Pour the beaten eggs with sour cream into a baking dish, which must be lined with baking paper. Or do as I do. Make small edges on the paper and place it on a baking sheet, and then carefully pour in the eggs. The size of the omelette for this amount of ingredients should be approximately 20 cm x 25 centimeters.

Then put the pan in the oven, preheated to 170 degrees C. Bake the omelette until cooked for 15-20 minutes. It will swell first, and then settle and become even.

While the omelette is in the oven, prepare the filling. Grate the processed cheese, add chopped garlic and chopped parsley or dill.

When the omelette has cooled a little, spread the filling on it in an even layer.

Using paper, carefully roll the roll from the narrower side. Wrap in paper and place in the refrigerator for 30-40 minutes.

Today we will prepare an egg roll stuffed with cheese and chicken - a recipe with a photo will show you how to prepare it correctly. After all, if you do not adhere to the proportions, it may tear or stick to the pan. I will tell you all the secrets of this dish below.

And now I want to say that it is prepared very simply and quickly from available products. The appetizer tastes quite satisfying. You can show your imagination and add something of your own to the filling, for example: spicy sauce, greens, fruit zest, nuts. From this amount you will get 2-3 rolls, depending on the size of your pan.

Stuffed egg roll recipe with photo

Ingredients

  • Egg – 4 pcs.
  • Mayonnaise – 2 tbsp
  • Flour – 1 tsp
  • Salt - a pinch
  • Turmeric - a pinch
  • Processed cheese – 1 pc.
  • Chicken fillet– 100 g.
  • Lettuce leaf – 2 pcs.
  • Mayonnaise for filling – 3 tbsp

How to make an egg roll

Beat the eggs into a deep bowl, add mayonnaise and flour. Add salt, turmeric and mix with a whisk until the mixture is homogeneous. Turmeric gives yellow a pleasant color and taste.

Take a non-stick frying pan, pour a little vegetable oil, and heat it up. The diameter of my frying pan is 23cm. Take a ladle, scoop out the egg mixture, a little more than half the ladle. Pour the mixture into the pan, like batter for a pancake, and spread it in a circular motion. Only this must be done quickly so that the egg does not set. Fry over medium heat for 2-3 minutes until the pancake is toasted. Then, cover the pan with a lid, reduce the heat to low, fry for another 2 minutes until the top is completely set, then you can turn it over to the other side.


Take a wooden spatula and pry all the edges in a circle, see if it’s stuck, use a spatula or your hands to turn it over egg pancake to the other side. I usually grab the edges of the pancake with my hands and flip it over. Fry it for 2 minutes, transfer it to a flat plate to cool. Excess fat can be removed with a paper napkin. I make sure to remove the fat so that the appetizer does not become greasy.


While the egg mixtures are cooling, let's make the filling. I did not use whole chicken fillet, but only half. Boil it and cut it into small pieces, the smaller the better.


Grate the processed cheese on a coarse grater. Wash the lettuce leaves under running water, trim the ends so that only a soft leaf remains.


Place 1 tbsp of mayonnaise on the egg pancake and spread. Grease the edges well so that the roll does not fall apart. Place a lettuce leaf in the center. Immediately sprinkle with melted cheese and chicken. Then, grease the top with mayonnaise again and wrap it in a roll. To ensure that the roll sticks well, do not put a lot of filling on the other side.


I got two rolls like this. You can wrap them in cling film, but I don’t do this, after standing in the refrigerator for 4 hours, it holds its shape well and does not unfold.

Tips for making egg rolls

  1. You can determine the thickness of the roll yourself, it depends on how thick you make the pancake. It is better that it is not very thick, then it is easier to wrap.
  2. The snack should sit in the refrigerator for at least 4 hours so that it can keep its shape.
  3. If you are using fresh vegetables: tomato, cucumber, pepper, lettuce, then you can’t leave the appetizer overnight, otherwise the vegetables may drain or spoil. You can leave it overnight with cheese, mushrooms, and caviar filling.
  4. The rolls can be decorated with skewers, it is convenient to take the appetizer with them, and even if it unwinds, the skewers will hold it.

How to make egg roll pancakes

  1. Before use, wash homemade eggs thoroughly. Then we break them into a bowl, add sifted flour, mayonnaise, salt, soda, finely chopped herbs and water.
  2. Beat everything thoroughly with a mixer or whisk (so that there are no lumps) until smooth.
  3. Afterwards, let the “dough” stand for 10 minutes, then add vegetable oil. At this point, the preparation of the egg mass is completed, taste it, and if there is not enough salt, add as much as needed.
  4. Grease a well-heated pancake pan (if you don’t have one, take one with a thick bottom) vegetable oil before placing the first pancake. We will not need this procedure later.


5. In the ladle, type required amount“dough” and spread it over the pan in a circular motion. Don't be alarmed when the pancake starts to rise in the pan. After you lift the lid, it will go down.

Cooking time depends on the heat of the pan - from about 20 seconds to a minute. We will fry the egg pancake for rolls only on one side, but under the lid.

The pancake is considered ready only when there is no wet dough left on it. After this, remove the finished pancake from the heat and repeat the procedure again with the next batch. egg mixture. And so on until the “dough” is over.

Filling No. 1: Hard cheese with garlic and mayonnaise

Ingredients

  3. Place the filling on the egg roll pancakes, then wrap them in a roll and place them in a baking dish.
  4. Preheat the oven to 180-200 degrees.
  5. Pour sour cream over the rolls, sprinkle them (over the entire surface) with grated hard cheese and put in the oven for 15 minutes.
  6. After 15 minutes, we take out the rolls and begin the long-awaited tasting.

Beat the chicken eggs into a spacious bowl, pour in a portion of milk or not too rich milk cream, throw in a generous pinch of salt, a little ground pepper and stir vigorously with a whisk. We completely combine the whites, yolks and other components. You can use a mixer. Without flour and other thickeners, the omelette will set safely and will not lose its tenderness, softness and plasticity.
