Tomato paste can be purchased ready-made or prepared yourself. To do this, you need to peel the tomatoes and grind them in a mortar with the addition of various flavoring spices.

    The basis of any meatballs is minced meat. It is best prepared at home from a fresh piece of beef or pork; you can also add chicken fillet. We wash the selected meat in cold water, dry it with a paper towel and pass it through a meat grinder.

    The next step is to fill the minced meat with a wide variety of spices. Any ready-made sets of seasonings for meat will be suitable for this purpose; standard salt and ground black pepper will not do here either. Add the entire prepared palette of spices to the bowl with the ground meat and mix the ingredients thoroughly.

    We leave the minced meat to infuse with spices for a while and during this time we prepare the rice: you can take it of absolutely any variety. Cook the washed rice in a deep saucepan according to the instructions on the package. Place the finished, cooled rice into a bowl with meat, and add the specified number of chicken eggs there.

    Onions are not listed in the list of ingredients, but if desired, you can fry them with a clove of garlic in vegetable oil and also add them to the meat. Mix the minced meat thoroughly with a spoon or even with your hands: we should get minced meat that is very dense in consistency, which can be easily molded.

    With hands soaked in cold water, we divide all the minced meat into equal equal parts, and then form them into fairly large meatballs. We place the prepared hedgehogs in the form chosen for cooking so that they do not touch each other.

    Combine the specified amount of tomato paste or tomato juice with a small amount of water in a deep plate. Pour the resulting mixture into the contents of the frying pan and place it on the fire.

    Peel the carrots and grate them on a coarse grater, pour the chopped carrots on top of the hedgehogs in the frying pan. Bring the liquid to a boil and simmer the dish under a closed lid for 20 minutes over not too high heat. After the specified time has passed, remove the lid and cook the meat until fully cooked.

You can use fish, chicken or minced meat. The main thing is that it is juicy, otherwise the dish will turn out dry. To grind any product, a meat grinder is usually used, on which the finest mesh is installed. But if you have an appliance such as a blender in the kitchen, it is better to use it to blend the meat - the hedgehogs will have a more delicate texture.

For juiciness, onions are always added to any minced meat. It is pre-sautéed in butter or refined oil. Along with the onions, rice is also mixed into the meat mass.

In order for the grains of rice to protrude, imitating needles, the rice is added raw or only slightly cooked. Whether to rinse the cereal or not is a controversial issue. Water washes away the starch that binds the pieces of meat together.

Spices that have a pronounced taste and aroma are not used. Minced meat is usually seasoned with ground pepper and always added some salt. You should not add a lot of salt, since the gravy and sauces in which hedgehogs are cooked are added separately.

Half a kilo of non-lenten minced meat;

Half a glass of short grain rice;

Two large onions;

Three fresh tomatoes;

Spoon of flour;

Small sized carrot;

Dried and crushed dill.

1. Boil the sorted rice until half cooked. Rinse under running water and place in a colander to drain all excess moisture.

2. Transfer the drained rice to a suitable bowl, add minced meat and a raw egg. Here we grate one onion through a fine grater. If you prepared the minced meat yourself, it is better to grind the onion in a meat grinder after the meat. Season the meat mass with ground pepper, add a little salt and mix everything well.

3. With moistened hands, roll small balls from the minced meat and place in a wide container with high sides. Ideally, lay them in one row, but if there is no suitable container, it is possible in two “floors”.

4. Pour a little more than a tablespoon of oil into a deep frying pan and heat it well over low heat. Finely chop the remaining onion, place the slices in a frying pan and heat until translucent. Add large carrot shavings and continue cooking, stirring occasionally.

5. Remove the peel from the tomatoes and grate the pulp. You can puree tomatoes in a blender. Pour the tomato puree into the frying vegetables as soon as the vegetables in the frying pan turn an amber color. Simmer for two minutes and add flour diluted with 50 ml of water. While stirring, add three cups of boiling water in a thin stream and bring the gravy to a boil.

6. Remove from heat and adjust taste by adding sugar and salt. Add the dried dill and pour it into a container with the hedgehogs, cover with foil and place in the oven for 40 minutes. Cook for at least half an hour.

Minced meat hedgehogs with rice in the oven with creamy sauce

A kilogram of minced meat mixed from pork and beef;

Four large onions;

A glass of rice;

The egg is fresh;

Three medium carrots;

60 gr. natural sweet cream butter;

Half a cup of heavy cream;

Three spoons of good flour;

Five glasses of water or meat and bone broth;

Thick tomato - 150 gr.

1. Sort out the rice, pour into a colander with small holes or a sieve, and scald with boiling water. When all the water has disappeared, transfer it to a deep bowl. After cooling, add the minced meat and pour in the egg.

2. Finely chop two onions and place them in a bowl with minced meat. Season with ground pepper, add a little salt and mix well. If the thickness allows, you can add up to 100 ml of water for juiciness.

3. Form small hedgehogs (balls) and place them in one layer in a deep baking pan.

4. Finely chop the remaining onions. Place in a frying pan and fry in butter until transparent. Add coarsely grated carrots and saute the vegetables until softened.

5. Lightly add salt to the roast and press three cloves of garlic into it through a press. Add the tomato, stirring continuously, add flour. Warm up the roast for two minutes and add broth or water. Be sure to stir so that the flour disperses well, and leave for 15 minutes, setting the heat to minimum. At the end, add the cream, add salt if necessary, and season with pepper.

6. Pour the prepared sauce into the meat balls, cover the baking sheet with food foil and place it in the middle level of the preheated oven. Allow 40 minutes for preparation.

Minced fish hedgehogs with rice in the oven with cheese

Minced fish, preferably cod - 400 g;

Half a glass of coarse rice;

50 gr. white, slightly stale bread;

Seven large fresh tomatoes;

A spoon of refined oil;

Large onion head;

Cheese - 200 gr.;

Milk - half a glass;

Dill greens;

Bay leaf;

Garlic if desired.

1. Wash the tomatoes, after removing the skin, cut into small cubes. The skin will come off easier if you scald the tomatoes with boiling water or soak them in hot water for at least two minutes.

2. Place a deep frying pan over low heat. Heat a little oil well and add chopped garlic into it. After frying for only about 30 seconds, add the tomatoes. Simmer the tomatoes for 10 minutes, covering them tightly with a lid, remembering to stir occasionally.

3. Cut off the crusts from the bread, soak the crumb in milk. After waiting for 10 minutes, squeeze the bread with your hands and transfer it to the minced fish. Add chopped onion, boiled rice until half cooked, break the egg. Season with pepper and lightly add salt, mix thoroughly.

4. On a medium grater, grate some of the prepared cheese (150 g). We combine it with minced fish and form small balls.

5. Apply a thin layer of butter to the bottom of a large refractory mold with high sides. Place the fish balls in one row and pour the prepared tomato sauce over them.

6. Place the mold in a hot oven and cook the hedgehogs in the sauce for 35 minutes, keeping the heat at 180 degrees. Sprinkle generously with cheese shavings and bring to readiness by placing in the oven for 10 minutes.

A simple recipe for minced chicken hedgehogs with rice in the oven

Medium-fat minced chicken - 450 gr.;

One large onion;

75 gr. rare 20% sour cream;

A raw egg;

Small carrot;

Butter, 72% butter - 30 gr.;

One and a half glasses of water;

Spoon of flour;

50 ml refined oil;

Long grain rice - half a cup.

1. Lightly cook the rice. Place in a colander and, after rinsing well, leave to dry.

2. Chop the onion and grate the carrots on a coarse grater. Place the vegetables in a frying pan and sauté with the addition of butter until golden brown. The frying should not dry out, so it is advisable to cover the pan with a lid and stir the vegetables occasionally. Cool the finished roast well and, together with the rice, transfer it to the minced meat.

3. Sprinkle with a quarter spoon of ground pepper. Stirring thoroughly, add the raw egg and a little salt.

4. Wet your hands and form balls of the same size from the meat mixture. Place them in a deep fireproof dish (mold) greased with vegetable oil.

5. In a small bowl, dilute the sour cream with cold water, add flour and stir well with a whisk - there should be no lumps. Add sour cream filling to your taste and add pepper if desired.

6. Carefully pour sour cream sauce over the meat balls from a spoon, and simply pour the rest into the mold and place the hedgehogs in a hot oven. Cook for at least 35 minutes, setting the heat to 200 degrees.

Minced meat hedgehogs with rice in the oven with cabbage

Homemade minced meat - 500 gr.;

200 gr. fresh white cabbage;

Two large onions;

120 gr. long grain rice;

Sour cream, fat content from 20% - 3 tablespoons;

One raw egg;

50 gr. flour;

Two tablespoons of butter;

Finely chopped dill - a small handful.

1. First, boil the rice. We sort out the cereal, pour it into a bowl and, adding butter, fill it with water. Liquids should be taken at a ratio of 1:4. add a little salt and wait for it to boil. At this stage, stir periodically, using a spoon to lift off the stuck grains from the bottom. Once it boils, reduce the heat and cook the rice until partially cooked. Rinse in a colander with warm water and let cool.

2. Fry finely chopped onion in oil until transparent, cool.

3. Shred the cabbage so that you get thin, short strips. Coarsely chopped cabbage will not have time to steam well and will complicate the formation of hedgehogs.

4. Place the minced meat in a large bowl. Add cabbage, ground pepper and sauteed onion, add a little salt. While stirring, add the drained rice. The mass should be thick, otherwise the hedgehogs may fall apart.

5. We wet our hands with water and, separating the minced meat with a spoon in small portions, form balls of the required size. Lay them out on a cutting board.

6. Pour two glasses of water or cold meat broth into a deep bowl. Dissolve the sour cream in the liquid, add flour and, carefully breaking up the lumps, stir with a whisk. Add some salt, add the pre-beaten egg and chopped herbs into the sauce and beat well again.

7. Pour the sauce into a fireproof container and lower the shaped hedgehogs into it. Cover with a suitable lid or sheet of foil and place in the oven for exactly one hour. The dish is prepared at 200 degrees.

Minced hedgehogs with rice in the oven with thick mushroom sauce

Medium-fat minced meat - 600 gr.;

100 gr. large whole rice;

Big carrot;

300 gr. fresh medium-sized champignons;

Two and a half tablespoons of frozen cream or butter;

80 gr. flour;

Refined sunflower oil;

Half a liter of broth or water;

2 salad onions.

1. Chop the onion into half rings, cut the champignons into slices, and chop the carrots with a coarse grater.

2. In a frying pan, warm up no more than a spoonful of vegetable oil and drop the butter into it. We are waiting for it to melt. First add carrots and onions to the fat mixture. After frying the vegetables until translucent, add the mushrooms and simmer in the released juice until it evaporates. At the very end, add a little salt. Spread the fried vegetables with mushrooms in an even layer along the bottom of a refractory dish.

3. Boil the rice in brackish water and transfer to a colander.

4. Saute finely chopped onion in butter until transparent. Cool and mix into the minced meat along with the rice. First add some salt and pepper to the meat. We fashion small hedgehogs and place them on a vegetable pillow.

5. Pour flour into a dry frying pan and butter on top. Turn on medium heat and, stirring continuously, heat for five minutes. Without ceasing to heat and stir, add broth (water) in small portions. During the process, add a little salt to the sauce, and when it starts to thicken, remove it from the stove.

6. Pour the sauce over the meat hedgehogs and place in the oven for half an hour, covering the pan with a lid or foil.

Minced hedgehogs with rice in the oven - cooking tricks and useful tips

It is advisable to prepare any minced meat for hedgehogs yourself. For chicken, it is better to use breast and fillet cut from the meaty parts of the carcass. It is recommended to prepare meat hedgehogs from mixed minced meat, twisted from lean beef and fatty pork. Fish - from sea fish, not bony fish.

When purchasing minced meat, it is better to give preference to chilled semi-finished products. In this case, its density and quality are immediately visible. You should grind purchased minced meat yourself before using it. It may contain large pieces.

If the recipe requires adding raw onion, it is still advisable to fry most of it - the hedgehogs will turn out more juicy. For the same purpose, you can put a little loaf crumb soaked in milk into the meat or fish mixture. In this case, they will keep their shape even better.

Ingredients

  • Minced pork – 0.5 kg;
  • Chicken egg – 1 pc.;
  • Medium-sized onions – 1 pc.;
  • Carrots – 1 pc.;.;
  • Rice – 0.5 tbsp.;
  • Flour – 1 tbsp. l.;
  • Tomato juice – 1-1.5 tbsp.;
  • Sour cream – 100 ml;
  • Water – 200 ml;
  • Vegetable oil – 2 tbsp;
  • Salt - to taste;
  • Spices - to taste.

Preparation

Wash the rice thoroughly in warm water.

Peel the onion and finely chop it, then fry it in a heated frying pan with 1 tbsp. vegetable oil until light golden brown. Let cool for a couple of minutes.

Place the chilled minced pork in a deep bowl (if it was frozen, defrost it first), add the egg, washed rice and fried onion. Season with salt and spices at your discretion. Mix thoroughly with your hands so that all ingredients are evenly distributed.

From the resulting mass we make identical medium-sized balls. Place them in a saucepan or frying pan with high sides.

For the sauce, in a separate bowl, mix flour and sour cream.

Pour tomato juice and water into the sour cream mixture, stir until smooth.

Peel the carrots and cut them into fairly large cubes. In the frying pan in which the onions were previously fried, add the remaining tablespoon of oil and the prepared carrots, sauté until soft.

Gently transfer the finished carrots into the sauce and mix lightly.

Pour the resulting sauce over the meat balls so that the hedgehogs are almost completely covered with it.

Place the pan on high heat and wait for it to boil. Then reduce the gas to a minimum, cover the dish with a lid and simmer for 30-40 minutes. You can serve hedgehogs with mashed potatoes, sprinkle with sauce and garnish with parsley.

On a note:

  • For those who like a leaner dish, you can take minced meat from beef, chicken, turkey, or mixed instead of pork.
  • It is convenient to form meat balls with your hands dipped in cold water. This way they don't stick to your palms.
  • To prevent the hedgehogs from falling apart during stewing, before pouring in the sauce, you can first fry them over high heat until golden brown or lower them into boiling water for a few seconds.
  • Alternatively, hedgehogs with rice in tomato sauce can be baked in the oven or cooked in a slow cooker. To do this, in the first case, they are laid out in a heat-resistant form and simmered in the oven for about 40 minutes, and when using a multicooker, the dish is put in the “Stew” mode for about an hour.
