So if you decide to switch to a healthy diet, you have everything you need. Well, as for recipes, try making steamed meat cutlets with vegetables. For juiciness and taste, add sour cream and spices to the minced meat; for brightness, add herbs and carrots. If steamed cutlets are intended for a baby, then it is better to avoid spices and instead add more herbs and vegetables to the minced meat.

Ingredients

  • veal or lean beef – 300 g;
  • yolk of one egg;
  • onion – 1 pc. (small);
  • boiled carrots – 1 pc. (small)
  • raw carrots – 1 pc. (large);
  • potatoes – 6-7 pcs;
  • ground pepper, basil, nutmeg - a pinch;
  • salt - to taste;
  • thick sour cream - 1 tbsp. l;
  • green onions - a few feathers.

Preparation

    Grind the meat in a meat grinder or grind it in a food processor. Ready-made minced meat is also acceptable, but you never know its quality. Meat is easier to “control.”

    Add finely grated onion to the resulting minced meat (you can twist it together with the meat).

    Finely chop the boiled carrots and a few green onions. Place vegetables in minced meat.

    Separate the yolk from the egg white and add to the minced meat and vegetables.

    To make the cutlets juicy, add a spoonful of thick sour cream to the minced meat.

    Spices can be omitted or added to your liking. The recipe uses ground black pepper, ground paprika, basil and ground nutmeg (a pinch). You need to add spices after the minced meat is mixed.

    Salt is added to the minced meat last. The minced meat is kneaded again and put in the refrigerator for half an hour.

    Make small oblong or round cutlets from the chilled minced meat.

    To prevent the minced meat from sticking to your hands, wet your palms with cold water.

    A side dish for steamed cutlets can be prepared from any vegetables, but since potatoes and carrots are almost always available, this is the simplest and most convenient option.

    Cut the peeled potatoes into slices.

    Carrots can be cut into strips, cubes, circles - at your discretion.

    Place vegetables in a colander and add a little salt. Pour enough water into the pan so that it does not reach the bottom of the colander. Place a colander over a pan of water. Cover with a lid and turn the heat to medium. Make sure that steam does not escape from under the lid.

    After 5 minutes, place the cutlets on the vegetables. Cover tightly and cook for another 20 minutes. The water in the pan should constantly boil.

Of course, from a variety of meats. The most dietary cutlets are made from turkey or chicken fillet. Children especially love them - for example, they will really like this recipe. Very good fish cakes, cooked in a delicate culinary way using a steamer or colander.

Secondly, you can steam vegetable cutlets, either from vegetables alone or with the addition of cereals (rice, buckwheat, oatmeal). Cereals are also added to meat cutlets. One of the simplest methods known to a considerable number of housewives is the use of a flat-bottomed colander or sieve along with a sufficiently capacious saucepan with a lid. The latter should be slightly larger in diameter than the first, but such that they do not fall into it, but are held at the top.

The pan must be filled with enough liquid. However, its level, even when boiling, should be left just below the bottom of the sieve or colander. The dish is steamed, not boiled! However, you should not allow the liquid to completely boil away.

You can make cutlets according to any suitable recipe. For example, from half a kilogram of meat, a quarter of a white loaf pre-soaked in a glass of milk, one onion, an egg and spices. Traditionally, all components are passed through a meat grinder, and not very large balls are formed from the resulting mass.

The cutlets should be placed in a sieve or colander so that a small distance is maintained between them. Next, the vessel must be placed on top of a pan with boiling liquid and covered with a lid. Reducing the heat slightly (to medium), you need to cook the food for about 30-40 minutes. To determine readiness, break one cutlet. The meat inside it should be uniform in color, and the flowing juice should be transparent.

For other methods of creating steam cutlets, a metal sieve is also useful. In addition to this, you will need pans of various sizes, a piece of gauze at least 50x50 cm, twine and a grill grate from the microwave.

Pour water into one of the saucepans, whose diameter is about 20-25 cm, and cover everything with gauze, tying it tightly with twine. The fabric then needs to be pushed down a little to form a kind of hemisphere. After boiling water, place the cutlets on cheesecloth and, covering the pan with a lid, cook the dish for 35-40 minutes.

Instead of gauze, you can try placing a special rounded grill stand inside a pan of suitable diameter. Heat treatment of cutlets on it usually lasts about 40 minutes.

In each case, you need to ensure that the lid on top tightly closes the pan. Otherwise, the cooking time for steam cutlets will be increased - up to 60 minutes, or even more.

This dish will differ from its fried version in the absence of a golden brown crust. At the same time, however, it will be much juicier and more tender in taste.

Step 1: Prepare the ingredients.

The basis of the minced meat for our cutlets is meat. You can buy ready-made minced meat, or you can make it yourself by choosing a suitable piece of meat for this, clearing it of films and fat. When preparing minced meat, you will definitely need a meat grinder or blender. Cutlets can be prepared from pork, chicken, lamb and beef, or a mixture of them.
To highlight the taste of meat and give it aroma, we will take a medium or large onion, peel it and finely chop it. You can use a blender, just do not puree the onion. We do the same with garlic. To fix the minced meat so that it holds the shape of the cutlets, we need raw potatoes, which we wash, peel and grate on a fine grater or chop very finely in a blender. Now everything is ready for cooking.

Step 2: Prepare minced meat for steam cutlets.

In a deep bowl, mix the minced meat, chopped potatoes, onion and garlic, then break the eggs, salt and pepper to taste. To make the cutlets juicier, add a tablespoon of milk to the minced meat. The resulting mass must be thoroughly mixed to evenly distribute the ingredients. You can mix the minced meat with a spoon, or you can use a blender - this will take less effort and time.

Step 3: Shape and steam the cutlets.

Place the steamer closer and start cooking the cutlets. You must wet your hands with cold water so that the minced meat does not stick to them and forms well. Scoop the minced meat with a tablespoon, roll it between your palms, giving it the shape of a cutlet and place it in a steamer. Try not to place the cutlets too tightly so that they do not stick together. Close the steamer and set the “steaming” mode. Cooking time for steam cutlets is half an hour. After the time has passed, turn off the steamer and let the cutlets brew for some time. These 10 minutes are just enough to set the table.

Step 4: Serve the finished steamed cutlets.

Steamed cutlets go well with any side dish, such as mashed potatoes or boiled rice. Salads made from fresh vegetables or just pickles also go well with them. Try preparing a sauce for steamed cutlets that will highlight the extraordinary taste of this healthy dish. Bon appetit!

After this, we form small cutlets from the resulting minced meat, sprinkle them with sesame seeds and place them in a double boiler. We set the program for ten minutes. To prepare minced meat you will need:

  • minced chicken – 500 g;
  • white loaf – 2 pieces;
