Ideally, sugar and berries are taken 1:1. Don't like it too sweet? You can cook by using half as much granulated sugar as the fruit, but keep in mind that you won’t be able to store such strawberries for a long time: they will turn sour. Need to save as long as possible? Add sugar, for example, 1.2 -1.5 kg per 1 kg of berries.

Strawberries ground with sugar: a recipe for the winter

To ensure that strawberries last as long as possible, you can enjoy them until the new harvest, we don’t skimp on sugar. Prepare strawberries using:

  • berries – 1.5 kilograms;
  • granulated sugar - 2 kilograms.
  1. Wash and sterilize glass jars thoroughly in advance. It is better to take small ones, no more than half a liter in volume, so that the uncorked jar quickly “ends”: contact with air during repeated opening and closing quickly deteriorates the contents.
  2. We also need a chopper - a blender or a meat grinder. At worst, if you don’t have either of these on hand, a mashed potato masher will do. Pour boiling water over the chopper thoroughly - the fewer microbes that get into the finished product, the better!
  3. Grind the strawberries first without adding sugar, then carefully add sugar in small portions and add it all into the strawberry puree. Mix the mass thoroughly. And that’s it, pour the grated mixture into jars and close the lid. We allow the capacity of the refrigerator - we store it in it, if not - the strawberries will also be preserved in the cellar, pantry.

Strawberries with sugar for the winter without cooking

Strawberries ground with sugar for the winter are delicious. But the consistency of the puree is only suitable for spreading on a sandwich. Is it possible to prepare it in such a way as to keep the berries intact without reducing their usefulness? Yes! We will prepare the berries without grinding, chopping, or cooking.

Place the washed berries in a saucepan and cover with granulated sugar 1:1. Place the pan on the burner, turned on at the lowest power, wait for the sugar to dissolve. Then place the still warm berries in a kind of syrup into jars. It is not recommended to store for a long time, but it will last well in the refrigerator for up to 3 months. Of course, if it doesn't end even earlier.

Frozen strawberries with sugar for the winter - 2 ways

How to freeze strawberries with sugar correctly - so that they are stored for a long time, and when defrosted they are neither sour nor watery? It is not difficult. I offer two recipes:

  1. Deep-frozen strawberry puree. According to this recipe, we prepare strawberries, chopped in a blender and ground with granulated sugar. It is not necessary to add a lot of sugar; we use half as much sugar as berries. After stirring, let the puree sit a little so that the sugar dissolves completely. But you shouldn’t keep it for more than 3 hours! We spread the entire mixture into dishes that will fit well in your freezer - these are plastic containers, yogurt cups (large!) or a simple plastic bottle - preferably no more than a liter in volume: this will fit compactly in the freezer and will not allow the berries to spoil for the banal reason “not We managed to eat it." Containers or cups must be tightly closed - this will prevent strawberries from absorbing foreign odors, which is very important if the preparations have to share the chamber with fish and meat.
  2. Another recipe that will tell you how to freeze strawberries with sugar for the winter if you cut the berries into pieces. This version of the preparation will allow you to use it not only directly for food, but as a component of cakes, pastries, for decorating cocktails or ice cream, etc. It is better to choose large, dense berries. They need to be washed and the sepals removed. Then cut each berry into 4 parts. We do everything quickly so that the cuttings do not leak juice. Then roll each slice in granulated sugar, place it on a baking sheet covered with cling film or parchment, and place it in the “shock freezing” mode. When the slices have hardened, pour them into a bag and store them in the freezer.

Whole strawberries with sugar in the freezer for the winter

Do you want to make, for example, a pie with fresh strawberries in the dead of winter? This is simple if you have strawberries with sugar in the freezer for the winter, carefully prepared since the summer. It’s very good if you have a powerful freezer - the sooner the strawberries are “grabbed” by frost, the better!

  • And we do it like this: mix sorted, washed dry berries with sugar - 2 cups of granulated sugar is enough per kilogram of strawberry berries, freeze. But we don’t do this anyhow, but by first spreading the berries evenly on a baking sheet in one layer. When they harden, they can be poured into a bag. They are stored deep frozen until the next harvest!

Strawberries with sugar in their own juice

Not only strawberries pureed with sugar turn out to be very tasty. A recipe for the winter in your own juice is a real find for those with a sweet tooth! It's easy to prepare.

  • Take ripe juicy berries and cover with powdered sugar. There should be 1/3 more powder than berries. That is, for a kilogram of strawberries, we take 1.5 kilograms. Sprinkle the fragrant gifts of summer with powder, leave in a dark place for 10-12 hours, covering the dish with the future delicacy with a towel. During this time, the strawberry juice will dissolve the powdered sugar. All that remains is to put it in jars and put it in the refrigerator.

Strawberries mashed with sugar and raspberries for the winter

Strawberries and raspberries provide a very successful combination of taste and benefits. This raw jam is an excellent “doctor” for colds accompanied by a sore throat and fever. It’s not worth sugaring the preparation too much - the berries are already very sweet, so we take the berries for the recipe in equal proportions, and the sugar at the rate of: a glass for every kilogram of raspberry-strawberry mixture.

We wash the berries, previously cleared of debris and leaves, and dry them on a towel. Then grind with an immersion blender and mix with sugar. It is advisable to store it in the freezer and remove it from there before using it for medicinal purposes!

Strawberries pureed with sugar and kiwi

The strawberries and kiwi in the recipe give an out-of-this-world flavor! And due to the fact that this exotic jam is not boiled, it is simply charged with vitamin C - right up to the very neck of the jar!

For such a simple recipe, do this:

  • take strawberries and kiwi in proportions 5:3;
  • Peel the kiwi;
  • grind pre-prepared berries and peeled kiwi in a blender;
  • Add sugar 1:1 to the mixture and mix thoroughly.

You only need to put the vitamin goodness in sterile jars!

Don't miss the opportunity to stock up on vitamins for future use if summer turns out to be bountiful in terms of harvest. Sadovaya strawberries mashed with sugar, recipes which are simple and very varied, are excellently stored, retain their amazing aroma, and delight with a magical taste all year round.

The proportion "Berries:Sugar" affects the processing method and the period and place of storage. So, with a ratio of 1 to 2 (for 1 kg of strawberries take 2 kg of sugar), raw or “live” jam is prepared. Strawberries and sugar are ground in a blender for the winter, without boiling for a minute, immediately packaged in sterile jars and stored in a cold cellar or refrigerator. A large amount of sugar “works” as a preservative. But over time, crystallization often occurs - the jam becomes sugared.

There is a recipe in which strawberries and sugar are ground at a ratio of 1 to 1 - the berries and granulated sugar are equal. Sugar is saved, the puree is boiled for up to half an hour, and sometimes citric acid is added. The jam comes out rich, but the berry freshness is lost and the color darkens. Safely stored in room temperature.

The next option, in my opinion, is universal. Here strawberries with sugar for the winter are pureed in a blender in a ratio of 1 to 1.5 (add 1.5 kg of granulated sugar to 1 kg of strawberries), then boiled and boiled for exactly 5 minutes. One of the versions of the Five Minute jam. The natural color, aroma, and taste of strawberries remain, sweetness is in moderation. Hermetically sealed, they are kept in a cupboard, pantry, or any convenient place.

So, to prepare strawberries with sugar for the winter in a blender, we will take the products according to the list. Containers for long-term storage of preparations are not only thoroughly washed, but also sterilized (after cleaning, washing with soda, jars + lids are steamed in a hot oven or in a water bath).

Since the berries will be ground (pureeed), we throw away the obviously rotten ones, but we safely take the juicy, overripe, almost ripe, soft and wrinkled ones into use. The integrity of the berries does not matter here. After selecting, place the strawberries in a bowl of cold water and leave for 5-10 minutes.

Dirt of various sizes will partially settle at the bottom and partially float up. Then rinse in several waters, preferably under a running stream. Place in a colander and shake off.

We tear off the petioles and rinse. To get rid of excess moisture, it is advisable to spread it in one layer on paper/baking sheet/towel and dry.

Place clean strawberries in a bowl, add granulated sugar and puree with a blender. You can grind it by passing it through a meat grinder, crush it with an ordinary masher-pestle for puree and even with a fork - soft berries do not cause difficulties and are easy to crush. Strawberries with sugar are crushed until homogeneous (homogeneous) or small fragments are left.

Pour the fairly liquid strawberry-sugar puree into a saucepan. You won’t have to cook for a long time, so you can do without thick-bottomed/non-stick containers. The main thing is to take it with a surface that does not oxidize, for example, enameled. Place on high heat and bring to a boil. Reduce the heat, constantly skim off the sticky pink foam that appears on the surface and cook the strawberry jam for 5 minutes.

Pour into sterile dry jars and seal tightly. Cool and transfer the blender-chopped strawberries and sugar to a cool room for the winter. Once uncorked, store it on the refrigerator shelf.

We serve strawberry delicacy with pastries, desserts, ice cream, and tea.

Enjoy your tea all year round!

There are different ways to prepare strawberries for the winter. Today we will talk about an alternative to strawberry jam, i.e. about a method when strawberries are not boiled, but ground with sugar. What is good about this kind of conservation? Of course, first of all, the fact that pureed strawberries retain more useful substances than berries that have been boiled. But you need to understand that without high-quality heat treatment, such a product can only be stored in a refrigerator or a cold cellar, and there is no guarantee that the jars will last until the end of winter and nothing will happen to them. However, there are methods that extend the shelf life and we will also consider them today. And you, as always, will have a choice of which method to choose.

Strawberries for the winter with sugar without cooking

But we will start with the classic recipe, when the jar contains only 2 traditional ingredients: strawberries and sugar. This is a plus for lovers of the classics and a minus for storage. Although sugar is a preservative, it should be stored in a cool, dark place. If you, like me, do not have enough space in the refrigerator to store the preparations there, then you can freeze the grated strawberries.

Ingredients:

  • strawberries – 1kg;
  • sugar – 2 kg.

Grated strawberries under a sugar “cork”

Another way to preserve cold strawberry jam without cooking is to seal it under a sugar “cork.” The sugar will be saturated with strawberry juice and form a hard crust, which will block the access of air inside the jar, and therefore stop the development of microorganisms. But this recipe requires the use of vodka, only half a tablespoon, nevertheless, pay attention to this.

What do we need for this:

  • strawberries – 500g;
  • sugar – 750g;
  • vodka – 0.5 tbsp.

Grated strawberries with honey

Honey is not a preservative, it is simply tasty and healthy. The berries that have not undergone heat treatment will retain more vitamins and nutrients, and we will also prepare it with honey instead of sugar.

List of ingredients:

  • strawberries – 350g;
  • honey – 2 tbsp.

And yet, at the end of today’s topic, let’s return to making jam. This recipe is something between cold and hot preservation methods. We will grind the strawberries, and then boil them for 5 minutes, but not in several batches, as in “”, but only 1 time. This procedure significantly increases the shelf life and allows you to store the jam even in the cupboard. Moreover, quick and short cooking does not “kill” all the benefits of summer berries. And we do not use sugar in a ratio of 2 to 1 (sugar / berry), but only 1.5 to 1.

Ingredients:

  • strawberries – 300g;
  • sugar – 450g.

How to prepare delicious and healthy pureed strawberries

Cook, save all the benefits of sweet summer strawberries for the winter. Enjoy your meal!

Mashed strawberries are a type of so-called raw jam that allows you to preserve vitamins that are sensitive to heat treatment. The aromatic fruit mass will be a real surprise on a stormy winter day.

The method of storing uncorked preparations depends on the sugar content: only a 1:2 ratio of berries to sugar prevents fermentation at room temperature.

Products mixed in equal parts are best frozen. It is convenient to place single servings of sweet strawberry puree in small plastic cups or containers, bags or ice trays.

Ingredients

You will need for a 0.5 liter jar:

  • 250 g strawberries
  • 350 g granulated sugar

Preparation

1. When making this jam, you don’t need to add water - the strawberries release juice on their own. Rinse the berries in water and tear off the stems. Place in a deep container with high edges - they will serve as protection from splashes. Using a fork, mash the berries in the container until they turn into a puree. You can use a blender or a potato press.

2. Pour granulated sugar into the strawberry puree and grind everything thoroughly. Do this even with a little pressure, as if pressing the sugar into the puree. If you like a little sourness in taste, add citric acid to the mixture at the tip of a knife and mix thoroughly. If desired, it can be replaced with orange or lemon natural juice.

3. Leave the ground strawberry mixture for 5-10 minutes.

4. Scald the jars and lids with boiling water, eliminating the presence of bacteria, and pour strawberry jam into them without cooking, right up to the very edges of the container.

5. Seal tightly with a hot lid and remove to the cold or place in the refrigerator. The prepared delicacy is perfectly stored for about 6 months from the moment of preparation. Strawberries pureed with sugar for the winter will be an excellent addition to pancakes, pancakes, etc.

Note to the hostess

1. Many housewives reject this preparation as a filling for pies because it is liquid: it leaks and burns. Two natural thickeners will help make it sufficiently viscous - oatmeal and crushed nuts. Thanks to them, you will get an ideal filler for either yeast or shortbread products.

2. One of the varieties of traditional American Sunday includes strawberries ground with sugar as an obligatory ingredient. The remaining ingredients are whipped cream and low-fat, not too sweet ice cream. All this is laid out in alternating layers in narrow tall wine glasses or glass glasses of a similar configuration. In the United States, this high-calorie and nutritious dessert is often replaced with an afternoon snack during the hot summer. Why not adopt a delicious tradition?

3. At social and bohemian events, champagne is usually served with strawberries. In winter, this aristocratic drink is much more accessible to ordinary people than a good fresh berry. Out of season, it is somehow tasteless, because it is greenhouse or imported in an unripe state. Grinded fruits, of course, are not served with elite wine, but miniature cake baskets filled with them are quite an appropriate dessert for a winter party with champagne.
