You don’t need to beat or heat anything, the dough is kneaded in minutes. I pour a glass of kefir into a deep bowl, break an egg.

I add salt and a little sugar for a balanced taste. I recommend putting more salt, one spoon was not enough for us, the cakes turned out fresh.

While pouring in sunflower oil, I vigorously work with a whisk, I shake all the components.

I sift a little flour, about a third of the total. I mix, at this stage you need to slightly thicken the kefir to add slaked soda.

I pour soda with vinegar, and as soon as the reaction passes (bubbles disappear), I add it to the dough. You can pour in earlier, before you add flour, and leave for a few minutes.

After two or three minutes, when all the ingredients "make friends", add more flour, stir. I pour in portions until the mass thickens.

I pour out the rest of the flour on the board, spread the dough and quickly knead by hand.

Of course, in order to bake cakes with filling, you first need to prepare this very filling. And I will say right away - I baked with potatoes and cheese. And I'm sure these are not the last toppings that we'll try. 😉

With mashed potatoes, of course, it is easier to roll out a cake, with cheese - a little more difficult, but let's talk about everything in order. Before starting the whole process, it is best to get kefir from the refrigerator - to warm up to room temperature.

So, peel, boil potatoes in salted water. Then knead it well, with the addition of a small amount of milk and butter. It is important that the puree does not contain unwashed potato shreds and that it is soft and plastic.

Kefir (if you didn’t get it in advance, and it’s cold, you can warm it up slightly in the microwave) pour into a bowl where the dough will start.

Add sugar, salt and soda. Soda does not need to be extinguished - it will be extinguished due to the acid contained in kefir. Stir the liquid, it will increase in volume, gain air bubbles.

It is better to add flour gradually and stir first with a spoon or whisk, and then put it on the table, dusting it with flour.

Knead until it takes the shape of a ball.

After that, cover the dough with a towel and leave it to “rest” for ten minutes.

Cooking cakes on kefir in a pan

Divide the resulting dough into 5-6 equal parts.

Usually I made six, but it was problematic to roll them out, because the diameter of one cake I got was about 17-18 cm. That is, if your cake is less than 15 cm in diameter, divide the dough into 6 parts, and if more, then by 5. 😉

Roll out one part of the dough not too thin - up to 1 cm - and put the potato filling in the center.

Pinch like khinkali, and start rolling again. This time it is important to be careful so that the dough does not tear.

To warm dry frying pan and spread the cake on it. While one is fried, you can have time to roll out the second cake. 😉

But you can roll out all the cakes in advance, so that later you can only fry them and grease them. 😉

Fry such cakes on kefir quickly - no more than two minutes on each side. Sometimes they can inflate like balls, but if you act carefully and remove the kefir cake from the pan, it will become “flat” again.

Important

after each cake, carefully wipe the pan with a dry paper towel, removing the remaining flour, because otherwise the next cake will quickly burn and turn black.

While the cake removed from the pan is still hot, generously grease it with butter.

We do this with each of the remaining cakes: fry in a dry frying pan, wipe the pan with a towel, put the hot cake in a pile on a plate, generously grease with butter.

Of course, you can lubricate the cakes and not too abundantly, but then they will turn out not so fragrant and not too soft, a little harder. Given that there is no oil at all in the dough itself, and they are not fried in oil, but lubricated hot, they absorb oil very actively and will not be very greasy when consumed. Of course, if the oils are used wisely. 😉

Now let's talk a little more about the fillings.

Traditionally, it's just mashed potatoes. But you can try to make potatoes with very finely chopped mushrooms (if the mushrooms are large, the dough may tear when rolling out the cake). Personally, I have plans to make a filling from. 😉 And also, since my son and I are big raw foodists (in the sense we love cheese 😀), we made these cakes on kefir with grated cheese.

This is what a cake with cheese filling looks like in the context. The taste is no less wonderful than with potatoes.

Such cakes on kefir are prepared in a dry frying pan very simply and quickly, and satiety and taste last for a long time. 😉
