  • has antimicrobial properties
  • included in the diets of patients with diabetes mellitus
  • inhibits the formation of fats in the body

Celery root and carrot salad with Korean dressing

Now, with an understanding of all the invaluable qualities of carrots and celery root, let's start preparing the salad.

We will need:

  • 2-3 pieces of carrots
  • 1/4 head of celery root
  • green onions
  • dill
  • handful of walnuts

Peel the carrots and celery and grate them.

Wash green onions and dill and chop finely.

Grind the nuts with your hands so that there are pieces (I like it better this way.

But you can chop it with a knife, that’s good too)

Mix grated carrots and celery in a salad bowl. And mash them a little with your hands.

Add green onions, dill, walnuts.

For Korean dressing:

  • 1/2 cup vegetable oil
  • 1-2 tablespoons apple cider vinegar or juice of 1 lemon
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground red pepper
  • 1/2 teaspoon ground cilantro (coriander)
  • 1 tablespoon honey

Mix all ingredients. From this amount you will get a filling, of course, more than once. The remainder can be stored in the refrigerator for the next salad.

Step 1: Prepare the celery root.

Wash the celery root to remove soil and other dirt, place it on a cutting board and cut off the thick top skin with a regular knife. Divide the remaining white pulp into several parts, for convenience, and then grind it using a coarse grater. And if you are a master at cutting vegetables into thin strips, then do not restrain yourself, chop the celery in the way that is most convenient and tastier for you.

Step 2: prepare the carrots.



Carrots, just like celery root, need to be thoroughly rinsed with running water and then peeled off the skin. Grind the peeled root vegetable in the way that is most convenient for you, that is, using a grater, or, again, cutting into thin strips, just as, for example, for Korean carrots.

Step 3: Prepare the walnuts.



Place the walnuts on a cutting board and use a regular kitchen knife to cut them into small pieces.

Step 4: Mix the salad.



Place the prepared celery and carrots in a deep plate, squeeze half a lemon on them, holding the seeds with a tablespoon so that they do not get into the salad. Add walnuts and flax seeds, salt to taste and stir. Add vegetable oil last, otherwise it will interfere with the dissolution of the salt. When all the ingredients are mixed and seasoned, your wonderful vitamin salad is ready to serve.

Step 5: Serve the celery and carrot salad.


Crispy and juicy celery and carrot salad is very good as an independent dish, and because of the nuts, it is also quite filling. Therefore, I do not recommend serving it as a side dish or snack, but rather eat it for breakfast to recharge yourself with energy and good mood in the morning. And remember that how you feel greatly depends on how you look, so eat healthy and nutritious foods, especially in the spring, when our body lacks vitamins and sunlight.

Tender vegetable salad with homemade mayonnaise

Components:

  • celery rhizome – 100 g
  • carrot – 1 pc.
  • celery greens – 30 g
  • Antonovka or ranet apple – 1 pc.
  • lemon juice – 1 spoon
  • olive oil – 2 tbsp. spoons
  • yolk – 1 pc.
  • mustard – 0.5-0.6 teaspoons
  • pepper and salt - a pinch

Grate carrots and immediately pour lemon juice over them. Prepare homemade mayonnaise: beat the yolk with mustard and butter. Add lemon juice, salt and pepper to taste. Decorate the salad with celery greens.

Vitamin salad with carrots, celery and pine nuts

Components:

  • pine nuts – 100-110 g
  • carrots – 2 pcs.
  • celery – 3 stalks
  • ginger root – 10 g
  • apples – 2 pcs.
  • cream – 2 tbsp. spoons
  • real yogurt – 100 g
  • freshly squeezed lemon juice – 2 tablespoons. spoons
  • natural honey – 1 teaspoon. spoon

Mix grated apples and carrots with finely chopped celery. Add half of the pine nuts to the salad, the rest will be used to decorate the dish. In a separate container, mix grated ginger root with cream, yogurt, lemon juice and honey. Season the salad with the resulting sauce.

Vegetable salad with sesame seeds

Ingredients:

We cut all the greens into large pieces, onions into half rings, celery and carrots into three on a grater. Season the vitamin salad with oil and lemon juice, sprinkle with sesame seeds.

  • cabbage – 200 g

Ingredients for salad recipe:

How to make a delicious celery salad

Wash celery and carrots. Thinly slice the celery (across the stalks), grate the carrots or, as I do, use a Korean carrot shredder.

Finely chop the greens. Mix vegetables with herbs.
To fill, mix oil, vinegar and juice squeezed from an orange. Add sugar, salt and pepper to taste and mix thoroughly. You can use a mixer or blender, but the easiest way is to put it in a small jar with a good lid and shake it well.
Mix the vegetables with the dressing and leave in the refrigerator for an hour.

We take it out, thoroughly mix the salad with celery, carrots and herbs, and decorate it to your own taste. I garnished with kiwi slices.
