You will need ingredients:

  • Chicken fillet 250 gr.,
  • Champignon mushrooms 180 gr.,
  • Chicken eggs 2 pcs.,
  • Cheese 80 gr.,
  • Onion 1-2 heads of medium size,
  • Sour cream 60 ml,
  • Salt and pepper to taste.

Let's start cooking.

1. First, let's prepare the chicken, it's better to take fillet breasts. Remove from the refrigerator and wash thoroughly under lukewarm water. Place the washed carcass in a saucepan and add water so that it covers the fillet and is 3 cm above its level.

Boil over medium heat, also watch for foam when it forms on the surface of the water, remove it with a slotted spoon.

It is worth salting the chicken a little to make its taste richer and brighter. We are waiting for it to cook, it will take about 35 minutes. You can check the degree of readiness of the meat by piercing it with a knife or fork. If it enters the meat easily, then the fillet is ready and can be removed from the heat. If not, it’s not ready and should be cooked for about 10 more minutes.

Next, remove the chicken from the water and let cool. When it becomes warm, inspect the meat more carefully; if you come across any cartilage or bones, remove it immediately. Take a cutting board, a knife and cut the boiled fillet into small pieces.


And put everything in a bowl. Set aside.

2. While the chicken is boiling, put the eggs on the adjacent burner to boil. To do this, take two eggs and wash them well under cool running water. Place clean eggs in a small ladle and fill with cold water. Turn on the stove to medium heat and wait for the water to boil.

You saw bubbles in the water - great, time it for 9 minutes, so the eggs will be hard-boiled. Next, take a pot holder and remove the ladle from the stove and immediately place it in the sink under running cold water (this will make it easier for the eggs to separate from the shell). Once cool, peel them and set them aside.

3. Prepare the onions and champignons. Peel the onion and wash it under running cold water (this way it will release less essential oils and your eyes will not water). Finely chop the onion and place it in a heated frying pan with a lid. Fry until the onion is soft. Add a little ground black pepper and salt on the tip of a knife.

While the onions are frying, wash the mushrooms and remove the top film from the cap. Cut into small pieces and add to the frying pan with the onions.


And fry, if necessary, with the addition of vegetable oil. When the water has almost all evaporated, turn it off and remove from the stove. This is approximately 7 minutes.


4. It is better to take hard Parmesan cheese or any other variety. Grate it on a medium grater and set it aside.

5. The ingredients are prepared, it’s time to assemble the salad.

We take a salad bowl and put it in layers on the bottom: mushrooms with onions, but you need to squeeze them out of the oil, coat them with a little sour cream, then boil the chicken, coat with sour cream. And here we take a grater and grate the eggs on top of the meat, without pressing, lightly coat this layer with sour cream. And sprinkle the last layer with cheese. Be sure to cover the salad bowl with cling film and put it in the refrigerator for a couple of hours.


The finished dish can be decorated with dill sprigs, carrot or cucumber slices. Salad with champignons and chicken, eggs and cheese turns out airy and tender. All layers can also be coated with mayonnaise sauce, replacing sour cream. Then the dish will turn out to be more nutritious and satisfying. Or, conversely, replace it with classic yogurt, then the snack will be more dietary.

Very tasty salad with champignons and smoked chicken.

Cooking time is about an hour, all ingredients are designed for 6 servings. The salad turns out very tasty, excellent in taste. It can be used as an independent dish.

Smoked chicken gives a pleasant smoky flavor, as if cooked over a fire. Add more champignon mushrooms and the appetizer is delicious.

On top of the finished dish I make a cap of whites, which resembles a snowman. The finished product comes out airy and bulky, since during assembly all the ingredients are placed as if snow were falling, and I do not smear the mayonnaise, and I do not press down the snack itself.


Ingredients:

  • Potatoes 300 gr
  • Smoked chicken 300 gr
  • Chicken eggs 3 pcs.
  • Champignons 400 gr
  • Onion 2-3 heads
  • Mayonnaise approximately 100 ml
  • Vegetable oil 1 tbsp. l.
  • Salt and pepper to taste.
  • Cheese optional.

Preparation:

1. First, boil the eggs and potatoes.

Take two pans, wash the ingredients thoroughly and put each in its own pan. We need to hard boil the eggs. To do this, put them in cold water, put the ladle on the fire, wait for it to boil and cook for another 10 minutes. After the time has passed, you need to take a ladle with ready-made eggs and place it under running cold water from the tap.

Potatoes - about 4 medium tubers, also put in a saucepan and boil until tender, about 35 minutes. After the water boils, add a little salt. To check the readiness of the potatoes, you need to take a knife and pierce one tuber. If the potatoes are ready, a knife will pierce them easily.


Place the champignons in a large frying pan and fry, no need to add oil. Our task is to evaporate all the water from them. Do you see that all the moisture is gone? Great, add vegetable oil and fry the mushrooms on both sides.

3. Peel the onion and rinse thoroughly with cold water. You need to finely chop it and send it to fry with the mushrooms, this will take another 5 minutes until the onions are ready.

4. The potatoes are cooked, they need to be removed and cooled. As soon as you can pick it up, we peel it off and put it on a plate. We do the same with the eggs - be sure to cool them under running cold water to make peeling easier. Peel, separate the yolks from the whites and set aside.

5. We clean the smoked chicken from bones, cartilage and skin. I take a clean cutting board and finely chop the chicken, putting it on a separate plate.

6. All the ingredients are prepared and it’s time to assemble a delicious salad with champignons and smoked chicken. First, choose a form. I use a large extendable baking dish, it is 21 cm in diameter.

I grate the boiled potatoes on a coarse grater as the first layer, make a mesh of mayonnaise, put pieces of smoked chicken on top, then again apply the mayonnaise with a mesh.


I carefully rub the yolks in the third layer, but mayonnaise is not needed in this layer. The fourth layer is champignons with onions and again a mesh of mayonnaise. And the final layer is grated whites. The main thing is not to rush, you need to rub it immediately over the salad in an even layer. The hat should be airy and fluffy.

I remove the pan, wipe the plate and put it in the refrigerator for a couple of hours or overnight.

The salad can be prepared in portions. To do this, I use a small round mold or a glass with a wide neck or a low jar.

2. We wash the eggs under running cold water, put them in a small ladle and boil for about 10 minutes. We need hard-boiled eggs. When the time is up, take the ladle with the eggs and place them under running cold water and leave them there for a couple of minutes. Next, remove the eggs and cool.

3. Next we take the onion, peel it and wash it in cold running water. I carefully cut rings on the floor and place them on a heated frying pan. When the onion has become soft and almost transparent, add black pepper and salt. The quantity depends on your taste.


4. Champignon mushrooms must be washed well, the caps removed from the films, and excess removed from the stems. Cut into thin slices and add to the onion.


Fry for another 10 minutes, wait for all the water that has separated from the mushrooms to boil away.


5. Are the potatoes cold? Great, I peel it and cut it into medium-sized cubes.

6. Peel the eggs and also cut them into small cubes.

7. Boil the chicken breast in hot salted water in advance. Cool and divide into fibers or cut into pieces.

The third layer is finely chopped egg whites; I prefer to grate them on the small holes of a grater. I add more sauce to this layer, as well as lettuce around the edges.

2. Wash the eggs well and boil them hard – 10 minutes in boiling water over medium heat. To clean the eggs well, place the ladle from the heat directly under running cold water and leave to cool.

3. Take the champignons and wash them thoroughly. It is necessary to boil them; to do this, fill them with cold water and cook for 10-15 minutes over medium heat. Place in a colander to drain completely. When the mushrooms are ready, you can chop them with a knife.

4. Peel the onion, rinse with cold water, chop finely and scald with boiling water three times. Add the prepared onions with mushrooms.

5. Wash the walnuts and heat them in a dry, hot frying pan. When they cool down, chop them.

6. Remove the chicken breast, clean it and separate it from the bones and skin. Divide into small fibers and divide the finished fillet into 2 parts.

7. Peel the cooled eggs and grate them on a fine grater; divide them into two parts in the same way.

8. It's time to collect the salad. First of all, take either a round container or a cooking disc. Place the first part of the meat on the bottom and spread mayonnaise on top. The second layer is to add salt and pepper to some of the mushrooms, and mayonnaise on top. The third layer is part of the eggs and also mayonnaise. Next, repeat from the first point, lubricating with mayonnaise. I put it in the cold for half an hour and then sprinkle it with nuts.

The final step is to decorate the salad to your liking. The finished dish must be refrigerated for about two hours. This is necessary to soak all the ingredients. Everything is ready and you can set the table.

So, in the “Fairy Tale” recipe with walnuts and champignons, boiled chicken can be replaced with smoked breast, but the taste of the salad will change and it will turn out less tender.

Place the boiled mushrooms in a colander and rinse. Let the water drain.

2. I take carrots - wash them thoroughly and peel them. I grate it on a special grater for Korean carrots.


3. Place the carrots and mushrooms in a large container, add 100 ml of vegetable oil and mix everything well. Add greens as desired.


Add crushed garlic, stir. Next, add one teaspoon of salt, 3 tbsp. l. sugar, mix, the next step is pepper, coriander and mix everything.

Finely chop the chicken and mix it with vegetables. You don’t have to put it in this salad. Everything is optional.

At the last step, add 5 tbsp. spoons of vinegar. Stir and taste; if something is missing, add to taste. Cover with cling film and put in the refrigerator for a day. Salad ready.


There are some nuances: it’s better to use small mushrooms, but you can also take what you have and cut them into pieces acceptable to you. This option for preparing champignons with Korean carrots is much cheaper and tastier than in the store.

3. Wash the pepper, peel and cut into cubes. Place in the pan with the vegetables. Next, we do the same with tomatoes. Fry to your desired consistency. Add salt, pepper and fry further. I prefer a firmer state, so I just need to keep the vegetables for 5 minutes over medium heat. All is ready.


4. Boil the chicken fillet in hot salted water until cooked. Cool and cut into fibers. Mix with vegetables.

2. In an empty frying pan or you can take another one, add finely chopped onion and fry until soft. Salt and pepper.

3. Peel the carrots and grate them on a coarse grater. Add to the onion and mix well, fry until the carrots are soft. At the end, add some salt and let it fry for a couple of minutes. Be sure to cool.

If your champignons are fresh, fry them in a separate pan. If you took their canned version, then add them at the very end.


4. When all the ingredients are ready, put everything in a bowl and add salt to taste, add black pepper, about half a teaspoon.

At the end, add canned mushrooms and mix thoroughly. Add mayonnaise to taste.

  • Boiled potatoes - 4 pcs.
  • Champignons - 250-350 g.
  • Eggs - 4-5 pcs.
  • Mayonnaise.
  • Vegetable oil.
  • Salt - to taste.
  • Fresh cucumber - 1/2.
  • Parsley and cranberries for garnishing the finished dish.

The eggs need to be boiled and then grated very finely. Peel and chop the potatoes and carrots. Grind the champignons into plates and fry along with the onion in vegetable oil. Add salt and pepper to taste. Wash the prunes, scald and cut into pieces.

  • Carrot.

  • Half a potato.
