  6. Place on low heat. When the sugar melts, increase the heat - it should be slightly less than medium: not too high so that the caramel does not burn, but not too low, otherwise it will cook for too long. Bring the syrup to a boil and cook, stirring, for 20-25 minutes. The syrup should be boiling.
  7. As soon as the syrup begins to brown, turn it off.
  8. If the candy syrup is well prepared, it will be clear and caramel-amber in color.
