Semolina is the most common type of cereal in Russia. It gained its popularity due to the fact that it can be used to prepare quick, nutritious breakfasts, as well as bake delicious pies. Not everyone likes semolina porridge, which cannot be said about mouth-watering pies. Semolina-based baked goods are not only a delicious dessert, but also a healthy food product.

To make the pie fluffy, many people prepare manna with kefir. Another undeniable advantage of manna is that it can be prepared quickly. Therefore, even the busiest women will be able to please their family and friends with delicious pastries made from semolina.

Mannik has a simple composition and is baked quite simply. But his recipe is quite flexible in terms of additional ingredients, on the basis of which you can come up with your own cooking recipes with a unique taste. Semolina pie is often baked using milk, kefir, sour cream and even yogurt. Manna with kefir is the most popular. For this reason, a pie based on it is considered classic; most women bake manna cakes based on this component (photo 1).

The reason for this is the special splendor and tenderness of the prepared manna. It is difficult to spoil such a pie with anything, so by choosing kefir, you can practice baking and gain experience if you do not have the necessary culinary skills. The highlight of such tenderness and porosity is that semolina must be soaked in kefir. This is necessary for good impregnation with the fermented milk composition, which must be kept for at least 50-70 minutes. The main purpose of soaking for a long period is the crispy quality of the semolina, which may remain in the cooked cake if it is not soaked well.

After the semolina swells, you need to add the desired ingredients and mix everything well. You will have a dough that needs to be poured into a mold and placed in the oven for 45 minutes, preheating it to 200°C. When greasing the mold with butter, you will need to add semolina there.

Thus, in theory, you understand how to prepare manna with kefir. Below are several detailed recipes with various ingredients.

Classic manna based on kefir

Required components:

  • semolina - 200 g;
  • kefir - 450 ml;
  • eggs - 3 pcs.;
  • sugar - 100 g;
  • salt - 1 pinch;
  • vanillin - 1 sachet;
  • baking powder - 0.5 tsp;
  • butter - 20 g.

The semolina is soaked in kefir for 1 hour. The eggs will need to be beaten with a mixer until a uniform consistency is obtained. In this case, during the whipping process you need to add sugar, vanillin, baking powder and salt. The resulting mass must be mixed well with semolina soaked in kefir. This will be the dough for the pie, which needs to be poured into a mold greased with butter and placed in the oven for 45 minutes, maintaining a temperature of 200°C. To make sure the manna is ready, you need to pierce it with a thin stick, and if it is dry, your pie is baked.

To make the manna more appetizing, you can sprinkle sweet powder on top of it or pour chocolate syrup over it.

Manna based on kefir and flour

Semolina pie made from flour has a delicate taste, it simply melts in your mouth. This effect is achieved with the help of soda, which begins to ferment in kefir only during baking in the oven.

Required components:

  • semolina - 200 g;
  • kefir - 400 ml;
  • eggs - 2 pcs.;
  • wheat flour - 100 g;
  • sugar - 200 g;
  • soda - 10 g;
  • mayonnaise - 20 ml;
  • butter - 20 g;
  • vanillin - to taste.

This recipe does not involve soaking semolina in kefir. You need to mix it with sugar and add flour. After this, in another bowl, beat the eggs, mayonnaise and kefir with a mixer. Pour this mixture into the semolina-flour mixture and let the resulting dough rest for 1 hour.

Now you need to melt the butter in a frying pan, cool it, add soda and pour the resulting mass into the dough. You will need to heat the pie tin in an oven set to 190°C. After this, you need to grease it with butter, sprinkle a little semolina and pour the finished dough into it.

The cake should be baked for 40 minutes at the same temperature. The finished manna will have to be cooled slightly and served warm.

Mannik with strawberries on kefir base

Required components:

  • semolina - 200 g;
  • kefir - 200 ml;
  • eggs - 2 pcs.;
  • sugar - 200 g;
  • flour - 200 g;
  • butter - 100 g;
  • soda - 1 tsp;
  • salt - 1 pinch;
  • strawberries - 300 g.

Semolina must be soaked in kefir and kept for 35 minutes, adding a little salt. The egg yolks are separated from the whites and put into the refrigerator for a short time, as they will be needed later. You will need to beat the whites with a mixer until bubbles appear. Lightly melt the butter and stir it in, adding the sugar and egg yolks. Add swollen semolina to the resulting masses, adding flour and soda to the consistency.

Rinse the strawberries well and remove the green caps. After that, let it dry and cut into small pieces. Grease the pie pan with oil, then you only need to pour half of the dough into it. Once you've added the strawberries on top, you can add the rest of the batter and place the ramekin in the oven for 35 minutes, preheating it to 190°C. After the time has passed, you need to raise the temperature slightly and bake for about 10 minutes.

The baked cake can be sprinkled with vanilla powder or chocolate glaze. When making a pie, you can add any type of berries, be it currants, blueberries, raspberries or cherries.

Coconut semolina cake

Required components:

  • semolina - 200 g;
  • kefir - 200 ml;
  • flour - 200 g;
  • egg - 1 pc.;
  • sugar - 300 g;
  • butter - 100 g;
  • coconut flakes - 50 g;
  • soda - 1.5 tsp;
  • lemon juice - 0.5 lemon.

Semolina, coconut and granulated sugar will need to be poured into kefir and soaked for 40-50 minutes. After the cereal has softened well, you need to pour ghee into the mixture and add flour. The resulting consistency will need to be mixed thoroughly and poured into a greased mold. The dough should not be too thick, so you need to smooth it out with a spatula. You can add raisins or dried apricots on top to taste.

The cake is baked at 190°C for 45 minutes. While preparing it, you need to make a lemon glaze. Pour 100 ml of water into a cup and squeeze the lemon into it. Add granulated sugar to the mixture and cook for 10 minutes. The heat should be low, and do not forget to stir the glaze. It is poured on top of the finished cake, which has not yet been removed from the mold. After this, you need to wait until the baked goods have cooled down.

After you have gained practical experience in baking various types of manna, you will need other recipes. You can invent them yourself by adding ingredients such as nuts, berries, poppy seeds, cocoa, bananas, apples, cherries and oranges. Manna with kefir in a slow cooker can be prepared according to these recipes, as they are well suited to its cooking conditions. Just make sure that the container in the multicooker corresponds to the volume of dough that is obtained from the specified number of components.

A delicious delicacy that any housewife should be able to prepare - manna with kefir.

Since ancient times, the Slavs were famous for their skills in preparing this most delicate pie, and modern chefs have already introduced many changes to the classic recipe, as a result of which it has turned into not just an ordinary pie, but a real masterpiece of culinary art.

Mannik with kefir can be made with various additives, and the taste characteristics of the pie change significantly.

If there is a large amount of sugar, it is better to use sour berries or fruits as additives, and creams and sprinkles will turn fluffy cakes into beautiful cakes. You just have to give free rein to your imagination, and a simple manna will turn into a “signature” dish that your household will look forward to.

Benefits and calories

The main feature of the pie is the use of semolina instead of wheat flour.

In the Soviet period, semolina was elevated to the rank of the most valuable cereals that everyone should eat, regardless of age. Modern scientists tend to believe that semolina, as such, does not have much value for the body, especially when compared with other grains. However, when added to a pie, it slightly reduces the calorie content of the product by replacing wheat flour.

The calorie content of manna with kefir is 249 kcal per 100 grams of the finished product.

The value is not small, given the fact that the pie turns out to be quite dense and heavy in weight, so a hundred-gram piece will look very insignificant on the plate. There are secrets for reducing the calorie content of the product by reducing the amount of eggs and flour in the composition. Preparing dietary manna is possible, but the pie will lose its enviable splendor and delicacy for which it is so loved.

Speaking about the benefits, it is also worth mentioning the vitamins and microelements that make up manna. These include:

  • B vitamins;
  • vitamin E;
  • folic acid;
  • phosphorus;
  • sulfur;
  • chlorine;
  • calcium;
  • iron;
  • magnesium;
  • zinc.

True, the calcium included in the composition is poorly absorbed by the body due to the adjacent phosphorus content in large quantities. Nevertheless, microelements can contribute to a person’s daily enrichment of active substances.
