The pleasant taste of the soft and crumbly dessert will delight children and adults. Your guests will surely appreciate the aroma of fresh baked goods and their attractive appearance.

Roll recipe:

  1. Grate the frozen butter and then mix it with the flour.
  2. Add 100 g of sugar, salt, 2 eggs, vanilla and sour cream to the products.
  3. Knead the dough and roll out into a layer 0.5 cm wide.
  4. Dry the nuts in a well-heated frying pan without oil for 3-4 minutes. After that, grind them with a blender and mix with the remaining sugar.
  5. Spread the filling onto the base in an even layer.
  6. Roll the dough into a roll and brush the surface with beaten egg.
  7. Cook the treat for 30 minutes at 180 degrees.

Before serving, the baked goods should be cooled slightly and decorated with powdered sugar. After that, cut it into pieces and bring it to the table.

Nut roll recipe

A delicious dessert with a crispy crust and original filling can be prepared on a fast day.

Baking recipe:

  1. Sift 180 g of wheat flour and 250 g of any whole grain flour into a deep bowl. Add 60 g sugar and 10 g lemon zest.
  2. Pour 120 g of olive oil and 80 g of boiled water into the dry mixture.
  3. Knead the dough, wrap it in cling film and place it in the refrigerator for 30 minutes.
  4. Pour boiling water over 30 g of almonds, then pour cold water over the nuts and peel them.
  5. Dry the preparations in the oven or in a frying pan along with 30 g of walnuts and 30 g of hazelnuts.
  6. Rinse 30 g of raisins, 30 g of dried cherries and 3 dried figs under running water, and then steam the products in boiling water. Squeeze and dry them.
  7. Finely chop the figs and chop the nuts with a knife.
  8. Peel 1 apple and grate on a coarse grater. Mix it with nuts, dried fruits and 30 g of sugar.
  9. Roll out the dough into a layer 0.5 mm thick on a silicone mat or towel. Place the filling and sprinkle with ground cardamom, cinnamon and lemon zest. Add all spices to taste.
  10. Roll the workpiece into a roll using a mat or towel. Transfer the workpiece to a baking sheet and place in an oven preheated to 180 g. Bake the treat for 30-35 minutes.

Cool the finished roll on a wire rack and serve.

Sweet desserts with nuts can be prepared on regular and holiday days.

Grate the chilled butter. Add two egg yolks and sour cream. Mix the ingredients. Pour baking powder and a pinch of salt into the sifted flour and mix. Add flour in parts to the butter mixture. First, all the ingredients will combine into heterogeneous lumps. They need to be collected into a single ball; there is no need to knead the dough. Wrap the dough in cling film and place in the refrigerator for 1 hour.

Remove the dough from the refrigerator and divide into 2 parts. On a table sprinkled with flour, roll out each piece of dough into a thin layer, approximately 3 mm thick.

Lightly beat the egg white with a fork. Brush the dough layer with egg white using a silicone brush.

Roll the layer with nut filling into a roll. The roll should not be very thick, otherwise the middle of the products may not be baked. Cut the roll diagonally to form portioned diamonds.

Cover a baking sheet with parchment and preheat the oven to 180 degrees. Place the rolls on a baking sheet, brush the top with egg white and bake in the oven for 35-40 minutes.

Serve with milk, tea or coffee.

Regardless of whether it is a sweet dessert or a savory snack roll, you need fresh and high-quality nuts. It’s better to buy them in shells and chop them yourself.

Roll with walnuts: recipe for tea

Making a walnut roll from yeast dough is very simple. The most time-consuming part is the dough. Therefore, it’s worth starting with it, taking:

  • flour – 4 (or a little more) cups;
  • 2 raw eggs;
  • a glass of milk (you can make dough with kefir);
  • margarine ½ standard pack (100 g);
  • one package of instant yeast (you can also use “live” yeast - 50 g);
  • salt - a pinch;
  • granulated sugar 3 tbsp. spoons.
  1. Yeast is diluted in warm sweetened milk (we first dissolve sugar in it). When they are ready, add them to the sifted flour, add eggs and melted margarine, add some salt and make a stiff dough. Let the dough rest in a warm place until it rises.
  2. In the meantime, let's take care of the filling: chop the walnut kernels. You will need about 3 cups of them. If you want sweet baked goods, you can sweeten the nuts with sugar.
  3. Divide the risen dough into 2 parts. Roll out each layer. Spread the filling evenly on each layer - half the nut mixture - and wrap it in a roll. You will get 2 rolls.
  4. We transfer them to a greased baking sheet at a distance from each other and from the sides of the baking sheet and bake for about 30 minutes in a preheated oven (optimal temperature - 180 degrees).

Walnut roll from puff pastry is prepared in the same way. The baked goods turn out fragrant, and any tea party turns into a real feast.

Roll with prunes and walnuts

Meatloaf lovers will definitely love this recipe. It is best to wrap the filling in pork pulp: the roll will come out tender and juicy.

You will need:

  • pork pulp - a piece of 650-700 grams;
  • tomato paste - tablespoon;
  • full-fat sour cream - a tablespoon;
  • garlic, pepper, salt to taste;
  • walnuts (kernel) – 120-150 g;
  • pitted prunes – 120-150 g.
  1. It is better to choose lean fillet. It must be cleaned of excess fat and veins. Then increase the “usable area” by cutting the piece like a book, without cutting to the end, so that you get a long layer. It should then be slightly beaten with a hammer, giving uniform thickness. Next, rub the meat with spices (salt, pepper and chopped garlic). Let it soak in a little.
  2. Let's make the filling. After washing the prunes, steam them with boiling water for a few minutes, let the liquid drain through a sieve and grind them with a blender. And crush the nuts into medium crumbs; it’s better if larger pieces remain.
  3. Lubricate the meat evenly on one side with prune pulp, generously sprinkle nuts on top, and roll it up. We fasten it with twine so that it does not lose its shape.
  4. Heat some oil in a frying pan. Dry the roll with a napkin, removing excess moisture, and fry on both sides until browned. This will have the effect of sealing the juices inside, and when baking, the tenderness and softness of the meat will remain.
  5. After cooling slightly, wrap the roll in parchment or foil. Then we put it on a baking sheet and into the oven (don’t forget to preheat it to 185-190 degrees). Let it bake for about half an hour.
  6. From sour cream and tomato paste we make a coating for a golden brown crust: mix the ingredients in a bowl. After half an hour, take out the baking sheet, unroll the roll, carefully remove the twine and coat it with the mixture. Place in the oven for another 15 minutes. You can serve it hot or cold – equally delicious!

Eggplant rolls with walnuts

Another “roll” appetizer. You will need:

  • 3-4 larger eggplants;
  • walnut kernels – 120-150 g;
  • bulb;
  • a pair of garlic cloves;
  • lemon for juice;
  • salt, pepper to taste;
  • greens - parsley or dill;
  • vegetable oil.
  1. Prepare the filling in a blender by chopping together the herbs, nuts, onions and garlic. Leave the finished mixture for a short time so that the ingredients are saturated with each other’s aroma.
  2. Wash the eggplants and cut them into long slices lengthwise, disposing of the outer slices, completely covered with peel on one side. Salt and pepper the eggplant strips and leave for a while so that the salt is absorbed. Afterwards, dry with a napkin and fry the slices on both sides in very hot oil.
  3. After frying, dry it on a paper towel and start stuffing: add the nut filling, carefully roll each slice into a roll and secure with a toothpick. You can eat it warm or cold – a very tasty snack!

Chicken roll with prunes and walnuts

We prepare the chicken roll by analogy with the pork one. However, it is better not to fry it, but to steam it - you will get a healthy dietary dish. To do this, you will need a large leg, which we first carefully remove from the bones, cutting the flesh so that it ultimately resembles a layer, without damaging the skin. Beat the meat with a hammer, add salt and pepper on both sides.

  • For one leg for filling we take:
  • 70 grams of white and red chicken meat;
  • kernels 5-6 nuts;
  • garlic - large clove.
  1. Cut the meat into small pieces, chop the nuts and crush the garlic. After mixing the filling ingredients, place them on the meat and roll it up, tightening it with twine. Wrap in foil and cook in a slow cooker or double boiler for 1 hour.
  2. Cool the finished dish and place it in the refrigerator for a couple of hours. After this, remove the twine and cut the roll into portions.

Cheese roll with walnuts

Delicate filling under a cheese crust - delicious! Making such a roll is not difficult. You will need:

  • hard cheese (for example, Gouda) – 350-400g;
  • granular cottage cheese – 100 g;
  • boiled chicken fillet – 100 g;
  • walnuts (kernels) – 100 g;
  • favorite greens to taste;
  • clove of garlic.
  • We make the filling by chopping the fillet with a knife, crushing the nuts with a knife, pressing the garlic in a garlic press, chopping the greens finely and mixing everything with the cottage cheese. You can add a little mayonnaise or sour cream for a better combination of ingredients.
  • Cut the cheese into pieces, wrap tightly in plastic cling film and place in a pan of boiling water for 15 minutes - you need to melt the product. You are also allowed to use a microwave.
  • Cool the melted cheese slightly and roll it out. Fill the layer with nut-curd cream and form a roll. An hour in the refrigerator and you can cut into portions.
  • boiled egg yolks - a couple of pieces;
  • walnut kernels - a glass;
  • mayonnaise to taste.
  1. Grind the eggs, grate the cheese, and crush the nuts. Mix the ingredients, add mayonnaise and crushed garlic. After kneading until smooth, spread the mixture onto the pita bread and roll it up.
  2. By the way: cheese can easily be replaced with cottage cheese, and mayonnaise, if necessary, can be replaced with processed cheese for sandwiches. This roll with walnuts is cut into slices and sprinkled with herbs. Simple, fast and delicious!

I love the poppy seed and cherry rolls that we bake for Christmas, and this year I decided to try making a nut roll. Tasty too, try it!

Ingredients for the nut roll:
Dough:

3 eggs;
- ¼ glass of milk;
- 50 g fresh yeast;
- 75 g sugar;
- 125 g butter or margarine;
- ¼ cup sunflower oil;
- 3 glasses of flour.

Nut filling for roll:

1 cup shelled walnuts;
- cherries or raisins so that the filling is not dry;
- 3-4 spoons of honey.

How to make a nut roll:

For a delicious nut filling, you can grind the nuts in a meat grinder or simply roll them with a rolling pin.
Sprinkle the table with flour and roll out the dough into a rectangular cake about half a centimeter thick.

Scatter chopped nuts and cherries (raisins) evenly over the crust and lightly pour honey.

Roll the cake into a roll.

We pinch the edge.

This time I decided to try to pinch the edge figuratively and place the roll on a baking sheet with the seam up, and not down, as usual. As a result, it cracked a little during baking :) But it still turned out beautiful and tasty.

To make the roll brown, 25 minutes after I put it in the oven (about 200-220C), when the wooden stick remained dry when testing, I brushed it with a beaten egg and increased the heat slightly.

When cut, the roll with nuts looks very beautiful!
