We've been cooking it all for a long time and love it very much. This simple, but at the same time very tasty preparation is in great demand both at the family and holiday tables. But nothing lasts forever, and Czech tomatoes for the winter, the recipe for which you will see today, is proof of this. When I first put tomatoes on the table for guests to taste, the result pleasantly surprised me. Everyone was delighted with their excellent taste and pleasant aroma. And, despite all this, Czech tomatoes still turned out charming and very attractive in appearance. So, this preparation turned out not only very tasty, but also beautiful. She will easily decorate the holiday table and will always be the center of attention. And in order not to disappoint your guests and not have to explain to them why your supplies have run out, stock up on Czech tomatoes in large quantities. Pamper your guests and your family too.
I provide a list of required ingredients:
- three kilograms of medium-sized tomatoes,
- a kilogram of onions of any kind,
- a kilogram of bell pepper or sweet pepper,
- garlic to taste,
- water (about two liters),
- 60 grams of salt,
- 120 grams of sugar,
- 40 milliliters of vegetable oil,
- a tablespoon of vinegar (I added three, as the marinade required it for me),
- greenery

Place some of the washed tomatoes on the bottom of a washed and steamed sterilized jar.

Such an interesting twist for the winter made from tomatoes and onions will remind you of warm summer days, will delight you with its bright taste, and the colorful jars will certainly become a real decoration for your home pantry or cellar. This wonderful striped preparation is called Czech tomatoes for the winter, the recipe is simple and does not take much time and effort, and the set of products is quite affordable. Choose tomatoes that are small in size, fleshy, with dense but not dry pulp. The cut slices should hold their shape well and not fall apart. Bell peppers ideally need to be red, juicy, and fleshy, but in extreme cases they can be replaced with a simpler and less expensive greenish-yellow one. From the specified amount of products, 2.5 liters of preparation are obtained.

Ingredients:

  • tomatoes - 1.5 kg
  • onions - 0.5 kg
  • bell pepper - 0.5 kg
  • Garlic – 10 g
  • clean water - 1.1 l
  • salt - 20 g
  • granulated sugar - 50 g
  • table vinegar 9% - 1 tbsp.
  • vegetable oil - 0.5 tbsp.
  • mixture of peppercorns - 1 tsp.

Method for preparing tomatoes in Czech:

Rinse the tomatoes thoroughly, remove fruits that have damage, severe dents, or rotten areas. Cut the tomatoes into neat quarters; the stem must be cut off.


Also wash the bell pepper, cut off the stem, and remove the core and seeds. Cut the pulp into thin rings.


Peel the onion and cut into thin half or quarter rings.


Peel the garlic and finely chop it.

Clean the jars in which you plan to seal Czech-style tomatoes with the addition of baking soda and pour over boiling water.

Place tomato slices, peppers, onions and garlic in layers of jars prepared in this way.


In a saucepan, combine water, salt, granulated sugar, vegetable oil and vinegar. Add a mixture of peppercorns to the water (you can just use black peppercorns). Bring the indicated ingredients for the marinade to a boil and carefully, not too quickly, pour it over the vegetables in the jars.

Screw the jars tightly, turn them over, wipe dry with a towel and cover with something warm. Let the jars sit until they cool completely, then move them to a pantry shelf or cellar for storage.

If some of the vegetable oil gets on the outside of the jar when filling with marinade or during sterilization and the glass surface turns out to be oily, then rinse the cooled jars under warm water with a cloth and some dry mustard.

Few people know that this is what a tomato and pepper salad is called in Czech. Often housewives simply share it with each other, claiming that the taste is to die for! Where the name came from is not known for certain, but the recipe itself has been known for a long time.

Over time, its varieties appeared, but two variants are most common. They differ from each other in the range of products and some cooking features. Czech tomato recipes for the winter are good for large fruits that do not fit entirely into jars.

Recipe with onions

In this version, tomatoes are rolled with onions, bell peppers and garlic. It is better to take jars with a volume of 0.5, 0.7 or 1 liter.

Product Set

You will need the following ingredients:

  • 3 kg of ripe tomatoes of round or elongated shape;
  • 1 kg red or white onion;
  • 1 kg red or orange sweet pepper;
  • 5 large garlic cloves;
  • 10 peppercorns;
  • 2 tbsp. l. unrefined oil;
  • 1 tbsp. l. food essence;
  • 6 tbsp. l. granulated sugar;
  • 3 tbsp. l. table salt (not iodized);
  • 2000 ml filtered water.

Operating procedure

  1. The tomatoes are washed in cool water and each cut into 4 slices.
  2. The bulbs are peeled, dry edges are cut off, washed and cut into thin rings.
  3. The seed nest is removed from the sweet pepper, the fruit is also cut into rings, trying to maintain their integrity.
  4. Garlic is separated into slices, peeled and cut very finely. You just need to chop it, not grind it in a garlic press or blender.
  5. The jars are washed, rinsed, sterilized over a kettle or in the oven for 15 minutes.
  6. Sterilized containers are placed on the table.
  7. Vegetables are placed in layers: tomatoes on the bottom, then a layer of peppers, onions and garlic. In this way all containers are filled.

Helpful advice. The salad will turn out not only tasty, but also beautiful if the layers are made of medium thickness.

The marinade for the specified amount of vegetables is made quickly, so it can be prepared not in advance, but after all the ingredients have already been placed in jars. For it you will need to dilute salt, sugar, essence in water and pour in oil. Stir everything, put the pan on the fire, let it boil, after which the marinade is immediately poured into jars to the very top.

The containers are covered with metal lids and sterilized. For half-liter jars the time will be 10 minutes, for liter jars - 15, and 0.7 liter containers need to be sterilized for 12-13 minutes. If you wait a little, nothing bad will happen.

There is a variation of this recipe where the tomatoes are first peeled. In this case, take dense, not overripe, fleshy tomatoes. To make the skin easy to peel, the fruits are immersed in boiling water for 1 minute, then transferred to cold water. After 2 minutes, take it out and clean it immediately.

Classic version

According to this recipe, Czech-style tomatoes for the winter are prepared without sweet peppers. Experienced chefs claim that this is a classic method, and bell pepper appeared thanks to the experiments of Russian housewives.

Food preparation

Vegetables and spices per 1 liter jar:

  • ripe red tomatoes - as many as will go in;
  • unrefined oil - 2 tbsp. l.;
  • garlic - as you like, you can take one clove or a whole head;
  • allspice - 5-7 pcs.;
  • 9% vinegar - 1 tbsp. l.;
  • laurel leaf - 3 pcs.;
  • onions - as many as you like.

Components for filling:

  • granulated sugar - 5 tbsp. l.;
  • salt - 3 tbsp. l.;
  • water - 2 liters.

Procurement process

Finely chopped garlic is placed at the bottom of the jars, and spices are also sent there. You can not cut the garlic, but crush it with a press, but then the brine will turn out cloudy. The containers are filled to the top with tomatoes, cut into several slices. Place onion rings on top. If the preparation is intended for a festive table, the vegetables can be arranged in a more original way, then the salad will create a real sensation.

To pour, dissolve sugar and salt in water, place on the stove and let it boil. Without waiting for the marinade to cool, pour it into each jar to the very top. Add vegetable oil.

It is impossible to do without sterilization. You can steam the preserves in an autoclave, but most housewives prefer the traditional method - in a pan of water. It is better to take a wide container, such a height that the walls are at least not lower than the cans.

Tomatoes “Czech style”- a recipe for preparing incredibly tender tomatoes in slices with vinegar; when the contents of these jars appear on the table, they simply stop paying attention to other canned vegetables.

Making such tomatoes is not difficult, however, jars of tomatoes need sterilization, this will allow them to be stored for a long time simply at room temperature. Many housewives believe that if a recipe uses vegetables or fruits in slices and parts, then you can use slightly spoiled fruits by cutting off the not very fresh part. This is absolutely not allowed! For canning, only fresh tomatoes should be used.

The recipe is designed for 800 gram jars, and this is very convenient later, the jar is eaten almost in one go.

To prepare Czech-style tomatoes into slices, you need to prepare:

small dense fruits - for one 800 gram jar you will need about 700 grams;

garlic - so that the bottom of each jar is completely covered with peeled cloves;

black peppercorns, 4 pieces in each jar;

allspice peas – 1 pc. on the jar;

70% acetic acid – 0.5 tsp. per jar, if there is no specified acetic acid, then simply recalculate the amount of vinegar according to what is available;

vegetable oil – 1 tbsp. l. again on the can.

A liter of brine is boiled with 1 tbsp. l. salt and 2 tbsp. l. Sahara.

Recipe for tomato slices in Czech style:

1. Rinse the jars, heat treat them, this can be done in any way - hold them over steam or heat them in the oven.

2. Peel the garlic and line the bottom of each jar completely with garlic cloves.

3. Place black and allspice in jars.

4. Wash and chop the tomatoes. If the fruits are quite small, then you need to cut them into two parts, medium-sized fruits - into four parts. Place the slices tightly into jars.
