Traditional Tuscan bean soup

Total cooking time: 80 min

Ingredients:

  • 500 g beans (red)
  • 1 carrot
  • 1 medium onion (preferably red)
  • 2 tablespoons vegetable oil
  • Spoon of tomato paste
  • Pepper, salt

Even simple and economical meals for every day should be healthy and nutritious. Red beans are rich in proteins, minerals, vitamins and fiber. The recipe for a delicious and budget-friendly soup of Italian origin is extremely simple.

Pour boiling water over the beans and leave for 10-15 minutes, then set to cook. After 45 minutes, add the peeled carrots and onions, leave to cook for 15-20 minutes. It is important to guess here so that all the ingredients are ready at the same time. Add vegetable oil and tomato paste, then cook for another 20 minutes. Season with salt and pepper.

Using a ladle, measure out about a third of the soup with the grounds, place in a blender and finely grind. Pour the resulting mixture back into the pan, to the main mass, and bring to a boil. Anti-crisis nutritious soup is ready.

Tagliatelle with meat sauce

Total cooking time: 50 min

Ingredients:

  • 100 g minced meat
  • 100 g flour
  • Spoon of vegetable oil
  • Clove of garlic
  • Tomato
  • Pepper, salt

By the name, you already guessed that the recipe for this economical dish also comes from Italy. Many Italians love to make egg noodles at home.

It is advisable to take flour for noodles from durum wheat. Knead it well with the egg and roll it out thinly. Then you should cut the resulting cake into narrow strips, approximately 0.8 cm wide. The length is approximately 10 cm, there are no special requirements for it. Lay out the strips and let them dry for about 20 minutes, then cook like regular pasta.

While the noodles are cooking, you can start preparing the sauce. Lightly fry the garlic in hot vegetable oil (ideally olive oil, but any will do). This will add extra flavor to the dish, but if you are not a big fan of garlic, you can skip this step. The same applies to other recipes where it is mentioned.

Now remove the garlic and place the minced meat in the frying pan, distributing it evenly over the entire area. Add a little salt and pepper and simmer, stirring regularly. After 5 minutes, add the peeled and grated tomato and continue to simmer for another 5 minutes.

Drain the water from the noodles cooked during this time, pour the sauce into it, and mix well. That's it, the Italian economical dish is ready.

Breakfast rich in proteins and carbohydrates

Total time: 30 min

Ingredients:

  • 3 eggs
  • 3 medium potatoes
  • 25 g cheese
  • 2 tablespoons vegetable oil
  • Clove of garlic
  • Pepper, salt

One of the most familiar economical dishes for every day, but with a slightly different sauce. The recipe is simple. Cut the peeled potatoes into small pieces, or into circles, as you like.

Pour vegetable oil into a heated frying pan and lightly fry the garlic. Add the chopped potatoes and fry, stirring constantly, until golden brown.

At the same time, beat the eggs, salt and pepper them. When the potatoes are ready, pour the eggs over them and cover with a lid. On low heat, without removing the lid, leave the dish to simmer for 5-7 minutes. After grating the cheese onto a coarse grater, sprinkle it over the scrambled eggs. Turn off the stove and cover the pan for a couple of minutes to allow the cheese to melt. A delicious and economical breakfast is ready.

Fish with dill and tomatoes

Total time: 30 min

Ingredients:

  • 5-6 pieces of fish fillet
  • 20 cherry tomatoes or 5 regular tomatoes
  • 30 g vegetable oil
  • Clove of garlic
  • 5 spoons of flour
  • A pinch of dried dill
  • Pepper, salt

Instead of store-bought fish, you can use crucian carp or crucian carp caught in a nearby pond, which will make the dish even more affordable. Being a tasty and healthy food, fish according to this recipe can decorate any table.

Preparatory stage: roll the fish in flour, peel the garlic, cut the tomatoes into small pieces (if they are not cherry tomatoes).

Fry the garlic in hot oil, then add the fish. After frying until golden brown, turn over. Pour chopped tomato or cherry pieces on top, salt, pepper, sprinkle with dill, cover with a lid, cook for about 5 minutes over low heat. Serve immediately.

Pancakes with zucchini strips

Ingredients:

  • 2/3 cup flour
  • 300 grams zucchini
  • ¼ cup milk
  • Two eggs
  • 1 tbsp. spoon of thyme
  • Pepper, salt

Very economical dishes that can be prepared in the summer, when there are a lot of cheap or even free vegetables around. The list of recipes will continue with delicious and nutritious “instant” pancakes.

Thoroughly washed zucchini should be grated on a large enough grater to form a stick. Spread it on a paper towel and let dry. At this time, mix the flour with milk and eggs until it forms a batter. Add dried zucchini strips here, stir, pepper and salt.

After heating the vegetable oil, scoop out the batter with a spoon and place it in a frying pan, giving it the shape of a medium-sized pancake. Fry for 3-4 minutes, turning on both sides. Place the finished pancakes on a plate and sprinkle with thyme.

Meat in tomato sauce

Total cooking time: 40 minutes

Ingredients:

  • 600 g meat
  • 20 grams butter
  • Tomato
  • Spoon of tomato paste
  • Pepper, salt

And, for dessert, a recipe for a dish that doesn’t quite fit into the concept of “economical” due to the presence of meat. However, you don’t need so much of it, and besides, if you approach the matter skillfully, the required amount can be further reduced.

The meat should be cut like chops. A little trick for economical cutting: put a piece of meat in the freezer for a few minutes, there it will harden and can be cut into thin slices. For this dish, you need to beat the meat through parchment paper, using the smooth side of the hammer. Salt and pepper the resulting plates.

Now is the time to make a delicious sauce. Grate the peeled tomato into a bowl, add a spoonful of tomato paste diluted with half a glass of boiled water, and stir. Melt the butter in a frying pan and pour the resulting mixture into it. Simmer for 10 minutes over low heat, stirring. Then dip our “chops” into the sauce and simmer on both sides.

Meat prepared in this way does not need ketchup and can be served with a side dish (which will be much more economical) or as a separate dish. Mashed potatoes, rice or fried potatoes will do.

  • fresh white cabbage – 1 kg 200 g;
  • large carrots – 1 pc.;
  • onion - 1 head;
  • bay leaf – 2-3 pcs.;
  • granulated sugar – ½ tbsp. l.;
  • tomato paste – 2 tbsp. l.;
  • salt - to taste.

Cooking method

If you don’t have time for complex culinary experiments, and your family budget leaves much to be desired, you should just fry cabbage. It's filling and tasty.

  1. Peel the onions and carrots. Coarsely grate the carrots. Chop the onion as desired. Heat a little vegetable oil in a frying pan. Fry vegetables in it until soft.

  1. Remove the top leaves from the cabbage. Throw them away. Chop a good part into small strips. You can chop it further. Place in a frying pan for frying.

On a note! The dish will turn out even more tasty, satisfying, and piquant if you add a little sauerkraut to it.

Eating soup twice a day is something new. I wouldn’t even eat it myself, unless there’s nothing else, but here it seems like everything is thought out in advance. Secondly, for some reason there is only soup for lunch, but there is no second course (meat/fish/chicken + side dish) or salad. For dinner, there is clearly a lack of a normal side dish, because the salad is just an addition, but not a side dish. That is, if a woman is on a diet, then yes, a salad without everything is ideal, but the children and husband are clearly not interested in this.
What a depressing menu you have, sorry.

Answer: We have enough. We eat soup not twice, but once. At lunch – my daughter and I, and my husband for dinner. Since my daughter and I are at home, we can afford to eat four small meals a day. We're completely full. My husband, due to his work schedule, has his main meal at dinner, for which he eats first course, second course and salad. You have a freezer full of semi-finished products, but it takes at least 10 minutes to warm them up and defrost them? Will they sit quietly and wait?

Answer: for 8 servings, 50 grams of mushrooms are not even food, but just a seasoning for taste. In addition, these mushrooms have already been boiled and even ground in a blender, so I don’t see any problems for the body, even for children. And finally, a store near your home will ruin you more than a supermarket. So if you're interested in a budget-friendly kitchen for every day, start by making a list of the essentials. Don't skip your weekend shopping trip. And in no case should you be tempted by anything that is not included in the compiled list.

Saving on meat

It's not easy for most people to live without. However, the same pork can be used in different ways. Economical meat dishes for every day involve using a purchased piece in several dishes. For example, chicken wings or legs are boiled, soup is made from the broth, and they themselves are fried as a main course or cut into a salad. It’s better not to use a slice of pork on chops - it’s tasty, but only for once.

There are for every day, as a result of which the dishes will be much larger in volume: make minced meat, and from it - cutlets. Even better are meatballs: mixing them with rice will double their quantity. And the ideal option is to make the dumplings yourself.

How to replace sausage in sandwiches

Without sandwiches, life sometimes becomes sad. Children take them with them to school, and adults take them to work. In this case, there are also recipes for the thrifty housewife. If the family has not yet completely tightened its belt and you can buy a piece of meat, bake it and cut it into bread when cold. If there is a problem with this product, pay attention to another alternative: soak the most ordinary bagels (milk would be good, but water will do), place them on a greased oven sheet and put some kind of filling in each hole (for example, mashed potatoes, which is grated with a little cheese and a little mayonnaise on top). After 10 minutes of baking in the oven, the pseudo-sandwiches are ready.

The benefits of the first for the budget

Your budget-friendly everyday meal recipes should definitely include soups. In addition to the fact that they are recommended by all doctors for the stomach, they will also be beneficial for the wallet. As already noted, broth meat can be processed for use as a second dish, and in extreme cases, a decoction can be prepared either from very cheap bones (or chicken paws), or simply from vegetables. A pot of soup will last for two days.

Casseroles - the choice of a thrifty housewife

The simplest example is the need to feed a child cottage cheese. When baking cheesecakes, it will take much more than if you use economical recipes.

As an option, mix cottage cheese with an equal amount of semolina and an egg and bake the mixture in the oven. An alternative recipe is to cook pasta, add cottage cheese with eggs, chopped apples and sugar. For adults, you can make a dish that can completely replace dinner: place fried mushrooms or the aforementioned minced broth meat on a baking sheet between layers of mashed potatoes.

Casseroles are very economical dishes. For every day, you can come up with something new from what you find in the refrigerator.

Meatless cutlets

Cooking cutlets is much more profitable than chops. But even here, a reasonable housewife can save a certain amount of money. Take into account the following for every day, in which cutlets are made from vegetables:

  1. Shredded cabbage is quickly stewed with the addition of semolina (about two spoons per head). When the mass has cooled, an egg is beaten in, cutlets are molded and fried in vegetable oil. They are especially good with sour cream.
  2. Three onions are chopped very finely (neither a meat grinder nor a blender will work - you will get a lot of juice), combined with four tablespoons of rolled oats and two eggs. The minced meat is kneaded and fried into cutlets like pancakes.

Potato fantasies

The most satisfying, yet economical recipes for everyday dishes most often include this tuber, beloved by many. A simple puree looks pretty lonely on the table, so you can implement the following ideas:

1. Potatoes of approximately the same size are selected, peeled (not with a knife, but with a stiff brush), laid out on a greased sheet and cut with a cross. The baking sheet goes into the oven for half an hour. During this time, each tuber will unfold into a flower and turn red. The “roses” are laid out on a dish, a small piece of butter is placed in the middle, and dill is sprinkled on top. If there are pleasant additions (cheese, lard, mushrooms, ham), very good. No - and it’s so delicious.

2. Cut the potatoes into slices, put them in a mold, add salt, pepper, season, pour milk and lightly sprinkle with cheese. After half an hour in the oven, the potatoes will delight the whole family.

3. A kilo of potatoes is grated on a coarse grater, mixed with three raw eggs, salt and pepper. Place it evenly in a frying pan with heated oil and cover with a lid. When the potatoes are browned on the bottom, cut them into quarters and turn them over. When the other side is browned, it’s time to eat.

What to make from pasta

Everyone knows the “navy style” recipe, we won’t dwell on it. We’ve already talked about pasta casserole, so we’ll skip that too. Simple recipes for every day are not limited to just these two. You can make pasta “Afghan style”: boil it, prepare the onion fry separately. When the latter turns brown, grate the tomatoes into the onion, simmer, squeeze out the garlic. The most interesting thing is in the serving: the plate is greased with mayonnaise, pasta is placed on it, and a spoonful of dressing is placed on top. Tasty, cheap and cheerful!

Another way to diversify your pasta menu is to combine noodles with roasted vegetables. It will be almost a Chinese dish. And you can take almost any vegetables - bell peppers, cauliflower, mushrooms, green beans, peas, corn are added to the usual frying... Of course, such a dish will most likely be cheap in summer and autumn, but it’s still worth taking note of.

Salads - on the table!

Economical dishes for every day can be successfully complemented with a variety of salads. And you don't need expensive ingredients! Thrifty housewives highly recommend a recipe called “Anticrisis”: a pack of “quick” noodles is steamed. After softening, it is strained and crushed. To it are added two chopped boiled eggs, one onion and grated carrot. All this is seasoned with mayonnaise and serves as a pleasant addition to the same potatoes or casserole. You can modify the recipe: add grated cheese to the same noodles (if you’re really saving, take processed cheese), mayonnaise and garlic.

You can also make a fish salad. If you buy the cheapest thing on the shelves - pollock, then the food will be included in the category “Recipes for thrifty housewives”. In addition to the fish, you will also need a head of cabbage. It must be finely chopped, salted and boiled quickly so that it still crunches and does not fall apart. Pour a flat spoon of salt, 1 tsp into another pan of water. sugar, 0.5 tbsp. vinegar, bay leaf, spices and a few drops of vegetable oil. When everything boils, add pollock and cook until fully cooked. Disassembled fish pieces are combined with cabbage, seasoned with mayonnaise and herbs. It tastes like squid salad, but much cheaper.

In winter, you can make a salad like this: cut five boiled potatoes into cubes, chop an onion, add sauerkraut, season and pour sunflower oil over everything. If you indulge in preparations, you can also add pickled cucumber. With rye bread and potatoes you don’t even need meat.

These are recipes that can be used at any time of the year. And during the season, you need to rely especially heavily on vegetables - they are inexpensive, there are many options for combinations, and they also bring benefits, as everyone knows.

A variety of pancakes

In recipes for second courses for every day, which are still inexpensive, you can include those described below.

Many people prepare it, and their analogue can be prepared from the cheapest fish. To do this, 400 g of boneless fillet is finely chopped or passed through a meat grinder. A chopped large onion, an egg, half a glass of flour and half a tube of mayonnaise (about 100 g) are also placed there. The mass is salted and peppered at your discretion. Mix until it becomes a paste. Pancakes are fried as usual.

Oatmeal pancakes are also good: a glass of cereal is filled with the same volume of milk; as soon as it swells, add two yolks, salt and finely grated carrots (the amount depends on your attitude towards this root vegetable). Next, add flour - how much dough will take to get the desired consistency. Lastly, the whipped whites are folded in and then spooned into the frying pan.

Draniki are well known to many. Much fewer housewives have heard about buckwheat, which greatly makes life easier during the financial crisis. They are prepared simply: boil the cereal, combine it with eggs, herbs and a small amount of flour. The dish is baked just like any other pancakes, and is eaten quickly and with pleasure!
