Then we transfer the chicken into a deep saucepan, fill it with purified water so that it is 5-6 centimeters higher, add a little salt and put it on medium heat. When the liquid begins to bubble, a gray-white foam appears on its surface - coagulated protein, remove it with a slotted spoon.

Cook the fillet for 20–25 minutes until fully prepared. Then we move the meat into a deep plate and allow it to cool completely to room temperature. After that, using two table forks, we disassemble it into fibers or cut it into small cubes and place it in a clean bowl.

Step 2: prepare and cook chicken eggs.


While the chicken is cooking, use a soft sponge to rinse the raw chicken eggs. Why should this be done? To ensure that during heat treatment, microbes located on the surface of the shell do not penetrate the protein through the opening pores, they can lead to serious poisoning or viral disease. Next, put the eggs in a small saucepan, pour in water so that it completely covers them, and add a couple of tablespoons of salt, as well as 9% vinegar.

Place everything on medium heat and boil this ingredient hard 10–11 minutes. Then we transfer the eggs into a deep bowl with ice liquid, cool completely, rinse, dry and chop on a medium or coarse grater into a separate bowl.
