Recipe 4: Chocolate muffins with liquid filling

  • dark chocolate - 80 g
  • butter - 80 g
  • chicken eggs - 2 pcs.
  • sugar - 100 g
  • wheat flour - 2 tbsp. l.
  • cognac - 2 tbsp. l.

We will prepare all the necessary products for the muffins - classic dark chocolate (78%), butter (fat content 67.7%), sugar, homemade eggs, flour and cognac. Combine the pieces of chocolate and butter in a heatproof saucepan.

Using a microwave oven, melt the chocolate and butter, turning it on at maximum power three times for twenty seconds, without any special breaks. Stir the butter-chocolate mixture until smooth.

Break pre-washed and dried fresh chicken eggs into a container suitable for mixing muffin dough and add sugar.

Beat the sugar and eggs a little.

Add flour to sugar-egg mixture. The dough needs to be lightly beaten again.

Stir the butter-chocolate mixture into the dough.

Knead the dough thoroughly, beating it, and add the final touch of taste and aroma - good cognac, in a small amount.

Turn on the oven (“top – bottom”) at 200 degrees. It will have time to warm up while we work on baking molds for chocolate muffins with liquid filling. Grease each ceramic (silicone) fondant baking pan with butter. Sprinkle the molds with flour.

Divide the dough evenly into five pans and place them in the oven.

After raising the dough, keep the baked goods in the oven for another 3-5 minutes so that the dessert has time to bake, but the middle remains liquid. Remove from the oven and immediately serve the chocolate muffins with liquid filling to the table. Have a pleasant gastronomic experience!

Recipe 5, step by step: muffins with chocolate filling

Very tasty magical chocolate cupcakes with liquid filling, recommended to be eaten with ice cream.

  • dark chocolate 70-80% – 200 gr
  • butter - 100 g
  • sugar - 50 gr
  • eggs - 3 pcs
  • flour - 60 gr
  • salt - ¼ tsp.

Cut the butter into pieces, break the chocolate and place them in a bowl or shallow plate.

Melt the butter and chocolate in a water bath or in the microwave (do not overheat the mixture, otherwise the chocolate may curdle. If melting in the microwave, do not immediately place it for a long time, take out the bowl with butter and chocolate and stir every 10-20 seconds). Stir thoroughly until a homogeneous mass is obtained; if it turns out to be very hot, then cool it.

Beat eggs with sugar until thick foam is obtained.

Pour the cooled chocolate mixture into the egg foam and stir. Be sure to make sure that the chocolate-butter mixture is not very hot, otherwise the eggs may curdle.

Mix flour and salt and sift them into the chocolate-egg mixture. Stir until smooth, but do not stir for very long, because... Gluten may be released from the flour and the dough will be dense, the muffins will not rise well.

Grease the muffin tins with oil and pour the resulting dough into them, you get 9 pieces. Place in a preheated oven at 200 degrees. Leave for 7-10 minutes (remove when they rise and begin to crack on top).

Serve dessert hot. Bon appetit!

Recipe 6, classic: delicious chocolate muffins

  • Butter/margarine – 100 g
  • Granulated sugar - 80 gr
  • Chicken egg - 2 pcs
  • Wheat flour - 150 gr
  • Cocoa - 2 tbsp.
  • Milk – 50 ml
  • Vanilla sugar - 1 tsp. or vanilla essence - 2 drops
  • Baking powder - 1 tsp. or soda + vinegar - ½ tsp.

Pour milk into a saucepan, add granulated sugar, cocoa and 150 grams of chocolate and heat, stirring constantly, until the ingredients are completely dissolved.

Add butter, dissolve, mix. Cool the resulting mass slightly.

Add chicken eggs, mix quickly.

Add flour with baking powder, mix.

The dough should have the consistency of thick sour cream; it should slowly flow from the spoon, forming a slide.

Fill muffin cups halfway with batter.

You can bake muffins in silicone or paper molds.

You can use any molds: disposable paper molds, Teflon and silicone ones do not need to be lubricated, metal ones need to be lubricated with vegetable oil. Preheat the oven to 180 degrees and bake the muffins on medium level for 20 minutes.

Pour the remaining (50 g) melted chocolate over the finished muffins.

Recipe 7, simple: muffins - chocolate cupcakes

Use a very accessible recipe to bake chocolate muffins (step by step recipe with photos). For them, take good quality chocolate, black, with a high cocoa content (at least 60%). I advise chocoholics to add chocolate drops to the dough - it’s very chocolatey and delicious!

Remove the butter from the refrigerator in advance. If you didn’t do this for some reason, then simply cut the cold block into pieces, combining it with a broken chocolate bar.

Then take a larger bowl and pour hot water into it.

Place the bowl with chocolate and butter in the water, stirring the ingredients occasionally.

As a result, the hot water will melt the chocolate and butter.

Remove the bowl from the water, pour sugar into the resulting butter-chocolate mixture. Mix everything.

Add eggs to the mixture one at a time, stirring each time.

All that remains is to add the sifted flour and baking powder. Stir until smooth, but not for long. Add the chocolate chips at this point.

Take special molds. It is better if they are silicone, then there is no need to lubricate them. If you take others (metal, for example), then be sure to lubricate them with oil. Divide the dough into the pans, but remember that it will rise somewhat in height during baking, so do not fill the container to the brim.

Preheat the oven to 140 degrees and bake the muffins somewhere 40 Min. After the specified time they are completely ready. Of course, when serving these delicious muffins, don’t forget to brew some coffee or tea. Bon appetit!

Recipe 8: chocolate muffins with yogurt (with photo)

Those who love a crispy crust on their baked goods will definitely love this muffin recipe. Chocolate treats are prepared using wheat flour and any yogurt.

  • flour – 250 g;
  • egg – 2 pcs.;
  • salt – 0.5 tsp;
  • cocoa – 2 tbsp. l.;
  • sugar – 180 g;
  • soda – 0.5 tsp;
  • yogurt – 200 ml;
  • baking powder – 1 tsp;
  • butter – 100 g;
  • dark chocolate – bar weighing 200 g.

First, the chocolate bar is broken and heated together with chopped butter in a water bath. Add sugar to the mixture, mix and keep on the stove for another 3 minutes. Then pour the eggs into the mass and mix again, add yogurt and once again thoroughly knead the entire composition.

Combine flour with salt, baking powder, cocoa powder and soda. Stir the dry mass thoroughly.

The chocolate oily composition is poured into the flour and mixed from top to bottom. As soon as the flour turns into dough, the action is stopped.

Now they are working on the oven. The unit is heated to 200°C. Place paper utensils on a muffin tray. Spoon the mixture into them. To get a neat top, fill the molds a little more than halfway. To obtain lush products, the mixture is added in excess.

Place a baking sheet in a hot oven and bake for 20 minutes. The readiness of the baked goods is checked with a stick or match. Its dryness indicates that the muffins can be tasted.

It is better to eat the product the next day. After standing overnight, they will become more tender and soft from the inside. The recipe provided makes 12 servings. Try it yourself and treat your loved ones. Enjoy your tea!

Recipe 9: Simple Chocolate Chunk Muffins

  • Oil – 150 g
  • 1 and ½ tbsp. flour (about 200 g)
  • 75 g sugar
  • 2 chicken eggs
  • 2 tbsp. cocoa
  • Baking powder – 2 tsp.
  • Dark chocolate pieces

Chocolate muffins require the following ingredients: flour, butter, eggs, sugar, cocoa and chocolate.

Let's start preparing the dough. The full amount of butter must be melted to a liquid state in any convenient way (on the stove, in the microwave). Pour the melted butter into a bowl and add granulated sugar there. If desired, you can add a little vanilla sugar or vanillin.

Add two raw chicken eggs to the butter and sugar and beat everything a little using a whisk or mixer.

Before using to prepare the dough, flour must be mixed with baking powder and sifted all together (to saturate with air and avoid debris or lumps getting into the dessert). Gradually add flour to the remaining ingredients and begin to gently knead.

Pour cocoa powder into a bowl.

The last stage of dough preparation is the final mixing. Here you need to ensure the disappearance of any lumps and the formation of a homogeneous thick mass of a pleasant chocolate color. The finished mass should be spooned into molds (paper, silicone or metal) to fill approximately two-thirds of the volume and stick a small piece of chocolate on top. For baking, heat the oven to 180 degrees. Cooking time is about 25 minutes.

Dessert is ready! You can decorate them with a sprig of mint and sprinkle with powdered sugar.

Recipe 10: delicious chocolate muffins with banana

There is time to please your loved ones with delicious, homemade baked goods, then be sure to prepare banana chocolate muffins. Their unique taste, delicate banana dough combined with attractive chocolate, will be appreciated not only by those with a sweet tooth, but also by those who are indifferent to sweets. At the same time, any housewife can prepare them and it will take very little time.

  • Flour 225 grams
  • Cocoa 3 tablespoons
  • Bananas 3 pieces
  • Chicken eggs 2 pieces
  • Sugar 100 grams or to taste
  • Vegetable oil 125 milliliters
  • Soda 1 teaspoon

Peel the bananas and place them on a plate.

We arm ourselves with a fork or potato masher and mash the banana pulp into a puree.

Wash the eggs under hot running water and break them into a separate plate. Pour in sugar and vegetable oil and beat with a whisk until smooth. Then pour it into the banana puree and mix everything thoroughly with a tablespoon.

Next, pour the required amount of flour, cocoa and soda into a sieve. Sift into a wide, convenient bowl and mix. You need to sift in order to get rid of lumps, and also to enrich everything with oxygen, because this way the baked goods will turn out even more airy and tender.

So, pour the sweet banana mass into the flour and whisk everything thoroughly with a whisk or using a mixer. The batter should be uniform in color and without lumps.

Carefully coat the baking dish with butter or vegetable oil or, as in our case, lay out paper molds. Then spread the prepared dough with a tablespoon, filling the molds about 2/3, because our dough will rise a little. And you can move on to baking.

Preheat the oven to 220 degrees Celsius and only after that, place the mold in the oven. Bake the muffins until fully cooked for 15 - 20 minutes. During this time they should rise and become covered with a beautiful crust. And you can check readiness with a toothpick, skewer or fork. If, when sticking a skewer, there remains a trace of raw dough on it, then the baking is not ready yet, and if it is dry, then feel free to turn off the oven and take out the mold, helping yourself with oven mitts.

All recipes are carefully selected by the culinary club of the website website

Nowadays you can’t surprise anyone with muffins. Lately they have been at the peak of popularity among us. And I think that this does not happen by chance - they are prepared so easily and simply that even children cook them.

Moreover, this simple pastry always turns out very tasty. Which, by the way, encourages them to further culinary experiments. I have a guy I know who started his acquaintance with baking with these cupcakes, and now he bakes delicious complex cakes.

And indeed, if you have never baked before and want to start somewhere, then this delicious pastry is just what you need. By following just a few simple rules and having very little free time, you can have delicious homemade baked goods every day. Either sweet or not sweet!

Yes Yes! These delicious little products can be prepared simply for breakfast, serving them instead of bread, or you can bake them for tea! And what’s important is that you can cook them so often and not repeat them at all - after all, with whatever filling they are prepared. I won’t even list them, because it would probably be easier to name the fillings with which they are not prepared!

I will tell you about all the basic rules and various fillings when I share recipes with you. But what needs to be said at the beginning is that these small, cupcake-like confections come in English and American varieties.

And this is exactly what we are used to cooking under this name - these are American samples. And the difference from their English counterparts, which are baked from yeast dough, is that they are prepared from flour with the addition of baking powder or soda, or both.

But they should not be confused with cupcakes, which have a different shape of the finished product and a different cooking technology. In addition, muffins are richer, although more “light and airy”, and since they are fatty, they are also higher in calories, while their close American relatives have fewer calories.

And if you replace part of the butter in the recipe with low-fat kefir or yogurt, and part of the flour with oatmeal, it can be practically dietary. But, more on that a little later.

Now let's move on to the recipes. Today there are a lot of them, as they say, for every taste.

A classic American muffin can be prepared with bran, and usually without any filling at all, or with candied fruits, nuts, and dried fruits.

However, the recipe is basic. Knowing it, you can add various additional ingredients, change the taste and prepare many different options. It will no longer be called a classic, but its essence will not change.

We will need:

  • flour - 200 gr
  • sugar - 100 gr
  • butter - 100 g
  • milk - 100 ml
  • egg - 1 pc.
  • baking powder - 1 teaspoon
  • vanillin - a pinch
  • salt - a pinch

Preparation:

1. Remove the butter from the refrigerator and cut it into small pieces.

2. Using a whisk, beat the egg until foamy. Continuing to beat, add butter and vanilla.

3. Pour in slightly warm milk and mix everything thoroughly again until smooth.

4. Sift flour and baking powder into a separate bowl. It is best to use premium flour. As you know, such cupcakes go stale quite quickly. High-grade flour will slow down this process somewhat. Add sugar and a pinch of salt. Stir everything.

There is one simple rule: add a pinch of salt to sweet baked goods, and a pinch of sugar to non-sweet baked goods. This allows you to make baked goods even tastier.

5. Add the liquid component to the dry mixture and mix with a spoon. In this case, the mixer no longer mixes the dough.

It is believed that to prepare classic muffins, you need to mix the dry and liquid ingredients separately, and then pour the liquid component into the flour and mix thoroughly with a spoon.

However, this rule does not always apply. And there may be recipes where the sequence of ingredients may be slightly different! But not in the classic version, that’s what its name is for, to do everything strictly according to the rules!

6. Place the resulting mixture into silicone molds, filling them 2/3 full. They must first be lubricated with vegetable oil. Often, special paper inserts are also inserted into the molds, and the dough is laid out in them.

When serving baked goods in paper molds, it looks much more aesthetically pleasing, and besides, it is much easier to take them in a paper cup than just with your hands.

7. Preheat the oven to 180 degrees.

8. Bake for 25 minutes until done. Readiness is determined in a way known to everyone. If you pierce the baked goods with a toothpick and there is no batter left on it, then the baked goods are completely ready.

9. Let them cool slightly and place on a plate. You can decorate with icing, grated chocolate or simply sprinkle with powdered sugar.

To add a fresh taste, you can add the zest of half a lemon to the dough. Moreover, you should remember that you only need to grate the yellow part of the lemon, since the white part is bitter. It will give baked goods a bitter taste.

The following recipes for which muffins are most often prepared are recipes with chocolate. They are prepared either with pieces of chocolate or simply with the addition of cocoa. Let's look at both recipes.

Recipe with chocolate and cocoa

We will need:

  • flour - 250 gr
  • sugar - 150 gr
  • butter - 150 g
  • milk - 100 ml
  • egg - 2 pcs
  • cocoa powder - 5 tbsp. spoons
  • baking powder - 2 teaspoons
  • salt - a pinch

Preparation:

1. Melt the butter over very low heat. Add cocoa to it and mix. Then gradually pour in the milk, continuing to stir so that the mixture does not stick to the bottom.

2. Add sugar and stir until it is completely dissolved. Bring to a boil, then turn off the mixture and let stand until it cools completely.

3. Beat the eggs into the cooled mixture, one at a time, and mix until the mixture is soft, elastic and homogeneous.

4. Sift flour with baking powder, add salt and add everything to the resulting chocolate mixture. Mix with a spoon; using a mixer is not recommended. The dough should not be very thick.

5. Grease the molds and place the chocolate dough in them, filling the mold 2/3 full. The dough will rise well during the baking process and the baked goods will turn out beautiful and fluffy!

6. Preheat the oven to 180 degrees and bake for 25 minutes until fully cooked.

7. Remove the finished baked goods from the oven, let cool and place on a plate. You can eat it as is, or you can decorate it with icing, cream, or simply sprinkle it with powdered sugar.

If desired, you can add any nuts or raisins to the dough. Or both together. Chocolate products with such an additive will only benefit. Remember which chocolate tastes better, regular or with nuts and raisins? However, some people prefer regular chocolate without any additives. Therefore, it’s up to you to decide here!

And now for the next chocolate recipe.

With chocolate pieces

This is essentially the same recipe as the previous one, except that it is prepared not with cocoa powder, but with chocolate. I love making these baked goods with dark dark chocolate. In this case, sweetish products are obtained with a slight bitterness. But this recipe will most likely appeal to dark chocolate lovers. And those with a sweet tooth will love these baked goods with milk chocolate.

We will need:

  • flour - 250 gr
  • sugar - 150 gr
  • butter - 125 g
  • chocolate - 100 gr
  • milk - 150 ml
  • egg - 2 pcs
  • baking powder - 2 teaspoons
  • salt - a pinch

Preparation:

1. Melt the butter over low heat. Add about 1/3 of the chocolate to it. Break the remaining chocolate or cut it into small pieces with a knife.

2. Stirring constantly. pour in milk and add sugar. Bring to a boil and turn off the heat. Allow to cool.

3. Stir eggs into the cooled mixture, one at a time.

4. Sift flour with baking powder, add salt. Combine both mixtures and stir until smooth. The dough should have such a consistency that you can place the prepared pieces of chocolate into it.

5. Grease the molds with oil. If there are special paper inserts, place them in the molds. Fill them 2/3 full with dough and insert chocolate pieces.

6. Preheat the oven to 200 degrees in advance. Bake for 20-25 minutes until fully cooked.

7. Remove from the oven, let cool, then remove from the molds.

In this recipe, you can also add any nuts and raisins as additional ingredients. If you add nuts, carefully sort them and peel them, otherwise you may get into trouble in the form of a broken tooth!

With chocolate pieces according to the classic recipe

Using this recipe, we also prepare baked goods with chocolate pieces, but we do it according to the classic version. And it is fundamentally different from the two chocolate recipes already proposed. Let's take note of that too.

We will need:

  • flour - 200 gr
  • sugar - 100 gr
  • vanilla sugar - 10 g (sachet)
  • butter - 100 g
  • milk - 150 ml
  • dark chocolate – 80 g
  • eggs - 2 pcs (large)
  • cocoa powder – 3 teaspoons
  • baking powder - 2 teaspoons
  • salt - a pinch

Preparation:

Since our recipe is classic, we remember that all dry and all liquid components are mixed separately. And only then do they connect.

1. Sift flour and baking powder into a bowl, add sugar, vanilla sugar, salt and cocoa.

2. In a separate bowl, beat the eggs with a whisk. Continuing to beat, gradually add milk and melted butter. Beat everything well until smooth.

3. Pour the liquid mixture into the dry mixture and mix with a spoon. We do not use a mixer so that the dough does not fall off during baking. Mix quickly but thoroughly. The dough should not be very thick and may even be slightly lumpy.

4. Using a knife, cut the chocolate into small pieces and add to the dough. You can save some of the chocolate so you can stick it into the dough later.

5. Grease the baking pans with oil; if you have paper liners, use them.

6. Spread the dough, filling the form 2/3 of the way. If you left the chocolate, press it on top of the dough.

7. Preheat the oven to 175 degrees and place a baking tray with baked goods in it.

8. After 20-25 minutes, check the baked goods with a toothpick. If they are ready, then turn off the oven and leave the baked goods in it for another 5 minutes. Then remove, cool slightly and remove from the molds.

9. Pour tea into everyone’s cups and enjoy eating your favorite pastries!

But this is the recipe that Yulia Vysotskaya offers us.

This recipe calls for adding white and dark chocolate to the dough.

With cottage cheese according to the classic recipe

We will need:

  • flour - 160 g (1 cup)
  • cottage cheese - 200 gr
  • sour cream - 50 gr
  • eggs - 2 pcs (large)
  • sugar - 200 gr
  • butter - 70 g
  • baking powder - 1 teaspoon
  • soda - 0.5 teaspoon
  • salt - a pinch

Preparation:

1. Beat the eggs until foamy with a whisk, add sugar and beat the mixture until the sugar is completely dissolved.

2. Not very fatty cottage cheese, you can take 9%, grind through a sieve and add to the resulting mixture along with vanilla sugar. Mix.

3. Add sour cream and melted butter, mix everything.

4. Sift flour and baking powder through a sieve, add a pinch of salt and soda to the mixture.

5. Pour the liquid component into the flour mixture and knead the dough without lumps of a homogeneous consistency.

6. Grease the molds with oil and place the dough in them, filling them into 2-3 parts.

7. Bake at 180 degrees a little longer than usual for 30-35 minutes. The dough with cottage cheese is denser and therefore requires more time for baking.

8. Remove the finished baked goods from the oven and let cool slightly. Sprinkle with powdered sugar and serve with hot tea or coffee.

As you know, raisins go very well with cottage cheese. Therefore, if you wish, you can add it to the dough and bake baked goods with an even more enriched taste!

If you add raisins, they must be thoroughly washed and then dried. And only after that add it to the dough, otherwise the water will not allow the dough to rise well in the molds.

Orange muffins

I make this recipe with oranges, but you can cook it by adding any fruit or berries. You can prepare the same recipe by adding lemons, tangerines, kiwis, apples, pears or whatever you want. The recipe is just as simple. like everyone else, but the baked goods themselves are simply delicious.

We will need (for 12 pieces):

  • flour - 200-250 gr
  • sugar - 120 gr
  • vanilla sugar - 10 g (sachet)
  • butter - 100 g
  • egg - 3 pcs
  • baking powder - 1 tsp. heaped spoon
  • orange - 1 pc.
  • walnuts - 12 halves
  • salt - a pinch

Preparation:

1. Remove the butter from the refrigerator in advance and let it stand for a while. Add sugar to it and beat with a whisk.

2. Add sugar and vanilla sugar, continue beating. Then add the eggs one at a time.

3. Wash the orange and dry with paper towels. Grate the zest using a fine grater, using only the orange part. Do not touch the white part, it is bitter and will give the baked goods a bitter taste.

4. When all the zest has been grated, squeeze the juice out of the orange. You can squeeze it directly with your hands, it’s not difficult at all. The juice will be approximately 100 ml, this will be quite enough.

5. Sift flour and baking powder through a sieve, stir in salt.

6. Add the liquid component along with the juice to the flour mixture and stir thoroughly with a spoon. The dough should not be very thick. The recipe says that we will need 200-250 grams of flour, it depends on how much orange juice you have.

7. Grease the molds with oil; if you have them, place paper forms in them as well. Then fill them 2/3 full with dough. Place half a nut on top. It will be both tasty and beautiful.

8. Preheat the oven to 180 degrees. Bake for 30-35 minutes until fully cooked.

9. Eat with pleasure!

This recipe is one of my favorites. The finished products turn out so delicate and exquisite that everyone is simply amazed. In addition, their taste goes well with the aroma of orange and gives an amazing note that evokes the most positive emotions!

Video on how to make orange muffins with carrots

Here is another recipe for orange muffins, but it also contains carrots as an additive. It makes the baked goods incredibly tender and airy.

Even those who have never cooked can cook them according to this recipe. The only difficulty is not to forget to put anything in the dough from the ingredients. And we don’t even need a mixer to knead it.

Look how handsome they are! Do you know how delicious they are! Freshly squeezed orange juice gives them freshness and an unforgettable taste. Plus easy fudge that can be made in 10 seconds.

Be sure to prepare this delicious dish. The recipe is just great!

Banana muffins

It is also the favorite type of baking for millions of people. And they are prepared both with bananas alone and with additional additives. Since the banana is practically not felt in the baked product, I like to add nuts and pieces of chocolate, or just one thing, to the dough.

Therefore, if you want to make baked goods with only bananas, then do not add any chocolate or nuts. All other ingredients are added in the same proportions as in the recipe. And I’ll probably cook them with additives.

We will need (for 20 pieces):

  • flour - 350 gr
  • milk - 300 ml
  • butter - 115 g
  • sugar - 100 - 150 gr
  • egg - 2 pcs
  • baking powder - 2.5 teaspoons
  • baking soda - a pinch
  • vanillin - 10 g (sachet)
  • salt - a pinch
  • banana - 2 pieces
  • dark chocolate – 80 g

Preparation:

1. Mix all the dry ingredients, namely sifted flour and baking powder, soda, sugar and salt. Add sugar to your taste, either 100 or 150 g, depending on your sweet tooth.

2. Now let's prepare the liquid component. To do this, beat the slightly melted butter together with the eggs to an even, homogeneous mass. We use a whisk for this.

3. Continuing to whisk, gradually pour in the milk.

4. Peel the bananas and mash them with a fork. It's okay if small pieces remain. It's always nice when you find tangible pieces of fruit in your baked goods. Although in this case the whole banana will completely dissolve in the dough.

5. Chop the nuts or roll them out with a rolling pin on a cutting board or towel. First sort out the nuts, remove the partitions and shells. There is no need to roll out the nuts too much; the pieces should remain quite tangible.

6. Chop the chocolate into pieces approximately 0.5 cm in size.

7. Combine the liquid component with the flour, add banana puree, nuts and chocolate. Leave some of the chocolate so that you can press it into the products directly in the mold. Mix the contents only with a spoon.

8. Grease the molds with oil, line them with paper blanks, if any, and fill 2/3 with the prepared dough.

9. Preheat the oven to 200 degrees and bake for 25 minutes until done. Determine readiness with a toothpick.

10. Take out the finished products and let them cool a little. Then remove from the molds and serve with hot tea or coffee. And some people like to taste such hot pastries with cold milk!

11. Eat with pleasure!

The products turned out not at all sweet, only slightly sweetened, which my family really liked. I really liked the pieces of dark bitter chocolate, since this is the kind of chocolate I love most.

And of course, the taste of the finished products was completely different than if we had prepared them with only bananas. It turned out richer and more intense.

Banana with carrots

If you do not use chocolate and nuts in the previous version, you can prepare baked goods with the addition of carrots. And believe me, they turn out no less tasty and are simply eaten in one go. Here is the prescription.

We will need:

  • flour - 2 cups
  • butter - 125 g
  • sugar - 100-150 g
  • egg - 2 pcs (large)
  • baking powder - 1 teaspoon
  • soda - 1/2 teaspoon
  • vanilla sugar - 10 g (sachet)
  • salt - a pinch
  • bananas - 2-3 pieces
  • grated carrots - 0.5 cups (1 piece)

Preparation:

1. Sift flour and baking powder, add sugar, vanilla sugar, soda and salt, mix.

2. Peel the bananas and mash them with a fork or chop them with a blender.

3. Grate the carrots on a fine grater.

4. Remove the butter from the refrigerator in advance and let it stand for a while until it becomes soft.

5. Beat the eggs until foamy with a whisk and then mix with the butter.

6. Combine the dry and liquid mixture, add banana puree and grated carrots. Using a spoon, knead the dough.

7. Grease the molds with oil and bake for 25-30 minutes at 180 degrees.

Here's another recipe with carrots.

Pumpkin with carrots

I started making this kind of baked goods quite recently, so they say chance helped! Not long ago I was cooking and I had pumpkin puree left over. It, of course, was very tasty in itself, and you could just enjoy it.

But I had an unclaimed recipe that I had been wanting to cook for a long time. So I put the puree in the refrigerator until the pie was eaten. And finally, after a couple of days, I started making muffins.

We will need (for 20 pieces):

  • flour - 2 cups
  • butter - 125 g
  • granulated sugar - 200 gr
  • eggs - 2 pcs (large)
  • sour cream - 3 tbsp. heaped spoons
  • pumpkin puree - 1 cup
  • grated carrots - 1 cup (about 2 carrots)
  • vanilla sugar - 10 g (sachet), or vanilla extract - 1 teaspoon
  • soda - 1 teaspoon
  • baking powder - 1 teaspoon
  • ground cinnamon - 1/2 teaspoon
  • salt - a pinch
  • nuts - optional (a handful)

Preparation:

1. Beat the butter, slightly melted at room temperature, with sugar using a whisk. Beat in the eggs one at a time and mix until smooth.

2. Add grated pumpkin puree. Mix with a spoon. To make the pie, I baked the pumpkin in the oven, then scooped out the pulp with a spoon and mashed it into a puree.

I think you can use fresh pumpkin by simply grating it on a fine grater. You can bake the pumpkin in the microwave or oven, and then make a puree, or you can simmer it in a small amount of water with honey and only then grind it into a puree.

In my opinion, all methods are good. Of course, this somewhat lengthens the quick method of preparing the muffins themselves, but you know, it’s worth it. Their taste is simply amazing and unlike anything else!

3. Sift flour and baking powder into a separate bowl, add salt, soda and cinnamon, mix.

4. Mix both masses with a spoon and add finely grated carrots. The dough turns out to be a pleasant orange color, not very thick, and not liquid, but has a medium consistency.

5. Grease the molds with oil and line them with paper liners, if you have them. If not, then only molds will be enough. Fill the molds 2/3 full with dough.

6. Preheat the oven to 180 degrees and place the baking sheet with the molds in the oven for 10 minutes. Then reduce the temperature to 170 degrees and bake for another 10-15 minutes until done.

7. Take out the finished baked goods, let them cool slightly and eat with pleasure.

I must tell you that the baked goods turn out very tasty, I would even say the most delicious. In addition, it turned out to be a beautiful sunny color, and it really lifts your spirits!

Now let's move on to another category of this pastry, which is baked with berries. For example, they are traditionally baked with blueberries in America in the state of Minnesota.

With blueberries, American style

Such pastries can be prepared with any berry, but I want to show them to you using the example of the most popular ones in America (Minnesota), that is, with blueberries, although they can be replaced with blueberries.

  • eggs - 2 pcs (large)

2. Sift flour and baking powder. Mix them with sugar and a pinch of salt.

Or you don’t have to mix the berries with the dough, but just put them in the middle, already in the mold itself.

4. Grease the molds with oil, insert paper liners, if any, and fill them 2/3 with dough. Try to evenly distribute the berries in them.

5. Heat the oven to 200 degrees and bake the products for 25 minutes, until fully cooked.

6. Take it out, let it cool a little and eat with pleasure!

Using exactly the same recipe, you can bake cakes with blueberries, or with blueberries and blackberries together. They turn out very tasty with strawberries, and in season, of course, it is better to cook with this tasty and aromatic berry. You can cook with raspberries and currants, both red and black. The principle is the same!

And you don’t have to stop at berries. Cook with any fruit, and every time your baked goods will be different and certainly delicious!

It turns out I have accumulated so many muffin recipes. To be honest, I didn’t even know that I had so many of them. But that's not all.

After all, there are also English recipes and they cannot be ignored. After all, it is believed that it was in England that they began to be prepared first. But I want to remind you that they are prepared from yeast dough, and when finished they look like small fluffy cakes, which are cut lengthwise into two halves and spread with some kind of jam or butter.

Classic English muffin recipe

We will need:

  • flour - 500 gr
  • butter - 200 gr
  • milk - 200 ml
  • sugar - 100 gr
  • egg - 4 pcs
  • dry yeast - 0.5 - 1 sachet
  • salt - a pinch

Preparation:

Read the instructions for dry yeast carefully. It should say how many grams are in the bag and how much flour it is designed for. Proceed according to the instructions.

1. Sift flour into a bowl, add yeast and mix. Then add sugar and salt.

2. Warm the milk slightly in a water bath, add butter, cut into pieces. This way it will disperse faster. Stir until the butter is completely melted, being careful not to let the milk get too hot. The optimal temperature for dissolving the oil is 30-35 degrees.

3. Remove and let the milk cool slightly.

4. Beat the eggs until foamy using a whisk. And carefully mix them into the milk and butter.

5. Mix the dry and liquid ingredients and place in a warm place for 10-15 minutes until the dough comes to life. It will begin to bubble slightly. The dough should be a little thicker than for pancakes.

6. Put the oven on preheat, we need a temperature of 180 degrees.

7. If you use molds, then place the dough in them. Or you can place the dough by the tablespoon on a baking sheet greased with vegetable oil and bake them in this form. In this case, they will turn out in the form of small flat cakes, which will be convenient to cut and spread with jam.

8. Bake for 15 minutes, plus or minus a little, it depends on the features of the oven.

Sometimes they are fried in a frying pan using oil.

9. Take it out and let it cool a little. You can lightly sprinkle with powdered sugar.

Serve for breakfast with jam and butter. Agree that few would refuse such a breakfast!

Well, these are all recipes for sweet pastries. But at the beginning of the article I said that you can cook them not sweet. And it’s worth doing this, since there is nothing better for breakfast than unsweetened muffins. And you can also cook them with anything. The dough recipe allows you to do this with a clear conscience.

I will now offer you a couple of recipes for such baked goods, and then, in order not to repeat myself, I will simply give you ideas on how you can prepare them again. After all, a lot of recipes have already been given, and according to any of them you can prepare savory baked goods with absolutely any fillings.

And you can use any cheese, including Adyghe cheese, feta cheese or mozzarella. In all cases, a new taste will be obtained.

Recipe with cheese and bacon

I specially selected a video that shows very clearly how appetizing and tasty unsweetened cupcakes turn out. And by preparing these for breakfast, you will surely make your whole family happy on Saturday or Sunday.

As you can see, the recipe is very simple and bakes very quickly. Bacon can be easily replaced with any other type of meat or chicken, or you can use sausages, sausages, or regular sausage.

Recipe with cottage cheese and zucchini

Another non-traditional savory recipe that you can use to prepare baked goods for breakfast.

We will need:

  • flour - 200 gr
  • cottage cheese - 200 gr
  • butter - 100 g
  • egg - 3 pcs (large)
  • zucchini - 1 small
  • dill - 5-6 sprigs
  • baking powder - 1 heaped teaspoon
  • salt - 1/4 teaspoon
  • sugar - a pinch

Preparation:

The dough for such baking must be prepared without delay. The zucchini will produce juice, but we don’t need that. Therefore, we do everything quickly, and for this everything should be at hand.

1. Prepare the baking pans immediately. Lubricate them with oil, or put special paper inserts in them.

2. Take the butter out in advance so that it melts slightly.

3. Beat the eggs with a whisk and mix with the cottage cheese. Cottage cheese can be used with medium fat content and any consistency, be it coarse-grained or fine-grained.

4. Use small zucchini so that it contains practically no seeds. Such a zucchini will not produce a lot of juice and the baked goods will rise better.

Grate the zucchini on a medium grater, squeeze out the juice if necessary and add to the egg-curd mass.

5. Add soft butter, chopped dill, sugar and salt to the resulting mixture, mix with a spoon.

6. Sift flour and baking powder there and mix.

7. Fill the molds to 2/3 of the volume.

8. Place in an oven preheated to 180 degrees and bake for 25-30 minutes until fully cooked.

9. Let it cool a little and eat with pleasure.

What can you use to make unsweetened muffins?

  • with any cheese (hard, processed, Adyghe, feta cheese, mozzarella...)
  • with any smoked-boiled meat (ham, loin, brisket, sausage...)
  • with chicken (boiled and smoked), with chicken and mushrooms
  • with zucchini, zucchini, pumpkin, cucumber, sun-dried tomatoes
  • with any mushrooms
  • with spinach, with spinach and feta cheese
  • with avocado
  • with herbs, garlic
  • with canned corn or green peas
  • with olives or black olives

And all these ingredients can also be combined with each other.

As you already understand, there are simply a huge number of recipes for preparing this simple and unpretentious pastry. Precisely because the dough for them is prepared in the simplest way, you can add a wide variety of fillings to it.

In order for your cupcakes to always turn out risen and tasty, let’s take a closer look at the basic rules for preparing them. In this case, you will not be tied to any of the recipes, but will always be able to prepare baked goods to your liking.

1. It is believed that the correct proportions for baking should be 2 parts flour, 2 parts liquid, 1 part butter and 1 part eggs. That is, if you use 200 grams of flour, then you will need 200 grams of milk, 100 grams of butter and 1 egg. Sugar can be added to your taste; some people like sweet baked goods more, others less sweet. Usually 100 grams of sugar is added to this amount of flour.

2. A pinch of salt is always added to sweet baked goods, and a pinch of sugar to savory baked goods.

3. If fermented milk products are used, then along with baking powder you should also add a little soda.

4. A special feature of the preparation is that all dry ingredients are mixed separately, and liquid components separately. After which, the liquid components are poured into the dry ones.

5. When mixing the liquid and dry parts, use only a spoon. The dough should not be kneaded for long, just mix and that’s it. It is acceptable that the dough may remain slightly lumpy.

When kneading with a spoon, the dough becomes less porous. And when kneading with a mixer, on the contrary, it becomes too airy.

6. Simple dough can cause baked goods to go stale quickly. To prevent this from happening, the molds must be lubricated with either butter or sunflower oil.

If we also use special paper liners, then it is not necessary to lubricate the mold,

7. Silicone or any other molds can be used. There are special ribbed paper inserts. You can mix them into basic shapes. They also keep baked goods from drying out quickly. In addition, such baked goods are more convenient to eat and store.

8. If you don’t have any molds, you can make homemade ones from baking paper, tie them with twine and bake them that way. It will not only be tasty, but also beautiful. The method of presentation will surprise and delight everyone present.

9. When the baked goods are ready, let them cool slightly. Then place on a plate and cover with a towel. This way it will retain its softness longer.

10. Cupcakes are baked at a temperature of 180 to 200 degrees. Depending on the recipe, sometimes the temperature is initially set to the same temperature, and after a short amount of time it is lowered.

11. The readiness of the baked goods is determined using a toothpick; when pierced, there should be no batter left on it. And when pressed, the baked goods should be elastic.

12. Readiness can also be determined visually. The finished baked goods should rise well, brown and easily move away from the walls of the pan.

13. If for some reason you couldn’t eat everything at once, then the baked goods can be frozen. To do this, wrap it in cling film, release all the air and place it in the freezer. You can take it out and heat it in the microwave at any time.

These are the basic rules for preparation and storage.

You can also focus on how to prepare your favorite baked goods with fewer calories. To do this you can:

  • reduce the amount of butter. Add more kefir, yogurt or milk with a small percentage of fat.
  • sugar can be replaced with honey or fruit and berry purees
  • dairy products can also be replaced with fruit juices or fruit and berry purees.
  • Flour can be partially replaced with oatmeal, or you can use flour with bran, or even fiber, which can be purchased at any pharmacy.
  • By the way, you can also make baked goods from corn flour, which is how they make these baked goods in America.

What is the difference between muffins and cupcakes?

The closest relative of our today's hero is a cupcake. Sometimes these two concepts are confused and do not see much difference in them. Now I’ll tell you how they differ.

Well, first of all, they have different shapes. Cupcakes are usually baked large, round or rectangular. And our products are baked in small molds.

You will say that there are also small cupcakes baked in small molds. I agree with you. To differentiate them, there are also other differences.

Secondly, muffins use butter dough, they are fattier and therefore higher in calories. In muffins, the oil may be partly vegetable, and when eaten, it is more noticeable. In muffins in which good 82.5% butter was used, it is not felt at all.

Thirdly, there is a significant difference in the method of kneading the dough. When preparing dough for muffins, all components are thoroughly mixed with a mixer, and this makes the dough more airy. But for their counterparts, the dough is kneaded with a spoon, and even then quite quickly. Therefore, it may turn out somewhat lumpy and uneven.

Fourthly, when preparing our baked goods, dry and liquid ingredients are first mixed separately, and only then combined. For muffins, sugar is mixed with butter, and then other ingredients are added.

Once I came across an interesting comparison, and it stuck with me, and the meaning is that muffins are a cross between a cupcake and a mini cake or cupcake. If you add more sugar to the dough and decorate the finished baked goods with cream, you will get a mini-cake. But if, on the contrary, you reduce the amount of sugar and add milk and eggs, you will get a cake.

And so another relative appeared - the cupcake. What is it and how is it different from its counterparts.

Cupcake, as you probably already understood, is a mini-cake. In past centuries it was baked in small ceramic cups, hence the name.

It is very easy to distinguish them from their relatives - they are decorated with cream, icing, whipped cream and other decorations that are used to decorate all large cakes.

Well, now that we have figured out all the nuances and secrets of cooking, found out how they differ from their closest relatives, and also familiarized ourselves with many recipes - we can safely start baking.

Knowing all this, you will always get tasty and aromatic baked goods, and the kind that you want to bake, using the products that are on hand!

And I really hope that today’s great article will help you with this! Therefore, prepare muffins and delight yourself and your loved ones with delicious homemade baked goods. After all, what could be better in the house than the aroma of fresh bread or the smell of fresh pastries!

Amazing aroma, delicate chocolate taste, soft tender pulp that melts in your mouth... Muffins, how wonderful they are! Let's learn how to cook them correctly.
Recipe contents:

A muffin is a small round (sometimes oval) baked product, mostly sweet, similar to cupcakes. The muffin size usually fits in the palm of an adult. Muffins made from corn flour stand out separately. The dessert can include all kinds of fillings, incl. blueberries, cinnamon, pumpkin, banana, nuts, chocolate chips, raspberries, peach, orange, carrots, strawberries, lemon, etc.

To obtain a muffin of chocolate color, and not the color of coffee with milk, a bar of dark bitter chocolate of at least 60% is added to the dough, which is heated in a water bath, and not cocoa powder. You can also break the chocolate into small pieces and throw it into the dough without additives - it will melt beautifully during baking. Cherries, especially those soaked in alcohol, and nuts - walnuts and pecans - go well with chocolate dough.

Varieties of muffins

There are 2 types of muffins: American and English. To make American muffins, baking powder or soda is added to the dough, while for English muffins, yeast dough is used. The most popular are the first ones. Also today, special mixtures have been developed for baking muffins, which improve the structure of the finished dessert, impart a certain taste and saturate it with aroma. And when adding additional components, such as candied fruits or nuts, the mixture helps maintain the desired shape of the delicacy without the additional products settling to the bottom of the product.

Many people mistakenly confuse muffins with cupcakes, believing that they are the same baked goods. However, cupcakes were baked back in Ancient Rome, and muffins are a much later culinary invention. These are completely different desserts, despite the similarity in appearance. Muffins are always small, but cupcakes can be large, can have a through hole resembling a ring, and are baked in rectangular or round shapes. If you compare the recipe for kneading the dough, you will immediately notice the difference. Cupcakes are a sweet sponge cake, while muffins are similar to sponge or yeast donuts with filling. The technology for kneading the dough also differs - muffins are low-calorie and lighter, although they are heavier, and muffins are baked with a large amount of eggs, flour and sugar. And the main difference between muffins is that dry and liquid products are mixed separately, while the liquid is poured into the dry mass, and not vice versa.

While many people are familiar with baking cupcakes, muffins seem unusual to many housewives and not everyone knows how to cook them. Although everything is not so complicated.

  • The dough is kneaded by hand or with a mixer.
  • All ingredients are kneaded, not whipped. Lumps are acceptable for piquancy, and even needed in the dough.
  • The dough is kneaded for several minutes.
  • More liquid (eggs, milk, kefir, yogurt) and less butter and sugar are added to the dough. Therefore, muffins are more dietary.
  • If berries are added, do not defrost the frozen ones first, otherwise they will release juice, which will make the baked goods wet.
  • Muffins are always portioned baked goods.
  • The dessert is baked in small molds with ribbed edges, 2/3 full. They can be silicone, metal or paper.
  • Before baking, metal molds are greased with oil and sprinkled with flour. In silicone molds, grease only the bottom, then the dough will rise well and form a beautiful round top. Paper ones - do not oil them, because... they do not require any processing.
  • Bake the muffins for 15 minutes in the oven preheated to 190 degrees.
  • The product is not afraid of drafts and movement around the oven.
  • The finished delicacy looks like mini cupcakes with a dense crust, lumpy crumb and large air bubbles.
  • Products can be stored for no more than a day.

Recipe for cottage cheese and chocolate muffins

Chocolate curd muffins can be called a “classic of the genre.” This dessert is often prepared for children in order to disguise a not-everyone-favorite product - cottage cheese - with chocolate.

The test requires the following components:

1) granular cottage cheese - 350 g;

2) sugar - 1 glass;

3) chicken egg - 3 pieces;

4) margarine or butter - 100 g;

5) vegetable oil - 3 tablespoons;

6) baking powder and vanilla sugar - 10 g each;

7) cocoa powder - 4 tablespoons;

8) instant coffee - 1 tablespoon;

9) sifted flour - from 1.5 to 2 cups.

Cottage cheese needs to be rubbed through a fine sieve, but some people prefer the consistency of unpureed muffins. Beat the eggs thoroughly with sugar, add all other ingredients to the dough: vanilla sugar, butter, coffee, cocoa, flour. Gently mix the ingredients and pour into the molds.

Important: when filling the molds, it is advisable to leave a small reserve in case the dough expands.

Grease the molds with margarine or butter, the oven can be preheated to +200°C. Baking time - up to 30 minutes.

When the mini-cupcakes are ready, they need to be cooled and sprinkled with powdered sugar on top.

Muffins are small round dough products with or without filling. Nowadays, any housewife who practices baking in the kitchen can make delicious chocolate muffins at home, prepared with the addition of cocoa powder or chocolate. But there is no limit to perfection, there is always room for improvement.

How to cook

Some people mistakenly believe that muffins are the same as cupcakes.

This is not so - its “brother” differs from the cupcake in a more liquid consistency of the dough and the possible presence of filling.

In addition, a muffin is easier to prepare - for a cake the dough takes a long time to grind, but for a muffin it is simply mixed quickly.

Traditionally, only raisins and candied fruits are added to the cupcake, and muffins are prepared with a variety of fillings, even with liquid ones - from berries, melted chocolate, curd cream. They even make unsweetened products, for example.

Classic recipe

This recipe can be called basic. Try experimenting by adding a banana (then increase the amount of flour to 200 g) - you will get fragrant chocolate-banana muffins.

Products:

  • white flour, well sifted, finely ground – 150 g
  • sugar – 100 g
  • milk – 50 ml
  • eggs – 2 pcs.
  • butter – 50 g
  • dark or milk chocolate – 50 g
  • vanillin - on the tip of a knife
  • baking powder for dough – 1 tsp.

Preparation:

  1. The peculiarity of preparing muffins of all types is that First all the dry ingredients are mixed, then all the liquid ones, then they are combined, and the resulting dough is poured into molds.
  2. Flour, sugar, vanillin and baking powder need to be mixed. Some recipes recommend using powdered sugar instead of sugar, and after mixing, sift the dry products again through a fine sieve. Practice has shown that muffins turn out well even without additional sifting.
  3. Melt the chocolate and butter in the microwave or in a water bath, mix with milk and eggs.
  4. Combine dry and wet ingredients together and pour into baking containers. Place in the oven for 20 minutes. Temperature – 180-200 degrees.

Chocolate and coffee

Muffins with the aroma and taste of coffee can be easily made based on a traditional recipe if you use brewed coffee instead of regular milk.

In this version, the product will require an increase in the amount of sugar by 1.5-2 times.

To understand exactly how much sugar is needed, it should be dissolved in the finished coffee and tasted.

To prepare coffee for the dough, you need to heat 50 ml of milk almost to a boil, add a teaspoon of ground coffee, stir, boil and set aside.

Repeat boiling 2 more times at one minute intervals. Strain thoroughly several times, add sugar. Cool and use.

Curd chocolate muffins

You can mix cottage cheese with sugar, vanilla and use it instead of filling - very appetizing.

Or replace one egg from the recipe with 2 tablespoons of fresh fat cottage cheese. Then proceed according to the usual scheme.

The cottage cheese itself can be either whipped in a blender or, on the contrary, just mixed lightly.

In the first case, the taste of cottage cheese will not be noticeable, the baked goods themselves will simply be more moist and aromatic.

In the second, because of the pieces you come across, you will definitely feel the curd accents.

Attention!

Do not take cottage cheese with grains - its consistency should be soft and buttery, without hard lumps.

Chocolate raisin muffins

Sweet pastries have always been popular both on ordinary days and on holidays. If on holidays all housewives bake complex cakes and all kinds of pies, then on weekdays you can afford simpler recipes, but no less tasty.

Among the simple and at the same time delicious recipes for sweet pastries, I include muffins with raisins, because the dough for them is prepared quickly, they do not bake for long, and as a result the family is happy.

Ingredients:

Recipe Information

  • Cuisine:European
  • Type of dish: baked goods, dessert
  • Cooking method: in the oven
  • Servings:12
  • 40 min
  • flour – 400 g
  • milk – 125 g
  • eggs – 4 pcs.
  • granulated sugar – 300 g
  • raisins – 200 g
  • butter – 200 g
  • vanilla sugar – ½ tsp.
  • cocoa – 4 tbsp. l.
  • baking powder – 10 g (1 sachet).

Cooking method:

I mix eggs (whites and yolks) with granulated sugar, or even more, I beat them with a mixer to get a fluffy egg mass, which in appearance will resemble a biscuit base. I also don’t forget about vanilla sugar.

The whiter the egg mass, the fluffier the dough will be, which means it will be filled with bubbles of beaten egg whites and sugar.

Then I add the melted butter, which has been left in the room for more than 2 hours, in medium pieces to the dough. The softened butter will be well beaten with a mixer and the dough will become homogeneous.

Now I pour milk (I don’t heat it for this recipe) at room temperature into the dough to make the dough more tasty. Milk fat will also make baked goods softer. Beat all the ingredients again with a mixer.

I sprinkle the sifted air flour and add baking powder. Gradually knead the medium-thick dough, stirring with a spoon.

The last step is adding cocoa.

And finally I add some zest. There should be a lot of them. Everyone wants to get raisins, so I don’t feel sorry for them, I sprinkle in a few handfuls.

I pour the dough into silicone molds (I lightly coat them with vegetable oil), it will be approximately like thick sour cream. I fill the molds ¾ full and they are now ready for baking.

I bake for 20-25 minutes so that the dessert becomes fluffy and properly browned. The top may crack slightly. This indicates that the muffins are baked and ready to be removed from the oven.

Remove the cooled muffins from the molds and place on a serving platter.

I make sure to brew tea and coffee for those who want it, and serve ready-made baked goods to the table.

With liquid filling

The recipe for this dessert has become legendary - all fans of delicious and simple pastries have probably tried it.

I like several filling options.

What do we need:

  • white flour – 170 g
  • sugar – 100 g
  • milk – 50 ml
  • eggs – 2 pcs.
  • butter – 50 g
  • cocoa powder – 2 tbsp.
  • vanillin - to taste
  • baking powder for dough – 1 tsp. without top.

How to bake:

  • Melt the butter, heat the milk, mix, add the eggs and mix again. Combine dry products. Knead the dough.
  • Due to the increased volume of flour, the dough will be slightly thicker than in the classic recipe. This is necessary so that the filling does not fall down. The secret of this product is that a little more than half of the portion of dough is poured into a baking container, then the filling is put in, and the rest of the portion is poured on top. Now about the liquid center.

Chocolate filling

  • If you want a completely liquid center, then you need to break the chocolate, put it in a tight plastic bag, add cream (1/4 of the volume of chocolate) and melt it in hot water. Do not boil: the bag may begin to melt. Cut off the tip of the bag and pour some chocolate onto the dough in the mold. With the remaining glaze you can draw patterns on the finished baked goods.
  • If you want a thicker filling, it’s good to use dark, milk or white chocolate chips. Nuts and coconut flakes are ideal for it.

Cherry filling

Squeeze fresh or thawed cherries with a wooden spatula and drain the juice. Beat in a blender with sugar and use.

Orange filling

It is made from orange jam or orange curd cream. To make the cream, beat the orange in a blender and squeeze out the juice. Mix the squeezed mass with fatty cottage cheese, add sugar to taste. If you replace the orange in the cream with a banana, there is no need to add sugar to the cream.

Chocolate Chip Recipe

This is an option for true chocolate lovers.

Products:

  • flour – 170 g
  • sugar – 100 g
  • milk – 50 ml
  • eggs – 2 pcs.
  • butter – 50 g
  • chocolate to taste – 50 g
  • vanillin,
  • baking powder for the dough.

Preparation steps:

  1. We make the dough according to the classical scheme. Milk can be replaced with kefir or sour cream, the dough will rise better with them and the baked goods will be more fluffy.
  2. The chocolate needs to be melted in a bag. The dough is poured into the mold gradually, in layers, with a few drops of melted chocolate dripping onto each layer. Do not drip onto the top layer, because the chocolate will flow under the influence of temperature.
  3. To obtain chips, chocolate, on the contrary, is frozen and thinly planed with a sharp knife. Then sprinkle some chips onto the dough layer, maybe mixed with nuts.
  4. It’s convenient to bake these in a regular ceramic mug in the microwave – 10 minutes and the delicious dessert is ready for tea.

To the hostess in the piggy bank

  • For muffins, muffins, and cupcakes, you need to use warm products. Heat the milk, melt or soften the butter at room temperature, remove the eggs from the refrigerator a couple of hours before cooking or warm them in hot (not boiling!) water.
  • It is convenient to bake products in paper molds, greased and dusted with flour.
  • If you choose silicone molds, it is better to take embossed ones, then the finished product will have a beautiful shape of a flower, heart or other figure. Metal molds are less suitable and baked goods often burn in them.
  • You need to fill no more than a third of the mold with dough, since it expands greatly in volume.
  • You can bake muffins in the oven and microwave. Silicone molds are good for the oven, metal ones are a little worse because they get very hot. Cooking time in the first case is 15-20 minutes, in the second – about 10.
  • Paper and silicone ones are suitable for the microwave, and regular small-volume tea cups are also often used. The main thing is that the design on the cup is not made using metal coating.
