We put the water on the fire, clean, wash and coarsely chop the potato tubers. We place it in boiled water, it should only cover the potatoes, add a bay leaf. Leave to cook, add salt at the end.

While these two processes are taking place, you can start preparing the onion, which will also go into the filling for the zrazy. We clean the onion, wash it under cold water and chop it like for frying.

We send it to a frying pan with vegetable oil and pass over low heat.

We mix everything, salt and pepper to taste, you can add a couple of tablespoons of broth for juiciness. Fry the filling for 2-3 minutes and remove from the pan.

By this time, the potatoes were already cooked. Drain the water from it and turn it into a puree. Add a piece of butter to improve the taste. To the slightly cooled mashed potatoes, we drive in the chicken egg and mix thoroughly. Taste for salt and add more if needed.

Add a couple of tablespoons of flour (with a slide) and knead again until a homogeneous, not steep mass is obtained.

  • Minced meat - 200 g;
  • Onion - 1 pc.;
  • Cheese (hard) - 40 g;
  • Fresh dill greens - 2-3 sprigs;

  • Small chicken egg - 1 pc.;
  • Salt - a couple of pinches;
  • Sour cream - 4-5 tbsp. l.;
  • Garlic cloves - 1-2 pcs.

Cooking:

  1. Peel and rinse the onion, garlic and spicy dill leaves in water. Finely chop these products.
  2. Put the minced meat in a hot pan with a drop of oil. Saute until moisture evaporates. Mix with onion and garlic. Fry until golden brown. Add salt.
  3. Grate the cheese and sprinkle over the minced meat. Stir.
  4. Peel potatoes. Cut it into pieces and transfer to a bowl. Pour in hot water and bring to a boil. Cook until soft. Then drain the decoction.
  5. And crush the tubers in mashed potatoes. Cool to room temperature.

  • Egg yolk - 1 pc.;
  • Wheat flour - 1 tbsp. l.

Cooking:

  1. Rinse and pat dry all meat and lard. Grind it into mincemeat. This is done using a meat grinder or even a conventional blender.
  2. Pour a tablespoon of oil into a frying pan and heat it up. Spread the mince in an even layer for frying.
  3. Rinse the mushrooms. Dry them a little with a towel and chop. Cut into small cubes or grind like minced meat.
  4. Add mushrooms to meat in skillet. Stir and continue frying until done. It's not long - about a quarter of an hour. Then cool the mass.

  • Turkey - 100 g;
  • Chicken egg - 2 pcs.;
  • Dry breading - 2 tbsp. l.;
  • Potato tubers - 600 g;
  • Ground turmeric - 2 pinches;
  • Sunflower oil - 2-3 tbsp. l.;
  • Young parsley - 2-3 sprigs.

Cooking:

  1. Take care of the turmeric before you start cooking. Pour boiling water over its powder. For two pinches, a teaspoon of water is enough. Leave to infuse under the lid.
  2. Rinse beef and turkey and wipe off moisture. Cut into pieces and twist into a homogeneous minced meat.
  3. Fry the minced meat in a pan with a drop of oil. A lot of oil should not be poured, otherwise the zrazy will not gather into a smooth cutlet.
  4. Boil one chicken egg until hard boiled. If you decide to take quail, you will need 3-4 pieces. Once the egg has cooled, peel and finely chop it with a knife.
  5. In one container, mix the minced meat, chopped egg and salt. The mass must be homogeneous.
  6. Boil the peeled and washed potatoes until the pieces are soft. Remove from decoction. Puree. Do not take a blender for this, it will spoil the consistency of the potatoes.
  7. In the cooled puree, add salt, turmeric tincture, raw egg and breadcrumbs. The last two components allow the potatoes to come together in a homogeneous emulsion. Mix everything thoroughly to make a dough.

  • flour - 70g;
  • chicken egg - 2 pcs.;
  • onion - 2 pcs.;
