Lenten oatmeal cookies with nuts

The most delicious lean oatmeal cookies are cookies with nuts. Walnuts are especially good. They add butteriness and a piquant bitterness and pair well with prunes, forming a classic pairing. Nuts add toughness to the liver. You should take this into account and use tender instant oats.

Preparation

  • oatmeal - 100 g;
  • flour - 100 g;
  • brown sugar - 50 g;
  • baking powder - 10 g;
  • soda - 5 g;
  • oil - 100 ml;
  • syrup - 100 ml;
  • salt - a pinch;
  • walnuts - 50 g;
  • prunes - 30 g.

Preparation

Use any honey for honey cookies: flower, linden, buckwheat, etc.

For the dough it should not be thick. If the honey you have is solid or candied from last year, then heat it in a water bath or in the microwave for half a minute.

Add flour with selected spices and baking powder to honey. Suitable spices include vanilla, ground cinnamon, ginger, nutmeg or coriander, as well as their combinations. You can also use ready-made gingerbread mixture. Citrus zest combines harmoniously with honey: orange zest refreshes, and lemon zest adds a piquant sourness to sweet livers.

Mix the ingredients together, it is convenient to do this using kitchen appliances or a culinary spatula, and the result will be a soft sticky dough.

In addition to spices, this honey cookie dough includes nuts, dried fruits and/or candied fruits. Raisins and dried apricots need to be soaked or steamed, then the dried apricots or other large dried fruits should be cut into square pieces.
Chop the nuts coarsely, these can be walnuts, almonds, peanuts, cashews and a mixture of them. If desired, add multi-colored candied fruits to the dough; they greatly enliven and make the cookies more colorful and festive.

Mix your chosen filling options into the dough.

Place the resulting dough on the baking surface. This can be a silicone mat, baking paper, a greased baking sheet or foil.

The dough is sticky, so rolling it out with a rolling pin is inconvenient, and dusting it with flour is undesirable. Spread it into a thin layer about 1 cm thick with your hands soaked in water. If you wish, you can apply some kind of relief to the surface, for example, just with a fork.

Place the baking sheet with the honey cookie dough in the oven and bake at 180 degrees for about 15 minutes. The time depends on the properties of the oven and, most importantly, not to dry it out.

While the cookies are in the oven, prepare the icing. For non-lenten options it can be made from alcohol and powdered sugar, for lean ones - from water or juices with powdered sugar. Citrus fruits in their pure form or combined with water 1:1 are best suited as juices.
