  1. Dough: In a medium saucepan over low heat, heat the milk and 0.5 tbsp. water to a temperature of 37°C (but not higher than 43°C). Remove the pan from the stove and pour the yeast into the liquid. Sprinkle a pinch of granulated sugar on top and set aside without stirring for about 5 minutes. Then stir in the butter and egg yolk.
  2. In a large bowl, whisk together the flour, remaining granulated sugar and salt. Make a well in the center and pour in the yeast mixture, stirring with a wooden spoon until you form a thick, slightly sticky dough. Turn the dough out onto a floured work surface and knead until soft and elastic, about 6 minutes. Form the dough into a ball.


  3. Grease the inside of the bowl with butter. Place the dough ball in the bowl, turning it to coat with oil. Cover the bowl with plastic wrap, draw a circle the size of a dough ball on the plastic wrap, and time it. Let the dough rise in a warm place for about 1.5 hours until it doubles in volume.
  4. Remove dough from bowl and knead slightly to release excess air; Shape the dough into a ball again and place it in the bowl. Lightly butter a large piece of plastic wrap and place it over the dough. Wrap the entire bowl tightly in another piece of cling film and refrigerate for 4 hours or overnight to allow the dough to rise.
  5. Prepare the filling: In a medium skillet over moderate heat, melt the butter. Add leeks and cook, stirring frequently, until softened and lightly caramelized, about 5 minutes. Sprinkle the flour over the onion and cook, stirring constantly, until lightly browned and toasted, about 1 minute. Then stir in the wine and 1/4 tbsp. water and let the mixture thicken, stirring constantly, for about 1 minute. Remove the pan from the stove and stir in the cheese, 0.5 tsp. salt and a little pepper. Transfer the filling to a medium bowl and let cool completely. (The filling will firm up a bit, but if it's too warm, you'll have a hard time forming the buns.)

  6. Form the filled buns: Grease 2 tbsp. l. softened butter into a 22 x 32 cm baking dish. Place the dough on a floured work surface and press it onto the top. Roll it into a rectangle measuring 25 x 45 cm so that it lies with the long side facing you. Spread the cooled filling evenly over the dough, leaving about 2.5 cm from the edge opposite to you. Sprinkle the ham over the filling. Starting on the side closest to you, roll the dough into a tight log. Brush the empty edge of the dough lightly with water and continue rolling to seal the roll. Fold the ends in slightly, and if the roll looks thicker in some places, smooth it out with your hands.
  7. Using a serrated knife, cut the roll into 4cm rolls, making 12 rolls in total. Place the buns cut side down (except the outermost pieces) in the prepared pan, spacing them 1 inch apart. Cover the buns with plastic wrap. Place in a warm place until they double in size and there are no gaps left between them, about 1.5-2 hours.
  8. Place a rack in the center of the oven and preheat the oven to 175°C. Bake the buns until golden brown and spring back when pressed lightly, 25 to 30 minutes. Cool in pan for 10 minutes.

We call the recipe simplified, mainly because we will use instant yeast (such as Saf-Levure). This will make making the scones really easy and quite quick. We will need 15 minutes to prepare the dough, 20 minutes for the dough to “rest” in the refrigerator and 15 minutes to bake.

Ingredients (for 12 buns)

Flour - 220 g

Butter - 50 g

Salt - 5 g

Milk – 150 g

Ham - 100 g (cut into cubes)

Hard cheese - 40 g (grate)

Sugar - 1/2 teaspoon

Instant yeast - 10 g

For brushing: 1 tbsp. spoon of milk + 1 egg

Preparation

Pour instant yeast into milk (yeast will dissolve faster in milk at room temperature or slightly warmed).

Mix flour with salt, grated cheese, and sugar in a bowl. Make a well and pour in the milk and yeast (1). Add butter, softened at room temperature (2). Knead the dough with your hands (but you can also use a mixer) (3).

Roll out the dough, sprinkle the ham on it, mix gently (4), wrap in film or foil and refrigerate for 20 minutes.

Roll out the rested dough with a rolling pin on a lightly floured surface into a layer 1-1.5 cm high (5).

Use a cookie cutter or glass to cut out buns (6).

Place them on a baking tray lined with baking paper (7).

In a bowl, lightly beat the egg and milk and brush over the buns (8).

Bake for about 15 minutes at 200 degrees - the buns should rise and brown nicely (9). When the buns have cooled a little, you can remove them from the baking sheet.

Serve the buns warm or cold as a base for cheese sandwiches, as a separate dish (with tea, beer), or instead of bread.

Adviсe:

The ham in the buns can be replaced with any kind, including smoked sausages, boiled chicken, veal, and pork.

For variety, try sprinkling grated cheese on top of the buns. If you don’t like fried cheese, then sprinkle the buns with cheese 5 minutes before they are ready. Then the cheese will only have time to melt.

Adjust the salt in the buns to your liking. If buns are served instead of bread or prepared for school breakfast, add a little salt. If the buns will be a snack at a beer party, it makes sense to make them more salty and even pepper.
