You probably know how many delicious things you can make from zucchini. Are you familiar with such a dish as zucchini roll with cheese and garlic, which is prepared in the oven according to a fairly simple recipe? If not, we will be happy to tell you about it. If you have ever cooked small ones, then you will immediately understand that our recipe will turn out very tasty and beautiful.
Ingredients for 2-3 servings:
- 250 g zucchini;
- 1 chicken egg;
- 35 g hard cheese;
- 5-8 sprigs of dill;
- 1 processed cheese;
- 70 g flour;
- 0.5 teaspoon baking powder;
1 tablespoon mayonnaise;
- 1-2 cloves of garlic;
- salt, ground black pepper to taste.

Recipe with photos step by step:

For this dish we use young zucchini, with underdeveloped seeds. If the zucchini is large, be sure to cut out the inside with the seeds. We wash the zucchini, peel it and grate it on a coarse grater. Add grated cheese.

We act quickly so that the zucchini does not have time to release juice. Add an egg to the zucchini and cheese, add salt and ground black pepper, and mix.

Add baking powder and a tablespoon of sifted flour. Mix.

It turns out a viscous thick mass.

Grease a sheet of parchment and place it on a baking sheet or baking dish. Place the zucchini mixture on parchment, spreading it into a rectangle approximately 0.8 cm thick, measuring 20x30 cm.

Place the baking sheet (or pan) in the oven and bake for about 20 minutes. Then place the parchment with the zucchini mass on a cooling rack for 7-10 minutes.

Prepare the filling: grate the processed cheese on a medium grater, add the garlic and mayonnaise passed through a press. Mix. You should get a soft mass that can be easily spread. You can add more or less garlic, depending on your taste, but you shouldn’t give it up completely, otherwise the dish will turn out bland. Depending on the hardness of the processed cheese, you may need a little more or less mayonnaise.

Using your fingers, carefully separate the layer of zucchini from the parchment. We act carefully so as not to tear the bottom part - it will be the top of the roll. Spread the filling onto the layer of zucchini, not reaching a couple of centimeters to one of the long edges: we will roll the roll in that direction.

Sprinkle the cheese layer with finely chopped dill.

Carefully roll up a tight roll. Wrap the roll in cling film and place it in the refrigerator for about 1 hour to soak.

Then cut the roll into pieces 1-2 cm thick, to taste, and serve.
See also our special selection.

To cut the zucchini, we will use a special grater for shredding cabbage. With such a grater, the zucchini tongues turn out thin and even. If you don’t have such a grater, then the zucchini can be carefully cut with an ordinary knife.

To prepare the batter, beat a couple of eggs into a fluffy foam.

Sift flour along with salt onto a flat plate. First roll the zucchini in flour, then dip in the egg batter.

Fry the zucchini in a well-heated frying pan with vegetable oil. If the zucchini is thinly sliced, then 1-2 minutes on each side will be enough.

If the fried zucchini turns out to be too greasy, then before wrapping the filling in them, dip each zucchini with a paper towel. We do this quickly so that the zucchini does not cool down.

The garlic sauce can be made ahead of time or while roasting. Add chopped garlic and finely chopped herbs to mayonnaise. If desired, you can add a little ground pepper or other spices.

Cut the tomatoes into slices and hard cheese into small pieces.

Lubricate the zucchini tongue with garlic sauce.

Place a piece of tomato and cheese on the top edge of the zucchini. If the zucchini is hot, the cheese will melt a little and taste better.

Roll the zucchini with the filling into a tight roll.

If the snack opens, it can be secured with a toothpick or skewer. Before serving, cool the appetizer in the refrigerator. Bon appetit!

Good afternoon.

I spent most of last summer collecting recipes for the most delicious dishes you can make with zucchini. We them and and and. But no matter how many recipes I collect, there will always be a topic that has not yet been touched upon.

This is because zucchini is a very versatile vegetable. It's tasty, cheap and healthy. At the same time, dishes from it turn out beautiful and aromatic. And they look great both on a modest student table and at an elegant holiday feast.

Today I want to talk about sophistication and offer you ten of the coolest zucchini snacks in the form of rolls.

These rolls are very easy to prepare and at the same time meet any needs. They can be fried with a crispy crust, can be dietary, baked in the oven with chicken, or can be quickly marinated in a special sauce.

Whatever recipe you choose, you will be satisfied with the result. I guarantee it.

Zucchini rolls with different fillings in a frying pan

The aroma of zucchini fried in a frying pan easily overcomes any other smells, so it is better to serve such a hot appetizer at the very beginning, even before the main courses.

The most crucial moment is to properly prepare the zucchini “petal” in which the filling will be wrapped. There are several rules here.

  • The squash or zucchini should be young so that its core is soft, but not yet loose and without large seeds
  • The ideal size of zucchini for a roll: length 15-20 cm, diameter 3-4 cm
  • You need to cut the vegetable lengthwise into slices 2-3 mm wide.
  • Before frying, the plates should be placed in a bowl, sprinkled with salt (a pinch for each plate), stirred and left for 20-30 minutes so that excess moisture is released from the vegetable. This will allow the rolls to roll up easily and not be watery.

Well, now let's move on to the recipes.

Recipe for rolls with cheese and garlic

Zucchini itself does not have a pronounced taste, so it goes well with strong seasonings, such as garlic, for example.

  • Greens, salt - to taste

Preparation:

1. Fry the zucchini slices prepared using the method described above over medium heat in a small amount of vegetable oil. Fry on both sides for a couple of minutes, achieving softness, but not trying to get a golden hue.

Place the fried slices on a paper towel to absorb excess fat.

2. Prepare the filling. Grate the cheese on a fine grater, add finely chopped garlic, chopped herbs and mayonnaise to it. Salt and mix well.

If you took the melted term, then for easier rubbing, keep it in the freezer for 15 minutes.

4. Place a slice of tomato on the edge and roll up a roll from the same edge.

Repeat for all records. It is advisable to serve this appetizer hot, so it is recommended to lightly fry the rolls prepared in advance before serving.

Recipes for zucchini rolls with different fillings, baked in the oven

Now let's see how to cook rolls in the oven.

I’ll say right away that when baked, the zucchini in which the filling is wrapped becomes very soft and tastes more like a boiled vegetable than a baked one. Personally, I resort to using the oven only when I prepare a snack with meat or minced meat, that is, when the food needs to be subjected to a sufficiently long heat treatment.

I still like fried better. But here, as they say, it comes down to taste and color...

Video on how to bake zucchini with chicken and vegetables

To understand the basic principles of baking zucchini, I suggest starting by watching this short but very informative video.

This recipe uses all possible ingredients, so the options discussed below will not cause any difficulties.

Zucchini rolls with chicken breast

Here's a great option for a snack table. Such skewers will not get lost among the tartlets and canapes on the buffet table.

//youtu.be/3HWGuEBC01Q

Ingredients:

  • 3 young zucchini
  • 300 g chicken fillet
  • 1 tbsp. mustard
  • Salt, pepper - to taste

Preparation:

1. Before baking the filled rolls, it is advisable to lightly fry the zucchini slices so that they soften and roll easily.

The procedure is the same as in previous recipes: cut the zucchini into strips 2-3 mm thick, sprinkle each strip with a pinch of salt and place in a bowl. We wait 1-20 minutes for the vegetables to release their juice, and then fry them over medium heat in a small amount of vegetable oil for a couple of minutes on each side.

2. Cut the chicken fillet into pieces 3-4 cm in size and mix with mustard, a pinch of ground pepper and a teaspoon of salt.

Leave the meat to marinate for 30 minutes.

Mustard is one of the best marinades for chicken, making white meat tender and juicy.

3. When all the ingredients are ready, assemble the rolls. Place a couple of pieces of meat on the edge of the plate, roll it up and prick it with a toothpick.

Place the rolls in a baking dish greased with vegetable oil and place in the oven preheated to 180 degrees for 30 minutes.

Bon appetit!

Zucchini skewers in the oven

An interesting way to serve the appetizer is to make it in the form of kebabs on a skewer. But since this is kebab, the meat needs to be marinated for real.

//youtu.be/iTRkSdeHWYs

Ingredients:

  • Zucchini - 3 pcs
  • Chicken fillet – 300 g
  • Ground coriander - 0.5 tsp.
  • Pepper mixture - 0.5 tsp.
  • Salt - 0.5 tsp.
  • Table mustard - 1 tbsp.
  • Sour cream - 1 tbsp.

Preparation:

1. Cut the zucchini into slices, sprinkle with salt and leave to release the juice for 15-20 minutes.

2. Cut the chicken into 3-4 cm pieces and mix with salt, spices, mustard and sour cream.

Let the chicken marinate for 2 hours.

3. Fry the zucchini, which has released its juice, over low heat for a couple of minutes on each side. We want the plates to become soft and easy to roll.

4. Now put a couple of pieces of marinated meat on the zucchini and roll it up.

5. We string 4-5 of these rolls onto one skewer and place them on a baking sheet greased with vegetable oil.

Since the meat has been marinated for quite a long time, 15 minutes at a temperature of 180 degrees is enough for the kebabs to bake and brown.

Bon appetit!

Zucchini appetizer with chicken and cheese

Well, I can’t help but mention another way to prepare chicken breast rolls. The method is very interesting; the meat does not need to be marinated, so this appetizer is prepared much faster than the previous ones.

//youtu.be/vkPc_Z-Q1xU

Ingredients:

  • Zucchini - 1 piece (600 g)
  • Chicken fillet – 300 g
  • Cheese - 50 g
  • Salt, pepper - to taste
  • Basil - a pinch

From the specified amount of products you will get 6 rolls.

Preparation:

1. Cut the zucchini into slices, place on a baking sheet covered with parchment paper, salt each slice with a pinch of salt, grease with vegetable oil and place in the oven for 7 minutes at 180 degrees.

2. Wash the chicken fillet, cut off the excess, and then cut it very lengthwise with a sharp knife into 6 pieces.

3. Beat each piece with a kitchen hammer.

4. Assemble the roll: place the fillet on the zucchini plate, salt and pepper, add a pinch of basil. Sprinkle with grated cheese and roll up.

5. Fix the rolls with skewers, place on a baking sheet, lightly grease with vegetable oil and place in the oven, preheated to 180 degrees for 25 minutes.

Bon appetit!

Large festive roll with minced meat

If you don’t want to limit yourself to just chicken, then you can use minced meat as a filling. But since it is quite loose and simply will not stay in the roll, it is much more convenient to prepare not individual snacks, but a whole roll at once, which is then cut into portions.

Pickled zucchini rolls with curd cheese

Well, in the end I want to offer a recipe that is not similar to any of those that were discussed earlier. Zucchini is not fried or baked here. They are marinated in balsamic vinegar. It turns out very tasty.

//youtu.be/xFXm7EJTXS8

Ingredients:

  • Olive oil - 2 tbsp.
  • Balsamic vinegar - 2 tbsp.
  • Zucchini - 2 pcs.
  • Walnut – 50 g
  • Curd cheese - 150 g

Preparation:

1. Cut the zucchini into thin strips, 2-3 mm thick, and soak in a mixture of olive oil and balsamic vinegar.

2. Grind the walnuts in a coffee grinder or mortar and mix with curd cheese.

3. Place a teaspoon of filling on the pickled zucchini and roll it up.

4. Repeat the previous step until the zucchini runs out.

Bon appetit!

Well, I think I covered the topic of zucchini rolls quite well and you can easily surprise your family or guests with an awesome summer snack.

And that’s all for me today, thank you for your attention.

Spicy zucchini is exactly what is missing from the dinner table during the season. They can be prepared ahead of time: after being in the refrigerator, they will only soak in better. The combination of fried zucchini, cheese and garlic is an appetizing and visually attractive dish: it’s good for the family and it’s good for guests. Three options for zucchini rolls with photos step by step - from our masters.

Zucchini rolls with cheese, garlic and tomatoes

Zucchini rolls with cheese and tomatoes are another option for a delicious zucchini snack. The cheese filling for rolls is prepared from processed cheese with sour cream. A little garlic is added to the cheese and the appetizer acquires a piquant taste. Adjust the amount of garlic according to your taste. There are different attitudes towards it, but with it the snack is brighter. You can take any greens. The appetizer is good with dill, parsley, basil and any other green herb.

What we need for the rolls:

  • zucchini - 2 pcs.;
  • processed cheese - 100 g;
  • garlic - 2 cloves;
  • tomatoes - 1 pc.;
  • salt - to taste;
  • greens - to taste;

  • vegetable oil for frying.

How to make zucchini rolls with cheese and garlic

Zucchini rolls with cream cheese

A delicious quick snack - zucchini rolls with curd cheese - will decorate any table. You can cook not only from zucchini, but also from zucchini. We used zucchini and creamy cottage cheese in this recipe. The cheese needs to be salted a little to add brightness to the taste. It is advisable to take young fruits, not very large. They are more tender than “adults”, without large seeds, with a thin skin.

Ingredients:

  • soft curd cheese - 100 g;
  • cherry tomatoes - 5 pcs.;
  • zucchini - 1 pc.;
  • basil - 2 sprigs;
  • nut kernels - 1 tbsp;
  • vegetable oil for frying;
  • salt, ground black pepper.

Cooking delicious zucchini rolls with curd cheese

Transfer the rolls to a plate and sprinkle dried nuts on top. Dinner is served!

Zucchini rolls with melted cheese

To prepare the snack, we will need processed cheese, but not in tubs, which we use as a spread on bread, but a traditional rectangle in foil, called “Druzhba cheese” in Soviet times. The spread cheese is too liquid for the rolls and will flow out of them slowly but surely. But processed cheese is what you need! It is important to buy a quality product.

Grocery list:

  • zucchini - 1 piece;
  • processed cheese - 1 piece;
  • egg - 1 piece;
  • mayonnaise - 1 tsp;
  • garlic - 1-2 cloves;
  • sunflower oil.

Cooking process

In addition to cheese, you can add finely grated carrots to the filling - it will add brightness and taste well with zucchini. You can also get creative with other fillings: Korean carrots, cottage cheese, fried mushrooms and onions.

There is no cheaper, easier and more soulful summer snack than zucchini in all its forms. Rolls are the simplest, easiest and most beautiful way to serve your favorite vegetables. Half an hour at the stove - very little time to prepare the filling and wrap - and here it is, a holiday.

“Rolls rule,” young people would say, but we will be academic in our statements and admit: garlic rolls with cheese are a great appetizer for summer feasts.
