How to sculpt buns

1. Round a piece of dough and let it rest for 5 minutes. The rolling process will be easier.

2. Roll out a long strip of dough into a rectangle.

3. Lubricate with oil. You can use melted butter or vegetable oil, but odorless.

4. Roll it up.

5. Bend the roll in half and place it on the edge.

6. Make a cut on the fold. Its length should not reach 1.5-2 centimeters to the free edges.

7. Unfold the edges and get a heart! Until the dough has risen, the bun can be adjusted.

The finished buns are laid out on a greased baking sheet. But the sheet can also be covered with a silicone mat or baking paper. Then the products are allowed to rise, brushed with egg, sprinkled with sugar and baked in the oven at 200 degrees.

Recipe 1: Buns with sugar from yeast dough with milk

A classic recipe for buns with sugar made from homemade yeast dough.

Ingredients

8 grams of yeast;

250 grams of milk;

80 grams of butter;

100 grams of sugar;

3. Sift the flour into a bowl and make a well in the center.

4. Pour in the yeast mixture, add vanilla and knead the dough.

5. Cover the bowl with a towel and leave warm for 1.5-2 hours. The dough should rise twice, after the first rise it needs to be kneaded.

6. Form buns. The process is described above.

7. Place on a greased or lined baking sheet. Do not forget that the products will increase in size, leave a distance between them.

8. Leave the buns warm for another half hour.

9. Grease with yolk, sprinkle with sugar and bake until golden brown at 200 degrees.

Recipe 2: Buns with sugar from yeast dough on water

If there is no milk, then yeast dough can be prepared in water. It is also suitable for buns with sugar, but to make it tasty, you need to add something.

280 ml water;

500 grams of flour;

8 grams of yeast;

50 ml oil;

40 grams of sugar;

A pinch of salt;

2 tablespoons of sour cream or cream.

Egg, butter and sugar for decoration.

Preparation

1. As usual, dilute yeast in warm liquid and add granulated sugar. Let the mixture sit for a few minutes.

Recipe 3: Buns with sugar from kefir dough

Kefir dough has the advantage of being prepared a little faster. And all thanks to the acid contained in the dairy product, which accelerates fermentation. At the same time, the baked goods turn out to be quite decent.

0.2 l kefir;

3 tablespoons of oil;

4 spoons of sugar;

3 cups flour;

1 tsp. yeast;

Preparation

1. Beat the egg with sugar, kefir and butter. Add a little salt for taste. Separately sift the flour, add vanilla and dry yeast to it. We combine everything together, making an elastic, but not very tough dough.

  • 50 g butter.

Preparation:

Then add the specified amount of dry yeast for the dough. Stir with a spatula and set aside for 5-10 minutes to allow the yeast to revive and become active.

Then add raw chicken eggs to the dough. Mix with a whisk or mixer until the eggs are completely distributed throughout the liquid mass.

Melt butter or margarine. Cool. Add to the rest of the ingredients in the bowl and stir a little to create a homogeneous texture.

Sift the wheat flour through a sieve, pour the specified amount into a convenient dry bowl. Add flour little by little and mix the dough with a spoon. When it is too thick, start kneading with your hands, then place it on a board sprinkled with flour or on the table.

Cover the finished soft dough with a napkin or clean towel and leave to rise in a warm place for about one hour. It is important that there is no draft, otherwise the dough will not rise. It should significantly increase in size by 3-4 times. Then do a warm-up - press it down a little with your hands. And leave it to rise again. Bun dough with dry yeast will rise well and quickly.

Knead the rested dough on a dusted board. Divide into several pieces, from which we will then prepare buns. In this case, it turned out to be 8 pieces. Based on your convictions, you can create several large, or you can create many small buns. How many pieces there are so many buns. Place them on a wide cutting board sprinkled with flour and leave under a napkin.

Roll out one piece of dough so that its thickness is approximately 0.3-0.5 centimeters and its diameter is about 20-24 cm.

I often make buns with cottage cheese and raisins or boiled dried fruits, passed through a meat grinder with a large grid.

Ingredients:

  • Sifted flour – 1 kg,
  • Eggs – 3 pieces,
  • Milk – 300 ml,
  • Granulated sugar in the dough - 0.5 cups,
  • Butter – 80 grams per dough,
  • Vegetable oil – 2 tbsp. spoons into the dough,
  • Salt - a pinch
  • Dry instant yeast - 10 grams,
  • Vanillin – 1 gram,
  • Cinnamon,
  • Raisin,
  • Sugar for sprinkling - to taste

Roll the resulting flatbread into a roll and then cut it into small pieces (short rolls) no more than 3 cm wide.

Place the rolls on a baking tray (greased with vegetable oil or lined with oiled paper) and leave in a warm place to rise.

You should not pack it tightly; the yeast dough will increase in volume during proofing.

But in order to make buns, you need to roll out the dough like pies - into small round cakes. Brush each flatbread with melted butter and sprinkle with sugar. Then we roll it into a roll and fold the resulting roll in half.
We secure the edges and, turning them over, lightly press the double sausage, you get a double-layer roll. Then we take a knife and make a cut in the middle, not reaching the ends. Slightly open the resulting bun at the cut site.

When the buns with sugar are ready on the baking sheet, place them in a well-heated oven.

Bake sugar yeast buns and curls in the oven at 220° for 35 - 40 minutes.

I put a frying pan with water down in the oven, because I am afraid of the quirks of my oven, and it would be a great shame if the buns were burnt. And so everything was baked perfectly, and the sugar flowed out of the buns a little and melted, creating a caramelized bottom crust. Lovely!
