The calorie content of the dessert is reduced due to the fact that they do not contain butter, sugar and sour cream. Bananas give the main sweetness to the dish. Remember, the riper they are, the sweeter the pp-cupcakes will be.

We use raisins, but you can safely replace them with your favorite dried fruits.

And one more important point: the baking temperature of pp cupcakes should not be higher than 180 degrees, since the dried fruits with which we will decorate the dessert will burn.

Ingredients:

  • Banana - 1 pc.
  • Greek yogurt - 100 g
  • Cottage cheese 0.2% - 100 g
  • Egg - 1 pc.
  • Raisins - 70 g
  • Oat flakes - 150 g
  • Rice flour - 100 g
  • Nuts - 20 g

How to cook pp cupcakes:

Remove the skin from the banana and break into a bowl. There, break the egg, add Greek yogurt and cottage cheese. Using a hand blender, blend everything until smooth.


Grind oatmeal into flour and sift to the mass. Add rice flour.

Knead the dough (it should look like thick sour cream). Pour it into molds by 2/3 and sprinkle with raisins (or any other dried fruits) and crushed nuts on top.

Put the mold in a preheated oven to 170 degrees for 20-25 minutes. Allow the cakes to cool slightly and serve with milk.

Delicate moist banana bread. This type of pastry is quite popular in Europe and America, on many English-language blogs you can find all sorts of variations of this dish. Some call it banana bread, others call it banana muffin. If you put less sugar and butter, then there will be banana bread, and if you put more, then, respectively, a cake.

But in any case, you will get a very tender, soft and fragrant crumb. I advise you to definitely use overripe bananas, they will turn out much more aromatic.

I tried baking with the addition of nuts and chocolate, and I liked these muffins much less, although, of course, this is a matter of taste. In my opinion, there were too many flavors - banana, chocolate, nuts. In addition, due to the fact that the structure of the finished baking is wet, the nuts were also wet. It seems to me that it is better to bake them without additives or, if you add, then some kind of cream in the middle, for example, custard.

I got 18 small cupcakes.

  • 3 bananas (overripe)
  • 200 g flour
  • 170 g sugar
  • 70 g butter
  • 2 eggs
  • 2 tsp baking powder
  • 1 tsp vanilla sugar
  • a pinch of salt

Peel bananas, I had 430 g of bananas in peeled form.

Puree them with a blender (or knead them very thoroughly with a crush).

Add eggs, sugar, vanilla sugar, salt, melted and cooled butter, mix.

Add baking powder, flour, mix well. The dough is not thick.

Grease the forms with oil (or insert paper liners), spread out the dough.

Put in an oven preheated to 180 degrees, bake for about 20-25 minutes.

You can bake in one form, preferably in an oblong or with a ledge in the middle. The baking time will then need to be increased.

Recipe 2: Oven Banana Cake

Fragrant banana muffins, which we will cook in the oven in portion molds, are simple and delicious homemade cakes. In addition, this is a lean recipe, so for sure it will come in handy for many. The most delicate islands of fragrant banana are waiting for you, which are hidden in soft and airy honey dough. With tea, coffee or milk - the perfect combination.

  • banana - 390 gr
  • wheat flour - 220 gr
  • natural honey - 120 gr
  • vegetable oil - 50 ml
  • baking powder dough - 1 tbsp.
  • salt - 0.25 tsp

To prepare tender and fragrant cupcakes, we need the following ingredients: bananas, wheat flour (I have the highest grade), natural honey, refined vegetable (I use sunflower) oil, baking powder and salt. All foods must be at room temperature.

In a separate bowl, sift 220 grams of wheat flour, add a tablespoon without a slide of baking powder and a quarter teaspoon (a generous pinch) of table salt.

Mix thoroughly so that the dry ingredients are evenly distributed throughout the mixture.

We clean the bananas and break the pulp into another container. I have 3 large bananas, each weighing about 180 grams. Pure fruit pulp is about 390 grams.

Mash the bananas with a fork, not very finely, so that not a homogeneous puree is obtained, but pieces remain.

Add 120 grams of natural honey and 50 milliliters of odorless vegetable oil to bananas. If the honey is candied, heat it in the microwave (Defrost mode) or in a water bath.

We mix everything.

Pour the dry mixture into the liquid base.

Quickly stir it in so that there are no flour traces left. Don't stir too long, as the cake batter doesn't like it.

Divide the batter into cupcake tins. I have silicone ones, so I don't lubricate them with anything. I advise you to prepare metal ones in advance: grease with a small amount of refined vegetable oil or butter (in this case, additionally sprinkle with wheat flour or semolina). In total, from the indicated amount of ingredients used, I get 9 large banana muffins, but since the dough grows a lot during baking, I recommend baking 10-12 pieces - so the hats will be neater.

We bake banana muffins in a preheated oven at an average level at 180-190 degrees for about 25-30 minutes. Important: the baking time depends on the characteristics of your oven and may differ from the indicated one. I have a Hephaestus gas stove, bottom heating, no convection. Since cupcakes don't turn out very brown in my oven, I additionally turn on the grill for 5 minutes.

Ready-made banana muffins are very tender, soft and fragrant, while being made as easy as shelling pears. Cook for health and bon appetit, friends!

We ran into the store a couple of days ago, impulsively bought an unplanned bunch of dense, elastic, fresh beauties, with an appetite on the way home we ate two pieces at once. By morning, the fruits were no longer so attractive, after a day they acquired unattractive brown spots.

And you look at these few bananas in a couple of days, like a suitcase without a handle - it's a pity to throw it away, it's uncomfortable to carry. It seems that it’s easy to send them to the trash can - conscience does not allow, but no one will definitely eat them. What to do? There is a solution to the problem!

Bake a little culinary masterpiece - chocolate banana muffin. Its recipe is very simple, almost primitive, but the taste of baking is incredibly fragrant, rich, bright!

  • 2 eggs;
  • 2 overripe bananas;
  • 80 g butter;
  • 2/3 cup sugar;
  • ½ cup cocoa;
  • 1 glass of flour;
  • 1/3 teaspoon salt;
  • ½ tsp soda;
  • ½ st. l. lemon juice or vinegar.

We extract bananas, meticulously examine them, approve.

We take out the pre-prepared butter - it should be soft. Not melted, namely soft (2-3 hours of "rest" at room temperature).

Beat butter with eggs and sugar. The mass should become lush, airy.

Adding salt is a must: it is this detail that makes sweet pastries rich and bright. Add bananas one at a time. Pour soda, extinguish it with lemon juice. The mass will become thinner. Whisk until smooth. Add cocoa, stir.

Sift flour into the dough - you may need a little less of this product (depending on the size of bananas, eggs, oil fat content, indoor air humidity and many other factors). Pour the dough into a greased form (or silicone - not greased).

We bake at a temperature of 180 degrees for at least 45 minutes, check the readiness with a wooden stick, it should come out of the dough completely dry. When stirring the dough, you can add prunes (sounds great with bananas and chocolate), nuts (gives essentiality to pastries), coconut (a slight tropical note), raisins (sourness and juiciness), however, I prefer a laconic combination of chocolate and bananas.

One of the main conditions for obtaining a successful result is the use of very ripe bananas. The second, no less important condition is a properly prepared dough. Follow the recommendations below and you will surely delight your loved ones with a delicious and fragrant banana muffin.

  • 3 very ripe bananas;
  • 2 cups of flour;
  • 80 ml of kefir or sour cream;
  • 1 cup of sugar;
  • 2 eggs;
  • 80 ml of refined sunflower oil;
  • a pinch of salt;
  • 2 teaspoons baking powder spoons.

Cooking a cake is best to start with the preparation of dry ingredients. To do this, sift the flour and mix it with baking powder and salt. If soda is used, then it needs to be taken less - 1 teaspoon without top. Then you can start preparing the filling: wash and peel the bananas, then chop them with a blender or just mash with a fork. In this case, small pieces of bananas will come across in the finished cupcake.

You can start preparing liquid components. To do this, beat the eggs into a thick foam. Of course, the best way to do this is with a mixer. If this is not possible, then use a whisk. A little oil should be left to lubricate the multicooker bowl. Mix everything carefully. Put mashed bananas into this mass and mix everything again.

It remains to combine the dry and liquid components. Gradually adding flour, it is necessary to slowly stir the dough in one direction until it becomes homogeneous. However, it is not recommended to do this for too long, so that the whipped proteins do not have time to settle. If everything is done correctly, the dough will turn out to be very tender, like a cream.

Now you need to grease the multicooker bowl with the remaining oil. To easily remove the finished cake from the bowl, its bottom can be covered with baking paper. To do this, you need to put a container for steaming on paper, circle it with a pencil and cut it out along the contour. This circle also needs a little oil. It is advisable to make these preparations in advance. When the bowl is prepared, you need to pour the dough into it, place it in the slow cooker and select the “Baking” program. In the Redmond RMC-M170 multicooker, with a power of 900 W, set the timer to 1 hour 20 minutes. For other models, this time will need to be adjusted up or down.

After the multicooker beeps about the end of the program, you can leave the cake in the “Heating” mode for 10-15 minutes. Then take the bowl with the cake out of the multicooker and leave it to cool for another 10 minutes. After that, transfer the cake to a dish using a steamer container.

When the cake is cool enough, you can sprinkle it with powdered sugar or pour over chocolate icing. The main thing is not to overdo it, because it turns out to be quite sweet. You can decorate the cake with banana slices.

If there is some cottage cheese in the fridge, and a couple of bananas in a fruit bowl, I suggest baking these fragrant cottage cheese and banana muffins! The dough is prepared simply, cupcakes are baked, if they are portioned, quickly - in less than an hour, you will have fragrant banana cupcakes with a tender, thanks to the curd, crumb and charming golden tops for tea.

The recipe is good because even overripe, soft bananas with a darkened peel are suitable for the dough - those that do not have a completely presentable appearance to eat them just like that. But for baking - banana bread, muffins and cakes - these are the fruits that are best suited! You can also use frozen bananas.

Cupcakes can be baked in small molds or large ones (rectangular for bread or muffin with a hole).

  • 2 medium or large eggs;
  • 150-180 g of sugar (depending on how sour the cottage cheese is and how much you like sweets - we take into account that there are bananas in the dough);
  • 2 bananas small or 1 large;
  • 200 g of cottage cheese;
  • 200 g butter;
  • 2 cups flour (1 200 gram cup without top = 130 g, we need 260 g);
  • 1 teaspoon baking powder;
  • ¼ teaspoon of soda;
  • 1 tablespoon lemon juice (or vinegar 9%);
  • ¼ teaspoon salt.

Combine eggs and sugar in a bowl; beat with a mixer for 30-45 seconds, until light splendor. In the meantime, melt the butter in the microwave or on the stove over low heat.

Wash bananas, peel, cut into pieces and add to cottage cheese.

Puree with a blender until a homogeneous curd-banana mass is obtained.

Add melted butter to beaten eggs, then banana-curd puree and beat everything together or just stir well with a spoon.

Then sift the flour into a bowl, after mixing it with soda and baking powder.

Pour lemon juice directly into the dough and immediately mix quickly, but diligently. It turns out a fairly thick dough, banana puree gives it a beige color.

We lay out the dough in portioned molds (I put in each silicone paper mold) or in a cake mold greased with sunflower oil or covered with an oiled sheet of parchment paper.

Rectangular, round, ring shape is suitable - only the baking time of the cake in different forms will vary depending on the height and thickness of the dough layer.

Small cupcakes were baked at 200C for a little over half an hour; the big one spent almost 1 hour in the oven.

You look at your oven - they are all different.

Once the crust of the cupcakes turns light golden and the skewer comes out dry when checking, they are ready.

Recipe 6: Microwave Banana Cake

I like to cook muffins in the fall and I often cook this banana muffin for myself and for my family. Cupcake can be prepared immediately in a mug, but I cooked it in a special form for cupcakes.

  • small banana - 1 pc.;
  • granulated sugar - 2 tbsp. l.;
  • vanillin - a pinch;
  • chicken eggs - 1 pc.;
  • butter - half tbsp. l.;
  • sifted wheat flour - 2 tbsp. l;
  • baking powder dough - half tsp.

Puree banana in a mug or bowl, mix sugar and vanillin, beat in an egg.

Melt the butter in the microwave for 20 seconds. Then add to the banana mixture. Add flour and baking powder. Mix again.

Pour into molds if you made the mixture in a bowl.

Place the mug in the microwave and cook the cake for 1 minute 30 seconds or 2 minutes at 800 watts. If the cake is not ready, put it in the microwave for another 20 seconds. Enjoy your meal!

To prepare banana cupcakes, you need to knead the dough, put it in silicone molds and bake cupcakes in the oven.

  • 140 gr sugar
  • 60 gr butter
  • 2 pcs banana
  • 2 pcs chicken egg
  • 170 gr wheat flour
  • soda slaked with vinegar

In a deep bowl you need to put 140 g of granulated sugar and 60 g of butter.

Mix ingredients. Add two peeled bananas.

Mash bananas and add two chicken eggs.

Add soda slaked with vinegar to the dough. After adding soda, pour 170 g of flour into the dough.

Knead until smooth.

Place banana cupcakes in silicone molds. Pour up to 1/3 of the mold.

Bake cupcakes in the oven at a temperature of 160-170 degrees for 20-25 minutes.

Ready banana cupcakes are ruddy, tall and fragrant.

Remove from molds hot and serve with tea.

The phrase "lean cupcake" may seem rather strange. Fasting is a severe time of restrictions, abstinence and repentance, during which it is not appropriate to think about pleasures. However, as practice has shown, one is not a hindrance to the other. You can take care of your soul, even if you give your body a little indulgence from time to time.

For the base

  • 600 grams wheat flour
  • 3 pcs ripe banana
  • 100 grams poppy
  • 200 ml Water
  • 100 grams sugar
  • 4 tbsp vegetable oil
  • 1 tsp soda
  • 1 tbsp vinegar

For glaze

  • 2 tbsp powdered sugar
  • 4 tbsp Water
  • 2 tsp lemon juice

Chop the poppy. This can be done in different ways: scroll the grains through a meat grinder, roll with a rolling pin through a plastic bag, combine with sugar and “beat” with a blender. But since the recipe for lean cake here involves using a very small amount of poppy seeds, it is easier to use a mortar and pestle or a coffee grinder. Before grinding the poppy, it should be steamed with boiling water for 20-30 minutes.

Mash bananas thoroughly with a fork. Mashing a ripe fruit is a matter of a few minutes.

Combine banana gruel with poppy seeds, sugar, vegetable oil, water and a pinch of salt. Pound until a homogeneous mass. Thanks to the poppy seeds, the mixture will acquire a thick black color.

Introduce flour in portions ... Sifted flour will make the cake softer.

And then add soda slaked with vinegar. You can use regular baking powder.

Pour the dough into a mold greased with vegetable oil and bake in an oven preheated to 180 degrees for 30-40 minutes. A little more, and the treat is ready!

While the finished treat is cooling, combine the powdered sugar with water and lemon juice. The mass should not be too thick or too liquid.

Cover the cooled cake with lemon icing and sprinkle with poppy seeds. Each housewife decorates pastries in her own way. You can start tasting!

Make sure the baking bananas are very soft, even overripe. Otherwise, the taste and texture of the dough will not be the same at all.

I continue to post the recipes that Tarawali shared with us in cooking classes. Delicious tender cupcakes that are surprisingly easy and quick to prepare. From this amount, 10-12 delicious muffins are obtained.

Combine with mashed bananas and add flour to the consistency of very thick sour cream.

But you can use any silicone molds for cupcakes. Or bake in special paper disposable molds, for example, like this.

But we will do this next time :), but for now we put the dough in our silicone mold,

  • Bananas 3 pcs
  • Chocolate black 100 g
  • Yoghurt 75 ml
  • Brown sugar 100 g
  • Wheat flour of the highest grade 300 g
  • Butter 100 g
  • Chicken egg 2 pcs
  • Cinnamon 1 tsp
  • Soda 0.5 tsp
  • Baking powder 0.5 tsp

Beat softened butter with sugar until white.

Mash bananas with a fork.

Add eggs one at a time. Sift flour with soda and baking powder. Mix with salt and cinnamon and add to the butter-egg mixture. Mix in milk or yogurt.

Chop the chocolate and gently fold into the batter along with the bananas.

Do not fanatically.

Line an oblong cake pan with baking paper and lay out the dough. Bake for about 45 minutes at 180 degrees. You can bake several small cakes, then the baking time will be reduced to 30 minutes.

My attempts to instill in my son a love for oatmeal have not yet been successful. But baking with oatmeal goes with us with a bang! If you have the same problem, try making oatmeal banana muffins, which will be liked (checked! :)) not only by small fussy eaters.

For me, it's just a lifesaver. Firstly, this is a very simple recipe for diet muffins without flour and sugar (there is enough of it in sweet bananas). Although, if it seems to you a little, you can add a sweetener. Secondly, it takes a minimum of time to prepare them.

- shake the eggs in a bowl, lay out a part of the cottage cheese (60 gr.) And, while kneading it, mix well with the egg mixture

- Pour yogurt into the resulting mass, add oatmeal, slaked soda, vanillin and banana pulp mashed with a fork. Stir again

- set aside the finished mixture, thereby letting the flakes swell a little, and we ourselves will prepare the curd-banana cream


Preparation of curd-banana cream

- combine the rest of the cottage cheese (140 gr.) With a banana cut into pieces and beat with a blender until a homogeneous airy mass. Cream is ready

- spread the dough into silicone molds and put in an oven preheated to 180 ° C for 20-25 minutes

- Remove the finished oatmeal cupcakes from the oven, let them cool slightly, and then put the curd-banana cream on top.
Before serving, decorate the muffins with fresh berries or sprinkle with nuts.

The calorie content of regular muffins is about 370 calories per 100 grams. Of course, in diet recipes, by using the right ingredients and natural sweeteners, the calorie content of muffins is significantly reduced.

There are several simple, but at the same time effective ways to reduce the calorie content of muffins and make them dietary:

Chicken PP dietary muffins

One of the best pp muffin recipes is the one with chicken. Such a dish can be safely included in your diet for weight loss, even if you follow a strict diet. Also, this recipe fits perfectly into the protein diet menu, due to the high protein content.

  • 500 grams of chicken fillet. Please note that you need to take this part of the chicken, which is the lowest calorie and lean. In 100 grams of fillet, there are only 113 calories, while in other parts of the chicken, the calorie content is much higher.
  • 1 medium onion
  • 5 tablespoons of oat bran. You can use oat and wheat bran.
  • 1 chicken egg
  • 100 ml skimmed milk. In this case, we will use milk with 1.5% fat content.
  • Salt and pepper to taste. You can add other favorite spices if you like.

Cut chicken meat into small pieces and grind in a blender along with onion and egg. You should get a homogeneous thick mass. Now let's take a look at the bran. Fill them with water and let them swell. On average, this takes 10-15 minutes. Then we mix the bran with our diet minced meat, salt and pepper.

For baking pp muffins with chicken, we will use silicone molds. We carefully lay out our mass in molds and send it to the oven.

How many calories are in a muffin? In one such muffin there will be approximately 105-110 calories, and the protein in one muffin will be about 17 grams!


Diet cottage cheese muffins

Another popular muffin recipe can be made using cottage cheese. This product is a frequent guest on the diet table, and all because cottage cheese is rich in protein and contains few calories. Often, low-fat cottage cheese is used in recipes - 0-2% fat.

  • 300 grams of fat-free cottage cheese. Be sure to choose dry cottage cheese so that the dough comes out tight.
  • 2 eggs
  • Any sugar substitute to taste.
  • 2 tablespoons of oat bran. In this recipe, you do not need to pre-soak them in water.
  • 1 teaspoon baking powder
  • Cinnamon and vanilla.

Just mix all the ingredients and knead the dough. Ideally, it should resemble cheesecake dough. Cook in silicone molds in an oven preheated to 200 degrees. Bake for 20 minutes. How many calories are in a muffin? The calorie content of one muffin will be only about 77 calories!

If you want sweets on a diet, you can always treat yourself to delicious and dietary banana muffins.

  • 60 grams of rice flour. This flour is considered hypoallergenic, moreover, it contains protein, which is rich in amino acids.
  • 2 proteins and 1 yolk
  • 1 ripe medium banana
  • 90 grams of baby applesauce. Choose a puree that does not contain sugar.

First you need to separate the whites from the yolks. Separately, beat egg whites until stiff white peaks. Combine the yolks with flour and kefir, mix, add the baking powder.
