Sugar is not recommended for diabetics. Honey is allowed, but only small portions, no more than 50 g per day. Jerusalem artichoke syrup is added to tea, coffee and other drinks as a sweetener. It is not difficult to prepare it:

  1. Grind 1.5–2 kg of washed root crops. Squeeze out the juice.
  2. Pour the drink into a saucepan with a thick bottom, put on a minimum fire.
  3. Heat up to 45-50 degrees. Above it is impossible that vitamins and trace elements do not evaporate from the workpiece.
  4. Simmer the future syrup for 10 minutes. Remove and cool, and then put back on the stove.

Freshly squeezed juice from an earthen pear is heated several times. Part of the workpiece should evaporate. The drink will become thick and viscous, like honey.
