I was shopping for groceries the other day and couldn’t help but notice that prices for seasonal vegetables had plummeted. And this fall came to one of my favorite vegetables - zucchini.

Seeing this, my imagination immediately ran wild, because you can create so many interesting and tasty things from them! Last year I wrote about, about and the most wonderful.

But this is just a drop in the ocean. Therefore, I decided not only to make several collections dedicated to different methods of preparing the vegetable I love so much, but also to highlight them in a separate section, so as not to spend a long time searching for the required recipe.

Today I'll start with a general topic: cooking zucchini in a skillet. There will also be regular frying and stewing and other methods that you can use if you have a frying pan.

And in the following articles I will analyze each method in more depth, so that you always have a suitable option at hand for all occasions.

In general, today I just want to surprise you with a variety of choices and lure anonymous zucchini-eating lovers into my circle.

How to cook zucchini in a frying pan quickly and tasty with garlic

The taste of fried zucchini depends not only on the skills of the housewife, but also on the freshness of the selected products. As for zucchini, ideally you need to take the so-called “milk” ones, that is, young and fresh, with thin skin and seeds just beginning to form.

Let's start with one of my favorite options. It makes the vegetables very juicy, and the taste is not interrupted by other ingredients. Just garlic for flavor, flour for light breading and sour cream (optional) to enhance the taste.

For preparation you will need:

  • Zucchini - 3 pcs.
  • Garlic - 5-8 cloves
  • Salt, pepper - to taste
  • Sour cream (10-15%) – 250 g

Preparation:

1. Wash the vegetables, trim them on both sides and cut them into rings about 1 cm thick.

2. In a deep plate, mix flour and salt. In this case, usually take 1 teaspoon of salt for 1 cup (200 ml) of flour. And in this mixture we roll the zucchini on both sides.

You can use any flour, in this example it is whole grain.

3. And fry in a heated frying pan with a small amount of vegetable oil. Fry under a closed lid on both sides for 2-3 minutes until golden brown.

There is a lot of zucchini, so you will need to fry it in several batches so that the vegetables do not touch each other in the pan.

4. When all the rings are ready, turn off the heat, put them all in a frying pan, add sour cream and pressed garlic.

5. Then turn on the lowest heat, pour water into the frying pan so that it lightly covers the first layer of zucchini, stir gently, close the lid and leave to simmer for 15 minutes.

Recipe for a quick snack with garlic and mayonnaise

If the previous recipe seems long to you, then here is an example of a classic preparation, in which fried zucchini is simply coated with garlic and mayonnaise sauce. A great option for a holiday table, by the way.

Ingredients:

  • 1-2 small zucchini
  • A couple of tablespoons of mayonnaise
  • A couple of cloves of garlic
  • Salt to taste
  • Flour for frying
  • Vegetable oil

Preparation:

1. Cut the zucchini into rings 5-7 mm thick, roll in flour and fry over medium heat on both sides for 4-5 minutes until golden brown.

After this, blot the rings with a paper towel to remove excess fat.

2. Prepare the sauce by mixing mayonnaise, garlic, passed through a garlic press and a pinch of salt in one bowl.

3. Well, now all that remains is to grease each ring with mayonnaise and the excellent snack is ready.

This dish is best served chilled.

Recipe for pan-fried zucchini with cheese and garlic

You don't have to cook all the zucchini the same way. Sometimes adding just one ingredient completely changes the taste of the finished dish. Such an ingredient could be, for example, cheese.


To prepare such a snack, you need to cut and fry the zucchini rings in the same way as in the previous recipe, after rolling them in flour.

Then pat them dry with a paper towel and sprinkle grated cheese on the still warm rings.

The amount of cheese is chosen independently, depending on the preference for the degree of “cheesiness”.

And when the cheese melts, you need to put a teaspoon of sauce made from sour cream, garlic and salt on top.

The traditional proportion for such sauces is 1 grated clove of garlic to 2 tablespoons of sour cream and salt on the tip of a knife.

The easiest and fastest way to prepare a lean zucchini snack

Well, before we move on to slightly more complex recipes, let's look at how to fry maximally lean zucchini without anything. Only a small amount of vegetable oil for frying.

And it's very easy to do. You only need:

1. Wash and cut the vegetables into thin rings (thickness no more than 5 mm).

The thinner the slices, the faster they will fry and the less oil they will absorb.

2. Place them in a heated frying pan with vegetable oil over medium heat. Fry on one side for 2-3 minutes until golden brown.

3. Turn the zucchini over, reduce the heat to low, cover the pan with a lid and simmer for 5-6 minutes.

Be careful that oil will splash out when you open the lid.

And you're done.

Place the rings on a paper towel and let the oil drain. Then you can add salt and pepper so that the vegetables don’t seem completely tasteless.

I must warn you that this option will appeal only to those who are on a diet and eat only boiled and steamed food for a long time.

The next two recipes will focus on batter frying. It can be prepared in different ways, and this video shows the simplest one, in which you just need to roll the zucchini in flour and egg.

Step-by-step photo recipe for making fluffy kefir batter

A slightly more complex method involves using kefir (or yogurt), which makes the batter fluffy. Many people like it.

Ingredients:

  • Young zucchini - 2-3 pieces
  • Garlic - 2-3 cloves
  • Salt pepper

For the batter:

  • Kefir or yogurt - 100 g
  • Eggs - 1-2 pcs
  • Flour - 3-4 tbsp

For the sauce:

  • Sour cream
  • Greenery
  • Garlic
  • Salt pepper

Preparation:

1. Wash the zucchini, cut off the ends, first cut in half crosswise, and then cut each half lengthwise to make 4-5 plates half a centimeter thick. Lightly salt and pepper the plates, rub with garlic passed through a press and set aside for 10-15 minutes.

2. Prepare the batter by whisking kefir, eggs and flour in one deep bowl.

The amount of flour can depend on many factors, even the degree of moisture. Therefore, add it little by little, focusing on the fact that the mixture should have the consistency of liquid sour cream.

3. When the batter is ready, take the zucchini, roll them in flour, then in the batter and place them in a heated frying pan with vegetable oil. Set the heat to medium or slightly less.

4. Fry the zucchini on both sides until golden brown. This will take 4-5 minutes.

The first finished piece needs to be cut and checked for readiness. If the zucchini is damp, then you need to continue frying with the lid closed. This will allow the vegetables to fry and the batter not to burn.

5. Fry all the plates and place them in a plate on a paper towel to drain excess fat.

At the same time, you can quickly prepare a sauce that will go perfectly with this dish. To do this, just mix sour cream with garlic squeezed through a press, a pinch of salt and finely chopped herbs.

Now everything is ready. This dish can be served either cold or hot. And so and so very tasty.

A simple option for frying zucchini in a frying pan - grill without garlic

This method is designed to satisfy the needs of two groups of people at once: those who do not like garlic and those who monitor the amount of calories they consume.

Yes, a grill pan allows you to fry food without any vegetable oil at all. But I’m not interested in writing about regular frying in such a frying pan; there’s nothing interesting about it. I’d rather show you an interesting version of an Italian-style vegetable appetizer.

We need very simple starting products: zucchini, olive oil (ideally unrefined), salt, pepper and rosemary.

The most important thing here is to cut the zucchini into as thin slices as possible. To do this, you can use a special vegetable cutter.

Preparation:

1. Place the zucchini cut into thin slices on a heated grill pan and fry over medium heat for literally 1-2 minutes until the flesh is slightly transparent.

2. Place the first batch of 4-5 pieces in a deep bowl, lightly add salt and pepper on top, add a pinch of rosemary and sprinkle with olive oil.

When the next batch is ready, repeat the procedure with a second layer. And so on until the vegetables run out.

That's all. Very simple. This appetizer is served while still warm and can easily replace a side dish, turning an ordinary lunch into a dietary one.

Dietary grilled zucchini salad with lemon and mint

Generally speaking about dietary food, you need to understand that side dishes and salads made from vegetables will always be much healthier than pasta or, not surprisingly, rice.

Therefore, here is another cool recipe for a warm salad that takes care of your figure and health.

To prepare one serving, just half a young zucchini, a pinch of salt, the juice of a quarter of a lemon and a couple of fresh mint leaves are enough.

Preparation:

1. Cut the skin off the zucchini and cut it into thin slices using a potato peeler. In this case, we do not need the core in which the seeds are located. We throw it away.

2. Heat the frying pan and add literally a teaspoon of vegetable oil to it.

It is needed to give the zucchini shine and flavor.

Then put the plates in the frying pan and fry them over medium heat, stirring occasionally until the white flesh becomes translucent.

3. Place the prepared vegetables on a plate, sprinkle with lemon juice, throw mint leaves on top and add a little salt.

Mint must be torn so that it releases its oils and aroma.

And again a recipe for losing weight. An excellent dish for both lunch and dinner. It’s also a great side dish for those who are learning to reduce their daily calorie intake.

Ingredients:

  • Young zucchini - 2 pieces
  • 1 onion
  • 1 medium sized carrot
  • Tomatoes - 5-6 small or 3 large
  • Salt, pepper, vegetable oil

Preparation:

1. Peel the onions and carrots and chop them finely. Cut the tomatoes into slices of arbitrary size.

2. Peel the zucchini, cut it in half lengthwise (like a boat) and remove the core and seeds with a spoon. Then cut them into small cubes.

3. Fry the onions and carrots over medium heat with a small amount of vegetable oil until the onions are soft and translucent.

4. Then add zucchini and tomatoes to them. Cover the pan with a lid and simmer over low heat for 20 minutes, stirring occasionally

5. Everyone determines the degree of readiness for themselves. It’s the same with potatoes: some people like half-broken fried potatoes, others think that this is too much.

Same with stewed zucchini. It may be a little harsh, but at the same time it is already ready, or it may boil slightly and turn into semi-puree. Personally, I like the second option.

Whatever option you choose, when the zucchini has reached the desired condition, you need to salt and pepper them, mix well and leave under the lid to simmer for a couple more minutes.

Hello, my dear entertaining chefs! This spring I really fell in love with zucchini. In the sense of dishes prepared from them :) Today I picked up some zucchini at the store again. That’s why today we will cook them. I'll tell you how to fry zucchini in a frying pan and share tried and tested recipes.

By the way, friends, did you know that zucchini is a bush form of pumpkin? To be honest, this was a real discovery for me. And I thought that they were closer to cucumbers :) Zucchini came to us from Mexico. This is where they were prepared 3000 years ago. But in Europe they appeared only in the 16th century. Here's a little excursion.

Zucchini has low energy value: only 24 kcal per 100 g of product. There are 0.6 g of protein, 4.6 g of carbohydrates and only 0.3 g of fat.

How to choose zucchini

This vegetable crop is perhaps the only one that is best consumed unripe. Choose zucchini up to 20 cm long and weighing no more than 200 grams. Their skin should be smooth, thin, without dents or other defects.

Overripe vegetables have a thick skin and a lot of seeds inside. And their flesh is fibrous (it’s not very tasty). I recommend storing this product unwashed. At home, I take them out of the bag and place them in the refrigerator, because... in the bag they give off perspiration and spoil faster. The recommended storage period is about a week.

How long to fry zucchini

Fry young zucchini and sliced ​​vegetables on each side for 1-2 minutes over medium heat. The time, of course, also depends on the thickness of the circles. Do not cover the vessel with a lid. It is better to roll the circles in flour first. And be sure to salt the vegetables before heat treatment.

I have prepared simple, but at the same time original recipes for dishes with fresh zucchini. For greater clarity, a photo with a video lesson is also attached.

How to fry zucchini with garlic in a frying pan

Do you like to season vegetable dishes with garlic? Then this dish is the perfect option for you. It will add piquancy to the vegetables and, of course, an amazing aroma.

To prepare this dish, make sure you have:

  • 2 pcs. medium sized zucchini;
  • 3-4 tbsp mayonnaise;
  • 5-6 cloves of garlic;
  • salt + spices (to taste);
  • wheat flour;
  • frying oil;
  • dill greens.

We wash the vegetables, cut them into slices, add salt and leave for 10 minutes. Meanwhile, prepare the sauce with garlic and mayonnaise. Grind the garlic cloves using a garlic press and mix with mayonnaise. Add chopped herbs and spices to the sauce to your taste.

After 10 minutes, when the vegetable gives juice, drain off the excess liquid. Then dip each circle into a container with flour and place it in heated oil in a frying pan.

After frying, place each round on a paper towel first. Then transfer to a large plate and brush each slice with garlic mayonnaise sauce. Please note that this dish tastes better when it sits for a while and soaks in the sauce. It is not as tasty hot as it is slightly chilled.

How to fry zucchini in a frying pan in batter

Ingredients:

  • ½ cup flour;
  • 4 egg whites;
  • salt;
  • vegetable oil;
  • garlic;
  • greenery;
  • ½ glass of warm water.

Beat the whites until a foamy mass forms. Mix separately water with flour and ½ tbsp. vegetable oil. Then carefully connect all these components. That's all, your simple batter is ready.

We cut the zucchini into circles or thin slices (well, whichever you prefer). Add salt and leave for 7-10 minutes. Then drain the released liquid.

Dip each piece in batter and place in a frying pan. First you need to pour a little vegetable oil and heat it well. Fry on both sides until golden brown.

Allow excess oil to drain before placing finished pieces on a plate. To do this, place the zucchini on a paper towel. Afterwards, crush the fried zucchini with chopped garlic and parsley or dill. It will turn out indescribably tasty and appetizing. With a slice of whole grain bread it will be pure bliss. Only then, if you go on a date, chew mint gum :)

Roasting zucchini Venetian style

To prepare this exotic dish, stock up on:

  • 1 zucchini;
  • a couple of tbsp. raisins (preferably seedless);
  • 3 sprigs of mint;
  • 3 tbsp. vegetable oil;
  • 1 tbsp. wine vinegar;
  • 2 cloves of garlic;
  • ½ tsp. any sugar (brown or white);
  • 1 tbsp. peeled pine nuts;
  • salt + freshly ground black pepper.

First we prepare the marinade. Set half the mint leaves aside to garnish the finished dish. But chop the second half of the leaves with a knife and mix them with raisins.

Peel 1 garlic and finely chop the clove with a knife. Add it to the mint-raisin mixture. Lightly pepper this mixture. Then add a spoonful of wine vinegar and sugar. Mix all ingredients thoroughly and leave the mixture for half an hour to infuse.

Cut the vegetables into slices 5-6 mm thick. I don't recommend cutting it any thicker. In a frying pan in hot oil, fry the remaining flattened garlic clove. Then remove it. And in the flavored oil, start frying the zucchini slices.

Place the finished circles on a paper towel. We don’t need extra fat; we have enough of our own 😉 Afterwards, add a little salt to the vegetables. Then transfer the zucchini to a plate, pour over the marinade and stir. Do this very carefully, as fried zucchini is tender and may fall apart.

After this whole procedure, leave the zucchini for an hour. Then place them on a plate, sprinkle with pine nuts and garnish with the remaining fresh mint leaves. Well, what can I say: it will turn out not just delicious, but divinely delicious. You definitely need to try this, friends. And then describe your impressions of this culinary masterpiece.

How to fry zucchini with tomatoes and garlic

You need to prepare:

  • 0.5 kilos of zucchini;
  • 2 large tomatoes;
  • 2 cloves of garlic;
  • 1-2 eggs;
  • 1 tbsp. mustard;
  • vegetable oil;
  • 10 grams of green onions;
  • salt + freshly ground black pepper + sugar to taste.

Wash the zucchini, remove the skin and cut into slices. Then add a little salt and pepper, and then leave for 5-7 minutes.

During this time, you need to hard-boil the egg, then remove the bowl with the egg from the heat and pick up the zucchini again. We put a frying pan on the fire, pour oil into it, and then put the circles here. And fry the vegetable rounds. Place the finished product on a plate and let it cool.

Now let's prepare the sauce with spices and tomatoes. We peel the tomatoes, scald them with boiling water and chop them finely. Then add mustard here, 1 tbsp. vegetable oil, salt and sugar with pepper. Mix all ingredients thoroughly.

Pour the sauce over the fried zucchini and sprinkle with chopped green onions. And next to this vegetable dish we place a chopped egg. Summer dinner is ready. Bon appetit!

  • Very tender zucchini with thin skin and barely noticeable seed buds are quickly fried on both sides, 2-3 minutes on each side.
  • Overgrown zucchini, freed from seeds, will have to be fried longer: up to 10-12 minutes.
  • A golden crust can be an indicator of the readiness of the dish only if the zucchini is cut into thin slices, no thicker than 0.7 cm.

You can diversify the dish described above by seasoning the vegetables with mayonnaise or another similar sauce. Before frying zucchini with mayonnaise and garlic, think about what spices and herbs are appropriate to use. Round pieces of young zucchini are fried without breading, then the dish turns out to be dietary. If taste is more important to you than the number of calories, bread the chopped fruit in breadcrumbs or flour (wheat, buckwheat, corn).

Cooking method:

  1. Prepare the sauce: add crushed garlic and spices to the mayonnaise you choose.

  4. Fry in oil until golden brown. Dry on a napkin.

  • zucchini – 0.5 kg;
  • egg – 2 pcs.;
  • milk – 50 ml;
  • starch - 1 tbsp. l.;
  • wheat flour – 1-2 tbsp. l.;
  • vegetable oil – 50 ml or more;
  • garlic – 2-3 cloves;
  • herbs, spices (coriander, pepper, turmeric, paprika);
  • salt.

Cooking method:

  1. For the batter, separate the egg yolks from the whites.
  2. After adding salt, beat the whites into a stable white foam.
  3. Mix the yolks thoroughly with starch and milk, add spices, and beat with a blender. Add the whites to the mixture and stir gently with a spoon.
  4. Add crushed garlic to the prepared batter.
  5. Cut the zucchini into rings or half rings (the latter are more rationally placed in the frying pan).
  6. Roll the zucchini slices in flour (in this case the batter will stick better), generously “bathe” them in the egg mixture, and fry.
  7. Dry the finished slices with a napkin, sprinkle with herbs, and help yourself.

With egg

On a summer morning, before the heat takes away your appetite, prepare fried zucchini with eggs for breakfast: essentially, it’s scrambled eggs with zucchini filling. The dish is prepared quickly and simply; any novice housewife can handle it. When serving breakfast, do not skimp on greens; they are absolutely appropriate here. A green cucumber freshly picked from the garden will add freshness to the dish.

Ingredients:

  • zucchini – 300 g;
  • egg – 2-3 pcs.;
  • vegetable oil – 2-3 tbsp. l.;
  • flour (optional) – 1-2 tbsp. l.;
  • greenery;
  • salt pepper.

Cooking method:

  1. Cut the zucchini into slices, bread if desired, and fry on both sides until light brown.
  2. Pour eggs over vegetables. They can be stirred in advance or, conversely, broken into a frying pan gently to form a fried egg.
  3. Fry the dish uncovered for 5 minutes, close the lid and leave for another 2-3 minutes.
  4. Breakfast is ready: transfer it to a plate and sprinkle with finely chopped herbs.

Salad

An original and amazing salad with fried zucchini is rarely found on the tables of our compatriots, but in vain. The delicate combination of fried zucchini and raw salad tomatoes is complemented by a boiled egg and mayonnaise. Do you want to reduce the calorie content of your dish? Instead of full-fat mayonnaise, use homemade unsweetened yogurt and yogurt. Be sure to add garlic, parsley, and dill to the salad. The appetizer turns out bright and festive, just like in a glossy photo.

Ingredients:

  • zucchini – 0.5 kg;
  • tomato (large) – 1-2 pcs.;
  • garlic – 2-3 cloves;
  • egg – 2 pcs.;
  • mayonnaise – 3 tbsp. l. or more;
  • lemon juice – 1 tbsp. l.;
  • vegetable oil – 30-50 ml;
  • greens, salt, pepper.

Cooking method:

  1. Fry the zucchini, cut into slices, on both sides in vegetable oil.
  2. Cut the tomato into semicircular pieces.
  3. Boil the eggs hard, cool, cut into cubes.
  4. Finely chop the greens: dill, parsley, basil, green onions - whatever is available. Pass the garlic cloves through a press.
  5. Combine the ingredients in one salad bowl, season with mayonnaise, add salt, add spices and stir.

With meat

A light and satisfying dish for lovers of separate meals - zucchini with meat in a frying pan . It can be prepared with any type of meat (pork, lamb, beef, veal), but it is made as quickly, inexpensively, healthy and tasty as possible with chicken breast. A dish with a minimum number of ingredients will surprise you with an unsurpassed, perfect taste that will never get boring.

  5. Compact the contents of the jar, but gently, without fanaticism, so as not to damage the zucchini pieces.
  6. Pour vinegar over the vegetables, cover the jar with a lid, sterilize for 30-50 minutes and roll up.

With minced meat

Zucchini rounds can be stuffed with meat or meat-vegetable mixture, it turns out very tasty. Before you cook minced zucchini in a frying pan, select the fruit of the desired size: it may be slightly overgrown, the middle with the seeds will still need to be removed. The diameter of the vegetable should be 7-8 cm, the hole inside should be 4-5 cm (it can be cut with a glass). Rings with minced meat are baked in the oven, stewed in a slow cooker or cooked in batter. Don't forget to remove the tough skin from the zucchini.

  • zucchini – 2 pcs.;
  • minced meat – 300 g;
  • onions – 2 pcs.;
  • egg – 4 pcs.;
  • flour – 2 tbsp. l.;
  • milk – 100 ml;

450 gr. Minced meat.
1 onion head.
1 bell pepper.
2-3 young zucchini.
100 gr. Hard cheese.
1 egg.
1 tbsp mayonnaise.

8 cherry tomatoes. But you can also use regular ones.
Half a bunch of dill.
Salt and pepper to taste.

Cooking process.

Beat an egg into the defrosted minced meat, add finely chopped onion, bell pepper, herbs and a little vegetable oil. Add salt and pepper and mix the minced meat well until smooth.

Wash the zucchini and divide it into two halves. Carefully remove the core using a tablespoon. We make these zucchini boats.

Distribute the minced meat evenly among the squash boats.
