How to cook meat nests: step-by-step recipe with photos

The meat will be of better quality if you buy a piece of pork and grind it at home into minced meat. A dish prepared from a mixture of pork and beef in approximately equal parts has a good taste. The main thing is that the meat base for the nests is small, soft, and juicy.

Peel 2 onions and also twist through a fine sieve into a meat grinder.

Add the onion mixture to the minced meat.

Add softened and squeezed-out bread product, raw eggs, spices, and salt to the meat. Knead thoroughly with your hands until smooth. Leave for a while so that the meat absorbs the flavors of the peppers and combines with the rest of the ingredients.

Peel the remaining onion and cut into cubes, as in the next photo.

According to the recipe, lightly fry the onion in oil.

Soak dry mushrooms for several hours, then boil in the same dark water. Pass the finished boletus or boletus through a meat grinder or chop with a knife.

Add chopped mushrooms to the onion in the pan. Continue frying for 2 - 3 minutes, lightly add salt and pepper.

Form the minced meat into balls after looking at the photo. Make a hole inside with a spoon or your hand so that the workpiece resembles a nest.

Place a spoonful of mushroom mixture into each meat nest.

The finished product is placed on a baking sheet covered with parchment paper.

Apply a mesh of mayonnaise on top of the mushrooms on each product, and immediately place the baking sheet in a preheated oven. Let them bake at a temperature of 140 - 170 degrees for about 30 minutes.

Remove the baking sheet, sprinkle each meat nest with cheese, and let it simmer for another 5 to 7 minutes.

Ready-made minced meat nests under melted cheese look very attractive. They can be placed on lettuce or Chinese cabbage leaves; it’s a good idea to serve in portions with hot mashed potatoes.

To prepare this dish, it is not necessary to specially boil the potatoes. You can use mashed potatoes that are left over from dinner. You can also use any product as a filling; it can be minced meat, mushrooms, stewed vegetables, eggs or fish.

Potato nests with mushrooms and cheese are always a hit. Preparation begins with washing and peeling the potatoes. Large tubers can be cut into several parts, small ones can be boiled whole. Boil the potatoes until fully cooked for about half an hour. When the water boils, add salt to the potatoes to taste.

While the potatoes are cooking, you need to start preparing the filling. The onion is cut into small cubes. The champignons need to be washed thoroughly, the film removed from the caps, and the legs cleaned with a knife. Mushrooms are cut into thin slices or cubes. Heat a frying pan and fry the onions and mushrooms in a small amount of oil. The filling should be salted at the end of frying, as the mushrooms noticeably decrease in volume.

Drain the water from the finished potatoes and immediately begin preparing the puree. Grind the potatoes, add warm milk, eggs and butter to it. Everything is whipped into a fluffy mass.

Line a baking sheet with parchment paper and form potato nests. It is better to use a special pastry bag for this, but you can also use a regular plastic bag with a corner cut off.

Fill the prepared nests with mushroom filling, sprinkle with grated cheese and place in the oven. The nests are baked at a temperature of 180 °C for about 15 minutes.

Potato nests should be served hot with vegetables, herbs and sour cream. Be sure to prepare this dish for your family and friends - it will not leave anyone indifferent.

1 kg potatoes,
2 eggs
1 tbsp. butter,
warm milk – 100 ml,
Filling:
200g champignons,
1 large onion,
a few tablespoons of grated cheese (I used “Russian” cheese),
salt - to taste,
ground black pepper - a pinch,
Italian herbs - a pinch

Potato nests recipe

Cut the peeled potatoes into large pieces, place in a saucepan and add boiling water (boiling water will help retain more vitamins) to cover, add salt to taste, and boil until tender. Drain the water from the finished potatoes, add milk and butter. Mash into puree, add eggs, mix and beat the puree with a mixer. I tried to beat it with a blender, but the blender makes the puree become slimy and the fluffiness disappears.

Wash the mushrooms and cut into strips. Peel the onion and cut into half rings.

Fry mushrooms and onions in vegetable oil until golden brown. Add some salt, black pepper and Italian herbs.

Place mashed potatoes in a pastry bag. Squeeze small “nests” onto a baking sheet (the baking sheet should be greased or lined with parchment paper). To do this, first form a round bottom, and then make the sides.
