  • 3 tbsp flour
  • 1 tbsp. boiling water

For filling:

  • 600 g minced meat of any kind
  • 1 onion
  • 2 cloves garlic
  • 1 carrot
  • vegetable oil for frying

Preparation:

1.Knead the dough: lightly beat the egg with salt, add vegetable oil, flour and slowly add boiling water, stirring. Cover the finished dough with a bowl.

2. Chop the onion and garlic, grate the carrots on a coarse grater.

3. Salt, pepper and mix the minced meat, adding garlic.

4. For the vegetable pillow, fry onions and carrots with vegetable oil in a frying pan.

5. Roll out the dumpling dough into a layer 3 mm thick and spread with minced meat, distributing it throughout the dough.

Roll the dough into a roll

and cut into barrels 3 cm high.

6. Place our barrels on a vegetable bed, fill them with water, and don’t forget to add salt and pepper. Simmer covered until tender, 20-30 minutes.

I don’t know about you, but I always have Armenian thin lavash in my house, because my family loves lavash dishes. And I have many recipes from it that you can use. Today we will prepare lazy dumplings, and instead of dough we will use thin pita bread.

We need:

  • 2 pita breads
  • 700-800 g of minced meat (if we are cooking for a small family, then 500 g)
  • 2 onions
  • 2 carrots
  • 100 g sour cream or mayonnaise
  • 100 g water
  • salt, pepper, spices to taste
  • greens to taste
  • vegetable oil

Preparation:

1.Fry chopped carrots and onions in vegetable oil.

2. The minced meat must be salted, peppered and seasoned with spices. We divide it into two parts, just like we have two sheets of pita bread.

3. Place one half of the minced meat on a sheet of pita bread and distribute it over the entire sheet. The meat layer should be about 3 mm.

We wrap it in a roll. We do the same with the second sheet. Leave for 10 minutes to soak.

4. After, cut the rolls into pieces 3 cm in size.

5. Prepare a baking dish; it is better, if you have one, to take a glass round one with a small diameter (cm. 20), this is the case when you have a small family. Grease the pan with butter (bottom and sides) and place the fried vegetables evenly along the bottom of the pan.

6. Place the rolls on the vegetable pillow, not too tightly to each other.

7. Prepare the filling by mixing sour cream with water, adding salt, and adding chopped herbs if desired.

Fill the prepared rolls and place them in a preheated oven at 180 degrees for 45 minutes. To prevent the top from browning too much, cover with either a lid or foil. After 30 minutes of baking, you can remove the foil and continue baking.

We can also bake it in a frying pan, under the lid.

8. Serve the finished dumplings with sour cream.

Lazy dumplings, as we see, can be baked in the oven or fried in a frying pan, whichever is convenient for you, the taste will not deteriorate from this, but they turn out like regular dumplings, tasty and juicy.

I make the dough in a large bowl. Sift the flour. Above, I already told you about flour, which is different for everyone and everywhere. So let's start with 350 grams. In a separate bowl, mix 2 eggs, a spoonful of vegetable oil, salt, water and add all this to the flour. Knead the dough, but without fanaticism. It’s better and more convenient to finish this whole thing on the table.


Next, knead our dough thoroughly. The process will last at least 5 minutes. It should not stick to your hands, so if you see that you want more flour, add the remaining 30 grams little by little. Wrap the dough in film and set aside for 20-30 minutes. During this time we will make minced meat and onion pillow.



I never buy ready-made minced meat and I don’t advise you to. It's better to take the meat and grind it. Quite ok with one pork, lamb or veal. I don’t really like it with pure beef, but it’s a matter of taste.

Grind the meat (in my case, pork and beef) along with the onion, add salt, pepper, egg and mix. Somehow I simply forgot to add an egg to the minced meat - the dish turned out no worse and nothing fell apart.



Peel and chop the garlic. Peel the onion and cut into half rings. Heat a frying pan, add a couple of tablespoons of vegetable oil and fry the onion over low heat until transparent. At the very end, about 30 seconds, add the garlic and fry everything together. Turn off the pan and return to our test.



Sprinkle the table a little with flour. I divide the dough into 2 parts. I wrap one back in film, roll the second into a sort of sausage, and then into a rectangle, turning it over several times in the process. The thickness is about a millimeter. Distribute half of the minced meat evenly on top.



Roll the dough into a roll and cut into pucks about 4-5 cm in size.



Distribute our lazy dumplings over an onion bed, add broth, about a tablespoon of chopped herbs (in my case parsley and dill), 20 grams of butter (if you want), cover with a lid, bring to a boil, reduce heat to low and simmer for about 30 minutes.



As you can see, the rolls are located at quite a distance from each other. During the cooking process they will increase by one and a half times, or even two. Let's look under the lid in 20 minutes. Beauty! If necessary, add a little extra broth or water.



Well, while the first batch is being prepared, let’s roll out the second half of the dough, do all the same operations and cut it into pucks.

Next is the second version of the pillow sauce. Cut the onion into half rings, the paprika into strips, the tomatoes into slices, and chop the garlic. Add a couple of tablespoons of vegetable oil, 10 grams of butter to the frying pan and first fry the onion until lightly golden, then add garlic and pepper, fry for another couple of minutes. Add tomatoes and fry for another minute.

Now that the tomatoes are not the best, I use them in my juice. 4 tomatoes + 200 g of water are replaced with a 400 g can of tomatoes in their own juice, along with this same juice and +100 g of water.

So, after adding tomatoes and water, the sauce has boiled, add sugar, salt, and, if desired, a little chili pepper, basil, and base the second portion of lazy dumplings on top. Close the lid and cook over low heat for 25-30 minutes. If you see that after 15-20 minutes there is almost no liquid left, add a little.

  • flour – 3-4 tbsp;
  • egg – 1 pc;
  • minced meat – 0.5 kg;
  • – 1-2 pcs;
  • carrots – 1 piece;
  • tomato paste, frying oil, salt, pepper and spices;
  • water – 2 tbsp.

Preparation:

  1. In a deep bowl, mix 1 glass of water, a pinch of salt and 1 egg until smooth.
  2. Add flour into the mixture in small portions, continuing to stir. The dough will begin to thicken, continue kneading until we get an elastic and soft dough.
  3. Place the finished dough aside for 30-40 minutes to allow it to rest - this will give it more elasticity necessary to obtain a thin layer.
  4. You can prepare vegetable gravy. In a frying pan greased with vegetable oil, fry the onion, peeled and cut into small cubes, until golden brown.
  5. Peel the carrots and chop them on a fine grater. Add the fried onion to the frying pan and simmer over low heat for 5-10 minutes.
  6. Add 2-3 tbsp to the pan. tomato paste, 1 glass of water, salt and favorite spices. The vegetable mixture will serve as a gentle “cushion” for lazy dumplings and add juiciness to them.
  7. We begin to “sculpt” dumplings. The dough needs to be rolled out to a thin layer, no more than 3 mm thick and a shape approaching rectangular. For convenience, divide a large piece of dough into 2 smaller pieces and roll them out alternately.
  8. Spread the minced meat onto the rolled out dough in an even layer. It can be peppered and salted.
  9. Roll the resulting “blank” of dough and minced meat into a roll and cut into rings 3-4 cm wide. These will be dumplings.
  10. Pour the prepared vegetable gravy onto a deep baking sheet and place the chopped roll rings here. You get small rosettes from dough and minced meat in vegetable gravy.

Preparation:

  1. It is better to start cooking with the dough so that it has time to “rest”, this will improve the stickiness and elasticity, and it will be more convenient to work with it. For the dough, we need to mix flour, 1 glass of water, an egg and a pinch of salt in a deep bowl. It’s better to beat the egg a little, you can immediately add salt and water, and only then add flour to the mixture.   4. Place the onion in a heated frying pan and fry until golden brown. Add carrots to the onion and simmer together for a few minutes. Let the vegetables fry for a few minutes without heat to form the dumplings.
  5. To make dumplings using the lazy method, you need to roll out the dough in a large layer, no more than 3 mm thick and rectangular in shape. For ease of rolling, you can divide the dough into 2-3 equal parts and roll out the layers one by one.
  6. Place the minced meat on the dough and distribute it evenly over the entire surface. You can use any minced meat. If necessary, you can pepper the minced meat directly laid out on the dough, and you can also add your favorite spices to the meat, herbs or a little onion.
  7. We roll the entire workpiece into a roll and cut it into pieces 3-4 cm wide. On one side, the resulting pieces are slightly molded into the edges of the dough, as if “sealing” them, and the edges with the cut and visible minced meat remain open and look like a rose.
  8. Place the lazy rose dumplings on the sealed side in a frying pan on top of the vegetables and fry them together a little. This will secure them and prevent the meat juice from leaking out of the dumplings.
  9. After frying, add the stewing mixture to the same pan - spoons of tomato paste and sour cream with spices mixed in a glass of water. Drenched dumplings should not be submerged in gravy. Let the top part be a little higher - this way they will not lose their shape and taste.

I think there are very few people who are indifferent to dumplings. I mean homemade, hand-made dumplings. But in order to enjoy this delicious dish, it is not at all necessary to spend time on modeling.   8. Divide the dough in half, roll one part with a rolling pin to the desired thickness. I prefer to roll it thin. We give the rolled out dough the appearance of a long oval.

  9. Apply half of the minced meat onto the resulting flatbread, leaving the edges untouched.

  10. Very carefully roll the dough with minced meat along the oval into a roll.

  11. You can pinch the edges of the dough a little with your fingers. We repeat the same manipulations with the remaining dough and minced meat.

  12. Cut the roll into small columns.

  13. Roll each resulting dumpling in flour, pressing lightly on the ends.

  14. Place dumplings in a frying pan with vegetable oil (no more than 15 g). Fry them on one side until a tender crust forms.

  15. Then pour boiling water into the pan until approximately halfway up the height of the dumplings and cover with a lid. We wait 20-30 minutes.

    If all the water has evaporated and the dumplings are not ready yet, you can add a little more boiling water.



  16. At the end of cooking, open the lid and leave the pan with dumplings on the fire until all the water has evaporated.

  6. Finely chop 2 onions.

  7. Grate carrots (1 large or a couple of small ones).

  8. Roll out the dough with a rolling pin into a rectangular cake.

  9. Place the minced meat on the dough and distribute it in an even layer over the entire surface.

  10. Carefully roll up the roll.

  11. We cut the roll into small portions 2-3 cm wide.

  12. Pour 30 grams of vegetable oil into the multicooker bowl and activate the “Frying” mode.

  8. Lazy dumplings in the oven are ready when they take on a nice golden hue. If there is still water in the pan, you can remove the foil and keep the dish in the oven for a few more minutes.

Using a multicooker makes cooking easier. However, the dumplings turn out no less aromatic and juicy than according to the classic recipe.

  • 400 ml water;
  • 1 egg;
  • 500 g flour;
  • 8 g salt;
  • 0.5 kg of minced pork and beef;
  • 2 onions;
  • 1 carrot;
  • 3 garlic cloves;
  • 20 ml oil for frying.

Cooking steps.

  1. Prepare the dough in the usual way: stir an egg in 200 ml of water, add salt and flour. Make a stiff dough, wrap it in plastic and put it in the refrigerator for 40 minutes.

Cooking steps.

  1. For the dough, combine 1 egg, water, salt, beat everything thoroughly. Add soda dissolved in vinegar. Gradually add flour and knead into a tight dough. It is placed in a bag and put in the refrigerator for 30 minutes.

This delicious hearty dish will please everyone. Its preparation takes only 40 minutes.

Ingredients:

  • 125 g flour;
  • 1 egg;
  • 5 potato tubers;
  • 5 g salt;
  • 3 g potato spices.

Cooking steps.

  1. Peeled potatoes are cut into 4 parts and boiled in salted water until soft.
  2. Mashed potatoes are prepared from ready-made hot potatoes: softened with a masher, egg and seasonings are added.
  3. Gradually add flour to the puree, stirring all the time. The dough should be airy.
  4. Roll out the prepared mass into sausages and then cut them into equal slices.

“Lazy Wife” - dumpling casserole recipe

The dish received such an interesting name due to the fact that store-bought dumplings are used in the recipe. However, the taste of this casserole is more reminiscent of lasagna, so even a gourmet will like it.

Ingredients:

  • 0.5 kg of ready-made dumplings;
  • 1 onion;
  • 1 egg;
  • 100 g cheese;
  • 250 ml sour cream;
  • 50 g butter;
  • 3 g spices to taste;
  • 4 g salt;
  • sunflower oil for frying.

Cooking steps.

  1. Prepare dumpling filling. Combine the egg, seasonings and sour cream, mix until a homogeneous mixture is obtained.
  2. The cheese is ground on a medium grater.
  3. Finely chop the onion and fry in oil.
  4. Grease the casserole dish with butter.
  5. Place the dumplings in a mold in rows in one layer, sprinkle them with fried onions. Pour the egg-sour cream mixture on top, then grated cheese is spread evenly over the surface.
  6. Dumpling casserole is cooked at 180 degrees for 30 minutes.
