  2. Add eggs, vanilla and sugar, beat.

You won’t find baking powder in classic brownie recipes, but even the most famous chefs don’t shy away from adding this ingredient. We decided not to deviate from their example and offer you a dessert option with the most delicate curd filling, which goes perfectly with the bitterness of extra dark chocolate.

For the chocolate dough:

  • 1.5 bars of extra dark chocolate;
  • 0.15 kg butter;
  • 3 eggs;
  • up to 1 glass of sugar;
  • 2/3 tbsp. flour;
  • 60 g cocoa;
  • ½ tsp. baking powder (at your discretion);
  • ground ginger, cloves and cinnamon to taste;
  • a pinch of salt.

Curd filling brownie:

  • 0.15 kg of cottage cheese;
  • 3 eggs;
  • 60-80 g sugar;
  • 1 pack vanilla.

Cooking steps brownie with cottage cheese:

  1. Melt the butter with the chocolate broken into pieces in a steam bath.
  2. Mix eggs with sugar;
  3. Add flour, spices, baking powder and salt, mix thoroughly.
  4. Mix all the ingredients for the filling in a separate container.
  5. Line the pan with wax paper or foil and pour about 2/3 of our dough onto it.
  6. We form a layer of curd filling on top, spreading it with a spoon. Pour the remaining dough onto it, leveling the surface. If desired, the layers can be mixed a little.
  7. Baking time in a hot oven is about half an hour.

The perfect dessert is brownie with cottage cheese and cherries.

Is it true that previous brownie recipes make you involuntarily lick your lips after reading them? Imagine how delicious it will be if you combine them and make a curd-cherry brownie.

The pie will contain quite a lot of additional additives that are not provided for in the classic recipe, so again you will have to retreat and add baking powder. But this will not spoil the taste.

Required ingredients:

  • 1 bar of extra dark chocolate;
  • 0.13 kg butter;
  • 1 tbsp. Sahara;
  • 4 eggs;
  • 1 tbsp. flour;
  • 10 g baking powder;
  • 1 pack vanilla;
  • 0.3 kg of fresh or frozen cherries;
  • 0.3 kg of fatty cottage cheese, ground through a sieve or curd mass;
  • a pinch of salt.

Preparation procedure:

  1. Melt butter with chocolate, mix and leave to cool.
  2. Beat 2 eggs and half a glass of sugar with a mixer until white.
  3. Mix 2 more eggs with cottage cheese and remaining sugar.
  4. Combine the cooled chocolate mixture with the egg mixture.
  5. We cover the mold with paper, then we begin to lay out the layers: 1/3 chocolate dough, 1/2 curd filling, half a cherry, 1/3 dough, 1/2 curd filling, the remaining cherry, 1/3 dough.
  6. In a preheated oven, the pie will cook for about 45-50 minutes.
  7. We take out the cake and let it cool right in the mold, then take it out and sprinkle it generously with powdered sugar.

Brownies in a slow cooker

The multicooker is a technical achievement, praised by the housewives of this world. This device also successfully copes with the preparation of the signature American dessert. A brownie cooked in the slow cooker will have just the right moisture and texture.

Required ingredients:

  • 2 bars of extra dark chocolate;
  • 3 eggs;
  • 2/3 tbsp. Sahara;
  • 1 pack vanilla;
  • 0.15 kg butter;
  • 1 tbsp. flour;
  • 20-40 g cocoa;
  • 1/3 tsp. baking powder;
  • a pinch of salt and spices to taste.

Preparation procedure:

  1. Traditionally, melt the chocolate and butter in a water bath and let the resulting mass cool to room temperature.
  2. Mix eggs with regular and vanilla sugar without using a mixer.
  3. Mix chocolate and egg mixtures.
  4. Add flour with baking powder, salt, cocoa and spices (cardomom, ginger, cloves, cinnamon), mix until the dough becomes completely homogeneous.
  5. Transfer everything into a greased multi-cooker bowl. Cook on the “Baking” for about 45 minutes. True, the brownie prepared in this way does not have a traditional sugar crust, but this does not make it tasteless.

Homemade brownies with cocoa

To make brownies according to this recipe, you will have to work hard and look for really high-quality cocoa (we remind you that Nesquik does not belong to the category of cocoa).

As you can see, baking powder is not listed among the ingredients, so don't expect the dough to rise. It will be exactly as it should be, not high with a moist core.

Required ingredients:

  • 0.1 kg butter;
  • 0.1 kg unsweetened cocoa;
  • 1 tbsp. sugar (a little less is possible);
  • 3 eggs;
  • ½ tbsp. flour;
  • a handful of nuts;
  • a pinch of salt.

Preparation procedure:

  1. Heat the oil in a steam bath, mix it with eggs, cocoa and sugar.
  2. When the oil mixture has cooled to room temperature, add the eggs to it separately.
  3. Separately mix the sifted flour with nuts, add the liquid mass to them, mix thoroughly. If you do the opposite, adding flour to the cocoa mass, it will be almost impossible to get rid of the resulting lumps.
  4. Line a suitable sized square or rectangular pan with wax paper and pour the dough onto it. In a preheated oven, baking time is from a quarter of an hour to 25 minutes. Depends on your preferences and the desired degree of doneness of the cakes.
  5. Once the brownies have cooled to room temperature, place them in the refrigerator overnight. Served sprinkled with powder and cut into small portions.

There are several common mistakes made when making brownies. They seem to be quite insignificant, but they spoil the final result quite noticeably. If you ignore the recommendations below, you risk leaving yourself and your loved ones without the perfect brownie.

Simple steps to achieve chocolate perfection:

  1. Add the ingredients into the flour, and not vice versa, as many are used to doing. This way you will be able to get rid of lumps that can seriously spoil the desired result.
  2. Eggs should only be at room temperature. Cold eggs will make the texture of the dessert denser than you would like. Remove eggs from the refrigerator an hour and a half before baking.
  3. After placing the brownies in the oven, check them several times before the end of the cooking time specified in the recipe.

Brownie (English: Chocolate brownie) is a chocolate cake with a characteristic brown color (English: brown - “brown”; hence the name), traditional for American cuisine. Depending on the recipe, it may have the consistency of a cake, cupcake or cookie. Cut into flat rectangular pieces.

Brownie is one of the most popular desserts in the USA and Canada. This delicacy can be found in any cafe and pastry shop, and lovers of home baking are sure to bake it at home. Brownies are usually served with coffee, ice cream, and for children with warm milk. For many Americans, these brown squares have a calming effect, reminiscent of childhood and home comfort, like, for example, grandma’s pies for Russians.

One story claims that the brownie was invented at the Palmer House Hotel in Chicago in 1892, and the name “Brownie” first appears in a Boston Cooking School recipe book published in 1884.

Despite all the apparent ease of preparation, brownies have one distinctive feature - the baked goods are never fully baked! It is this, as well as the absence of baking powder, and not the square shape of the pieces, as is sometimes mistakenly believed, that determines that this baked product belongs to the brownie class. It is very important to set the temperature correctly. 180 degrees is optimal.

How to correctly determine whether a brownie is ready?

The first sign is a “caramel” or, more correctly, “chocolate” smell of baking. The chemical compounds responsible for the smell contained in cocoa beans are very volatile and are easily released when heated. Overheated (overbaked) chocolate pastries lose their wonderful aroma, which is its main charm!

The second sign is the wooden stick test. At the exit, the stick should be surrounded by small pieces of baked but sticky dough. If the batter drips in thick drops, keep the brownies in the oven for another 6 minutes. It is important to remember that baked goods left in the switched off oven tend to overcook; this is also facilitated by the shape, which retains heat for a long time. Therefore, as soon as the readiness check has occurred on a wooden stick, the brownies should be immediately removed from the oven.

Brownies can be served warm, at room temperature or very chilled. It is best to cut the cakes completely cooled and even kept in the refrigerator for several hours. When warm, brownies are tender and resemble muffins in taste and structure; when cold, they are dense and resemble chocolate truffles in taste and structure.

1. Brownie

Ingredients:

  • chocolate (bitter, at least 70%) - 200 g
  • butter - 150 g
  • cocoa - 1 tbsp. l.
  • sugar - 200 g
  • vanilla sugar
  • chicken eggs - 4 pcs.
  • flour - 100 g
  • walnuts - 1/2 cup
  • powdered sugar for decoration

Preparation: Preheat the oven to 180 degrees. Place chocolate and butter in a water bath. Grind the walnuts using a blender. Meanwhile, the butter and chocolate had already begun to melt. Without removing from the water bath, stir until both components are completely dissolved. Remove from the bath and cool slightly.

Sift cocoa into the chocolate-butter mixture. Add regular and vanilla sugar and beat with a mixer. Add the eggs one at a time, beating a little each time.

Sift the flour, mix and add walnuts. The last time we go through the mixer. Grease the pan with butter and line it with baking paper, which we also grease with butter. If you have a silicone mold, greasing and lining are not necessary. Pour our dough into the mold.

Bake at 180 degrees for 20–30 minutes, depending on the characteristics of the oven. I advise you to check the brownies at the 20th minute. If a good crust appears, it's ready. Serve garnished with powdered sugar or cocoa, melted chocolate or berries.

2. Chocolate Mint Brownies

Ingredients for the dough:

  • eggs – 2 pcs.
  • sugar – 160 g
  • butter – 80 g
  • cocoa powder – 3 tbsp.
  • flour – 120 g + add a pinch of salt and baking powder
  • vanilla essence – 1/2 tsp.

For filling:

  • low-fat soft cottage cheese – 200 g
  • sugar - 40 g
  • mint - leaves from 6-7 sprigs

For the sugar glaze:

  • powdered sugar - 140 g
  • milk - 2-3 tbsp.
  • mint - leaves from 3-4 sprigs
  • a few drops of green food coloring

Preparation: Line a 20cm square cake tin with parchment paper and lightly grease it. Preheat the oven to 175 degrees.

Beat eggs and sugar until light and fluffy. Melt the butter (in the microwave or in a saucepan over heat) and stir it with the cocoa powder. Add the chocolate mixture to the egg mixture and whisk everything together.

Add sifted flour with baking powder and salt. Beat with a mixer until smooth. To prepare the filling, grind the mint in a blender or chop finely with a knife. Mix cottage cheese with sugar, mint and vanilla essence.

Pour half the dough into the mold and smooth the surface. Carefully spread the curd mixture over the dough (it is convenient to use a pastry syringe for this), then pour in the remaining dough. Bake for 35-40 minutes. Cool in the pan.

To prepare the sugar glaze, grind the mint in a blender (or cut it with a knife), mix with milk and pour into the powdered sugar with constant stirring. Add green food coloring and mix thoroughly. The glaze should have the consistency of sour cream. Spread the icing onto the cooled cake and let it set. Trim the edges of the sponge cake and cut into squares.

3. The most chocolate brownie

Ingredients:

  • nuts (hazelnuts or almonds) - 80–100 g
  • dark chocolate - 200 g
  • butter - 250 g
  • sugar - 250 g
  • chicken eggs - 4 pcs.
  • flour - 125 g
  • baking powder - 1/4 tsp.
  • cocoa powder - 45 g

Preparation: Finely chop the nuts and fry in a frying pan. Melt chocolate with butter in a water bath. Beat eggs with sugar. Mix flour with cocoa and baking powder. Mix the egg mass with the “dry” mass (flour, cocoa and baking powder). Add 1–1.5 tsp. rum or vodka.

Gradually pour in the cooled melted chocolate and nuts. Cover a baking sheet with paper, grease with oil and lay out the dough (shape 20*20 cm). Bake at temp. 180 degrees 30–35 min. Check the readiness with a toothpick; it’s okay if the toothpick is slightly “raw”.

Drizzle melted chocolate on top (I left 5 tbsp when I melted it for the dough). Cut into pieces and you can enjoy.

4. Brownie or chocolate happiness recipe

Ingredients:

  • dark chocolate - 200 g
  • butter - 150 g and a small amount for greasing the pan
  • sugar - 350 g
  • eggs - 4 pcs.
  • flour - 100-110 g
  • cocoa powder - 1/2 tbsp. for the dough and the same amount for preparing the form
  • a pinch of salt

Preparation: Melt chocolate and butter in a water bath. It is important to pay enough attention to this step, as the mixture can be overheated, and then it will separate, or worse, the chocolate will begin to burn. As soon as the mixture becomes homogeneous, it should be removed from the heat and allowed to cool slightly.

At this time, eggs and sugar need to be beaten into foam. Now you can introduce the chocolate mass. At the very end - a mixture of flour, cocoa and salt. After stirring thoroughly, but not for too long, the dough can be poured into the prepared form: greased with butter and sprinkled with cocoa. The layer of dough in the mold should not be too thick: 2-2.5 cm is ideal.

All that remains is to bake the brownies: 180 ºС for 15-25 minutes (depending on thickness). Once the brownie passes the dry wooden skewer test, remove it from the oven, cool it, cut it into squares and enjoy! Whipped cream or a scoop of vanilla ice cream makes a great addition to brownies.

5. Two-tone brownies

Ingredients:

  • sugar - 3/4 cup
  • chocolate (not black) - 120 g
  • cocoa powder - 2 tbsp. l.
  • self-raising flour - 3/4 cup
  • cream cheese (Mascarpone, Philadelphia) - 280 g
  • pecans (walnuts possible) - 200 g
  • butter - 120 g
  • chicken eggs - 2 pcs.
  • vanilla extract - ½ tsp.

Glaze:

  • butter - 60 g
  • chocolate (not black) - 90 g
  • powdered sugar - 1 cup
  • cocoa powder - 1 tbsp. l.
  • milk - 2 tbsp. l.

Preparation: Grease a baking pan with butter and line with parchment paper. Chop the nuts. Stir in cream cheese, 2 tablespoons sugar and vanilla extract. Melt butter, chocolate and cocoa in the microwave.

Beat eggs with sugar. Add the chocolate mixture to the eggs and stir. Sift flour and add nuts. Pour half the batter into the pan, top with the cream cheese mixture and then the remaining chocolate batter. Bake for 40–45 minutes at 180 degrees.

Mix butter, chocolate, cocoa and milk, melt. Add powdered sugar. If the mixture is too thick, thin it with milk. Mix with a mixer.

When the cake is ready, spread some frosting over the top. Let cool and use the remaining frosting. Garnish with nuts and set aside for a couple of hours. Once the frosting has set, cut into squares and enjoy!
