Promotion "Belarusian Cuisine Week" was held in the capital for the 14th time. From June 12 to 18, 70 public catering establishments - bars, cafes, restaurants - took part in it. Guests were offered 5 dishes of national cuisine: early cabbage salad with radishes, sorrel cabbage soup with meat, “Pyachisto” from pork ham, fish jackdaws and the “Potato” dessert.


But for those who did not have time to try the dishes of the national cuisine, we would like to remind you what the Belarusian table is famous for.

1. "Vereshchak".
Dish number 1, which you can truly be proud of. This is a hot sauce made with meat or meat and mushroom broth.

2. “Svekolnik” (“Kholodnik”).

But this is a truly Belarusian dish. From beets, sorrel, nettles. And if they offer it to you in “near abroad” countries, then they borrowed it from us, and not vice versa.


3. "Draniki".
The most popular dish. Pancakes or pancakes made from grated potatoes are eaten with sour cream, they are baked in pots with meat and gravy.

4. "Krambambula".
A unique local alcoholic drink. It appeared in the Grand Duchy of Lithuania in the 18th century. Precious spices were brought from India. The drink was divided into women's, sweeter, and men's, stronger. Krambambula is prepared using vodka with the addition of nutmeg, honey, cinnamon, cloves, red and black pepper.

5. “Belarusian sour black bread.”
It has long been popular in Belarus. It is represented in stores by “Narochansky”.

6. “Beer Chowder.”
Beer stew with cheese or sour cream is a “master’s” dish. Belarusians loved him in the 16th century, and they still love him now.

7. “Pyachisto.”
Lamb dish. Before the war, sheep farming in Belarus occupied a leading position in livestock farming. After the war, they decided not to restore this industry. Lamb has disappeared from the diet of Belarusians. The recipes remain. “Pyachisto” is also prepared from beef, pork, veal, a whole hare, goose, and turkey.

8. "Sbiten".
Cool drink. Prepared from water, honey, pepper, cloves, bay leaf and nutmeg.

9. "Kulaga".
Belarusian dessert. This sweet dish is prepared from fresh berries (blueberries, lingonberries, raspberries, viburnum, rowan), flour, honey and sugar. They are often served with pancakes.

10. “Nalisniki”.
Pancakes filled with cottage cheese or cheese, wrapped in a tube or folded in four. You can try it in all catering establishments.

Where in Minsk can you try real Belarusian cuisine?

This is the Kukhmistr restaurant. He is able to surprise anyone with his “Vantrabyankai”, warm salad “Kuhmistr” or cabbage soup with mushrooms.

At the Kamyanitsa restaurant you can try “Pike-perch in the Neman style” and “Machanka Panskaya” soup. The restaurants “U Barysycha” and “Verkhni Gorad” can delight you with hot dishes in pots.

It is better to enjoy “Draniki” with various sauces and spicy additives at “Radziwillovsky”.

The Svoi restaurant offers signature liqueurs: krambambulya and spotykach. Here you will find smazhenka with sausages, duck with fried cabbage.

At Gostiny Dvor, it is better to order the “Frying Pan with Ears and Red Cabbage.”

For many public catering establishments in Minsk, the coming days are very important: from October 22 to 28, the next, 18th Week of Belarusian Cuisine is being held. 66 establishments of various types and formats take part in it. However, they are united by the common idea of ​​​​popularizing national cuisine: these days, visitors to cafes and restaurants in the capital strive to taste the best Belarusian dishes at very affordable prices.

Marina Dyakova, deputy head of the public catering department of the Main Directorate of the Consumer Market of the Minsk City Executive Committee, which organizes it, spoke about the features of the Belarusian Cuisine Week:

– The national cuisine of Belarus has been formed over many centuries; it has absorbed the best traditions of Ukrainian, Russian and Polish national cuisines. This is primarily due to the geographical location of Belarus. The meaning and idea of ​​holding Belarusian cuisine weeks is for people to finally realize: Belarusian cuisine can offer many tasty, healthy and varied dishes. The event is held 3–4 times a year, starting in 2013, when there were no more than 10–15 participants.

A permanent circle of participants has formed, who show interest in the event every year and look forward to it. With the right approach, we managed to find our regular visitors - they are happy to get acquainted with new dishes of Belarusian cuisine. Gradually, a kind of priorities emerged: if dishes were not repeated until the 15th Week, then, at the request of catering establishments, they reappeared on the menu. They have become hits and are popular among visitors: potato sorcerers with meat and sour cream, solyanka “Shlyakhetskaya”, etc. There is also a new product this season: a bumper harvest of apples will allow you to enjoy a simple and tasty dish “baked apple with honey and curd pancakes.” Dishes are prepared according to the same recipes and, regardless of the type and class of public catering facility, they are offered to visitors at the same prices in all establishments taking part in the event (a full list of establishments can be found at . – Note author).

We go to one of the cafes in the center of the capital, which regularly participates in the Belarusian cuisine festival, and see a large advertising poster at the entrance - yes, we have come to the right place. Chef Irina Platun kindly agrees to demonstrate all five dishes approved by the organizers.

Despite the fact that it was not included in the list of dishes of the Week of Belarusian Cuisine, sea buckthorn juice did not go unnoticed by our attention and its amazing taste. To be honest, I used to think that only medicinal oil could be made from sea buckthorn. It turns out that not only a healthy, but also a delicious drink is prepared from its berries.

Having tried everything that the chef suggested, it was difficult to find the words and terms that expert tasters use in such cases to evaluate. I decided to give a simple, but, in my opinion, popularly accurate assessment: everything is very, very tasty. I was especially pleased with the new item - dessert. It’s amazing that a simple baked apple combined with honey can give such original notes... It’s pointless to describe the taste of each dish. It’s like retelling music – you have to listen to it yourself. It’s the same with culinary delights – you have to try it.

“Belarusian cuisine is becoming increasingly popular,” says chef Irina. – Her secret is simple: national dishes are tasty and uncomplicated in content, which is typical for European cuisine in general. There are never any difficulties in cooking: all products are local and always in stock. Do you know what can be prepared from potatoes, traditional for Belarusians? Countless dishes: potatoes are one of the main ingredients of many national Belarusian dishes. It is not only used to prepare independent dishes, but is also used as a side dish in various forms: dumplings, sorcerers, all kinds of potato casseroles and babkas. Potatoes are also an indispensable ingredient for preparing numerous salads and first courses; this is our highlight. But it is naive to think that Belarusian cuisine consists only of potato dishes. Go to cafes and restaurants, ask for Belarusian dishes, try them - you will see that our national cuisine is a worthy part of European cuisine, and Belarusians have something to be proud of.

What do ordinary visitors think about this? We had to briefly distract office worker Elena Vinnik, who often comes to the cafe for lunch. We immediately noticed a like-minded person: on Elena’s table there were sorcerers, a baked apple with honey and pancakes and sea buckthorn juice.

“I always give preference to simple, healthy and tasty food,” said Elena. – Belarusian products and everything prepared from them always meet these requirements. Every year I gladly take the opportunity to try something new and tasty during the next Week of Belarusian Cuisine. Today, in addition to traditional sorcerers, this is a wonderful dessert. Incomparable taste!

Leaving the cafe, I thought: do the dishes presented as part of the Belarusian Cuisine Week really have the same taste in all establishments? Realizing full well that it was unrealistic to visit the remaining 65 cafes and restaurants in one evening, I decided to visit one or two more - the possibilities of my stomach are not limitless. Having eaten a chicken salad in one cafe, and my favorite baked apple in another, I realized that my receptors did not notice the differences. However, no, if we are to be objective, there was still a difference: the baked apple turned out to be green, not red, which did not affect the taste at all. We can still maintain the established standards! As Marina Dyakova shared her secret, our technologists are now working on so many interesting recipes that no foreign chain restaurants could ever dream of...

On Monday, another week of Belarusian cuisine will begin in the capital. What national dishes will be available to try in different establishments during the festival, the main department of the consumer market of the Minsk City Executive Committee reports.

Belarusian Cuisine Week will take place from October 22 to 28. On September 25, dishes from the 15th Week of Belarusian Cuisine were presented in Minsk.

The anniversary promotion offers six dishes that were in greatest demand among guests during all previous promotions. This is a chicken roll with pickled cucumbers costing Br4.5, pumpkin soup with chicken and croutons - Br3.5, pechisto with sauce and baked vegetables - Br9.5, country-style frying with pancakes - Br8.5, cottage cheese brushwood with honey - Br3 .5, cranberry juice - Br1. “Minsk residents and guests of the capital especially liked these culinary creations. They were prepared using seasonal vegetables,” explained Yana Gurskaya, press secretary of the main department of the consumer market of the Minsk City Executive Committee.

80 cafes and restaurants in the capital are taking part in the event, which will run until October 1. They are all different in type and format, but they are united by the idea of ​​popularizing national cuisine and developing food culture.

Weeks of Belarusian cuisine have been held in Minsk since 2013. About 15 establishments joined the first campaign. “The project is not losing popularity. During this time, specialists from the main department of the consumer market and restaurant chefs have developed 70 recipes for dishes of national cuisine. It is planned to compile and publish a collection of these recipes. Belarusian cuisine is something more than everyone’s favorite pancakes. Our task is to introduce both guests of our country and Belarusians themselves with its delicious and varied dishes,” said Yana Gurskaya.

The principle of the Belarusian Cuisine Week is a single recipe and price, regardless of the type and class of public catering facility.
