I offer a signature shortbread recipe from my mother, very practical, quick and tasty. These shortbreads with cinnamon and nuts contain practically no fat, they are tasty and fragrant. Kefir shortcakes can be stored for a long time, they go great with tea, coffee, milk, cocoa, you can give the kids a snack at school for a break. In general, I recommend.

  1. We mix one glass of kefir or sour milk, sugar and one yolk. You can put a whole egg, but then the shortcakes will turn out not so soft.
  2. Add salt, half a teaspoon of soda, which we first extinguish with vinegar. Putting more soda than indicated in the recipe is not necessary, shortcakes are perfect anyway.
  3. Stir, then pour in two tablespoons of sunflower oil.
  4. Add three cups of flour to the resulting mixture. We then still need about half a cup of flour for kneading.
  5. We mix everything well and leave the dough for 45 minutes, for an hour, so that it stands a little.
  6. If desired and if possible, add half a glass of chopped walnuts to the dough. You can quickly chop nuts using an ordinary rolling pin: put the peeled nuts on the table, lightly sprinkle with sugar, then roll the nuts with a rolling pin, and you're done!
  7. We divide the dough with nuts into several parts. Roll each part into a cake about a centimeter thick.
  8. Sprinkle the top of the cake with cinnamon, and then squeeze out our future shortcakes with the help of a mold.
  9. Grease a cold roasting pan with margarine and sprinkle with flour.
  10. Put the shortbreads on the prepared roasting pan.
  11. We put the brazier with shortcakes in a preheated oven. We bake the shortcakes for 10 minutes at a temperature of 180 ° C, then lower the temperature to 160 ° C and bake for another 15 minutes.
  12. The total baking time is approximately 25 minutes. Of course, the time may vary depending on the thickness of the dough and the temperature of your oven.
  13. To test the biscuits for readiness, lightly press your finger on the surface of the biscuit. If the cake has regained its shape, then it is ready, and it's time to take it out of the oven.
  14. That's all the cooking, delicious kefir shortcakes are ready.

Cookies from childhood are nostalgia for the best time of life and grandmother's kitchen, where the most delicious miracles in the world were created. It would seem that out of nothing our parents managed to cook extraordinarily delicious dishes for us. Cookies on homemade sour are an example of this.

I want to warn you right away: do not try to replace sour milk from homemade milk with modern kefir. It will turn out a completely different dish, completely different shortcakes. For some reason, they do not turn out lush if the sour is replaced with kefir.

In the village, of course, it is much easier with sour and any other rural product. But even in the city, sour can be obtained from homemade milk, giving it the opportunity to turn sour.

Rural recipes are good because they do not drive the hostess into the proportions of the ingredients. For example, I like to experiment and these ones: “a pinch” or “to taste” suit me very much in home recipes. So, the unique shortbreads from childhood on homemade sour are prepared according to this recipe. In the village, probably, children are still pampered with such shortbreads, who are not too lazy to mess around with the dough at the stove. No pastry goodies from the store can compare with the taste of grandma's homemade food.

So, shortbreads from childhood on homemade sour

The cookie dough should be very soft.

We take fresh sour from homemade milk. In this case, I take 0.5 liters. Pour it into a large glass or enameled bowl. Add salt and sugar to taste. You can add a homemade egg. The dough in this case will turn out beautiful, but rather dry. It's for an amateur. We mix everything well.

Now we begin to gradually add flour, without ceasing to stir the sour with a spoon, so that the dough turns out to be as thick as on pancakes. Now add a little more than half a teaspoon of soda, slaked with vinegar and mix everything again.

Leave the dough alone for 5-10 minutes, and then continue to add flour until the dough becomes thick and can be put on the table. It all depends on the fat content of the sour and the quality of the flour. It is difficult even by eye to determine how much flour the sour will take in each individual case.

The dough should be very soft. So that only you can collect it in a heap and knead. The finished dough should not be left for a long time so that it does not become sticky. It is better to immediately begin the formation of shortcakes.

Any shape can be given to shortcakes. I will make them in the form of triangles.

To do this, you need to roll out the juicy with a thickness of 1-1.5 cm and cut out the shortcakes of various configurations with special molds or just rhombuses, squares. At this point, who has what is at hand and for how much time in abundance. I'll make it triangular. It is easier to distribute the number of triangles on a large cake. It does not matter if the triangular shortcakes are not the correct shape along the edges of the juicy. The main thing is that it tastes good.

By this time, heat up a large amount of vegetable oil in a deep frying pan, immerse in

Cookies on homemade sour can be of any shape

him our shortcakes (or cakes) and fry them on both sides.

We ate ready-made shortcakes in childhood with anything:

  • fried onions and grated garlic, like donuts;
  • with roasts and the same garlic and onions;
  • with honey, jam;
  • with regular sugar syrup.

Very tasty shortbreads on homemade sour hot, so to speak, piping hot.

My grandchildren still like to dip hot shortbreads from my childhood in sugar syrup and drink cold homemade milk.

Delicious, I want to tell you!

Professionals, of course, know that shortcakes are the “closest relatives” of gingerbread.

Unleavened pastry is the basis of gingerbread and shortcakes, and therefore it is clear what result you need to strive for in preparing dough for shortcakes: on kefir, on sour cream or milk, or even on water.

It is clear, because not only in the vastness of our vast country, but even beyond its borders, Russian gingerbread has long since become famous.

Gingerbread dough is also used to make shortcakes.

Actually, the difference between gingerbread and shortcakes is only in the name. True, according to old recipes, gingerbread was prepared only on a honey basis, but in modern cooking the difference has practically disappeared. After all, recipes for gingerbread dough appeared among the Slavs back in pagan times, and the gingerbreads themselves, molded in the form of figurines of birds or animals, served as sacrifices in ancient Slavic pagan rites.

In the old days, sugar was a rarity and an expensive pleasure, but now the situation with the ingredient for gingerbread dough has changed in the opposite direction: real honey is expensive, and finding it is a problem, so it’s easier to make sugar syrup from an inexpensive product.

Another abolished difference between gingerbread and shortcakes, reflected in the name of these types of pastries, is spices. The root of the word directly indicates the presence of spicy spices in the dough. It was believed that shortcakes or gingerbread are a simpler, everyday type of baking that does not belong to the category of cults. Although, in other cuisines of the world, very far from Slavic roots, small piece products, and large semi-finished products for cakes, from gingerbread and other types of unleavened pastry, were called cakes or shortcakes - that is, cakes made from dough, which often included spices , which appeared in Russia only with the advent of Christianity, the establishment of trade with Asia and the East. These and other historical milestones important for the development of the state and society over the centuries have expanded the culinary boundaries of world cuisine, allowing not only to assimilate, say, in European cuisine, traditional oriental spices, but also to learn from the experience of cooking various dishes, preparing dough and baking sweets. products.

Cookies on kefir - basic technological principles

In addition to the already mentioned spices, sugar or honey, the composition of the gingerbread dough, as well as the dough for shortcakes on kefir or other dairy products, includes butter or other types of fat, flour, eggs. As additional ingredients, you can use dried fruits, nuts, jam, chocolate or fruit glaze (for decoration). Ammonium (powder), baking soda, baking powder and other additives are used to create the porous texture of unleavened dough.

If the liquid base of the gingerbread dough is a fermented milk product, then a small amount of baking soda is sufficient as a baking powder, which in this case does not need to be repaid with acid, because lactic acid, reacting with an alkaline environment (soda), will provide a loose and light dough structure.

The next important technological point: after kneading, it is imperative to let the dough “rest”, covering it with any airtight material, so that the gas released as a result of the interaction of soda or other baking powder with lactic acid does not evaporate, but is distributed in the dough layers, creating its porous structure.

The amount of these or other components may vary depending on the composition of the recipe or the desired texture and taste of kefir shortcakes.

The increased fat content provides a crumbly texture similar to shortcrust pastry. Whipped butter will make the dough more tender. Beaten eggs, together with soda and sour-milk products, saturate the dough with oxygen, ensuring the splendor of unleavened dough products. Eggs, kefir and butter are products containing proteins, which, when beaten, form fatty protein fibers that trap air in the dough layers, also combining with the gluten contained in the flour.

For the preparation of yeast-free dough, it is desirable to use whipping in order to improve the quality of finished shortcakes on kefir.

Of course, you need to pay attention to the quality of flour or flour mixture for kefir shortcakes, since the percentage of gluten in flour is important for the quality of baking.

Cookies can be a sweet addition to tea and can replace bread when serving savory dishes. In this case, cottage cheese, cheese, other unsweetened ingredients and spices that do not belong to the category of confectionery spices are used as additional ingredients.

The main advantages of this pastry include the speed of their preparation and the variety of assortment, the low level of complexity. Shortcakes are baked for 10-15 minutes, at 180ºϹ, and together with the time spent on preparing the dough and forming semi-finished products, it will take a total of no more than 45 minutes.

    Choux pastry products do not get stale for a long time.

    If there is not enough gluten in the flour, then brewing the dough will help achieve the desired texture.

    Do not forget to salt the sweet dough: a small pinch of salt emphasizes the taste and aroma.

    Remember that an excess of soda in unleavened dough can ruin pastries: the products will come out overdried, with cracks on the surface, dark in color and with a characteristic unpleasant odor.
