You can bake a fish in different ways - in a sleeve or foil, as well as on a vegetable pillow. And if you don’t feel like messing with butchering a carcass, cook a catfish steak in the oven.

Baked catfish with vegetables March 14th, 2015

We fell in love with catfish so much that my husband buys it at the first opportunity. The truth always complains that it is small. And it seems to me that the smaller, the more tender. Every time my husband tells me stories about how they caught catfish on a pipe in childhood. They say they take a pipe sealed on one side and put a dead frog in it. Catfish comes, sees a frog, crawls into the pipe, and then they pull it out. Yep, along with the pipe. And sometimes he talks about what catfish elephants weigh under 100 kg, and then again tales, about how fishermen caught a huge catfish and dragged it from the river by horse. So I believed him! However, I don’t like this one, I like this one too.

Butchering catfish is terrible flour. His head rests on a huge bone, the gills are attached to the head with ropes, and therefore the strength is needed valiant and a knife sharper than a razor. But if there is no man of strength, then you just need to cut your head to the ridge and try to break the ridge with both hands. So much easier.
The catfish has practically no bones, only costal and fins. Filleting is not difficult at all.

What am I going to do with this catfish today? I'll make baked catfish with vegetables for dinner. I tried something similar in Greece, but there was a different fish.

The head and spine can be immediately poured with 1.5 liters of water and put to boil the broth. When the broth boils, remove the foam, add the roots, salt and peppercorns, allspice, bay leaf, lower the heat and cook on the quietest fire under the lid for 1 hour. I only need two or three ladles, and the rest of the broth can be strained and frozen.

And I will marinate the catfish fillet with lemon juice and spicy herbs. Here, dill will be good, and cilantro, and parsley. I cover the bowl with fish with a plate and send it to the refrigerator for half an hour.

In the meantime, I have to clean and cut the vegetables.
Set of vegetables
3 onions cut into half rings
3 small carrots, cut into strips
6 garlic cloves, peeled and crushed with a knife
1 large pepper, cut into strips
2 celery stalks, cut into small pieces
5 small tomatoes cut in half
bunch of green cilantro, finely chopped

When the vegetables were prepared, I took out the pickled fish from the refrigerator and cut it into large pieces. Sprinkled with Salt "12 vegetables and herbs", and ground pepper.

In a frying pan with a thick bottom, melted 1 tbsp. ghee, first fried the onion and crushed garlic. Then, when the onion became transparent, I added carrots and herbs. The total time is no more than 5 minutes, the vegetables should remain crispy.

Transferred the vegetables to the mold.

The fish was fried in two steps in one layer.

She laid the finished fish on top of the vegetables.

I put a few sprigs of thyme on the fish.

In the same pan, lightly fried peppers, added celery and tomato halves to it. Fry for about 5 minutes, stirring.

Ready vegetables laid out on top of the fish.

In a pan in which fish and vegetables were fried, poured three ladles of fish broth, added 2 tbsp. apple cider vinegar, 2 tsp sugar, 3 cloves, 1/2 tsp. ground cinnamon, a pinch of nutmeg, 500 ml of pureed tomatoes. Bring the sauce to a boil and simmer for five minutes.

Sauce poured over fish with vegetables.

Baked in the oven for 25 minutes at 200 degrees.

This is a fantastic fish.

The fish is juicy, tender, boneless, sweet and sour vegetables are crunchy and very fragrant.

I even took a supplement.

Try it, you will definitely like it

  • 2 bunches of parsley

Many people do not like to cook catfish because of the specific unpleasant smell of sludge. To get rid of it, rub the catfish with salt, seasoning for fish and pour freshly squeezed juice of one lemon (it is enough to squeeze the juice of one lemon for a one and a half kilogram fish. If the catfish is larger, then squeeze the juice from more citrus fruits). Cover the prepared fish with cling film and leave the catfish to marinate at room temperature for 15 minutes.

While the meat is marinating, peel the onion and cut it into half rings. Cut the parsley. Stuff the belly of the catfish with herbs and onions. Put it on a baking sheet. Brush sides and back with olive oil.

Preheat the oven to 200 degrees. Place the baking sheet with the catfish to bake for 50 minutes. The finished catfish will acquire a delicious crispy crust, and the meat will turn white (this can be seen through the cuts on the back).

Transfer the baked catfish to a large platter. Cut the lemon into slices in the form of a semicircle. Insert them into the cuts on the back of the fish. Put a side dish on the sides. Boiled rice, baked potatoes, stewed vegetables are perfect as it.
