Chicken meatballs in creamy sauce in a frying pan

Chicken meatballs fried in a frying pan turn out to be elastic, but not rubbery; they boast a crispy, appetizing crust and hold their shape perfectly.

Ingredients

  • Chicken fillet (or minced meat) – 400 g;
  • Milk – 50 ml;
  • Yesterday bread – 2-3 slices;
  • Onions – 2 pcs.;
  • Chicken eggs – 1 pc.;
  • Cream – 200 ml;
  • Salt - to taste;
  • Freshly ground black pepper – 2 pinches.

How to fry chicken meatballs in a frying pan

  • If you bought chicken fillet, you first need to put it through a meat grinder to make minced meat. If you have already ground meat, knead it thoroughly with your hands, and then leave it at room temperature for a while until it is no longer cold.
  • For now, let's move on to other ingredients: peel the onion and cut it into large pieces to pass it through a meat grinder. If you like individual pieces of onion in homemade cutlets, then you can simply finely chop the vegetable with a knife.
  • Pour a little milk into a plate and place white bread (not fresh bread) that has hardened into it to soften it.
  • We begin to mix the warm minced meat with our ingredients: first mix it with the onion, then squeeze the excess moisture out of the bread and also add it to the minced meat. Add chopped onion.
  • Beat one egg into the minced chicken, salt and pepper the meat to taste. Thoroughly mix the mixture into the meatballs until it is homogeneous.
  • To ensure that the meatballs are not stuffed, but fluffy and juicy, beat the minced meat with your hands for 5-7 minutes before cooking. Then we form small balls out of it, placing them on the countertop or cutting board.

  • We fry the meatballs as follows: first, take out a fairly spacious frying pan, pour in a little vegetable oil, drop our chicken meatballs into it and fry for 2-3 minutes on each side until we notice the appearance of a golden, dense crust.
  • When the meat balls are fried on the outside, reduce the heat and pour half a glass of cream into the pan. Cover the meatballs with a lid and simmer until fully cooked. An important point: to prevent the balls from falling apart during cooking, it is better not to stir the meatballs.

Ready-made chicken meatballs are best served with spaghetti or mashed potatoes.

How to cook chicken meatballs in the oven

  1. First of all, we peel the vegetables: remove the peel from the potato tuber and onion, rinse under running water and cut into medium pieces to pass through a meat grinder.
  2. It is best to grind ready-made minced chicken meat again so that the meatballs are not clogged, but soft and tender.
  3. Place minced meat, chopped potatoes and onions into a large bowl. Beat a chicken egg, add salt and pepper.
  4. Mix the minced meat into meatballs with your hands and knead it thoroughly, then beat the meat to make it softer.
  5. Roll the minced meat into separate medium-sized balls - large ones may fall apart, and small ones will simply lose their shape during baking.
  6. In a large frying pan, fry the meatballs in vegetable oil for 3-5 minutes on all sides until they stick together. This is an optional step, but if you fry the minced meat before putting it in the oven, the meatballs will turn out noticeably tastier and juicier.
  7. Then prepare a baking dish: grease a deep container with oil so that the minced meat does not dry to it. Place our chicken meatballs on the bottom of the pan, trying not to press them too tightly together.
  8. Pour cream on top of the dish and send it to the oven, preheated to 170-180 degrees. For medium-sized meatballs, pre-fried in a frying pan, 30-35 minutes are usually enough until fully cooked.

Herbs will help make the dish more fragrant and more festive: if you sprinkle the meatballs in cream on top with green dill or parsley, you will get a treat that is quite suitable even for a festive table!

Chicken meatballs in creamy gravy in a slow cooker

The easiest way to make chicken meatballs is in a slow cooker - it takes a minimum of time and effort.

Ingredients

  • Minced chicken meat – 300 g;
  • Chicken egg – 1 pc.;
  • Cream – 200 ml;
  • Purified water – 250 ml;
  • Onion – 1 head;
  • Rice – 100 g;
  • Dried or fresh greens – 2-3 pinches;
  • Salt - to taste;
  • Allspice black pepper – 3 pinches.

How to make chicken meatballs in a slow cooker

  • Let's cook rice for our chicken meatballs. Rinse it thoroughly under cold water, and then put it in a multicooker along with 250 ml of purified water. Set the menu to “Rice” mode and turn on the household assistant for 15-20 minutes.
  • After the specified time has passed, remove the rice from the multicooker, pour it into a separate bowl and wait until it cools. After this, add the minced chicken to the rice and knead the mixture into meatballs with your hands for 5-7 minutes.
  • Peel the onion, rinse under running water and cut into small cubes. Pour the vegetable into a bowl with the minced meat, salt and pepper it to your taste, add herbs for aroma and taste.
  • Beat the egg into the minced chicken and thoroughly knead the future meatballs with your hands again so that the mass is homogeneous. If the chicken meat was tough (for example, the minced meat was made from an old chicken), then it wouldn’t hurt to beat it a little before rolling the cutlets.
  • Pour the cream, a third of a glass of water into the multicooker bowl, add a little salt and pepper. Roll the minced meat into medium meatballs, then add them to the creamy sauce. We put the bowl in the machine and slam the lid of the multicooker.

  • In the “Stew” mode, chicken meatballs with rice will cook for approximately 30 minutes. If you did not finish cooking the rice or the meat was too dry and tough, you can add another 5-7 minutes to the specified time.

Chicken meatballs in creamy sauce are a universal dish that can be offered even to children if you make the meatballs in a slow cooker.

The love for meatballs unites everyone: old, young, and those in full bloom! And this is not surprising, because absorbing these delicious balls does not require any effort, except the effort to stop in time!

By experimenting with additives, sauces, and cooking methods, you can get a new taste of a familiar dish every time. Today we will prepare meatballs baked in the oven with cream sauce. The same recipe makes excellent meatballs in the air fryer. For minced meat, you can use beef, pork, rabbit or chicken. I cooked meatballs in the oven from mixed ground pork and beef.

Ingredients for meatballs with cream recipe in the oven
Ground meat 500 grams
Onion 1 medium head (100 grams)
Carrot 1 medium (100 grams)
Egg 1 piece
Garlic 2 cloves
Cream (or milk) 100 ml
Processed cheese 100 grams
Vegetable oil 1 tablespoon
Salt taste
Ground black pepper taste

Meatballs baked in the oven

You will need half a kilo of lean ground beef. But, as I already wrote above, the culinary recipe is not medical, which means there are other options: pork, pork-beef, chicken - take your pick!

Finely chop the onion and grate the carrots on a fine grater.

Sauté vegetables in one tablespoon of vegetable oil.

Finely chop two cloves of garlic. If this is difficult, just put it through a garlic press.

Mix the minced meat, egg, carrots and onions, add garlic, salt and pepper to taste.

Knead well to saturate it with oxygen and make it more fluffy.

We form small balls 3 centimeters in diameter.

Place in a saucepan with a small amount of salted boiling water. Cook for one or two minutes after boiling. Pre-boiling is not necessary, but recommended. This way they will turn out juicier. You can immediately place the formed meatballs in a baking dish. Using a slotted spoon, transfer the meatballs to a baking dish. Strain the resulting broth (you don’t need all of it, we only need one glass).

In a small saucepan, mix a glass of broth and half a glass of cream (or milk), bring to a boil and add the processed cheese cut into pieces. Cook, stirring, until the sauce becomes homogeneous. If the meatballs have not been boiled and there is no broth, take a glass of cold water.

Pour sauce over meatballs.

Place in an oven preheated to 200 degrees. You can cover the pan with foil. When cooking in an air fryer, this must be done. Cook for 40 minutes. An air fryer requires a lower rack and a medium fan speed.

Meat dishes occupy a very important place in our diet. This time, we offer a popular recipe for meatballs with rice, which is why people call them “hedgehogs”. We will cook them in the oven from ready-made minced meat in a creamy tomato sauce with stewed vegetables. The process is simple, but the result is excellent.

    Ingredients for meatballs:
  • 500 g minced beef
  • 500 g minced pork
  • 1 cup rice
  • 2 medium onions
  • 1 egg
  • 100 ml water
  • 3 teaspoons salt
  • 1 teaspoon ground black pepper
    For the creamy tomato sauce:
  • 3-4 tablespoons butter
  • 5 tbsp. spoons of tomato paste
  • 3 large carrots
  • 2-3 onions
  • 2 cloves garlic
  • 3 tablespoons flour
  • 5 cups warm chicken broth
  • 125 ml cup heavy cream
  • salt and pepper

Whatever they are called: meatballs, meatballs, cutlets. It is more correct to call them “hedgehogs” because of the presence of rice in them, which, when ready, swell and slightly peek out from the minced meat like needles, reminiscent of this cute animal

1. Collect all ingredients for minced meat in one deep bowl: minced meat, pre-boiled rice until half cooked, chopped onion, beat in one egg, salt and pepper. To make the meatballs more juicy and tender, add half a glass of water

2. Kneading with your hands, thoroughly mix all the ingredients and combine evenly. The minced meat for meatballs is actually prepared in the same way as for cutlets, only in our case, for hedgehogs we add boiled rice

3. Next, you need to form small balls from the finished minced meat. This can be done with a special device or the proven “old-fashioned” method - with your hands, after wetting your palms in water so that the minced meat does not stick to your hands

4. Collect the finished meatballs in one layer in a heat-resistant form for further baking. Try not to pack them tightly.

The actual meatballs are ready. As you can see, preparing them is not at all difficult and takes very little time. All that remains is to prepare a universal gravy for meatballs, which goes well with many dishes

Creamy tomato sauce with vegetables

5. Melt the butter in a deep saucepan and first simmer the onion, chopped into half rings, until the juice comes out of them

6. As soon as the onion becomes noticeably transparent, add grated carrots, chopped garlic, add 1/2 teaspoon of salt, sprinkle a little black pepper and continue sautéing until the carrots soften, about 5 minutes

7. Then add the flour and stirring continuously, cook until the flour is completely combined with the vegetables.

8. Without ceasing to stir, add the tomato paste and broth and combine. Next, gradually pour in all the broth. The result should be a creamy, semi-thick mass. Close the lid and cook for 15 minutes on low heat

9. Turn off the stove, add half a glass of cream and mix. You can add a little more pepper and salt to taste

10. Pour the prepared cream sauce into the form for the meatballs. It is better to do this with a spoon and gradually, so as not to disturb the arrangement of meatballs

11. Preheat the oven. Cover the surface of the pan with foil and bake for 45 minutes at 200 degrees.

As a result, the meatballs are tender and melt in your mouth thanks to the creamy gravy, and the vegetables make the dish tasty and nutritious.

Tips for the recipe:
– for the best taste, when preparing the sauce it is better to use homemade cream, which it is advisable to dilute immediately before adding in boiled warm water.
– to prepare minced meat, instead of beef and pork, you can use poultry or seafood, relying on preference and your own taste. But it is important to know that such meat must first be lightly fried in oil, and only then baked
– also, for variety, you can add grated cheese of good varieties to the creamy sauce for meatballs, which will add piquancy to the dish, making it more interesting and aromatic

We used ready-made minced chicken for this dish, but you can prepare it yourself by grinding the same amount of chicken fillet through a meat grinder, and in addition to ground nutmeg, you can add any spices to the recipe to your liking.

Appetizing Swedish meatballs with creamy sauce and sweet jam have gained popularity thanks to the IKEA chain of stores, where this dish has long been in enormous demand. Small meat balls turn out very juicy, aromatic and incredibly tasty! And a generous amount of delicate gravy and a non-standard addition in the form of berry jam make the dish even more interesting and appetizing!

You can make the famous Swedish meatballs just like in Ikea at home. To do this, we need two types of minced meat, cream, meat broth and a few more simple, quite affordable products. You can buy jam for serving this dish ready-made or make it yourself by following our recipe.

Ingredients:

  • minced beef - 300 g;
  • minced pork - 300 g;
  • onions - 2 small heads;
  • egg - 1 pc.;
  • stale loaf or breadcrumbs - 50 g;
  • cream 10-20% or milk - 50-100 ml;
  • boiled potatoes - 2 small pieces;
  • garlic - 1-2 cloves;
  • salt, allspice - to taste;
  • vegetable oil - 2-3 tbsp. spoons;
  • butter - 4-5 tbsp. spoons

For the sauce:

  • cream 20% - 150 ml;
  • meat broth - 300 ml;
  • flour - 30 g;
  • butter - 50 g;
  • salt, pepper - to taste.

For jam (optional):

  • lingonberries (can be replaced with cranberries) - 100 g;
  • sugar - 40-50 g.

How to make Swedish meatballs like Ikea at home

  1. We moisten the stale loaf with cream or milk (after cutting off the crusts) or breadcrumbs.
  2. Finely chop the onions, fry in butter (2-3 tablespoons) until soft and golden.
  3. Mix two types of minced meat, add fried onion, egg, garlic squeezed through a press. Knead the loaf moistened with cream with your hands and also add it to the meat mass, mix thoroughly.
  4. Peel the cooled boiled potatoes, use a masher to turn them into a homogeneous puree and add them to the minced meat. The taste of potatoes will not be felt in the finished meatballs - they are used to obtain a more delicate texture. Salt the meat mass, season with ground allspice, mix.
  5. We make small round blanks (about 30-35 pieces). Before forming the meatballs, it is advisable to keep the minced meat in the refrigerator for about 40 minutes so that the meat balls hold their shape better and do not fall apart during frying.
  6. Heat a mixture of vegetable and butter in a frying pan. Fry the meatballs over high heat on all sides until browned. It is necessary to fry the meat balls in small portions (in 2-3 batches). If you put all the preparations at once, the meatballs will release juice and instead of frying they will be stewed.
  7. Place the fried meat balls on a baking sheet and cook in a preheated oven at 180 degrees for 15-20 minutes.

  8. Melt the butter over medium heat. Add the sifted flour, stir quickly and very thoroughly. Gradually add meat broth, continuing to stir the sauce.
  9. Next, pour in the cream in the same way (gradually and with continuous stirring). The creamy sauce for Swedish meatballs should not be very thick, flowing freely from a spoon. If necessary, you can add more broth. Salt and pepper the finished sauce to taste.

    How to make jam for Swedish meatballs

  10. At Ikea, Swedish meatballs are served with jam. To prepare it you need lingonberries, but since it is not very easy to find this berry on sale, fresh or frozen cranberries are suitable as a replacement. Cover the berries with sugar, add 3 tablespoons of water, and bring to a boil.
  11. Crush the cranberries with a masher and cook the mixture over low heat until slightly thickened. Let cool.
  12. Serve Swedish meatballs with berry jam and hot cream sauce. Boiled potatoes or mixed vegetables are perfect as a side dish.

Bon appetit!
