I recently cooked a delicious

meatloaf from minced meat, stuffed with boiled eggs and baked in the oven

(Delicious beyond words, I will share with you a step-by-step photo and video recipe ;-))

A stuffed roll is perfect as an appetizer for a holiday table and as a main dish with a vegetable side dish, and it’s easier to prepare than cutlets! I really love and respect those dishes that don’t need to be fried, I’m all for healthy eating! 😉 Therefore, meatloaf according to this recipe is perfect for children's and diet food.

For the recipe for baked meatloaf with eggs you will need:

  • Minced meat (I have mixed pork and beef, it will also be delicious with chicken) - 800 g,
  • onions – 1-2 pcs.,
  • 2 raw minced eggs,
  • 2 slices of loaf (soaked in milk),
  • 2 spoons of sour cream (for the juiciness of the minced meat),
  • pepper,
  • salt - to taste,
  • 3-4 boiled eggs for filling.

Recipe baked meatloaf from minced meat and eggs

I prepared minced meat for a stuffed roll filled with boiled eggs from lean pieces of pork and beef, 400 grams of each meat (if you replace them with lamb, chicken breasts, or maybe make minced meat from fish fillets, it will be very original for taste!). We pass the meat together with the onion through a meat grinder, soak bread or loaf without crusts in milk or water, since I took lean meat, I will add a couple of spoons of sour cream to the minced meat in addition to eggs and slices of loaf, in order to make it juicy.

Mix the prepared minced meat for the roll well, you can even beat it.

You can simply form the roll on a table greased with vegetable oil, or you can use foil or cling film for this:

Place the minced meat in an oblong layer on the table,

Place boiled eggs along the center

(if desired, you can diversify the taste of the stuffed meatloaf - place eggs on fried onions or mushrooms, for example, champignons), chicken eggs in the roll can be replaced with quail ones.

Use the edges of a layer of raw minced meat to cover the eggs and form a roll; to prevent it from falling apart during baking, you can turn it over with the seam down and on top (required!!!) make 4 holes with your finger to allow steam and excess liquid to escape.

A minced meat roll filled with eggs can be baked in a deep baking dish, greased with butter, and then you will not need to add broth or water, it will cook in its own juices and turn out juicy.

If you bake a stuffed roll on a baking sheet, be sure to add water, a little, so that the surface of the greased baking sheet is lightly covered with liquid. A minced meat roll according to this recipe can be baked in a sleeve or foil; the baking time for the roll is 50 minutes at a temperature of 180 degrees. During baking, the stuffed roll will need to be basted several times with the released juice in order for it to get a beautiful golden brown crust, as in the photo:

Step 1: Prepare the pork.

We thoroughly wash the pork under running water and place it on a cutting board. Using a knife, clean the meat from veins and film. Now cut the component into medium pieces and transfer to a large bowl.

Step 2: Prepare the beef.


We rinse the beef well under running warm water to remove any remaining dirt and bone fragments. Now put the meat on a cutting board and, using a knife, remove the veins and film. Cut the component into small pieces and place it in a bowl with the pork.

Step 3: prepare the onions for the roll.


Using a knife, peel the onion and rinse it thoroughly under running water. Next, place the component on a cutting board and finely chop into cubes. Pour the chopped onions into a clean plate.

Step 4: prepare the milk.


Pour half a glass of milk into a Turk and place on high heat. In 2 minutes turn off the burner and immediately proceed to preparing the bread.

Step 5: prepare the loaf.


Tear the loaf into small pieces with clean hands and place in a small bowl. Pour hot milk over the bread and leave for 5 minutes aside. After the allotted time, the loaf should become soft and pliable. Using a fork, carefully knead it until smooth.

Step 6: prepare minced meat for the roll.


Before we form the roll, we need to grind the meat. We can do this in two ways. The first is to use a meat grinder with a fine grid and grind the pieces of pork and beef in turn. And to make the minced meat homogeneous, it is best to do this twice.

I prefer the second option for chopping meat - using a blender. To do this, put the ingredients in a bowl and chop them at high speed or Turbo mode until smooth.

Place the finished minced meat back into a large bowl and add the bread mass, chopped onion, eggs, as well as salt and a mixture of ground peppers to taste. With clean hands, mix everything thoroughly until a homogeneous mass is formed. Attention: This amount of minced meat should make 3 medium rolls.

Step 7: Prepare the carrots.


Using a knife, peel the carrots and rinse well under running water. Now, using a coarse grater, chop the vegetable on a flat surface and immediately pour the shavings into a clean plate. Attention: You don’t have to add carrots to the filling. This is according to your wishes.

Step 8: prepare the onions for the filling.


Using a knife, peel the onion, rinse it under running water and place it on a cutting board. Chop the component into cubes and immediately pour it into the plate where the onion prepared for minced meat was.

Step 9: prepare the champignons.


Wash the champignons well under running warm water and place on a cutting board. Using a knife, we clean the mushrooms from damaged areas, which may be on the caps and legs. Now chop the ingredients into small pieces and pour into a clean small bowl.

Step 10: prepare the filling.


Pour some vegetable oil into the frying pan and place on medium heat. When it warms up well, add chopped onion. Stirring from time to time with a wooden spatula, bring the component to transparency. Now pour the carrot shavings into the container and continue preparing the frying. When the vegetables become soft, add the chopped champignons here. Remembering to stir with available equipment (so that the ingredients do not burn at the base of the pan), fry the filling until it is light golden brown. At the end, turn off the burner and let the vegetables and mushrooms cool slightly.

Step 11: prepare a minced meat roll with filling.


Cover the kitchen table with a piece of baking paper. Place the minced meat on top of it and roll it out into a flat cake using a rolling pin. Important: To prevent the meat mass from sticking to the equipment, be sure to wet it in advance under running water. You can also spread the minced meat onto the paper with clean hands. The main thing is that the cake is thick no more than 1 centimeter and had a square or rectangular shape.
Using a tablespoon, spread the filling on top so that it does not reach the edges. by 1.5 centimeters.

Now carefully wrap the meat layer inside, lifting the baking paper. Pinch the edges with clean hands and turn on the oven. When it warms up to temperature 200 °C, let's start preparing our roll. Carefully place it, seam side down, onto a baking sheet lined with food foil. In some places we pierce the dish with a fork and pour the remaining milk over everything (this must be done so that the meat appetizer turns out tender and juicy). Next, place the baking sheet on the middle tier and bake the roll for 30 minutes. Attention: From time to time it is necessary to remove the container using oven mitts and pour milk over the dish.

Then the top will turn out golden brown and not dry. At the end, turn off the oven, and take out the baking sheet and set it aside. Let the roll calmly come to room temperature. Just before serving, cut it into portions using a knife, transfer it to a special plate and place it on the dining table, optionally garnished with parsley leaves and dill sprigs.

Step 12: Serve the minced meat roll with filling.


Minced meat roll with filling is served as an appetizer to any dinner table. This can be either a dinner or a holiday.

It can be enjoyed with bread, fried potatoes, as well as boiled rice and fresh vegetable salads.

Any meat is suitable for preparing minced meat, as long as it contains a small amount of fat. You can use ready-made store-bought mass, but I prefer to prepare the minced meat myself, since you always know what your children and friends will eat;

In addition to mushrooms, you can add any other ingredients to the filling at your discretion. For example, instead of champignons, I sometimes use stewed vegetables, boiled chicken, chopped hard-boiled eggs mixed with dill, or salted dry cottage cheese with boiled pasta;

If you are concerned that the meatloaf may not cook well and be raw inside, then wrap it in food foil and cook for 30 minutes. Then remove the metal paper and let the dish brown some more. 10 minutes, not forgetting to water it with milk from time to time.

A hearty and unusual dish immediately becomes a decoration for any table. Minced meatloaf will appeal to everyone who loves cutlets and prefers an unusual presentation.

You can experiment and put different foods as fillings - eggs, mushrooms, cabbage and cheese. Minced meat roll with filling gives you the opportunity to fully express your culinary imagination.

You can use ready-made minced meat or make it yourself. Chicken, pork and beef are suitable. Minced meatloaf is prepared in the oven.

To make the roll less fatty, place the minced meat on parchment or foil. You can make the roll with a cheese crust or from lavash. Add your favorite spices to the minced meat, giving the roll a subtle aroma of spices. Don't forget to salt both the minced meat and the filling before combining them.

This is a traditional recipe that does not involve filling. You can take it as a base, adding various components and getting new flavors of this hearty dish.

Ingredients:

  • 500 gr. minced pork;
  • 1 onion;
  • 2 garlic cloves.

Preparation:

  1. Add squeezed garlic there, salt and pepper.
  2. Place the minced meat on the spread parchment.
  3. When laying out, form a roll.
  4. Place in the oven preheated to 180°C for 45 minutes.

Boiled eggs add a slightly delicate flavor to the roll and look beautiful when sliced. The egg can be placed in any minced meat - it goes well with both beef and pork.

  • 500 gr. minced chicken;
  • 1 onion;
  • 3 eggs;
  • 2 garlic cloves.

Preparation:

  1. Chop the onion into small cubes and add to the minced meat.
  2. Squeeze the garlic into the meat mixture, add salt and pepper.
  3. Boil the eggs.
  4. Place half of the minced meat on foil. Next - eggs, cut in half.
  5. Form a roll from the remaining minced meat.
  6. Bake at 190°C for 40 minutes.

Roll with cheese crust

It’s easy to make meatloaf even tastier - the cheese crust will do the job. It doesn’t matter what kind of meat you prepare the base from, the cheese will go well with any variety.

Ingredients:

  • 1 onion;
  • 3 eggs;
  • 100 gr. hard cheese;
  • ground coriander.

Preparation:

  1. Finely chop the onion and mix with the minced meat. Salt and pepper the mixture.
  2. Boil the eggs, peel them.
  3. Place the minced meat on parchment.
  4. Cut the eggs crosswise into 2 parts. Place in the center of the spread out minced meat.
  5. Form a roll so that the eggs are in the center.
  6. Grate the cheese, add a little coriander.
  7. Sprinkle the roll generously with cheese.

Minced meatloaf with mushrooms and cabbage

Any filling will not only make the dish more satisfying, but will also add different flavors. For example, mushrooms and cabbage are combined with meat. The result is a dish that can be served at the holiday table.

Ingredients:

  • 200 gr. white cabbage;
  • 200 gr. mushrooms - wild mushrooms or champignons;
  • 500 gr. minced pork;
  • 1 onion.

Preparation:

  1. Chop the cabbage into strips. Cut the mushrooms into small cubes.
  2. Simmer the mushrooms and cabbage in a frying pan until tender. Add salt and pepper a little during the process.
  3. Finely chop the onion and mix with the minced meat.
  4. Place half of the minced meat on baking parchment. Place the filling in the middle. Make sure that it does not protrude beyond the edges. Ideally, there should be 4 cm of free minced meat left on each side.
  5. Place the remaining minced meat on top and form a roll.
  6. Place in the oven for 40 minutes. Temperature - 190°C.

Minced meatloaf stuffed with mushrooms and cheese

If you add cheese to the mushrooms, the filling will be sticky and taste tender. It makes the roll even tastier, harmonizing with the meat aroma.

Ingredients:

  • 500 gr. minced pork;
  • 200 gr. mushrooms;
  • 100 gr. hard cheese;
  • 1 onion;
  • coriander, marjoram.

Preparation:

  1. Cut the onion into small cubes and mix with the minced meat. Salt and pepper the mixture.
  2. Cut the mushrooms into cubes or slices and fry in a frying pan.
  3. Cool the mushrooms.
  4. Grate the cheese and mix with mushrooms. Add coriander, marjoram and a little salt.
  5. Place half of the minced meat on a baking sheet.
  6. Place the cheese and mushroom filling in a dense mass in the middle.
  7. Cover the dish with the rest of the minced meat and form a roll.
  8. Place in the oven for 40 minutes, preheated to 190°C.

Minced meatloaf with lavash crust

This dish looks unusual and resembles baking. The meat delicacy turns out very tasty, and you can add any filling to it at your discretion. For example, you can cook minced meatloaf with egg in pita bread.

Ingredients:

  • 500 gr. minced pork or chicken;
  • thin pita bread;
  • 1 onion;
  • 4 eggs.

Preparation:

  1. Chop the onion. Mix with minced meat. Salt and pepper.
  2. Boil 3 eggs, cut into 2 parts crosswise.
  3. Lay out the pita bread. Place half of the minced meat in the center.
  4. Place eggs in the middle of the minced meat along the entire expected length of the roll.
  5. Lay out the remaining minced meat. Form into a roll.
  6. Wrap the roll in pita bread.
  7. Stir the raw egg. Grease the pita bread with it.
  8. Bake in the oven for 40 minutes at 190°C.

Puff pastry meatloaf

Another variation of the delicious crust is puff pastry. The baked goods are crispy, satisfying and original. This dish will surprise your guests and will not disappoint anyone.

Ingredients:

  • 500 gr. minced pork;
  • 1 onion;
  • layer of puff pastry;
  • 4 eggs.

Preparation:

  1. If the dough is frozen, be sure to defrost it at room temperature and roll it out.
  2. Chop the onion and mix with the minced meat. Salt and pepper the mixture.
  3. Boil 3 eggs, cool them and cut them in half.
  4. Spread out half of all the minced meat. Place eggs in the middle along the entire length of the roll.
  5. Place the remaining minced meat on top and form a roll.
  6. Wrap the roll in a layer of dough - it should be as thin as possible.
  7. Stir the raw egg and brush the roll with it.

Meatloaf with mushrooms and onions

To diversify the taste of the mushroom filling, add spices and fried onions. If desired, the roll can be made with a cheese crust - it will turn out to be a delicious holiday treat.

  • Finely chop one onion and mix with the minced meat. Season with salt and pepper.
  • Cut another onion into cubes and fry with chopped mushrooms. Add coriander and pepper. Add a little salt.
  • Grate the cheese.
  • Spread half the minced meat, place the filling in the middle.
  • Place the remaining minced meat on top and form a roll.
  • Sprinkle cheese on top.
  • Place in the oven for 40 minutes at 190°C.
  • Meatloaf is easy to prepare, it does not require many ingredients and can be served on a holiday table as a main dish. The filling allows you to create different versions of this dish that will appeal to everyone who likes hearty meat delicacies.

    A meatloaf will help if you want to cook something original, and you have a standard set of products in the refrigerator.

    You can put a variety of fillings in it, from vegetables to mushrooms and even eggs.

    And preparing the dish is much easier than you might think.

    Minced meatloaf general principles of preparation

    For minced meat rolls you will need lean minced meat. If there is a lot of lard in it, the dish will not hold its shape and will fall apart. Therefore, it is better to twist the meat yourself. Beef or its combination with pork is suitable.

    Raw eggs are most often used to hold the mass together. They can also be used for filling. You can also put any vegetables in the roll; cheese, mushrooms, herbs and much more are often added. And of course, various spices that improve the taste and aroma of the dish.

    Form a roll using parchment, foil or a damp cloth. But you can also use rectangular bread molds (metal, silicone). The rolls are baked in the oven.

    Recipe 1: Minced meatloaf with mushrooms

    The recipe for a very aromatic and incredibly tasty minced meatloaf with mushrooms. For the filling, ordinary champignons are used. But if there are other mushrooms available, you can take them. Even pickled or salted mushrooms will do.

    900 grams of minced meat;

    100 grams of cheese;

    200 grams of champignons;

    1 onion;

    A bunch of any greenery.

    1. Cut the onion into cubes, grate the peeled carrots, place in a frying pan with a little oil and fry for a couple of minutes.

    2. Chop the washed champignons into slices, add them to the vegetables and fry them together. Don’t forget to season the filling with spices and salt at the end.

    3. Add egg, chopped herbs, and salt to the minced meat.

    4. Take cling film and spread it on the table. Spread a layer of minced meat about one centimeter thick. Lay out a rectangle.

    5. Place the mushroom filling on top and sprinkle with grated cheese.

    6. Roll up the roll, lifting the edge with the film and gradually removing it.

    7. Carefully transfer to a greased pan and bake for about 35 minutes at 200 degrees. Then take it out, cut it crosswise into slices and serve!

    Recipe 2: Minced meatloaf in the oven with bacon

    To prepare this meatloaf you will need a long rectangular or round shape. And also thin strips of bacon that will cover the dish on all sides.

    250 grams of minced pork;

    250 grams of ground beef;

    250 grams of bacon;

    1 bell pepper;

    1 onion (small);

    1. Mix minced meat with finely chopped onion, garlic, add egg and spices.

    2. We remove the bell pepper from the entrails and also chop it finely, send it to mince.

    3. Lay long, thin strips of bacon crosswise in the pan so that the edges hang down.

    4. Place the cooked minced meat on top of the bacon and cover it with the edges that hang over the sides of the pan. Fill the bald spots with new slices of bacon.

    5. Bake the roll for about 45 minutes in the oven. Temperature 190C.

    Recipe 3: Minced meatloaf with egg

    The special thing about this minced meatloaf with egg is its beautiful cross-sectional appearance. This dish will look impressive even on a holiday table. And an additional portion of protein will not harm any body.

    500 grams of minced meat;

    3 pieces of loaf;

    1 glass of milk;

    100 grams of cheese;

    0.5 bunch of parsley;

    1. Immerse five eggs in water, leaving one. Boil until cool for 10 minutes, add vinegar to the water. This will prevent the shell from bursting.

    2. Fill the loaf pieces with milk and let them swell. Then we squeeze it out and put it into minced meat.

    3. Put the chopped onion and the remaining egg there, don’t forget about salt, pepper, and other spices to your taste. Add chopped parsley. Mix well.

    4. Peel the cooled eggs and grate the cheese. It will serve as a connector in the roll and will not allow it to fall apart.

    5. Turn on the oven at 200 degrees, let it heat up.

    6. Take a piece of foil, grease it with oil and lay out the minced meat in a square. Sprinkle grated cheese on top.

    7. Place a row of boiled eggs at the edge closest to you.

    8. Roll up the roll, do it carefully and tightly.

    9. Twist the edges of the foil so that all the juices are preserved inside the roll and the roll does not lose its shape. Bake in the oven for about an hour. At the end you need to open the foil and fry.

    10. Before serving, cut into transverse pieces, serve with herbs and vegetables.

    Recipe 4: Minced meatloaf with pasta filling

    Tired of navy pasta? This recipe is for you! A very nourishing and juicy version of minced meatloaf, filled with pasta. It is better to use spaghetti or other elongated products.

    150 grams of pasta;

    2 tablespoons breadcrumbs;

    120 grams of cheese;

    1 small onion.

    1. Boil the pasta in water according to the instructions, you can undercook it a little to make it stronger.

    2. For minced meat, twist the meat with the onion, add seasonings and egg. Knead.

    3. Add grated cheese to the pasta; you can add any greens.

    4. Take a piece of cotton cloth and moisten it with water, spread it out and place a layer of minced meat on it.

    5. Now fill the mac and cheese.

    6. Twist the roll and transfer it to the mold, remove the cloth.

    7. Sprinkle the top and sides of the roll with breadcrumbs, then lightly spray with oil.

    8. Place in the oven and bake at 180 degrees until done, usually half an hour is enough.

    Recipe 5: Minced meatloaf in the oven with prunes

    Prunes and meat are almost a classic combination. There are so many recipes based on this ensemble! So why not make meatloaf?

    1 kg of mixed minced meat (beef, pork);

    100 grams of cheese;

    2 slices of bread;

    300 grams of prunes.

    For greasing, one spoon at a time: lemon juice, honey, paprika, oil.

    1. Fill the bread with milk, broth or just water and let it become soggy. Then we squeeze it out and put it into minced meat.

    2. Add spices with egg, stir.

    3. Place on a spread and oiled sheet of parchment in an even layer of about 7 millimeters.

    4. Cut the washed and dried prunes into cubes and sprinkle on top.

    5. Rub the cheese with large shavings and also sprinkle on top.

    6. Roll up the roll, carefully moving the sheet of parchment aside. But we don’t remove it. Cover the roll on top and bake in the oven for 20 minutes.

    7. While the roll is being prepared, mix the ingredients for greasing. Or rather, for the glaze.

    8. Take out the roll, remove the parchment or simply move it aside, take a brush and grease it well on all sides with the prepared glaze.

    9. Fry until golden brown. Thanks to honey, a beautiful crust will appear very quickly.

    Recipe 6: Minced meatloaf with egg, carrots and walnuts

    Another version of a very tasty minced meatloaf with eggs. The crushed filling is placed in it. The nuts used are walnuts. Foil is used to form the roll.

    2 slices of bread;

    2 cloves of garlic;

    2 tablespoons mustard;

    100 grams of cheese;

    120 grams of nuts.

    1. Make minced meat. To do this, soak the bread, mix it with chopped meat and onions, add spices, one egg and leave it aside for now.

    2. Boil the remaining eggs hard-boiled, combine with grated cheese and chopped garlic.

    3. Fry the nuts in a frying pan. Chop and add to the filling.

    4. Also fry the grated carrots in a frying pan, but not too much, lightly. Add to the filling. Salt, pepper, stir well.

    5. Spread the minced meat on greased foil, and spread the filling over it, retreating 2-3 centimeters from the near and far edges.

    6. Roll up the roll and cook in foil for 30 minutes at 190 degrees. Then open the foil, grease the surface with sour cream and fry for another 20 minutes until fully cooked.

    Recipe 7: Minced meatloaf stuffed with pickled mushrooms and cheese

    A version of a wonderful minced meatloaf with mushroom filling. You can use pickled champignons, honey mushrooms, chanterelles or any other mushrooms.

    0.2 kg of mushrooms (excluding marinade);

    A couple of sprigs of parsley;

    1. Chop the onion into cubes and fry in a frying pan until transparent.

    2. Add chopped mushrooms. If honey mushrooms are used, then we throw them whole. Fry until the liquid has completely evaporated; it is not needed in the filling. Let cool.

    3. Add egg, spices to the minced meat and stir.

    4. Simply grate the cheese, put it in the mushrooms, add chopped parsley.

    5. Place the minced meat on a greased piece of aluminum foil. Place the mushroom filling in the center in the form of a roll along the entire length.

    6. Fold the edges inward on both sides, forming a roll. Press down with your hands to make it quite dense.

    7. Twist the ends of the foil together.

    8. Bake for half an hour in foil, then cut and fry a little.

    Recipe 8: Minced meatloaf stuffed with tomatoes and cheese

    For the filling, not only cheese and tomatoes are used, but also sausage. It can be replaced with sausage or sausage.

    100 grams of sausages;

    100 grams of cheese;

    Some breadcrumbs;

    2 spoons of mayonnaise.

    1. Thoroughly mix the minced meat with spices and mayonnaise. There is no need to add anything else.

    2. For the filling, cut the sausage and tomato into thin slices, grate the cheese and divide into 2 parts.

    3. Place a layer of minced meat on foil, top it with sausage, tomatoes and half the cheese. Form a roll.

    4. Mix breadcrumbs with the remaining cheese, sprinkle on the top and sides. To make it stick better, you can grease the surface with egg, water, sour cream or the same mayonnaise.

    5. Fry until fully cooked at 190 degrees.

    Recipe 9: Minced meatloaf in the oven with quail eggs

    Be careful with the quail egg roll. It's easier to cut and looks more interesting.

    1 slice of bread;

    Milk for soaking;

    10 quail eggs;

    1. Immediately set the quail eggs to boil. For them, 5 minutes after boiling is enough. Then cool and clean.

    2. Twist the beef into minced meat, add bread soaked in milk, chicken eggs and spices, stir.

    3. Cut the onion and three carrots, fry in a frying pan with oil for a couple of minutes. We send it into minced meat.

    4. Place a piece of parchment on a baking sheet and grease it.

    5. Place the minced meat in the form of a loaf, approximately 2/3 of the total mass.

    6. We stick in the quail eggs, trying to arrange them evenly.

    7. Cover the top with the remaining minced meat, give it a nice shape, press with your hands to make the roll denser.

    8. Fold the edges of the parchment inward on top of each other, tying the ends with thread.

    9. Bake for about 50 minutes at 200 degrees. If desired, remove the parchment at the end, grease with butter and fry until crusty.

    Instead of bread or loaf, you can add breadcrumbs to the minced meat. But in this case you need to pour in a little milk or cream. This is done for juiciness, since crackers absorb a lot of moisture.
