Soup with ready-made meatballs and noodles. How to cook soup with meatballs and noodles. Tips and tricks for making noodle and meatball soup from grandma

This is a quick and simple soup, but it is generally a favorite among many. Sometimes it seems like what else can be invented there? However, there is room for imagination here too. So today there will be two recipes. For one, we will take small vermicelli, and we will traditionally cook the meatballs in broth. And the second will have long thin noodles and baked meatballs. Both with photos and step by step.

Soup with meatballs and small vermicelli

For meatballs, you can use any minced meat: pork, beef, mixed or chicken. It doesn’t matter, any choice will be delicious in its own way. I had pork. As for onions: I always put them through a meat grinder along with the meat, but I also definitely put them in when cooking. There won't be much of it. The one in the minced meat gives it juiciness, but itself is not felt at all.

Ingredients for a 3.5 liter pan:

  • minced meat – 300g;
  • potatoes – 200g;
  • vermicelli – 70g;
  • carrots – 1 piece;
  • onion – 1 head;
  • salt and ground black pepper - to taste;
  • bay leaf – 1 piece;
  • sunflower oil – 1 tbsp.

How to cook:

Take minced beef or chicken, remove pepper from the recipe, and do not fry vegetables - carrots and onions, then the soup will be completely dietary and perfect for baby food.

We serve the finished soup to the table and invite everyone to dinner. If desired, finely chopped greens can be placed directly on a plate or served separately so that everyone can take as much as they want.

Soup with baked meatballs and vermicelli

Now let’s move on to the second step-by-step recipe for making soup with meatballs, only we will have long vermicelli in it. We will need more time for it, since we will pre-bake the meat balls in the oven. How to do this, let's look at the photo below.

Ingredients:

  • minced meat (pork + beef) – 400g;
  • hard cheese – 50g;
  • breadcrumbs - 3 tbsp;
  • long vermicelli – 100g;
  • salt, pepper and spices for meat - to taste.

Preparing the soup:

As you can see, both versions of the soup are very simple to prepare; they are different, but equally tasty. Prepare, try. Enjoy your meal!

What to do if there is some minced meat left? That's right - cook a delicious soup with meatballs and noodles. Rich, satisfying and aromatic, the soup is an excellent option for a quick meal for lunch. And although it would seem that the recipe is limited to certain limits - meat balls and pasta, there are several incredibly cute recipes that I am happy to share.

Truly, the idea of cooking with meatballs is international. At different times and in different countries, meat trimmings were used, turning them into minced meat. The designation for meat balls comes from the Italian “fricadelle”, which means the aforementioned balls.

How to cook soup with meatballs and vermicelli

There are not too many ways to prepare soup with meatballs. They are made from different types of meat - chicken, beef, pork. A combination of a couple of species is considered more successful. Dry beef is good to complement with fattier minced pork. Chicken meatballs are suitable for cooking a light dietary dish.

Vermicelli is also a rather loose concept. Everyone loves the stars from the bag, just like from childhood, put in small vermicelli, chop spaghetti.

How to make meatballs

The recipe for making meatballs is simple: add an egg, a little diced onion and any spices to the minced meat. There are no other additives in the minced meat - these are not cutlets.

Although many people add breadcrumbs or bread. This is not forbidden, the soup is yours - it's up to you to decide. In an old book about tasty and healthy food, bread is placed in fish and meat balls and they hold their shape so well.

Stir and form into round balls. Vary the size according to your wishes. For example, I don’t like small ones, I make them the size of a large nut.

  • In addition to noodles, mushrooms and vegetables are added to the soup. Cream and cheese add a wonderful flavor note to the soup.
  • The flavor of the broth will be much richer if you fry the meatballs a little before placing them in the pan.
  • How do you know when the soup is ready? The meatballs floated to the surface of the soup - this is a signal.
Advice! To prevent the minced meat from sticking to your hands, form the meatballs by first wetting your hands.

Soup with chicken meatballs and noodles - step-by-step recipe

Soup with potatoes and noodles this time I decided to use stars. Remember, as a child, from a bag? Now I buy Makfu, they don’t boil well. This soup recipe is suitable for children.

  • Potatoes – 2 pcs.
  • Egg.
  • Carrot.
  • Onion – 2 small.
  • Dill and parsley - a small spoon.

Step-by-step preparation of soup:

I admit, the minced meat turned out to be a little runny, so the meatballs were not perfectly round. But she didn’t add anything - she sacrificed the shape for the sake of taste.

Place a pan of water on the gas until it boils, peel the potatoes and cut into strips. After boiling, let the potato strips cook.

Add diced onion to the minced meat, add salt, beat in the egg, add pepper and mix well. Make small balls of equal size.

Place the meatballs in the pan with the potatoes.

At the same time, fry: grate the carrot, cut the second onion into cubes and fry in oil.

Meatballs cook incredibly quickly, 10 minutes is enough. 5 minutes after the soup boils, add vermicelli - I have stars. They cook extremely quickly and it is advisable not to overcook them. Then they will come on their own.

A couple of minutes before the end, add the fried carrots and onions into the soup. Then add the greens - I have frozen ones from the freezer. Cook for 2 minutes, turn off and let the soup stand for a quarter of an hour.

Classic meatball soup

Kitchen appliances: 3-liter saucepan, grater, slicing board, knife, meat grinder.

Products

I rarely buy minced meat because I am not sure of its quality. It’s easier for me to grind a piece of meat in a meat grinder. Then I know exactly what it consists of. The ideal option is minced meat from several types of meat, each of which will bring its own taste and properties to this blend.

  1. Chicken meat will hold the minced meat together well and prevent it from falling apart during cooking.
  2. Pork meat, even fillet, has a high percentage of fat content. But meatballs with its addition will be juicy and soft.
  3. Veal is somewhat tough, but healthy.

Mixed mince is not for everyone. It is better for children, sick or elderly people and those losing weight to cook.
Choose fresh meat. Better - from a familiar seller at the market. The meat turnover there is faster than in the store, and the risk of buying a stale product is less. The meat should be:

  • juicy;
  • glossy, not dull;
  • with a pleasant, not pungent odor;
  • it must be kept refrigerated.

Pay attention to the surrounding nuances: the neatness of the seller, the cleanliness of the counter, the absence of insects.

The time of delivery of the product to the house also plays a role. You shouldn't go shopping with a piece of meat in your bag. After purchasing it, it is advisable to immediately go home.

Step-by-step recipe with photos

Important!
Place raw meatballs and noodles only in boiling broth and stir immediately.

Video recipe

In the video, the soup turned out to be quite thick. If you don't like it, increase the amount of water.

Did you know? Please note: pasta in soup will swell over time and turn into mush. Boil it immediately before use.

If you are preparing ahead of time, it is better to cook. A more dietary option would be a vegetable soup with meatballs and cauliflower, zucchini, tomatoes and peas.

Soup with meatballs and homemade noodles

First you need to start preparing the noodles. This will take you about half an hour.

  1. Beat 2 eggs with salt until the mixture is salty enough. Gradually add sifted flour until you knead a stiff dough. Roll it out very thin and cut into strips. If you have a noodle cutting machine, even better. It will save you a lot of time.
  2. While you prepare the soup, place the noodles on a clean, dry, lightly floured surface.
  3. Meatball noodle soup is prepared similarly to noodle soup. Only the noodles need to be cooked a little longer.

You can change the minced meat and cook something unusual, but no less tasty.

How to speed up cooking

  1. Buy ready-made (but proven!) minced meat.
  2. Make homemade noodles in advance.
  3. Cook it.

Soup with a surprise

Children will be absolutely delighted if they come across meatballs with different fillings. And you don't need to prepare anything extra. Open the refrigerator and look inside. You can stuff meatballs with any ready-made product: a piece of cheese, ham, milk sausage, canned peas or corn, capers, olives, a boiled egg or carrots...

How to decorate

  1. According to the classic recipe, noodle soup with meatballs is sprinkled with herbs.
  2. And you grate hard cheese on a fine grater. It will instantly melt into the hot soup and add a piquant flavor to it.
  3. Draw intricate patterns with a thin stream of sour cream and sprinkle them with pepper.
  4. Decorate the thick soup with chopped boiled eggs or carrots.
  5. Make soup with pasta nests. For this purpose, specially twisted long noodles are sold. But you can’t mix it. Therefore, such vermicelli is placed last, and everything is cooked over very low heat. Soup with pasta nests should be transparent so that they are clearly visible. I advise adding onions only to the minced meat, and cutting the carrots into cubes.
  6. Serve the soup in wide, large, colorful mugs. This, again, will interest children.
  7. Sprinkle with crackers or croutons. You can easily prepare them yourself. Especially if there is yesterday’s bread left in the house. Just cut it into cubes or bars and fry in vegetable oil. Don't forget to remove excess fat with a paper towel: place the croutons on it in a single layer until completely cool. If desired, croutons can be seasoned with garlic.

You can fantasize about this topic ad infinitum. Do you have your own signature meatball soup secret? How do you lure children? Share with us in the comments.

You know, there are some children who select all the ingredients from the soup, carefully arrange the plates along the edges and eat, for example, only potatoes and broth, and categorically refuse to eat meat and other vegetables boiled. A light soup with meatballs and “spider web” can interest a child (and an adult), and be sure to come up with an interesting name for the soup to further stir up interest. “Gossamer” is just that! Supplement the serving with an exciting story, and your reluctant one will gladly eat a portion of the first one.

For preparation you will need the following ingredients:

- minced meat – 200 g;
- water – 1.5 l.;
- young potatoes – 300 g;
- onions – 1 pc.;
- carrots – 1 pc.;
- greenery;
- sunflower oil;
- spices, salt.

Soup with minced chicken meatballs and vermicelli

Ingredients for 8 servings:

3-4 large potatoes
2 onions
carrots – 1 piece, large
allspice peas, bay leaves - 4 pcs each
chicken fillet (or ready-made minced chicken) – 400-500 g
ground black pepper, salt
spider web or noodles – 400 g
vegetable oil
parsley dill
a couple of slices of bread
chicken egg - 2 small
a small glass of milk.

How to cook?

Step 1. First, prepare the ingredients. Peel the vegetables, wash the chicken and soak the bread in milk. Lay everything out on your work table.

Step 2. Grate the carrots on a coarse grater. Now, put the frying pan on the fire and while it is heating up, finely chop the first onion.

Step 3. Sprinkle a hot frying pan with vegetable oil and fry the onion and carrots for 10-15 minutes. This frying will give the broth an amazing taste and color.

Step 4. Pour 2.5 liters of fresh water into a saucepan, add roast, bay leaf, black pepper and sweet peas. Bring to a boil, then reduce heat to low and simmer for about 15 minutes.

Step 5. Add potatoes, cut into small cubes, into the broth.

Step 6. Now, let's make the meatballs. Grind the chicken fillet, onion and bread through a meat grinder or grind with a blender. If you don’t have a blender or meat grinder, you can buy ready-made minced chicken, but in this case, be careful in your choice - a lot of skin, offal and cartilage are often added to the minced meat.

Add salt, beat in eggs and ground black pepper, mix the mixture well.

Step 7: Using a spoon or by hand, form small balls of minced meat and then drop into the boiling broth.

Step 8. Pour vermicelli into the soup. Remember that the vermicelli will increase about three times in size, so if you think the soup is thick, don’t add too much. You don't want to end up with mush, right?
If you are preparing the soup in advance, we recommend boiling the vermicelli separately so that it does not swell and remains tasty. In this case, it will need to be added to the soup before serving.

Step 9. Finely chop the greens and pour into the ready-made soup, removed from the heat. Pour the soup into bowls and, if desired, add a spoonful of sour cream.

Tips and tricks for making noodle and meatball soup from grandma

While this applies to all meals in general, get into the habit of preparing all your ingredients and utensils ahead of time and laying them out on your work surface. This way the cooking process will be much less fuss and will take much less time. Cooking should be fun!

Prepare your own minced meatballs. It is very difficult to control the quality of minced meat that will be sold to you in the store. Better take a good piece of meat and grind it yourself. It’s better to have a few meatballs, but they will be tasty and of high quality.

To make the meatballs more tender, add bread crumbs soaked in milk, butter and pre-beaten eggs to the minced meat. Onions also help with this, as they contain acid, which softens the structure of the meat and makes it more tender.

Before serving, the soup must be tightly closed with a lid, wrapped in a thick towel and allowed to stand for a longer time. This will allow all components of the dish to be saturated with aroma and acquire an unforgettable taste.

If you like legumes, add them when cooking the soup. Beans, corn, peas. Or, for example, green beans. Even chickpeas. They will add an interesting taste to the soup, fill you with vegetable protein (which is sometimes even more necessary than animal protein) and significantly increase the satiety of the soup. Try it!

If you use new potatoes, you don't need to peel them. As you know, most vitamins accumulate right under the skin, so it’s better to cook it right in its skin. It's no less delicious.

Instead of noodles, you can use Italian pasta, or even better, make your own homemade noodles. You just need to knead a thick dough from water, flour and salt and leave for half an hour. Then roll out the dough thinly, sprinkle generously with flour and roll loosely so that the layers do not stick together. Thinly slice the roll and unroll the noodles. Before cooking, it is better to spread it in a thin layer over the work surface and dry it. This will take about an hour or two. But the soup will turn out simply incomparable.

Don't be afraid to experiment with spices and seasonings. For example, suneli hops, cumin and coriander will give it a pleasant oriental taste. And rosemary, oregano and thyme will give you a fragrant Italian aroma. Or maybe you want a Mexican touch? Then add red pepper, paprika and a few mustard seeds. Fragrant...

Now let's talk about the tricks of making this soup.

Trick 1

If you are in a hurry, you can carefully layer all the ingredients into boiling water at once. The meatballs need to be placed first so that they do not become deformed and so that all subsequent ingredients are saturated with their juice. Then, fry the potatoes and only noodles on top. Cover the soup tightly with a lid and cook for 20-30 minutes over very low heat. If you do not open the lid all this time, your kitchen will be filled with a strong, pleasant aroma of the finished soup. You just need to mix the ingredients and serve immediately.

Trick 2

Don't like noodles? It's not scary at all! Instead of noodles, you can add rice, buckwheat or pearl barley, and indeed any other cereal, to the soup. This is even better, as the soup will contain more vitamins and the taste will be more unusual. Just remember that noodles take 5 minutes to cook, and grains at least 20. So add them at the beginning of cooking, for example, along with potatoes.

Trick 3

If you want to achieve a golden broth, add a pinch of turmeric and a few pieces of pumpkin to the soup. You definitely won’t forget such a rich color and aroma!

Trick 4

Boil the vermicelli separately and add it to the prepared soup. This will help maintain its elasticity and the soup will turn out much tastier.

Trick 5

If you have vegetarian friends, you can even surprise them with an invitation to meatball soup. Instead of minced meat, meatballs can be made from mushrooms or beans. The protein, the shape, and the deliciousness are a fairy tale. You can also make meatballs from Adyghe cheese. This is very unusual, but believe me, very tasty. Adyghe cheese does not melt and therefore easily holds its shape.

These are the interesting recipes and tips we have selected in our article today. We hope it was useful to you and you found the very recipe for your soup!

Good luck and delicious creations!
