Blueberry juice, compote and syrup

The maximum amount of substances is found in fresh berries, but this does not mean that you should just eat raw berries. Juices, fruit drinks and syrups based on the fruits of this crop will help diversify your diet (Figure 4).

Freshly squeezed blueberry juice contains no less useful substances than berries. Blueberry juice will also be a tasty and healthy addition to your diet. To prepare it you will need fresh berries. They need to be rinsed well and lightly dried with a paper towel. Next, you need to lightly chop them, put them in a saucepan and add hot water. Bring the mixture to a boil, add sugar to taste and stir the fruit drink until the sugar is completely dissolved. The drink should be drunk chilled.

You can also make a delicious, healthy syrup from blueberries, which can later be served with pancakes or pancakes. To prepare the syrup, you need to take half a liter of water, add the zest of one lemon to it and simmer over low heat for five minutes. However, there is a recipe, the preparation of which does not include heat treatment of the berries. This product retains all the beneficial properties of blueberries, while remaining extremely tasty (Figure 5).

Making jam is very simple: for 1 kg of berries you will need 1.5 kg of sugar. The fruits need to be washed, lightly dried on a paper towel and ground into a puree along with sugar. The mixture is placed in sterilized jars, tightly closed with a lid and stored in the refrigerator.

Blueberry contraindications and possible harm

Another advantage of blueberries is that they have relatively few contraindications, and it is really difficult to harm your health when consuming the berries.

The main contraindications to consuming fresh berries, juices or any other blueberry products are acute pancreatitis and urolithiasis (oxalate stones in the urinary tract). In addition, people with food allergies should treat the berry with caution.

Where to collect and how to store blueberries

Blueberry is a low-growing shrub that is found primarily in coniferous forests in temperate and cool climates. However, she prefers moist soil and partial shade.

Fruiting begins in early July and lasts throughout the month, but if you need to prepare leaves or shoots, it is better to collect them in early May, when the flowering period of the crop begins. If you go to the forest to pick berries, it is better to harvest from young bushes that have few branches.

Note: The lushness of a bush directly indicates its age: the more young shoots formed on the largest branches, the older the plant.

It is better to collect blueberries in baskets or buckets, and it is not recommended to pour the berries, because this may damage their skin and pulp (Figure 6). If you buy blueberries at the market, be sure to pay attention to their appearance: the fruits should be evenly colored, dry and with a characteristic bluish coating, the presence of which means that the fruits were not poured from one container to another and were picked by hand.

If you have already picked or bought blueberries, then you will definitely be interested in ways to store them. Of course, the maximum amount of nutrients is preserved in fresh fruits, but they can also be dried or frozen for the winter. Dried or frozen blueberries also contain many beneficial substances for the body. It is best to dry berries in a special dryer, in which the temperature is first set at 40 degrees, and when the berries are slightly wilted, increase it to 70. To freeze the largest and juiciest berries, they need to be laid out in one layer on a large plate, tray or in any other container, and place the container in the refrigerator. When the berries are frozen, they can be transferred to containers for further storage.

Recipes for the winter

Not everyone has the opportunity to dry or freeze blueberries, but you can make stocks of these berries for the winter in another way. For example, you can make jam by grinding fruits with sugar (1.5 kg of sugar is required per 1 kg). The resulting mixture just needs to be put into sterilized jars and rolled up. But it is better to store such jam in the refrigerator, since at room temperature it can quickly spoil.

Canned juice will also help preserve the beneficial properties of blueberries. To prepare it, you need to wash and dry the berries, then grind them with a pestle and put them under a press. When the juice stops dripping from the berries, add 2 tablespoons of hot water to the pulp and grind it again.
