Vegetable cake recipe

Pour vegetable oil into a tall bowl. Add a raw egg (you need to break it so as not to damage the yolk), season with mustard. In a separate container, mix salt and sugar, add 1 tbsp. lemon juice and add the mixture to the container with oil. Blend with a blender for 10 seconds.

Stop and beat again (10 seconds). Place the finished sauce in the refrigerator to brew. Boil potatoes with skins and beets (in separate pans), peel and grate on a coarse grater. Grate the cheese on a fine grater. Finely chop the green onions. Grate raw carrots.

A vegetable cake can be decorated just as beautifully as a regular one! Cut the olives into slices. Grate the pickles on a coarse grater and squeeze out the excess liquid. Place a layer of 1/3 of the boiled potatoes on the dish prepared for the cake, followed by the next layer of pickled cucumbers. Salt, pepper, grease with sauce. Place a layer of ½ grated beets, cover with a layer of green onions. Salt and brush with sauce.

Place the second part of the boiled potatoes, add chopped olives, and brush with sauce. Place a layer of raw carrots, sprinkle with finely chopped parsley, add salt and spices, and brush with sauce. Ingredients:

  • Prunes – 100 g.
  • Pickled gherkins – 4 pcs.
  • Chicken eggs – 4 pcs.
  • Dried apricots – 100 g.
  • Fresh greens – 30 g.
  • Black pepper.

  • Natural yoghurt – 250 g.
  • Mustard – 1 tbsp. l.
  • Garlic - half a head.

Preparation:

  1. Boil beets, carrots, chicken eggs and potatoes. Peel and cut into equal cubes. Soak dried fruits in warm water, sort and finely chop into thin strips.
  2. Divide chicken eggs into whites and yolks. Rub the yolks through a sieve. Grate the whites on a coarse grater.
  3. Make a dressing. To do this, mix mustard, thick natural yogurt, crushed garlic, salt and spices in a blender.
  4. Place the mold on a flat dish and place the ingredients in small layers. They take turns: beets and potatoes, prunes, carrots, cucumbers, squirrels, apples and dried apricots.
  5. Layer every third layer with yogurt dressing.
  6. Coat the dried apricots with sauce and sprinkle with yolks.
  7. Let the dish brew for an hour.

Vegetable zucchini cake

A high-calorie cake for those who do not eat meat, but do not deny themselves nourishing and fatty foods.

Ingredients:

  • Young zucchini – 2 pcs.
  • Garlic – 3 cloves.
  • Chicken eggs – 2-3 pcs.
  • Wheat flour – 2-4 tbsp. l.
  • Soda - a third of a tsp.
  • Creamy soft cheese or Ricotta – 300 g.
  • Fresh dill – 50 g.
  • Carrots for decoration.
  • Salt.
  • Black pepper.
  • Vegetable oil – 50 ml.
  • Butter – 30 g.

Preparation:

  1. Peel the zucchini and grate on a coarse (beetroot) grater. Mix with chicken eggs, wheat flour, soft butter, soda, salt and ground black pepper. The dough should have the consistency of thick sour cream.
  2. Bake thin pancakes in a well-heated thin cast-iron frying pan.
  3. Beat soft cheese in a blender bowl along with garlic and fresh dill.
  4. Spread the cooled zucchini pancakes with green cheese. Coat the sides and top of the cake in the same way with a thin layer.
  5. If desired, decorate the salad with boiled carrot roses or grated boiled eggs.
  6. Maki Cake

    Delicious light salad with cheese and original decoration. For the dish you need to choose aged yellow cheese with an islandy taste.

    Ingredients:

  • Cheese – 200 - 300 g.
  • Red cream tomatoes – 3 pcs.
  • Green onion with feathers – 50 g.
  • Chicken eggs – 4 pcs.
  • Garlic – 3 cloves.
  • Full-fat sour cream – 300 g.
  • Carrots – 3 pcs.
  • Potatoes – 3 pcs.
  • Walnuts – 100 g.
  • Wheat flour – 4 tbsp. l.
  • Butter – 30 g.
  • Vegetable oil – 50 ml.
  • Garlic – 4 cloves.
  • Parsley – 30 g.

Preparation:

  1. Pour boiling water over walnuts. When the husks come off, dry on a paper towel and heat in a dry frying pan.
  2. Grate the cheese and carrots on a fine grater. Boil the potatoes.
  3. Squeeze the juice out of the carrots, mix it with two eggs and a couple of tablespoons of wheat flour. Salt and season to taste. Bake 2-3 thin pancakes.
  4. Puree the potatoes. Mix with soft butter, spices and salt, a couple of tablespoons of wheat flour. Bake 2-3 thin cakes.
  5. Blend walnuts, garlic, sour cream, parsley and green onions in a blender, reserving a few feathers and twigs for decoration. Add grated cheese.
  6. Place the carrot pancake on a flat dish, coat with sour cream dressing with herbs and nuts, place the potato pancake on top, and layer again.
  7. Spread the assembled cake with dressing on top and sides. Generously “bread” with grated cheese on all sides.
  8. Make poppy petals from cream tomatoes. Collect “poppies” from petals, green onion feathers and parsley sprigs.
  9. Let sit in the refrigerator for at least one hour.
