Chop vegetables for recipe. Grate the carrots so they cook faster. And chop the onion into cubes.

Heat vegetable oil in a frying pan, add vegetables, saute until soft for 3-4 minutes, stirring occasionally with a spoon or spatula. Add minced meat and fry everything together. If juice comes out from the vegetables and minced meat, it’s okay; it will evaporate during the frying process.

Fry the minced meat with vegetables for about 15 minutes, add salt and pepper to taste at the end. You can use any spices you like.

Pour the washed buckwheat into the frying pan, add water and turn on low heat. Simmer the buckwheat with minced meat under the lid for 25 minutes.

All the liquid should be absorbed into the buckwheat, the porridge will increase two to three times, now you can stir the dish. Beef takes the longest to cook, so we fry it right away. Then we will take mushrooms (champignons) and, finally, our heroine of today’s selection of recipes - buckwheat. Buckwheat cooks quickly, so at this stage you can start setting the table. In the meantime, look at everything step by step and with photos.

Prepare all the necessary ingredients according to the list. Choose large vegetables. Peel the onion, rinse and dry. Cut the onion into cubes and immediately place in a frying pan greased with vegetable oil.

We make the heat not very strong, a little stronger than medium, and fry the onion until a beautiful golden hue appears. While the onion is frying, cut the carrots into strips. Add to the onion, stir, fry for about another five minutes, soaking the vegetables in oil.





If you don’t have ready-made minced meat, before frying the vegetables, grind the lean meat through a meat grinder. We move the vegetables to the side and place the minced meat in the frying pan. We increase the fire to almost maximum.





Mix the minced meat quickly, breaking up any lumps with a fork or spatula. Then lightly fry and mix with carrots and onions.







Season with salt and ground pepper. For taste, add tomato sauce (optional, this is an optional ingredient). Fry the tomato for several minutes, reduce the heat to low.





We wash the buckwheat, changing the water several times. We choose specks and nigella. Pour buckwheat into vegetables with minced meat. You can first fry the cereal in another frying pan without adding oil, then mix with vegetables and minced meat.





Pour in two glasses of water. Add salt to taste immediately before the cereal has absorbed all the water. Cover tightly and cook for 30-35 minutes without opening the lid.





Buckwheat should absorb all the water and steam well. After turning off, leave the buckwheat to brew under the lid, and stir gently before serving. There is no need to stir the buckwheat during cooking; it will not turn out crumbly.

Add chopped onion.

Add salt and, if you like, pepper. A little seasoning will give the minced meat a delicious aroma. But if you are on a diet due to stomach problems, do not add seasonings.

Mix all ingredients into a homogeneous mass.

Place the buckwheat in a saucepan, pour water 2 cm higher and place the buckwheat on high heat. When the porridge boils, reduce the heat to low and cover with a lid.

While the buckwheat is boiling, you can make small meatballs. For those who are not in a hurry and want to give the meatballs a perfectly round shape and the same size, special tongs were invented back in Soviet times. True, it is much more convenient to roll minced meat balls with your hands. We immerse the meatballs in buckwheat without waiting for it to be ready.

If you don’t have much time and desire to make meatballs, you can put the minced meat in the dish you are preparing without making “balls” out of it, but simply mixing it with buckwheat.

Cook for 20-30 minutes over low heat, stirring occasionally.
