My previous attempt to make fluffy pancakes without eggs a la American pancakes was not successful (thanks to which we have appeared, and this is a plus :).

But I did not give up and continued to gnaw on the cactus, in the sense of experimenting. And, you know, folk wisdom worked about the inevitability of the result of long torment. I can now proudly declare - I made them in every sense!

Who wants to know how to bake thick and fluffy American kefir pancakes without eggs? Follow me, please…

For thick and fluffy pancakes on kefir, we need:

  • 0.5 l. kefir;
  • 2 cups of flour;
  • 3 tsp Sahara;
  • a pinch of salt;
  • 1 tsp soda;
  • 2.5 tsp vegetable oil;
  • honey, syrup, jam in any quantity.

First, dissolve soda, salt and sugar in kefir. It's time for us to spit!

Add flour to kefir and with an ordinary fork mix everything quickly so that there are no lumps.
So we got the dough for lush pancakes on kefir. Somehow everything is suspiciously easy and simple, right?

No need to wait for a catch, it will not. Everything is actually very simple. We heat up the pan. We add vegetable oil to the dough and mix it again, after which we put the dough into the pan in semicircular ovals (semi-oval circles?) - in the form of large pancakes, in general.

Cover the pan with a lid and fry the pancakes over low heat until the surface of each pancake stops spreading. And as soon as it stops, we turn our pancakes over. You can already see how lush, thick and beautiful they are.

We continue in the same spirit. The dough is getting smaller and smaller, and the pile of lush pancakes is getting higher and higher ...

The most wonderful thing is that these pancakes themselves are not at all sweet, which means you can pour honey, syrup, jam or condensed milk on top, and then imagine how an American diner's waitress puts a plate of pancakes in front of you on an early summer morning and says: Enjoy! That is bon appetit!

Ingredients:

1.5 cups flour
- 3.5 teaspoons baking powder
- 3 tablespoons of sugar (if you like it sweeter, you can put a little more)
- 1 teaspoon salt
- 1 cup of any plant-based milk
- 2 teaspoons apple cider vinegar
- 1 tablespoon ground flax seeds
- half a glass of water
- 3 tablespoons vegetable oil
- 1/2 teaspoon vanilla

Cooking method:

1. In a bowl, mix flour, baking powder, salt and sugar. Make a recess in the middle.
2. In a separate bowl, mix any vegetable milk, vinegar and ground flax seeds. Mix everything vigorously until smooth.
3. Pour the resulting mixture into the recess in the dry ingredients mixture. Add water, oil and vanilla to the same place, and mix everything again until smooth. But not too long.
4. Let the dough rest for 10 minutes. Then heat the pan over medium heat and add quite a bit of vegetable oil. We spread the dough with a spoon - for each pancake, spoons of 3.5. Fry on each side for 4 minutes. Pancakes should rise and brown. If necessary, add a little more oil while frying.

Enjoy your meal!

Fritters with carrots and coconut

Ingredients:

  • 1 cup flour
  • 2 tablespoons of sugar
  • 1/4 cup thinly sliced ​​coconut
  • 1.5 teaspoons baking powder
  • a pinch of salt
  • 1 cup plant milk
  • 1/2 cup finely chopped carrots
  • 2 tablespoons crushed walnuts

Cooking:

1) Mix flour, sugar, baking powder, salt and 2 tablespoons of coconut. Separately mix milk, butter and vanilla. Now mix these two mixtures together.

2) Add carrots and set aside for 5 minutes. Heat a frying pan with a little oil and pour 1/4 cup batter into it. Fry on both sides until golden brown. There should be 9 pancakes in total.

Avocado fritters

Ingredients:

  • chopped green onion, 1 pc.
  • 1/4 cup chopped red pepper
  • 1/2 cup chickpea flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon baking powder
  • pinch of red pepper (optional)
  • 1/2 cup + 2 tablespoons water
  • to serve: salsa, avocado, hummus, soft cashew cheese

Cooking:

1) Heat oil in a skillet over medium heat. Mix flour, garlic powder, salt, pepper and baking powder. Add water and beat until there are no lumps. Add vegetables.

2) Pour batter into skillet and spread quickly. Fry 5-6 minutes on each side. Serve with avocado, salsa, hummus or soft cashew cheese.

Fritters with pumpkin

Ingredients:

  • 1/2 cup flour
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon sugar
  • a little nutmeg and ginger
  • a pinch of salt
  • 1 tablespoon melted coconut oil
  • pecan nuts

Cooking:

1) Grease a frying pan with oil and heat. Mix baking powder, flour, sugar, salt and spices, and separately vanilla, milk and coconut oil. Now mix everything together.

2) Pour 1/4 of the batter into the skillet and fry on both sides until crispy. Serve with nuts and coconut flakes.

Pancakes with banana filling

Ingredients:

  • 1/2 cup whole grain flour
  • 1/2 teaspoon cinnamon
  • a pinch of salt
  • 1/4 teaspoon baking powder
  • 3/4 teaspoon vanilla
  • 3/4 cup almond milk
  • 1 banana

Cooking:

1) Heat up a frying pan with a little oil. Mix the dry ingredients together first, then add the liquid ones.

2) Pour a small amount of dough into the pan and make small pancakes (no larger than 10 cm in diameter).

3) Slice the banana. Transfer the cooked pancakes to a plate, alternating them with the banana slices.

oatmeal pancakes

An excellent example of the fact that pancakes can be not only tasty, but also healthy!

Ingredients:

  • 1 cup oatmeal
  • 1 cup fine flour
  • 1 cup whole grain flour
  • 2 tablespoons baking powder
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1.5 cups almond milk
  • 1/4 cup olive oil
  • 2 tablespoons soy flour mixed with water in a 1:1 ratio
  • 1 teaspoon vanilla

Cooking:

1) Heat a skillet over medium heat. Combine oatmeal, flour (except soy), baking powder, nutmeg and salt.

2) In a separate bowl, mix milk, butter, soy flour and vanilla. Combine these two mixtures.

3) Fry in a pan on both sides until brown.

Fritters "Mini Pizza"

These pancakes are notable because they look like small pizzas. For the topping, use your favorite pizza ingredients - mushrooms, vegan parmesan, tomatoes... Let your imagination run wild!

Ingredients:

  • 1 cup oatmeal
  • 1 teaspoon oregano
  • 1 teaspoon nutritional yeast
  • a pinch of salt and pepper
  • 1/2 teaspoon baking powder
  • a pinch of paprika
  • some parsley
  • 2 teaspoons tomato paste
  • 1 minced garlic clove
  • 1.5-2 cups of water
  • 2 tablespoons flaxseed meal

Cooking:

1) Grind oatmeal in a blender. Mix dry ingredients together. Mix the liquids in a separate bowl, then combine.

2) Fry the pancakes over medium heat. When they are browned on both sides, place them on a flat dish and top with your favorite pizza ingredients. If they include vegan parmesan, put a small amount at the very end.

Raw potato pancakes

And finally - a recipe for raw food fritters. They need a dehydrator to make them.

Ingredients:

  • 1/3 cup ground pine nuts
  • 1 minced garlic clove
  • 1 large chopped potato
  • some water
  • 1 teaspoon salt
  • 1/2 chopped red onion
  • 2 teaspoons dried rosemary
  • 1 teaspoon olive oil

Cooking:

1) Combine potatoes, garlic, onion, pine nuts, rosemary and olive oil. Form into flat circles about 12 cm in diameter (should resemble pancakes) and place on a dehydrator.

2) Dehydrate at 60 degrees for 45 minutes, then reduce heat and leave for another 2 hours at 45 degrees.

For example, nine percent cottage cheese contains only 16.7 grams of protein. I'm a huge fan of chickpeas, even though I'm not a vegan. I love even just boiled chickpeas, as it is also called. Chickpea flour vegetable patties are made with onions, herbs and whatever you want, really. In general, chickpea flour can be replaced with regular flour in. It also turns out very, very tasty, I recently did it - they scattered into one or two. And from valuable and healthy chickpea flour, you can cook a stunningly delicious Indian dessert -. It's also very easy to make and super tasty!

So, vegan chickpea flour pancakes, step by step recipe with photo.

Ingredients

  • chickpea flour - 200 gr
  • vegetable oil- olive - 1 tbsp
  • purified water - or vegetable milk - 200 ml (or more)
  • soda- 0.5 tsp
  • lemon - juice or vinegar - 0.5 tsp
  • onion- green - 2-3 pcs
  • greens - favorite - 1 small bunch
  • spices- turmeric, coriander, zira, nutmeg and other favorites

Cooking method

Let's start cooking vegetarian chickpea cutlets. To do this, mix all the dry ingredients, mix, add olive oil and water. We extinguish the soda with lemon juice or vinegar, add to the bowl and mix again.

Thoroughly knead the dough for vegan chickpea flour patties. Add, if necessary, more water or milk to the consistency of thick sour cream. Mix thoroughly, rubbing lumps. Finely chop the greens and onion and mix again.

We begin to fry lean chickpea cutlets, the recipe of which, to be honest, is almost over. Put a frying pan on medium-high heat. Oil can no longer be poured - it is in the composition of the fritters. And in general, you don’t need to pour it 😉 We take a tablespoon and spread the pancakes on the pan with it, smoothing the surface with a spoon. Fry the chickpea flour pancakes for about a minute or two or three on one side until golden brown under the lid, then turn over and fry without a lid for a couple more minutes.

Remove the pea patties (vegetarian dishes often cook quickly) from the pan and place on a plate.

We repeat the roasting process. Fry the vegan chickpea flour pancakes until the batter runs out.

We serve vegan cutlets on the table and arrange on plates.

Protein chickpeas perfectly harmonize with carbohydrate brown rice. And much better absorbed. And in the photo there is a very tasty one.
