Ingredients:

  • butter – 100 g;
  • eggs – 2 pieces;
  • milk – 150 ml;
  • granulated sugar – 0.5 cups;
  • vanilla sugar – 1 sachet (10 g);
  • yeast – 1 teaspoon;
  • salt on the tip of a knife;
  • flour 350-400 g + 50 g for adding;
  • powdered sugar for decoration.

Cooking process:

The products needed for kneading must be at room temperature. Those ingredients that are stored in the refrigerator (eggs, butter) must be taken out in advance to keep them warm.

Particular attention should be paid to such an ingredient as yeast. Only high-quality and fresh yeast will produce good dough and fluffy baked goods. Yeast fungi actively “work” in liquid with a temperature of 30-35 degrees C. At higher temperatures, yeast fungi may die.

Warm the milk slightly.


Add yeast to it (the recipe used baking yeast, but regular yeast will do), 1 teaspoon of sugar, mix well, cover the top and let rise.



Combine eggs and sugar in a bowl and mix.

21 gr. fresh yeast or 7 gr. dry (the amount of yeast in the original recipe was 2 times more. I reduced the amount of yeast and increased the proofing time a little. But even with less yeast the dough grew very quickly)

150 ml. kefir or Buttermilch

Amazing dough! It’s easy to do and, which is important for me, you don’t have to knead for a long time, that is, you practically don’t have to knead, and then wash the surface of the dough and flour. And the result is simply excellent. Products made from it are very delicate and airy.

Butter yeast

Depending on what kind of buns you want to make, there are 4 types of suitable dough. We'll start by preparing buttery yeast dough, which includes many recipes for butter buns. For it you will need the following components:

  • 50 g butter;
  • two tablespoons of vegetable oil;
  • half a glass of sugar;
  • one egg;
  • a carton of milk (700 ml);
  • 800 g flour;
  • 15 g yeast.

Having prepared everything you need, you can start kneading the dough:

  1. Warm up the milk a little.
  2. Dissolve yeast in it.
  3. Separately, beat the egg with butter and sugar.
  4. After the yeast has risen, mix it with the egg mixture.
  5. Add vegetable oil.
  6. In a separate bowl, mix flour and salt.
  7. Combine the ingredients and knead the dough.
  8. The pan with the dough should be covered with a towel and placed in a warm place for 2-3 hours.
  9. After the dough has risen, you can begin to implement the recipe for buns.

As a result of all manipulations, you should end up with 12 portions of material. You can also simply replace the milk in this recipe with sour cream. this will make them even more magnificent.

Yeast-free dough

A delicious pastry recipe may not necessarily contain yeast. Even without them, you can prepare a high-quality base for baking treats. In order to make dough for fluffy, tasty and aromatic pies or buns, you will need:

  • 500 grams of flour;
  • salt;
  • two selected eggs;
  • water - 200 ml;
  • 2 tablespoons vegetable oil;
  • a tablespoon of sugar.

If you plan to bake pies with meat or potatoes, then you can do without sugar. Having prepared the ingredients, you can start kneading the dough. Its preparation is nothing special.

The flour is sifted directly onto a clean table or large board. After this, it must be raked into a pile, leveled and a depression made in the center. It is in this that all the ingredients, including water, are “put together.” The egg should be beaten first. The mass is mixed, then covered with a towel and left for about half an hour. After this, you can start cooking from the dough.

Puff yeast dough

The following type of dough is also used to create a bun recipe. It can take the cook up to 8 hours to prepare it. And ideally, all 16, half of which occur at night. So, you will need:

  • half a kilo of flour;
  • 350 grams of butter;
  • 300 ml milk;
  • sugar - 60 grams;
  • 12 g yeast;
  • a teaspoon of salt.

During preparation, two different types of dough will be mixed. Therefore, the preparation of sweet, rich yeast buns will take a long time. Take the day off to do the manipulations with all the attention and accuracy.

  1. First you need to make a dough. To do this, add sugar to 100 ml of milk and crumble the yeast. Then sift 100 g of flour there. Stir and leave to rise for half an hour in a warm place.
  2. After the dough has risen, pour into a deep bowl and add the remaining milk and salt.
  3. While stirring, gradually add the remaining flour. After the mass becomes wet, you will need to mix 50 grams of butter into the dough.
  4. Knead the dough for 15 minutes and then put it in the refrigerator for 3-4 hours.
  5. The remaining 300 grams of butter needs to be thawed (just leave it warm, not in the microwave).
  6. Transfer the butter to a sheet of parchment. Cover the top with another sheet.
  7. Roll the butter into a rectangular layer and place it in the refrigerator until you need to prepare the dough. You will need to take it out 15 minutes before continuing cooking.
  8. Dust the board with a little flour. Place the prepared dough on it.
  9. Make a deep cut crosswise on the “bun”. Stretch the protruding edges to the sides to get a rectangle. Sprinkle flour on top and roll it out.
  10. Rolled butter is laid out closer to the top edge. Then the bottom edge is folded, hiding 2/3 of the surface. After this, the top edge is folded over. The sides are pressed tightly with your hand until they stick together.
  11. Then the resulting rectangle is turned with the short side towards the cook. Rolls out and folds in three. It is necessary to fold not in half, but by 1/3, first from the bottom and then from the top. After this, the dough needs to be put in the refrigerator for an hour.
  12. After a while, remove the workpiece and repeat the rolling-folding procedure again. Send it to cool again. This step is repeated 1-2 more times until the required number of layers is achieved. Remember that the more times you fold the dough, the thinner the layers and the more likely they are to tear.

That's it, your dough is ready. Now you can start cooking. But before that, let's look at how to prepare another type of dough.

Puff pastry without yeast

This recipe is not much different from the previous one, but it is a little simpler. This dough makes very tasty puff pastries with cheese and ham. All you need is:

  • 450 g flour;
  • 250 g butter;
  • one chicken egg;
  • a tablespoon of vodka;
  • 3 teaspoons vinegar (9%);
  • salt;
  • 200 ml water.

The cooking technique is simple:

  1. Beat the egg in a glass. Add salt, vinegar, vodka to it. Stir until completely dissolved. Pour in water. The total volume should be 250 ml.
  2. Pour the liquid into 3 cups of flour. Can be on the table or in a bowl. Knead the dough. Beat it on the table, transfer it to a bowl and leave to rest at room temperature for an hour.
  3. Using a food processor, beat the butter and 50g flour mixture. Roll it out onto parchment paper into a square. Place in the refrigerator along with the dough for 15 minutes.

Yeast buns

The easiest way to make beautiful buns is to keep it simple. Take the dough, the recipe for which we gave first. Divide the resulting semi-finished product into many small parts. They need to be rolled out, and then rolled into rolls (like croissants), and then put into the oven. After the workpieces have swollen, they must be greased with beaten egg. That's all. The buns should be baked at 180 degrees for half an hour. The finished product can be consumed with condensed milk or jam. If desired, sprinkle the dough with raisins or berries when rolling the rolls.

Buns made from yeast-free dough

In fact, there is no particular difference which dough is better to cook with - with or without yeast. Unleavened pies should turn out thick. Otherwise, the dough may dry out and turn into a dry crust with filling. Therefore, after rolling it out, all that remains is to choose the desired shape of buns without yeast. For example, you can divide the dough into small squares, place berries on them and mold the corners together. This way you will get delicious and aromatic baskets. Such preparations are also baked at 180 degrees for half an hour.

Puff pastries with yeast

  1. In a separate bowl, mix the zest of one fresh lemon, 100 grams of fresh cream, a teaspoon of sugar and 1 egg. Place in the refrigerator to settle.
  2. Roll out the puff pastry, sprinkle cinnamon on both sides and roll into a tight tube. Cut it into cylinders, place it on the edge and crush it with your hand. The resulting “pancakes” should have a cinnamon spiral/circle pattern.
  3. Place the blanks into a metal muffin or pudding pan and press them against the sides using a teaspoon. After this, place in the oven for 10 minutes at 180 degrees.
  4. When the buns have puffed up and set a little, remove them from the oven and flatten them with a spoon to create “wells”. Pour the previously prepared filling into them and continue baking until done.

With sour cream

Sour cream dough is a type of yeast dough. You will need:

  • flour - 200 g;
  • butter - 100 g;
  • sour cream - 100 g;
  • sugar - 100 g;
  • eggs - 2 pcs.;
  • 1 yolk for greasing;
  • water - 1/2 cup;
  • dry yeast - 1 tbsp.

Pour dry yeast into a deep bowl with warm water, add 1 tsp. sugar and leave on the table. After 20 minutes, a thick foam cap will appear on the dough. Mix eggs, sugar, sour cream and butter. Then pour out the dough and mix. Gradually add sifted flour. Knead the dough and leave in a warm place for 2 hours. Then we form buns, grease with yolk and sprinkle with sugar. Let's distance ourselves. Bake for 20-30 minutes at 190 degrees.

Decoration

In addition to the basic filling that is used in the bun recipe during cooking, there are many ways to add attractiveness and flavor to the dish:

  1. The simplest of them is grated chocolate. Just sprinkle it over the hot cross buns and let them melt.
  2. Homemade caramel is a little more complicated. Pour sugar into a saucepan and moisten it with a little water. Place on high heat. When the sugar has melted, you can pour it over the finished buns. Just remember to wash the pan right away, otherwise it will be impossible to clean it later.
  3. Ground poppy seeds and cinnamon can also be used not in the main recipe, but as an additive on top.
  4. Any nuts. It is advisable to crush them into small pieces to make chewing easier.

To make your baking successful, you need to make the most delicious bun dough. There are several cooking options.

The simplest option. The resulting dough is considered universal.

Required Products:

  • Half a kilogram of premium flour;
  • A little ghee;
  • A quarter of a small spoon of salt;
  • Five grams of dry yeast;
  • About 100 grams of sugar;
  • A glass of milk.

Cooking process:

  1. Take a medium sized bowl and mix all the dry ingredients in it.

Required ingredients:

  • Two glasses of not too fatty milk;
  • Three eggs;
  • About 200 grams of sugar;
  • A small package of butter or margarine;

  • Fresh yeast - about 20 grams.

Cooking process:

  1. First, warm up the milk; cold will not work. It should be slightly warmer than the room temperature. Sugar is added to it, then yeast and about five large spoons of flour. The resulting mixture should be allowed to stand for about 20 minutes.
  2. After the time is up, the risen yeast needs to be poured into a large bowl, break the egg into it and mix everything.
  3. Pour the remaining flour into a container with yeast and egg. Season this entire mixture with salt.
  4. Bring the oil to room temperature, so that it is not completely liquid, but quite soft. It needs to be mixed in parts with the rest of the products.
  5. All that remains is to knead well, so that the resulting lump is smooth and not sticky.
  6. Cover the bowl with something and leave for 60 minutes. Over time, the mass should double in size.
  7. Lightly remember the lump and remove it again for an hour. After this, you can prepare pies and other baked goods.

Tender kefir dough

An excellent pastry for pies for those who do not have special cooking skills.

Products for cooking:

  • A glass of low-fat kefir;
  • 3-4 cups flour;
  • 100 grams of softened butter;
  • Two large spoons of sugar;
  • A little salt;
  • One and a half teaspoons of dry yeast;
  • Two eggs;
  • Half a glass of hot water.

Cooking process:

  1. Mix the butter brought to a liquid state with kefir and hot water. Add eggs and sugar here. Add a little salt and stir well.
  2. In a separate container, mix three glasses of flour with yeast and add the resulting mixture in small portions to the rest of the ingredients so that the lump turns out to be plastic.

On margarine

    3. A hearty option for breakfast or snack - with bacon and cheese. The products can be either put inside or mixed with the dough.

To make these buns, all you need to prepare is a dough bowl, rolling pin, sieve, measuring cup and baking tray. You can bake buns in a slow cooker or bread maker (if available).

Before you start preparing the buns, you need to prepare the dough: to do this, stir yeast, flour and a little sugar in warm milk. The main flour must be sifted and the butter must be melted.

  • 500 ml milk;
  • 135-150 g sugar;
  • 55-60 g yeast;
  • 3 eggs;

  • Additionally - 150 g butter;
  • Powdered sugar;
  • Nuts.

Cooking method:

Heat the milk (half) and dilute the yeast with sugar and half the flour in it. Mix everything well and leave in a warm place. When the dough begins to settle, pour in the remaining warm milk, salt mixed in a small amount of water, the remaining flour and eggs. Knead into a smooth, non-sticky dough and place in a warm place to rise. After the first rise, knead and leave to rise a second time. Cool the dough to 20 degrees and roll out into a layer. Coat the layer with soft butter, leaving one third untouched.

Now fold the dough into thirds so that the uncoated part is in the middle. That is, first you need to fold the coated one third to the middle, the uncoated third onto it, and the newly coated third on top. Pinch the edges of the dough. Cut the dough in half and stack on top of each other. Roll out into a layer of one cm. Then fold the layer 4 times (with an envelope) and put it in the cold for 15 minutes. Repeat the procedure 2-3 times, then roll out the layer one cm thick. Cut the resulting layer into pieces and make buns. Grease a baking tray and place the buns at a sufficient distance from each other (about 5 cm).

Cover the buns with a napkin and leave for 15-20 minutes to rise. Brush the buns with eggs and sprinkle with chopped nuts. Bake for about 15 minutes. Grease the finished buns with butter and cover with a napkin. Once cooled, sprinkle with powdered sugar.

Recipe 2: Butter buns for cabbage soup

Butter buns don't have to be sweet. You can prepare delicious fragrant buns for first courses. The cabbage soup will become even tastier with garlic butter buns made from yeast dough.

Required ingredients:

  • Half a kilo of flour;
  • 1.25 cups warm water;
  • Fresh yeast - 20 g (or 7 g dry);
  • Vegetable oil - 45 ml;
  • 10 ml honey (you can also take sugar);
  • Salt;
  • Chopped dill;
  • Garlic;
  • Additionally, vegetable oil - for sauce;
  • Black pepper.

Cooking method:

Knead the dough from flour, water, yeast, vegetable oil, salt and honey (or sugar). Grease a bowl with sunflower oil and place the dough. Cover the bowl with the dough and leave in a warm place for half an hour. Stir chopped dill, crushed garlic and black pepper into 100 ml of oil. Cut the dough into 16 portions. Roll each into a sausage and roll into a bun. Place the buns on parchment paper and leave to rise until they have doubled in volume. Bake for about 15 minutes at 210 degrees. Grease hot golden buns with garlic sauce. Serve with first courses.

Recipe 3: Butter buns “Rye”

Butter buns can also be baked from rye flour, which makes them no less tasty. Wheat flour is used in the recipe along with rye flour. In addition, you will need milk, eggs, butter and yeast.

Required ingredients:

  • 1/5 kg rye flour;
  • 400 g wheat flour;
  • One and a half glasses of milk;
  • 2 eggs;
  • 2 tsp. salt;
  • 6 tablespoons butter;
  • Dry yeast - 10 g.

Cooking method:

Dissolve dry yeast in warm milk and add rye flour. Stir everything and place in a warm place. As soon as the dough rises, break the eggs and add wheat flour. Also add softened butter and salt. Knead the dough and put it in a warm place to rise. Divide the finished dough into pieces and make buns. Grease a baking tray with oil and line with a baking sheet. Bake in the oven until browned.
